Holiday Recipes to Cheer in the Season

Daniela Weiner grew up in Austria’s Tyrolean mountains—a land of legendary snowscapes and kitchens scented with vanilla and cinnamon. As a child Weiner baked with her grandmother, then went on to train in Chicago before moving to Traverse City where she’s cultivated a loyal (and addicted!) following. With the help of partner Laura Salvatore, Weiner markets her sweet masterpieces through her pastry catering business, Daniela’s Delectables. Here, Daniela shares three of her longtime favorite holiday recipes: 773.678.1020; FACEBOOK: DANIELA’S DELECTABLES.

Eggnog Crème Brûlée 2K O 1 K 1 K 5 3

cups heavy cream teaspoon fresh grated nutmeg teaspoon kosher salt teaspoon vanilla extract cinnamon stick cup sugar egg yolks tablespoons brandy

Position rack in center of oven preheated to 325˚. Arrange 8 (1/2-cup) ramekins or custard cups in a large metal baking pan. Combine heavy cream, nutmeg, salt, vanilla and cinnamon stick in a pot and bring to boil in heavy medium saucepan. Cover with lid and turn off heat and allow to infuse the flavors for 30 minutes. Combine sugar, yolks and brandy in a heatproof bowl and whisk to blend. Bring heavy cream to a simmer again and slowly add to the egg mixture (continue mixing them with a whisk so you don’t cook the eggs).

Vanilla Crescents 9 ounces all-purpose flour 3 K ounces toasted almonds 2 K ounces powdered sugar Zest of half a lemon K teaspoon salt 7 K ounces cold butter, cut in small pieces 2 egg yolks 1 teaspoon vanilla extract Combine flour, almonds, powdered sugar, lemon zest and salt in the food processor and pulse until the almonds are ground. Add the butter and pulse for 30 seconds. Add the egg yolks and vanilla and pulse to combine. Place the dough on a clean work surface and knead till it’s combined. Allow the dough to rest in the fridge for 1 hour.

Preheat the oven to 350° and position one rack in the upper third and one in the lower third. Line two large baking sheets with parchment paper. Lightly flour your work surface and roll pieces of the dough into 2-inch ropes. Taper the ends slightly, and form the ropes into crescents. Carefully transfer the crescents to the baking sheets, about K inch apart. Bake 18 to 22 minutes until the bottoms are golden and the tops pale blond, rotating the sheet trays half way through baking time to ensure even baking. Remove from oven and allow to cool for 10 minutes. Fill a small bowl with confectioners’ sugar. While the cookies are still warm, coat them in the sugar and transfer to a clean sheet of parchment paper to cool slightly. Roll the cooled cookies in the sugar again and let cool completely.

Strain the mixture (to strain out the cinnamon stick and to make sure no cooked egg yolks end in the custard base). Divide the custard between the baking dishes. Transfer to oven and then pour enough boiling water into baking pan to come halfway up sides of dish. Bake until custard is just set around edges, about 30 to 45 minutes, depending on your oven (custard will be soft in center). Remove dishes from water bath. Cool to room temperature and refrigerate at least six hours.

To brûlée, combine sugar, brown sugar and nutmeg and sprinkle evenly over top of custards. Use a hand torch to carefully melt the sugar mixture. Place the custards back in the fridge for 15 minutes to set. Garnish with whipped cream if desired before serving.

Bittersweet Chocolate Cake with Balaton Cherry Compote

CAKE 1 pound dark chocolate chips (60 percent cacao or more) 1 cup light brown sugar, packed K cup white sugar O cup very hot coffee 8 ounces unsalted butter, room temperature, cut into pieces 8 large eggs, room temperature 1 teaspoon kosher salt 1 tablespoon vanilla extract Powdered sugar Preheat oven to 350°. Prepare a 10-inch springform pan by lining the bottom with parchment paper. Place the dark chocolate into the bowl of a large food processor and

pulse until the chocolate breaks into small bits. Add the sugar. Pulse until the chocolate and sugar turn into an even, sandy grain. Pour the coffee slowly into the feed tube as you pulse again. Pulse until the chocolate is melted. Add the butter and pulse to combine. Add the eggs, salt and vanilla, and process until smooth. The batter will be liquid and creamy. Pour the batter into the lined springform pan. Bake at 350° in the center of the oven, until puffed and cracked on top—about 55 to 65 minutes. Use a wooden toothpick to check the center of the cake; pick should emerge clean. Place the cake pan on a wire rack to cool. The cake will deflate. Don’t worry! When cooled a bit, press down on cake gently with a spatula to make it even. When the cake is completely

cooled, cover and chill for three hours before serving. Release the cake from the pan and dust with powdered sugar. Serve with warm balaton cherry compote. This cake can be made a couple of days ahead and holds well in the refrigerator for up to one week. BALATON CHERRY COMPOTE 2 cups frozen balaton cherries 1 cup sugar Zest and juice from one orange 1 cinnamon stick 1 split vanilla bean Pinch of salt Combine all ingredients in a pot, bring to boil and allow to simmer for 20 minutes.
