Festive food

Christmas is all about sharing the love, and nothing brings people together better than a shared meal. Here is some inspiration for the holidays.

METHOD 1. Draw 12 circles, each 9cm in diameter, on a piece of baking paper, turn it upside down and place it on a baking tray. (Tip: if using a fan oven, use a bit of canola oil spray to stick the paper to the tray.) 2. Whip the egg whites and lemon juice into soft peaks.

MINI PAVLOVAS RECIPE SUPPLIED BY MAROOCHY RSL. Serves 12. INGREDIENTS • 4 egg whites • ½ tsp lemon juice • 225g caster sugar • 30g cornflour • 1 tsp white vinegar • 300ml thickened cream • 30g icing sugar • 1 vanilla pod • 300g frozen berries of your choice • 30g caster sugar • 12 serves of fresh berries • Freeze-dried raspberry powder to garnish TIP: Maroochy RSL executive chef Gareth Little loves a good pavlova! He says the freeze-dried raspberry powder is available online. It is a flavour sensation and looks great, but the dish is still a winner without it.

3. Mix 50g of the caster sugar into the cornflour and set aside. Gradually add the rest of the sugar to the egg whites while whipping. Continue to whip until stiff peaks form. Lower the mixer speed, add the cornflour/caster sugar mix and the vinegar. 4. Spoon the meringue into a piping bag with a large round nozzle. Pipe domes into the 12 circles on the baking paper. 5. Bake at 105°C for an hour. The outside should be crisp, but the inside should remain the texture of a marshmallow. Allow to cool, but do not refrigerate. 6. To make the Chantilly cream, scrape the vanilla pod seeds into a bowl and whip the cream with the icing sugar. 7. To make the compote, cook the frozen berries with the caster sugar in a small pan until the sugar dissolves. Chill. 8. Cut the berries into attractive shapes. Fold each portion of fresh berries into a spoonful of the cold compote. 9. To assemble the dish, pipe a portion of the cream into a serving bowl and place the berries around. Put the pavlova dome on top and dust with the freeze-dried raspberry powder.

BAKED SALMON WITH DIJON GLAZE INGREDIENTS • 4 salmon fillets • 2 tbsp olive oil • Salt and black pepper, to taste • ¼ cup honey • 2 tbsp Dijon mustard • 1 tbsp minced garlic • 1 tbsp lemon juice • Dill or parsley to serve METHOD 1. Preheat oven to 190°C. 2. Place salmon on a baking paper- lined tray. Drizzle with oil and season with salt and pepper. 3. Make the glaze by mixing honey, mustard, garlic and juice. 4. Generously brush the salmon with the glaze and bake for around 20 minutes, ensuring the salmon is cooked through. 5. Serve with lemon wedges and chosen herbs.

Nothing says Christmas like prawns. But how exactly do you calculate how many you need to buy for Christmas Day? The experts at Rockliff Seafoods provide the following guide.

If prawns are not the main item being served for Christmas lunch or dinner, then 250g per person is a good guideline to follow. When buying seafood, keep the following in mind: Know how to buy the right products. Only select seafood that looks shiny and moist; prawns should have a glossy appearance and oysters should look plump. Learn how to store seafood correctly. It’s summer, which means it’s hot. Domestic fridges run at around 4°C, but at this time of year – with the fridge overstocked with food – they usually operate at a warmer temperature, which is not good for storing seafood. The best way to store large quantities of seafood is to keep it in an esky between two layers of ice. Always store cooked and raw seafood in separate bags. If you need to store prawns for a longer period, consider freezing them. Properly seal them in an airtight container or a freezer bag and label them with the date to monitor freshness.

INGREDIENTS For the base: • 24 Oreo cookies, broken into pieces 85g unsalted butter, melted • 40g Cadbury Old Gold Dark Chocolate, finely chopped • 1 tsp vanilla bean paste For the filling: • 1 cup thickened cream • 200g Cadbury Old Gold Dark • 35g unsalted butter, chopped Chocolate, finely chopped • 1 tsp cocoa powder • 200g Cadbury Dairy Milk, • 1 box of chocolates (we used Lindt finely chopped Prestige Selection) METHOD 1. Preheat oven to 200°C (180°C fan-forced). Place the Oreos, melted butter and chocolate in a food processor and pulse until a moist crumb. Place the mixture in a 34.5cm rectangular tart tray, pressing the mixture firmly against the bottom and sides. Place the tray in the oven and bake for five minutes, allow to cool, then place in refrigerator for 30 minutes to firm up. 2. For the filling, place the chocolate and vanilla in a heatproof bowl and set aside. Heat cream and butter in a saucepan over medium heat until just starting to boil. Remove from heat and pour over chocolate mixture. Stir until combined, then pour onto the Oreo base. Refrigerate for at least four hours or overnight. 3. Dust tart with cocoa powder and top with chocolates of your choice.

SPICY PRAWNS WITH CUCUMBER RECIPE SUPPLIED BY AUSSIE CAUGHT PRAWNS. INGREDIENTS • 1 tsp minced garlic • 1 ½ tsp soy sauce • 1 ½ tbsp sriracha sauce • ¼ tsp dried chilli flakes • 1 tsp peanut oil

• 2 tsp caster sugar • 8 Mooloolaba king prawns • 1 Lebanese cucumber • Cracked black pepper • Kewpie mayonnaise • Micro herbs to serve

METHOD 1. In a bowl, combine soy, sriracha, oil, sugar, garlic and chilli. Add prawns and marinate in the fridge for one hour. 2. Barbecue or grill the prawns until cooked through, around three minutes on each side, depending on size. 3. Meanwhile, slice cucumber rounds and dot a small amount of kewpie on each piece. 4. Place prawns on the cucumber, sprinkle with black pepper and top with the herbs.

INGREDIENTS • 1 leg ham (around 3.5kg) • ½ cup honey • ½ cup brown sugar • ¼ cup Dijon mustard • 2 tbs orange juice

• ½ tsp ground cloves • ½ tsp ground cinnamon • Whole cloves (for decoration) • Pineapple rings and maraschino cherries (optional, for garnish)

METHOD 1. Preheat your oven to 180°C. 2. Place the ham in a large roasting pan, cut side down. If your ham is not pre-sliced, you can make shallow cuts in a diamond pattern on the top of the ham to allow the glaze to penetrate. If you like, you can decorate the ham by pressing whole cloves into the ham in a decorative pattern. 3. In a small saucepan, combine the honey, brown sugar, Dijon mustard, orange juice, ground cloves, and ground cinnamon. Heat the mixture over low heat, stirring constantly until the sugar has dissolved and the glaze is well combined. Let it cool for a few minutes.

4. Brush a generous amount of the honey glaze over the ham, ensuring that it gets into the cuts that you made. While the ham is baking, baste it with the remaining glaze every 20-30 minutes. 5. Cover the ham with aluminium foil and bake in the preheated oven for about 45 minutes per kilo. During the last 30 minutes of cooking, remove the foil to allow the glaze to caramelise. 6. If you choose to garnish the ham, place pineapple rings and maraschino cherries around it during the final 15-20 minutes of baking. 7. The ham is done when it reaches an internal temperature of 60°C. Use a meat thermometer to check the temperature in the thickest part of the ham. 8. Once the ham is done, remove it from the oven and let it rest for about 15 minutes before carving. Carve the ham and serve with the remaining honey glaze on the side for drizzling. Add a little greenery for presentation.
