29 Nov Nambour Christmas Street Party, 4.30-8.30pm Nambour Town Square, Nambour www.nambour.com Santa is set to pay a visit as the town centre comes alive with frivolity and festive fun. The Christmas Street Party is going to be bigger and better than previous years. The celebration will kick off with market stalls boasting an array of food and craft. The CWA will be hosting a suitcase rummage sale for

people to grab a bargain and the night will culminate with the lighting of the town’s Christmas tree. In addition to the big man in red, Australian chart topper Wendy Matthews will be the star attraction in a great line-up of entertainment. Matthews will headline a free concert in the town square alongside the Coast’s own band Mitch Davis and the Dawn Chorus. Enjoy a puppet show, face painter, balloon artist, animal attractions and free gifts for the under eights.

Roast turkey is all well and good but an Australian Christmas has to feature fresh seafood. Always go for the best quality you can afford. Select seafood that looks shiny and moist – the eyes on f sh should be clear and not sunken, while the scales should be shiny and not dry. When selecting oysters, they should look moist and plump and not sunken in the shells. Prawns should have a glossy appearance and plump eyes.

Seafood should be stored between zero and four degrees, but because our fridges are often too full at Christmas, they are not cold enough for seafood. The answer? Place 10 centimetres of ice on the bottom of an Esky, and sprinkle a handful of salt over the top to harden the ice. If you have a lot of seafood, you can create layers of ice and seafood. Stored this way, quality seafood will last two to three days.

Raspberry glazed ham Prep time: 20 mins Cooking time: 20 mins per kilo Serves: Six • ½ cup seedless raspberry jam • ½ cup cranberry juice • 300g mixed red berries • ½ cup dried cranberries • 1½ kg bone-in ham • Fresh red berries for garnish

METHOD: 1. Place the raspberry jam, cranberry juice, red berries and dried cranberries in a medium saucepan and heat

over a low heat until ingredients have combined. Bring to the boil stirring. Continue to simmer until liquid is reduced by half. 2. Remove rind from ham and use a sharp knife to score ham in a diamond pattern. 3. Place ham scored side up in a large baking pan and brush over glaze. 4. Place into a preheated oven or lidded barbecue at 180 degrees for 20 minutes per kilo, basting occasionally, until ham is brown and warm through. 5. Garnish with berries.

Shortbread Prep time: 25 mins Cooking time: 25 mins • 500g butter • 30g marzipan (optional) • 1½ cups caster sugar • 5½ cups plain flour, or as needed • White sugar for sprinkling METHOD: 1. Preheat oven to 160 degrees. 2. Cream butter, marzipan and brown sugar together in a bowl. Add 3 to 3¾ cups flour. Mix well. 3. Sprinkle board with the

remaining flour. Knead mixture for 5 minutes, adding enough flour to make a soft dough. 4. Roll to 1cm thickness. Cut into 8cm x 2.5cm strips or desired shapes using a cookie cutter. 5. Brush with water, sprinkle lightly with sugar and place on ungreased baking trays. 6. Bake in preheated oven for 20 to 25 minutes.
