hey say that Christmas is really just for children, but I don’t see why us adults have to miss out on the fun. And if it is fun you are after this festive season, there are plenty of events to keep you entertained, places to visit and great food to eat in our region. Don’t know where to go and what is happening? At MWP we have done the hard work for you, compiling everything you’ll need to know about enjoying a Sunshine Coast Christmas, with this special supplement. To help get locals and visitors into the spirit, we have a list of Christmas events, which starts over the page. The keep the kids – big and small – occupied, our school holiday fun guide, which starts on page 13, is a great place to start. If it’s your turn to cook and you are stuck for ideas, don’t despair – on page 24 we have food tips and recipes. But if you tend to burn toast and have decided someone else can cook the turkey for you, head to page 30 for our eating out guide. Already have your New Year’s Eve party frock sorted but not sure where to head out? Fireworks should be on your list, and on page 31 we have a list of those too. A message from your Mayor Celebrate summer by getting involved in the 2012/13 Sunshine Coast Festive Season program. Sunshine Coast Council supports festive season events that ref ect the cultural values, diversity and lifestyle of our communities – and the packed program of more than 70 fun, family-friendly activities held throughout December and January is sure to please. I encourage you to: • follow the Christmas Tree Trail with 32 trees lighting up across the region; • f nd your creative side at the green arts workshops; • and take part in local community carols and festive events. This year the Sunshine Coast Christmas Tree Trail will dazzle and delight, with 32 trees lighting up throughout the region. Decorated trees range from hoop pines, bunyas, Norfolk pines and lilly pillies, to f gs, jacarandas and paper gums and can be found at the locations listed below. HAMMING IT UP This delicious glazed ham recipe is easy to prepare and will make all the difference on the big day. Ingredients: 4.5 to 5 kg leg of Australian ham 60 cloves to stud ham ¾ cup orange juice ½ tsp nutmeg 1 cup honey 1 cup orange marmalade, sieved ¼ cup Grand Marnier or whisky To serve: Roasted vegetables Mustard Cooking Instructions: 1. Pre-heat oven to 170°C. 2. Using a sharp knife, remove the rind (skin from the ham) carefully to expose the fat. 3. Score the fat into diamonds and

stud the ham with cloves. 4. Combine the orange juice, nutmeg, honey, orange marmalade and Grand Marnier into a small saucepan and heat over a low heat until ingredients have dissolved. Continue to simmer until liquid is reduced by half. 5. Place ham into a large baking dish and brush with the glaze. 6. Bake ham in the pre-heated oven at 170°C for 1 hour, basting frequently. 7. Fresh seafood on the table at Christmas has become a uniquely Australian tradition. Quality is the highest priority when looking for seafood. • Select seafood that looks shiny and moist. • Eyes on f sh should be clear and not sunken, while the scales should be shiny and not dry. • Oysters should look moist and plump and not dry and sunken in the shells. • Prawns should have a glossy appearance and plump eyes.

Seafood should be stored between zero and four degrees Celsius, but our fridges are often too full at Christmas, and not cold enough for seafood. Place 10 centimetres of ice on the bottom of an Esky, and sprinkle a handful of salt over the top to harden the ice. In a sealed plastic bag, evenly distribute your seafood on top of the ice. If you have a lot of seafood you can create layers of ice and seafood. Stored correctly, good quality seafood will last two to three days.

Paul’s Barbecue Moreton Bay bugs with lime butter sauce: Large Moreton Bay bugs (raw or cooked) are cut in half lengthwise. Wash, then put a teaspoon of lime butter in the head cavity and smear some over the f esh. Barbecue until cooked or warmed through, if using pre-cooked bugs. Add a blob of lime butter on top of warm f esh before serving with a fresh salad.

CHRISTMAS BREAD AND BUTTER PUDDING Plum pudding and mince pies are hard to beat, but this fancy take on bread and butter pudding makes a delicious change. 12 croissants 1tbs butter 2 tbs almond meal 1 jar fruit mince 30ml brandy

Custard Mix 4 eggs 4 egg yolks 400ml milk 300ml cream 175gm caster sugar

Cut croissants into slices and place a layer onto the bottom of a large buttered baking dish. Sprinkle 1 tablespoon of almond meal and dot fruit mince over croissants with a splash of brandy. Repeat process. Finish with a layer of croissants. Beat eggs; add milk, cream and sugar and whisk until combined. Pour over croissants. Allow to rest for 30 min – this makes the pudding light and not stodgy.

Cover the dish loosely with foil, place in the oven at 180°C and bake for 15 minutes. Remove the foil and bake the pudding uncovered for a further 15 minutes until custard is set and pudding is golden. Serves 6-8. Courtesy of The Pastry Chef Alexandra Headland
