Welcome to Nashville! On behalf of the NACUFS 2017 National Conference Task Force and the Southern Region, I am excited to welcome y’all to Nashville, where we will “Band Together” for four exciting days of education, food, and networking. Over the last year, the conference task force has planned an exciting and motivating conference; working extremely hard to provide you with exceptional educational sessions, some fascinating southern cuisine, and endless networking opportunities with peers and friends. The Music City is the perfect back-drop and site for our 2017 conference, providing you with ample opportunities for Banding Together throughout the week. Educational programming will include three dynamic speakers: Steve Donahue, author and storyteller, “theme weaving” us through the week; Chef Sean Brock, a James Beard-Best Southeast Award winning chef and author, who will share his experience on southern food history and his food philosophy; and finally, Banding People Together with “chords of collaboration”, where their rockstar, behaviorist, and strategist will present an interactive conversation on how to come together and work in harmony for better outcomes. I highly encourage you to meet and interact with our industry partners at Showcase. This year’s showcase provides a record setting 444 booths, where we will have the opportunity to learn more and sample the latest product development ideas. NACUFS 2017 NATIONAL CONFERENCE GENERAL SESSIONS Thursday, July 13 • Balancing Passion VS. Stepping Away from the Stove: Lessons Learned Outside the Kitchen CHEF SEAN BROCK Chef Sean Brock joined the Neighborhood Dining Group (NDG) as executive chef at McCrady’s in Charleston in 2006. In 2010, Brock opened Husk (also in Charleston) which was named “Best New Restaurant in America” by Bon Appétit in 2011, followed by Husk Nashville in 2013, named one of “America’s Best New Restaurants” by Esquire in 2014. Husk is a celebration of Southern ingredients, only serving food that is indigenous to the South. In October 2014, Brock opened Mexican-inspired Minero in Charleston. A second Minero opened in Atlanta at Ponce City Market in 2015.
Friday, July 14 • Finding Your Collaborative Groove BANDING PEOPLE TOGETHER This music-filled high-energy session illustrates an entirely new way to view collaboration that shifts participants’ mindset from activity based to a defined process that can be learned, taught, developed, and measured. Banding People Together is a super group of rock stars, behaviorists, and strategists that help individuals, teams, and organizations learn how to collaborate effectively to get more done and feel great doing it. Participants will: • Learn how the relationship between voice, contribution, and commitment impacts productivity and efficiency. • Understand the four Collaborative Behavioral Styles and how to modify your communication for a higher level of engagement. • Learn a common language to discuss people and process matters related to collaboration and engagement.
Saturday, July 15 • Tell an Epic Story STEVE DONAHUE In this electrifying session, Steve brings his ThemeWeaving® to a finale blending narratives from his epic journeys with stories from our careers and this conference. Using excerpts from his Sahara adventure and a 72,000 mile global odyssey, Steve will help us see life and work as an unfolding epic tale. We will learn how stories create reality and determine our results and why narrative often trumps logic in many of the most important decisions we make. Steve will show us why our work is truly epic and how to use that narrative knowledge to be the heroes and heroines of our personal and foodservice stories.

SUPER SESSIONS: THURSDAY, JULY 13 Attend one of two concurrent Super Sessions. Build an Epic Organization • Steve Donahue
This high-energy, interactive session will positively disrupt how you imagine your job and motivate others. We will learn how to incorporate the five components of an epic story into our foodservice culture to boost teamwork, elevate effort and increase job satisfaction. Breakthroughs in brain science are revealing the extraordinary power of stories and how narrative is an essential component of human consciousness. Member Forum Roundtables
We have moved and expanded the member forums! Right here at the beginning of the conference make sure you Band Together with your peers. Compare notes, get new ideas, network, and get to know your colleagues. The member forums are divided into two 30-minute roundtable sessions. Each session will have a topic and a moderator to keep the valuable exchange of ideas going. This will be an extremely interactive session of ideas. Don’t miss this chance to meet your counterparts from other schools. The roundtable member forums will include hot topics in a number of areas: c-stores, sustainability, contract managers, directors, nutrition, marketing, catering, and more!
CULINARY CHALLENGE Come one, come all to the 17th NACUFS Culinary Challenge! Pans will be sizzling, knives will be moving with speed and precision and competition will be fierce. Six contestants chosen in regional challenges earlier this year face off and race against the clock in this American Culinary Federation-sanctioned contest. The challenge is classified as a Category W (Customized Wildcard Competition). Be sure to stop by and cheer for your region’s competitor! Individual competitors will have 60 minutes to prepare four portions of an original hot entrée, featuring the mandatory ingredient of bone-in pork loin, to create a nutritionally balanced plate. In addition, the competitors will be judged on two classic knife skills. Three ACF-approved judges will select the winners. Contestants will be judged on the taste of the finished product, the demonstration of cooking skills and culinary techniques, the practice of organizational skills, and sanitation principles. Tour of Jack Daniels Distillery Departure Point: Omni Nashville Hotel Lobby Meet at: 9:00 a.m. Tour size is limited to 48 participants. Join your colleagues on a bus trip through central Tennessee that culminates with a tour of the Jack Daniel’s Distillery and lunch at Barrel House BBQ. This unique look at an iconic Tennessee whiskey distillery will allow people to see bourbon being produced and learn the process of what makes Jack Daniels unique in the whiskey industry. After the guided tour is completed, you will get to sample several of the whiskeys produced on site. This trip includes a traditional BBQ lunch plate and sweet iced tea for the perfect southern meal to compliment the tour.
Vanderbilt University Campus Dining Experience; Tour of Vanderbilt Food Service Venues Departure Point: Omni Nashville Hotel Lobby Meet at: 9:30 a.m. Tour size is limited to 25 participants. Start your time in Nashville with a tour of the various food service venues that are located on the Vanderbilt campus. Vanderbilt Campus Dining staff will showcase their various dining halls and retail facilities as you take a walking tour of the historic Vanderbilt campus. Learn about the dining philosophy that drives this organization to serve the wide array of customers that look to them daily for a varied food experience. This tour includes a catered lunch provided by the chefs that help drive the culinary experience at this nationally-known university.
The Gaylord Experience; a tour of the Gaylord Hotel and Resort Catering and Food Service Operations Departure Point: Omni Nashville Hotel Lobby Meet at: 10:00 a.m. Tour size is limited to 48 participants. This tour offers the unique opportunity to learn about catering and food service delivery from the perspective of the private marketplace. Food experiences at a high-end hotel and resort require special care and customer service applications that are unique to the varied needs of its customers. Learn about large scale catering events, the training needs of an organization dedicated to high end service, and enjoy a look at the facilities required to operate in this unique environment. The Gaylord staff will share their perspective and philosophy of delivering exemplary service and show you what it means first hand as you get a behind the scenes tour of the resort. Lunch will be provided at the completion of the tour so you can experience their food first hand.
