Pizzelli I’d rather eat these than any other cookie, ever. It does take some practice to get them just right, and you need to have a pizzelli iron (similar to a waffle iron). Ingredients: 3 c. Flour 4 tsp. Baking powder 6 Eggs 1 ½ c. Sugar 2 Tbsp. Vanilla 1 c. Margarine, melted Directions: In a small combine flour and baking powder; set aside. Beat eggs in a large bowl. Add sugar to eggs and beat until blended. Add vanilla and margarine. Slowly add dry ingredients to wet and mix thoroughly. Drop 2 heaping teaspoon onto hot iron (1 on each cookie form). Close cover and cook until


lightly golden brown, approximately 20-30 seconds. Remove cookies from iron and let cool on a flat surface. Trim edges; sprinkle with powdered sugar. Variations: o Instead of powdered chocolate drizzle with melted chocolate and let harden. o Substitute anise for vanilla. o Add 1 cup finely chopped nuts to batter. o Cookies are soft when they first come off the iron. Shape them into cones or small cups (use your muffin pan as a form) and use them to serve ice cream or dessert. Your Variations:
