Every year, I promise myself I am going to be more organised for Christmas. And every year, I fail miserably!
With just a couple of weeks until the big man in the red suit arrives, I still haven’t done any Christmas gift shopping or thought about my shopping list for the family lunch. Queensland drivers pay more than any other state or territory for a learner licence, prompting calls for the government to slash the $186.55 fee.
Young drivers are slugged more than seven times the permit cost of other states in what Liberal National leader David Crisafulli has labelled an “absolute rip-off”.
In comparison, a permit costs $25 in the Northern Territory and $26 in NSW and Victoria.
“Queensland learners pay the highest fee in the country by a country mile to get their learner’s (permit),” Mr Crisafulli says.
“These learner drivers are starting out in life ... the learner’s is a key to opening up a future for a young person.
“It’s the ability to take a step towards getting your own job and your own independence.
“It is time to end this rip-off and it is time to stop the madness of Queenslanders paying the highest fees in
the nation to get their learner’s.”
Mr Crisafulli said Queenslanders were already feeling the pinch as everyday costs continued to spiral out of control.
“It’s time this government gave these kids a break,” he says.
Transport Minister Mark Bailey confirmed that the costs were being scrutinised.
“A review is now underway into all Queensland licence fees, including C class, R and RE class, P class, L class and others,” Mr Bailey says.
However, the minister fell short of promising to lower licence fees, saying: “I’ll let the department conduct that review and provide an update to any potential changes to licence fees as soon as possible.”

The RBA’s final cash rate decision for 2022 is not the festive news homeowners have been hoping for.
In this month’s Finder RBA Cash Rate Survey, 40 experts and economists weighed in on future cash rate moves and other issues relating to the state of the economy.
The majority of panellists (88 per cent, 35/40) correctly predicted a cash rate rise in December by 25 basis points – bringing it to 3.10 per cent, up 300 basis points from 0.10 per cent earlier this year. Less than half the experts (43 per cent, 17/40) expect the RBA to raise the cash rate at its first meeting in February next year.
Graham Cooke, head of consumer research at Finder, says that this eighth rate hike since May means that the average home loan rate has jumped from the mid-3s to the mid-6s.
“Put another way, Aussies with a $500,000 mortgage will be paying almost $900 more per month compared to what they were paying in April,” he says.
“To comfortably afford this, you’d need to be earning a minimum income of just over $180K – significantly more than the average salary.”
Mr Cooke says Aussies are having to devote a bigger share of their budgets to essential living expenses.
For those finding it hard to make ends meet, he recommends reviewing spending.
“Budgeting tools really help with this – for example the free Finder app allows you to see exactly where your money is going, so you can plan better,” he says.
“Remember: loyalty doesn’t pay when it comes to financial products.
“Consider switching car insurance for a better deal or refinancing to a
cheaper home loan to reduce monthly repayments. The majority of panellists who weighed in (83 per cent, 29/35) believe the cash rate will peak between 3.25 per cent and 4 per cent, with over two-thirds (71 per cent, 25/35) expecting it will peak in the first half of 2023.

Prawns are synonymous with an Aussie Christmas. And the CSIRO tells us that about six million kilograms – or a staggering 40 per cent – of our annual prawn consumption takes place over the holiday season.
There is nothing quite like sitting down to a shared platter of prawns. For those who like to keep the flavours fresh and simple, serve cooked prawns over ice with a side of sauce.
Celebrated Sunshine Coast cook and author Kim McCosker has a great sauce recipe for you to whip up for the whole family to enjoy. Simply combine ½ cup of cream, ¼ cup good quality tomato sauce and one tablespoon of fresh lemon juice. Season with salt and pepper and add a splash of Worcestershire or Tabasco sauce, if you like.

Method
• 400g cooked Mooloolaba prawns, peeled
mixed green leaves of choice – we like
oak
quarter purple cabbage, finely sliced
two mangoes, cut and cubed
1 Noosa Red tomato, sliced thinly Dressing:
1 teaspoon Dijon mustard
Toss all salad ingredients, except for the tomato, in a bowl. Layer tomato on a serving platter and top with salad mix and prawns. Mix dressing ingredients using the water to achieve the desired consistency. Serve with dressing on the side.

With the silly season finally upon us, it’s time to let your hair down and enjoy all the fun and festivities that it brings. While our health can often take a back seat as we celebrate with loved ones, leading dietitian and Mayver’s ambassador Susie Burrell has provided her top five tips for having a healthy Christmas while still enjoying yourself.
MINDFUL EATING
I was touched, but I still snickered when asked to give a Christmas recipe to share with you all. Why? Because I am a terrible cook.
I do not know how to make white Christmas slice, I burn the ham every year because I get caught up drinking champagne and forget I have the damn thing in the oven, and my plum pudding comes from a plastic bowl ready to microwave. I love everything about Christmas, so I would have been a whizz if asked for a decoration tip or for the best movies to watch at this time of year.
You see, I truly wish I had a family Christmas recipe dripping in tradition to share with you. But I do not.
Cooking for me takes too much focus. So instead, I present a dish that will turn you into a rock star in the eyes of your children and grandchildren. This recipe is from the Christmas movie, starring Will Ferrell, called Elf, which tells the story of Buddy. This pasta is his favourite food.
We make it for our kids and they think all their Christmases have come at once. Do it. It will repulse you and you will not want your kin to eat this crazy dish but just take my advice and do it! Our 10-year-old boy made it in the last week of school for his perplexed teacher and his Year 4 cohort and it was anarchy at its very best for these kids. And if anyone has an adult family heirloom recipe to share, then please send it my way.
BUDDY’S PASTA
Ingredients:
• 1 packet of dried spaghetti
• 1/3 cup of maple syrup
• 1/4 cup of chocolate sauce
• handful of M&Ms or Smarties
• 1 packet of marshmallows
Cook the pasta. Once slightly cooled, mix with the other ingredients. Use your hands to eat this creation (if you are game!). Bask in the glory of being the cool parent!
Always remember to slow down while eating and enjoy the taste and texture of your food – this allows more time for your brain to register that your stomach is full, leaving you less likely to overindulge in a second helping. Also, be mindful of your portion sizes and make yourself a plate of food to avoid overdoing it at the grazing table or buffet.
TAKE A PLATE OF FOOD
Whether you’re attending a work Christmas party or a barbecue with friends, it’s a great idea to prepare a nutritious dish to ensure there’s a healthier option in the mix. For instance, you could put together a fruit and veggie board with celery, carrot or apple slices and a peanut butter dip.
KEEP YOUR BODY MOVING
Whether it be a run, swim at the beach, game of tennis or post-lunch walk, it’s important to make time for exercise. Holidays are an opportunity to move more, not to do less.
STAY HYDRATED
When celebrating, try alternating every second drink with a glass of water to keep yourself hydrated – particularly on hot days. Also, avoid overdoing high-sugar drinks such as hot chocolates and soft drinks as they can spike your blood sugar and insulin levels, leading to a brief rise in energy, followed by a crash that will leave you tired.
INDULGE (IN MODERATION)
It’s okay to overindulge on the main holiday days. Have light days after the special occasions where you have eaten too much and only eat when you are really hungry.

’Tis the season to be wary … of all things relative. It’s that one magical time of the year when we invite the hipster cousin, the overbearing gluten-free aunty, the smarmy brother-in-law (you know, the one who brings cheap beer and then proceeds to drink all your top-shelf gear) and the racist uncle who thinks Trump gets a bad wrap to sit together and see what transpires. Someone mentions mandates and vaccinations and it’s World War III. So, here are some tips to surviving Chrissy with your blessed rellos.
Lubrication: Get yourself an all-rounder style of wine – one that pairs well with lamb, pork, prawns and difficult aunties. And 100 per cent avoid rum in your rumballs. It’s angry juice and will only lead to a WrestleMania VII-inspired all-in-brawl on the lawn.
Distraction: Family games like bocce, ping pong and bomb-diving contests for those with a pool can be great to diffuse any tension that builds up during lunch. However, be warned that any game can easily lead to a round of “pin the blame on the family member”, with that one cousin who always gets super competitive and makes a kid cry. Also, spin the bottle is not recommended in this family environment.
Conversation cards: Not a bad idea for those wanting to steer clear of controversial convos at the table. Topics like “Is fruitcake the work of the devil?” (it is), “Do ya’ll think Jennifer Lopez is a vampire? She never ages”, and “How’s them Broncos?” are all fine conversation starters. Highly recommend you avoid topics like “Putin’s just misunderstood, don’t ya think?”, “So, who’s had a fourth jab?” and “Is Die Hard a Christmas movie?”. They are all highly flammable subjects. Having said that, I can report Die Hard is NOT a Christmas movie … it’s THE Christmas movie.
Escape plan: Always have an exit strategy so you can eat, drink and run to the safety of your home, barricading yourself on the couch to play Warhammer on the new Xbox in your undies. Or volunteer for the trip to emergency with the nephew who’s fractured his wrist during the bomb-dive contest, or has come a gutser on the hastily built Christmas Eve trampoline. That’ll kill five hours. Pro tip: have enough change for the vending machine.
Remember it’s a marathon, not a sprint. Try to approach the day with grace and style, tolerance, understanding and kindness.
If that fails, rip into the bottle of Grey Goose stashed in the freezer and have yourself a most excellent Christmas.

CITY HALL OPENING MARKS MILESTONE YEAR FOR MAROOCHYDORE CITY CENTRE
The official opening of the Sunshine Coast City Hall building on December 10 marked an important milestone for the Maroochydore City Centre and has proven to be a catalyst in attracting new companies to the emerging commercial and cultural precinct.
SunCentral Board Chair Morgan Parker said the Maroochydore City Centre precinct continues to come of age delivering impact for the region with significant construction activity well underway and more projects set to commence in 2023.
“We no longer talk about the potential of the Maroochydore City Centre, rather it’s a discussion around its success and how it is playing a pivotal role in the long term economic and social fabric of our region.
“During the year we’ve also seen the opening of the Holiday Inn Express on First Avenue, and the first residents moving into the Market Lane Apartments, with additional restaurants and retail office space to open before the end of the year.
“Along with the onsite 200-space public car park, construction has
commenced for the ParknGo Lightning Lane multi-level car park, featuring 294 car spaces, including accessible parking and electric vehicle charging spaces, 56
motorcycle and 28 bicycle spaces as well as end-of-trip facilities.

Business power couple Roz and Michael White have opened their 6th Sunshine Coast supermarket, further championing local producers.

The Whites first ventured into the world of groceries and supermarkets in 1993 and have been integral in
supporting the Sunshine Coast community and championing local farmers, producers and suppliers.
“Supporting local is at the heart of everything we do,” Ms White says.
The Forest Glen store, which employs 95 staff, adds to existing White’s IGAs at Baringa, Bli Bli, Peregian Beach, Mooloolah and Mount Coolum.
Ms White says every element and detail of their stores is intimately selected, and the Forest Glen store is no different.
“Every aspect of the store has something that is very personal to us,” she says.
“From the dining table in Grace & Grace, named after Michael and my grandmothers that has seen many a White family dinner, to the butchery we have named Sonny’s that pays homage to my dad’s dog who lived with us for 18 months after dad passed away – every element tells a story.”
Ms White says the inspiration for their latest store was found when researching the history of the site on Mons Road.
“The inspiration for our Forest Glen store comes from the original roadside stores that date back to the 1940s when the Gibbins family sold oranges and pineapples,” she says.

Queensland construction company Tomkins Commercial, which won the design and construction contract in November 2021, share the Whites’ vision for supporting local business and community.
Tomkins’ Sunshine Coast construction manager Barry Lehmann say about 90 per cent of subcontractors engaged during the project were based locally.
“Over the past 12 months, we have successfully navigated more than 61 days of rain, clocking 67,000 man-hours, to successfully construct three mixeduse retail buildings as part of the Forest Glen Village Centre expansion,” he says.
“In the process, we have created more than 100 full-time jobs, whilst sourcing much of the materials used in construction from local suppliers.
“The end result is a project that has been built on the foundations of local collaboration and respect – something both Tomkins Commercial and the Sunshine Coast community are renowned for.”

Virtual reality is having immeasurable success in the medical world and it’s being used right here on our doorstep. WORDS: Shirley Sinclair.
Forget any notion that virtual reality is just a quirky gaming toy. The future is here now, in industries as diverse as architecture, real estate, hospitality and tourism, and law enforcement.
All have embraced VR and are tapping into the wide-ranging applications of its three-dimensional, computer-generated environment.
The technology allows a user to immerse themselves in new worlds, simulating a situation or experience with the help of a VR headset, and possibly special 3D goggles and gloves that provide sensory feedback.
But perhaps the most groundbreaking uses of VR have shown themselves in medicine.
Wishlist – the not-for-profit organisation dedicated to fundraising for the Sunshine Coast Hospital and Health Service – has been quick to jump on board, recognising the many benefits of VR in a hospital context.
Acting CEO Brendan Hogan says virtual reality equipment funded by Wishlist started its rollout at the Sunshine Coast University Hospital
(SCUH) last year and the charity is now seeing an increase in health staff wanting this type of equipment – in particular, virtual reality goggles to help distract children during painful procedures.
“In fact, SCUH was the first Queensland hospital to use this type of
equipment (Smileyscopes) in an emergency setting, thanks to 92.7 MIX FM Give Me 5 donors in 2021,” he says.
“We have funded virtual reality goggles in every public emergency department on the Sunshine Coast and Gympie.”

four separate areas approved for new VR equipment:
• A set of virtual reality goggles for patients with kidney conditions to help with needle phobias.
• A set of virtual reality goggles for the Caloundra Hospital Minor Injury and Illness Clinic for young patients requiring sutures, glue or immobilisation of fractures.
• Three VR goggles to Ambulatory Care departments at Gympie Hospital, Nambour Hospital and SCUH to provide distraction during orthopaedic fracture manipulation and ear, nose and throat procedures.
VR equipment will help the End of Life Care team pave the way for more efficient clinical training, as well as implementing the technology in a palliative care setting for patients to tick off their ‘bucket list’ while bed-bound because of their life-limiting illness.
“Our world is fast-paced and it’s exciting that our health teams are identifying contemporary opportunities to enhance healthcare right here on the Coast,” Mr Hogan says.

Woombye streetscape update
Streetscape improvements are continuing from the Hill and Blackall streets intersection, past the School of Arts Hall and library and across the pub and bottle shop driveway (near Grounded Café).
Works over the next few weeks will see the removal of the existing footpaths, installation of new electrical conduits and stormwater infrastructure, the building of retaining walls and seating, and construction of kerbs. Construction will cease over the peak holiday period and resume the week of January 16.
During these works, I encourage you all to please continue to support the businesses, which will remain open.
Delivering a new clubhouse
We are kicking goals for Palmwoods Warriors Football’s new clubhouse this month.
I’m pleased to see works have started
on the clubhouse to improve access, canteen facilities, storage, benches and fixtures, and to give the overall interior a complete refurbish. You can view the extent of works on my Facebook page (facebook. com/winstonjohnstondivision5scc).
Internal building works are expected to be completed by the end of January.
The external works, including the new deck, are scheduled to be completed the following month.
Chevallum Road upgrade
To continue to deliver road safety for drivers and pedestrians across Division Five, we will be undertaking works on Chevallum Road.
We need to widen the shoulders of the road to allow vehicles to queue to enter the school. This will alleviate vehicles travelling over double centre lines over a crest and reduce the possibility of a head-on crash.
Most of this work will happen within the holidays.

In the lead-up to Christmas, several assault offences have been recorded on the Sunshine Coast.
There were three assaults recorded in one day on December 1, which is not a good start to the festive season.
Sunshine Coast Police would like to remind community members to keep their cool and to keep their hands to themselves. No matter what age you are, that behaviour will not be tolerated.
There are several types of assaults as defined under Chapter 30 Assaults in the Criminal Code (1899).
Common assault is any act where a person intentionally or recklessly causes another person to apprehend immediately: for example, slapping, pushing or throwing something at a person, even if they miss.
The most-recorded type of assault on the Sunshine Coast in November was assault occasioning bodily harm.
This is when someone assaults another, causing bodily harm: for example, there is a visible bruise, redness/ swelling or cut to the victim.
Grievous bodily harm is the result of an assault that leaves the victim with a permanent injury to health and, if left untreated, would likely endanger the life
of the victim.
Serious assault is when a person assaults a police officer, other public officer, a disabled person or someone who is over the age of 60.
Several assault incidents involved the victims and offenders consuming alcohol.
Alcohol affects the brain and, therefore, excessive drinking can impair a person’s judgment and increases the risk of aggressive behaviours.
To avoid this type of behaviour, don’t drink alcohol or monitor alcohol consumption and make every second drink a non-alcoholic one.

Wave of success for fundraiser
Kawana Waters Surf Life Saving Club recently held a sports luncheon to raise money for its lifesaving programs.
The sold-out event saw 120 people raise $18,000 which will help purchase rescue equipment and first-aid supplies. Maintained and working equipment help keep Kawana Beach patrolled and open to the public, as well as providing a safe environment for nippers and training programs.

Program offers vital water safety
The recent Migrant Learn to Swim and Beach Safe Program has seen 45 Sunshine Coast migrants successfully complete the seven-week course. As a partnership between Sunshine Coast Council and Royal Life Saving Society Queensland, the program sees migrants – who may not have grown up around water – learn basic swimming techniques and beach safety, as well as improve their waterconfidence skills. The program is now in its fourth year.

MS Queensland and local service provider Comlink Australia are now both operating under the one roof in Birtinya’s Vitality Village. The partnership will empower and support clients to live full and independent lives from their own homes, providing a diverse range of resources and support to the Coast’s Multiple Sclerosis (MS) and ageing community. “The Sunshine Coast is home to more than 1000 people living with MS or other neurological conditions,” MS Queensland CEO David Curd says. “Both MS Queensland and Comlink Australia, across all of our service locations throughout Queensland, are committed to assisting people to stay in their own homes, or living independently if they can’t be at home, and the combination of the resources and support from both organisations come together beautifully for that objective.”

Best described as a “Navy man to his bootstraps”, Mr Gubbins served in the Australian Navy from 1945 to 1968.
During his career, Mr Gubbins saw operational service in Korea, Malaya, Borneo and Vietnam, as well as a 12-month posting to the United States, commissioning a new ship.
Following Mr Gubbins’ service in the Navy, his family relocated to Tamworth and worked in farming for 37 years, before settling in Maroochydore.
RSL Queensland CEO Robert Skoda says the Christmas hamper drive represents much more than just food, gifts and grocery vouchers – with the hope that all recipients feel seen, supported and uplifted.

Jane Stephens braves the blood bank needle to ensure her special Christmas donation will be the gift that keeps on giving.
Tinvolves giving a piece of yourself, but it doesn’t cost any money and it can’t be gift wrapped.
Giving blood is the go this Christmas. Those who can, should. Those who never have don’t know what they are missing out on.
It is the glow of knowing you have given something to a stranger that they really need, that will help restore their health or better handle a battle. It is the feeling of community at the blood bank or bus.
Even though I am not crazy about needles, I have spilt my blood 50 times. The satisfaction that comes with every donation never gets old. One-in-three people will need a blood donation in their lifetime. For some, it might be as a result of an accident or surgery, but some people rely on the goodness of others regularly for months or even years to stay well because of a condition or disease.
A blood donation is needed every 18 seconds nationally to keep up with demand. And while some of that is met by regular donors, a new donor is needed every four minutes. And there is something
in it for me, too: each donation comes with a mini check-up – a nurse checks blood pressure, pulse, weight and haemoglobin.
You get a load of snack and drink choices before and afterwards. You and your donation are important and they say and show that. You don’t have to be fighting fit to give, but there are some limitations.
The newly pierced and tattooed must sit on the sidelines for a while; those who have travelled to certain countries have to wait, also.
Certain medications knock some people off the list and anyone who has been in a lock-up has to wait a year after their release to give blood. There are limitations around breastfeeding mums, gay men and those who use illegal drugs.
The screening and testing protocol is as extensive as the need for blood is never-ending.
While I love everything about donating blood except the needle, I get a real kick out of the idea that I have made a stranger’s life better – that my good health has been shared with them.
I am literally part of the pulse of the nation. And, at Christmas, blood is the ultimate of the seasonal colours.
A MONSTER MASH OF FANTASY
Iheard an ad the other day for The Callisto Protocol. This is a video game, just released, about a jail on a moon where all the prisoners get infected and turn into monsters.
Its genre is survival/horror, and my first thought was: “What a wonderful theme heading into Christmas.”
My second thought was: “What a bloody waste for someone sitting in a dark room, playing this bizarre game, rather than kicking a ball in the park.”
But I always have to remind myself that not everyone can or want to kick a ball. Who am I to judge? Firstly, there are the people who, for any number of reasons, can’t get outside and kick a ball or smell the roses. If gaming is their thing – their release, even – so be it. I have no right to deprive them of that.
It is an old argument in regard to violence versus fantasy and whether most people can tell the difference. How could I really judge people when I was a massive fan of The Three Stooges back in the day.
I loved it. But did I run around twisting kids’ noses with pliers? Not really. Well, maybe once – until someone pointed out
with the toe of their boot what was right and what was wrong. Just kidding. But you know what I mean. Parents in my day were quick to pinpoint poor behaviour.
Foghorn Leghorn and the Road Runner were graphic cartoons as far as violence is concerned – bombs, assaults by the minute, and every known way to either injure someone. Sylvester the Cat and Tweety Bird weren’t exactly angels, either. But strangely, we managed to figure it out. It was only fantasy.
I am no fan of any video games and this latest one sounds horrific. I would much rather sit my grandson in front of the Coyote and watch him try and blow the Road Runner sky high or see Foghorn Leghorn belt up the poor old dog while he was trying to sleep. I would feel fairly comfortable that my grandson wouldn’t run outside and try it out on George the dog or some other unsuspecting pooch, because it’s only fantasy.
Just like monsters on some moon in the universe: fantasy. But it would be cool if we could shoot some lawbreakers on a one-way trip into the galaxy. Now, that would kick some goals.

Despite being lousy in the kitchen, I also love a great cookbook at this time of year and I have found one of the best called RecipeTin Eats by Nagi Maehashi.
You may know this self-made cook who has close to five million followers on Instagram and 335 views of her website in the past 12 months.

This is what is under my tree this year (in the hope her recipes really are disaster-proof).

We tried to make chocolate crackles in the house today.
But they turned out more like chocolate melted mounds of sticky bits.
The other book I am obsessed with is Christmas at River Cottage by Lucy Brazier. It is fancier in its recipes and photographs, but it is my favourite form of escapism to read about old-fashioned meals that come from home-grown crops and are eaten in cosy little country houses with babbling brooks outside and blazing fires inside.
And I have been giggling a lot at misleading food names of late.
This comes after I had the lightbulb moment that plum pudding contains absolutely no plums.
Champagne ham? Not a drop of bubbles in that stuff.
Prairie oysters? Well, this one boggles my mind as it is not a seafood delicacy but bull testicles.
Other strange food dishes that gladly do not reflect their literal names include devils on horseback, soldiers, grasshopper pie and hot dogs.
And lastly, I give you spotted dick. I sigh with great relief in reinforcing the fact that it is a type of British pudding.

Method
1. Line a loaf tin or a Christmas pudding container with cling film.
2. In a large bowl, mix the vanilla icecream with the Christmas pudding and chopped nuts.
3. Pour the mix into the prepared tin and place in the freezer overnight.
4. To serve, lift and unwrap the semifreddo out of the mould and turn onto a platter. For extra decadence, you can pour melted chocolate over it, and garnish with berries, chopped pistachios and icing sugar.
Christmas pudding ice-cream
Serves: 4 | Prep time: 10 minutes, plus overnight freezing time
A perfect dessert for the Coast’s warm Christmas weather. This easy-to-elevate vanilla ice-cream will surely impress.
Ingredients
• 500g vanilla ice-cream, slightly softened
• 200g Signature Collection Christmas pudding, coarsely crumbled
• 50g pistachios, toasted and
roughly chopped, plus extra for garnish
• 200g dark or milk chocolate, melted (optional)
• Raspberries, blueberries or strawberries for garnish
Peanut butter snowballs
Bursting with essential vitamins, minerals, protein and fibre, peanut butter is a delicious addition to your festive food shopping list. Mayver’s ambassador and leading dietitian, Susie Burrell, says that including peanut butter in festive desserts is a great way to sneak in an extra boost of nutrients during the silly season. Why not try making her peanut butter snowballs as a festive treat? In a food processor blitz 1 cup each of crunchy peanut butter, roughly chopped peanuts, medjool dates and desiccated coconut with ¼ cup of cocoa powder, ½ cup of almond meal and a sprinkle of salt. Roll mixture into 14 balls and freeze for one hour. Then dip each ball in 300g of melted white chocolate and top with sprinkles before returning to the freezer to set for 15 minutes. Enjoy!

Veggie pearl couscous with a festive twist
Serves: 4 | Prep time: 15 minutes
Whether you're looking for something a little different to whip up to go with your Christmas seafood platter, or a quick and easy meat-free weeknight meal, this wholesome dish ticks the box for heart health. This dish can be prepared earlier and served warm or cold, just leave the plating up of your salad leaves until you're ready to serve.
• 1 cloves garlic, crushed and finely diced • ½ tsp dried oregano • pinch of chilli flakes, to taste • 1 tin chickpeas, drained and rinsed
• 1 large carrot
• 1 red capsicum
• 1 medium zucchini • ½ cup frozen peas
• 50g dried cranberries
• 50g pistachios, shelled • 1 ½ cup pearl couscous • 1 stock cube
• 2 cups + 2 tbsp boiling water • 2 tbsp extra virgin olive oil, plus extra to serve • 1 lemon • 60g spinach/rocket • 75g fetta
• Small bunch of fresh basil • Cracked pepper to season
Method
1. Dice vegetables into small even cubes. 2. Warm 1 tbsp olive oil in a large pot. 3. Add garlic, oregano, chilli and stir. 4. Add vegetables and stir. 5. Add chickpeas, stock, couscous, 1 tbsp olive oil and water. Simmer on medium heat with lid on for 10 minutes until water is absorbed, stirring as needed.
6. Remove pot from heat.
7. Roughly tear some basil leaves and mix through couscous along with the cranberries, pistachios, a generous drizzle of olive oil and juice from half the lemon.
8. Prepare spinach/rocket in a bowl, adding the couscous on top.
9. Crumble fetta on top and garnish with extra basil, lemon wedges, and cracked pepper.

THE cruise ships are back and the world’s oceans are ready for the masses again.
Many have missed the cruising lifestyle and being pampered passengers.
I like cruising and have been on four cruises ranging from three to seven days.
But I can also see where the holiday lifestyle and abundance of food and drink can add to waistlines while at sea.
When asked, I give the following advice to anyone who is about to walk the gangplank: make sure you eat all or at least the majority of your meals in the dining rooms.
The nature of the way the courses are served and the measured meals mean you will have plenty to eat and drink.
The buffet is often more accessible, and meals are served for a much longer period. But it is too easy to overstay in the buffet area.
Use the stairs onboard if you can.
This is a perfect opportunity for you to burn up some calories and get in some incidental exercise.
Lastly, go to the onboard gym once a day
If the gym is not your thing, then do a few laps of the upper deck and get some sunshine at the same time.

WHAT A YEAR FOR GROWING GREENWOOD FOREST GLEN
This year has proven to be highly eventful for the boutique over-50s lifestyle community of Greenwood Forest Glen.

It’s a cliché but “when life gives you lemons, make lemonade”. This is often not as easy as it sounds, but the Silver Fox did just that.
Shocked by a stroke at the young age of 38 and suffering from depression, Neil Collie was determined to get better.
It started with a walk, then running with friends and led to a new life – not just for himself but also for so many he comes into daily contact with.
Completing the Sunshine Coast Marathon was a highlight and Neil realised that the activity, coupled with chats and laughter, was his best medicine.
It was a medicine he wanted to share, and the Silver Fox Initiative was born: a charity supporting mental health and wellbeing through walking and talking.
“Good mental health starts with a chat,” Neil says. “You may not be able to solve the problem but you need to start the conversation”.
As a support worker at Suncare, Neil puts his life lessons to work: “I encourage my customers to appreciate the little
things in life – you can miss them so easily. And working for Suncare is so relevant for me. We need to always stay caring – for our customers, our colleagues, our friends and ourselves.”
Neil’s favourite run was 250km over six days in the Simpson Desert: “And even then, talking was what got us through.”
Neil believes it only takes a small action to make a big difference – like starting the Silver Fox Initiative.
“We meet every Sunday and everyone is welcome. We offer a safe space for people to find friendship and support. Some of us run, some walk. But everyone knows we are here for each other”.
Neil was recently nominated for the 2023 Sunshine Coast Australia Day Award in the Citizen of the Year category. And having met Neil, it is easy to understand why he was nominated. He is humble, kind, strong and determined to make others’ lives better. You are a winner, Neil!

The cardiovascular system is remarkable. It delivers oxygen and nutrients to all the cells in your body, then collects and removes carbon dioxide and waste products.
Your heart has a lot of work to do. It pumps about five litres of blood a minute. But did you know it has some help?
Calf muscles pump deoxygenated blood back to the heart. They have one-way valves that stop blood flowing back to pool in your lower legs.
Don’t wait for cold feet – help yourself to better circulation:
1. Get out of the chair: A review of 22 studies of the lifestyles of older adults found they spent 65-80 per cent of their waking hours sitting, reclining or in low-energy activities. Set a timer for 30 minutes when you sit down. When the timer goes, stand up and move for a few minutes.
2. Calf raises: Stand with feet shoulder width apart. Hold a wall or stable surface if needed. Lift heels off the ground and drop them down again. Do this quickly, 10 to 15 times. Build up to three sets and repeat three times a day.
3. Walk often: Gradually extend the time you walk each day. Look for ways to build incidental walking into your routine – walk a dog or park a block from your favourite coffee shop.
4. Chair squats: Stand sideways to a dining chair with feet shoulder width apart. Hold the chair and lower into a squat. Take care knees stay behind toes and the spine stays upright. Do this squat slowly and mindfully. Start with 10 and work up to three sets, three times a day.

• Monitor your skin between checks

• Keep a regular meal pattern: Skipping meals (especially breakfast) means you’ll be more inclined to reach for lessnutritious food choices later. Try to limit snacking on ultra-processed foods between meals.
• Portion size: Be mindful of your portion sizes and choose fruit or vegetables with each meal.
• Hunger awareness: Slow down and mindfully enjoy the festive foods. Drink water with meals and let your food settle before thinking about seconds.
• Alcohol: Moderate alcohol to allow a maximum of four standard drinks in a day, and always have still or sparkling water available.
• Physical activity: Maintain a routine of enjoyable physical activity.

Opening our eyes to snow blindness
The festive season is upon us and I expect many will be travelling to cooler regions.
We may not think twice about sun protection and wearing sunglasses here in the Sunshine State. For those headed to the ski slopes, though, snow blindness is a real threat to vision. Four factors increase a skier’s risk of eye damage:
1. Sun reflecting off snow can be harsh.
2. Ultraviolet (UV) radiation can be high on cloudy days.
3. UV exposure increases with elevation.
4. The cold, dry and windy conditions on the slopes contribute to snow blindness symptoms.
Snow Blindness is real. It is a form of photokeratitis: a painful eye condition caused by exposure to UV rays reflected from ice and snow. The risk especially increases at high elevation. In addition, severe cold and dryness can contribute to the condition.
Snow blindness can happen quickly. Symptoms may include pain, blurry vision, swelling and watery eyes.
All these conditions can be prevented by wearing wrap-around/polarised sunglasses or goggles with UV protection.

Recovery after an anterior total hip replacement
Many patients are surprised at how quickly they can comfortably ambulate after an anterior total hip replacement.
Patients are typically mobilised within hours of their surgery. Most of our patients usually rapidly progress to being independent on crutches and require them for only one to two weeks.
There are many factors that dictate how long a patient needs to stay in hospital but generally getting back to your home environment as soon as it is safe to do so is an important component of your physical, as well as your psychological, recovery.
Excessive physical activity in the first two months after a hip replacement is counterproductive. We generally recommend gentle walking and stretching.
Many patients are safe to drive after just three to four weeks and can perform most of their everyday activities within six weeks.
For patients who enjoy more extreme activities such as surfing, they should wait at least three months to return.
All patients are different, and you should discuss your specific situation with your orthopaedic surgeon.
A neurosurgical emergency
The nerves that provide motor and sensory function to the pelvic organs and legs are called the cauda equina.
They are a continuation of the spinal cord and are located within the spinal canal in the lumbar spine.
Cauda equina syndrome, occurs when there is compression of these nerves, either by osteoarthritis or a large disc herniation.
This is a neurosurgical emergency and requires surgical decompression.
Symptoms are: urinary retention and incontinence; saddle numbness including the genitals and anus; sexual dysfunction; pain or weakness in the lower limbs; and a foot drop.
Cauda equina syndrome is usually diagnosed with a neurological physical exam, MRI and CT scan and requires emergency surgical intervention to decompress the nerves and give the patient the best chance of recovery.
If left untreated, it can result in permanent paralysis or incontinence.

Iron deficiency is the most-common cause of anaemia worldwide.
It develops when the amount of iron being absorbed from the diet is less than the amount being lost.
While we naturally lose some iron each day, these losses can increase if there is bleeding, such as from heavy periods or bleeding from the bowel.
Iron is found in a wide variety of foods, but the iron from animal sources such as meat is more easily absorbed than the iron found in grains or vegetables.
While there are many health benefits to plant-based, vegan and vegetarian diets, it is important that people who follow these diets are aware of the potential for iron deficiency to develop.
Oral iron supplements can be an effective way of increasing iron stores in people who are low in iron.
They are best absorbed when taken every second day.
While iron deficiency is the most common cause of anaemia, there are other causes also.
If you suspect you may be anaemic or iron deficient, a simple blood test can help to determine your iron levels and suggest whether you may benefit from iron supplementation.
