CHRISTMAS TREE TRAIL Sunshine Coast Council’s Christmas Tree Trail will have 21 trees lighting up progressively throughout the region. In keeping with council’s vision for the Sunshine Coast to be Australia’s most sustainable region - vibrant, green, diverse - only environmentally friendly light emitting diode (LED) lighting is used in all of the councildecorated trees this year. Decorated trees include hoop, bunya, lilly pilly, fig and jacaranda, Norfolk pine, swamp and paper gums.

SEAFOOD - EAT IT There’s nothing better than a smorgasboard of seafood - and these tips will make sure you make the most of this special treat.

1. BUY RIGHT Fresh seafood on the table at Christmas has become a uniquely Australian tradition – but how can you make sure you are getting the best for your Christmas table? Michael and Paul at Point Cartwright Seafood have some helpful hints: • only select seafood that looks shiny and moist • eyes on fish should be clear and not sunken, while the scales should be shiny, not dry • oysters should look moist and plump and not dry and sunken in the shells • prawns should have a glossy

appearance and plump eyes • be careful about purchasing from businesses that promise to have your seafood packed and ready to go at Christmas – you don’t know when it was packed, how old it was when it was packed, or what you are getting. Best to choose your own.

2. STORE RIGHT Christmas time is normally hot, everyone’s fridges are usually overloaded with Christmas cheer, and the fridge door is opened more frequently than normal – and that can cause problems. At best, domestic fridges run at

4°C, but at this time of the year they usually operate at a warmer temperature, which is not good for storing seafood. Fresh seafood should be stored between zero and 4°C . The best way to hold large quantities of seafood is by keeping your seafood in an esky, sandwiched between two layers of ice. Place a layer of ice about 100mm thick on the bottom of an esky, if you have a handful of salt, sprinkle over the top as it will harden the ice. Place raw and cooked seafood into separate plastic bags and distribute evenly on top of the ice. Always place the

cooked seafood on top of the raw seafood. Then fill the esky to the top with ice, ensuring it’s at least 150mm thick. Filling the esky to the top removes any air gaps which can heat up and cause the ice to melt more quickly. Sprinkle some salt on top,

FESTIVE FOOD SINGAPORE CHILLI CRAB Serves four Ingredients 2 medium crabs (raw green) 10 golden shallots, sliced finely ½ cup of peanut oil 2 tsp grated ginger 3 cloves of garlic, finely sliced 3 fresh red chillies, hand chopped ½ cup tomato sauce (see accompanying recipe) ¼ cup of chilli sauce 1 tbs light soy sauce 1 tbs sugar 1 tsp salt Peanuts and basil leaves Shallots for garnish Method Wash and scrub crabs. Clean and crack into four to six pieces.

Heat wok, add oil and when hot fry crab pieces until they change colour. Turn them so they cook on all sides. Remove the crabs. Turn stove top to a low heat and fry ginger, garlic, shallots and red chillies, stirring constantly until they are cooked. Add sauce, sugar and salt and bring to the boil. Return the crabs to the wok and allow them to simmer for five minutes. Add a little water if the sauce reduces too much. Serve with rice. TOMATO SAUCE Ingredients 600g fresh tomatoes or tinned tomatoes, peeled and diced 1 tbs sugar Salt and pepper 1 red onion, diced 4 tbs olive oil 4 cloves of garlic, finely sliced 2 tbs tomato paste

Method Heat oil in pan. Add garlic and onions and fry gently for a few minutes before adding tomatoes. Stir fry for a few minutes then add basil, salt and pepper. Blend into a sauce using a stick blender.

ORANGE JUICE AND BROWN SUGAR GLAZED HAM

Ingredients 7kg cooked ham 1 cup brown sugar 1/2 cup orange juice 1 tbs Dijon mustard Whole cloves to decorate Method Preheat oven to 180 degrees. Combine sugar, juice and mustard in a bowl. Run your thumb under the rind of the ham to separate and remove from the fat. Using a sharp knife, make diagonal cuts over the ham to create a diamond pattern. Press whole cloves into the ham to decorate. Place ham onto a wire rack and into a roasting tray. Pour half the orange mix over the ham and brush with a pastry brush. If ham has a bone, cover it with foil to prevent

it burning Bake and use a pastry brush to baste with remaining orange mix every 15 minutes for about an hour until the ham develops a golden caramel colour.
