The carols are all over the airwaves; every other advertisement on TV is for paint – especially red, green and white (read our feature on colour themes) – or ham specials; toys have taken over the merchandise market; all of a sudden, social media bombards you with jokes and memes featuring a fat, bearded man and when you look closely, nature gets in on the action by turning some green leaves white and green leaves red.
You can’t escape it, nor do you want to. Christmas is in full swing! So, as you hum or sing along with Mariah Carey, that joyfulness bends your mind towards preparing for the 2024 season of eating, drinking and making merry. Fact check: Considerable effort will be needed to get your home ready as well.
From a fresh coat of paint to remodelling or even adding a new space, your home will become the centrepiece of yuletide. After all, that’s where the spirit of Christmas is manifested and enjoyed. And that freshness of new curtains, mats and ornaments is supposed to last at least a year, so now is not the time to skimp on readiness.
For those living in coastal areas, sprucing up will have to go a bit further. You must consider the harshness of the elements and their effect on exteriors. As a small island, we are constantly exposed to the effects of humidity and salty air. Our architectural culture takes this into consideration as we build structures that combat these natural challenges. When designing for coastal living, the first priority is resilience. Best said, “Barbadian architecture is a blend of indigenous Caribbean, European, and African influences. This mix is reflective of the island’s colonial history, climate, and lifestyle. The Chattel House is the most iconic architectural style in Barbados. These small, wooden homes were traditionally built by freed slaves after emancipation. However, today, see elements of these houses characterised by lightweight wooden walls with decorative wooden/composite trim and steep gable roofs with overhanging eaves to provide ventilation and protect from tropical rains.
Caribbean Vernacular Roofing is characterised by steeply pitched hip or gable roofs designed for the heavy tropical rains and hurricanes that frequent the region. Wood shingle roofs are common because they are resistant to the salty air of the coast, and the steep pitch allows for quick water runoff during heavy rains.
Sustainable Materials and Techniques. With growing attention to environmental sustainability, many modern coastal homes in Barbados are designed using eco-friendly materials. There has also been an increase in Green Practices such as the integration of rainwater harvesting systems, solar energy and the use of natural ventilation strategies instead of air conditioning.“In summary, the architecture in Barbados reflects the island’s cultural heritage, climate, and coastal lifestyle. Consider using corrosion-resistant materials like stainless steel, aluminium and galvanised metal for fixtures, roofing and hardware to significantly reduce deterioration. Using moisture-resistant materials such as marine-grade plywood and treated timber can also protect homes from humidity and water damage. Concrete and coral stone are also excellent choices for structural elements as they resist moisture and salt infiltration.”

hen it comes to celebrating Christmas in Barbados, the food on the table plays a central role.
The festive spread often includes well-known local traditional dishes such as ham cutters, jug-jug, green peas and rice with stew, and of course, the iconic great cake. While these dishes on their own are rich and flavourful, they can be elevated further when paired with the right drinks.
Jamaal Bowen, Barbados Bartender of the Year in 2006 and Caribbean Bartender of the Year in 2012, has a wealth of knowledge when it comes to creating drinks that enhance rather than overpower the flavours of food. As the Director of TopShelf Academy Inc., he has trained many in the art of bartending, and his experience as Barbados Bartender Coach from 2013 to 2017 speaks to his deep understanding of flavour profiles. For this Christmas, he suggested several cocktails that pair beautifully with traditional Barbadian holiday dishes.
Traditional Ham Cutter Paired With Bring Ma Collins (Doorly’s 3-Year Old Rum, Guava Puree/Nectar, Lime Juice, Dash Cinnamon Syrup, Soda Water)
Bowen explained that the key flavours often stem from clove and pineapple when it comes to the traditional Barbadian ham. These ingredients adorn the ham while it bakes and create a sweet and savoury balance. To complement this dish, Bowen recommended the Bring Ma Collins, a cocktail that uses Doorly’s 3-Year-Old Rum, guava purée or nectar, lime juice, a dash of cinnamon syrup, and soda water.
“The guava in the drink pairs perfectly with the pineapple, while the cinnamon mirrors the clove,” Bowen said. He explained that the choice of Doorly’s 3-YearOld Rum is deliberate, as it allows the cocktail to blend seamlessly with the ham, enhancing its flavours without overwhelming them. “We didn’t want a rum with too much character, just enough oak profile with a hint of pineapple and coconut,” he added. The Bring Ma Collins is
a twist on the classic Rum Collins, served tall with soda water, which makes it refreshing to the palate—an ideal contrast to the richness of the ham.
Jug-Jug Paired With Festive Thyme (Old Brigand Rum, Kola Tonic, Thyme & Cumin Syrup, Lime Juice)
Jug-jug, a hearty dish made from guinea corn, salt meat, pork, and peas, is a staple on many Christmas tables across Barbados. Its bold and rich flavours, Bowen noted, call for a cocktail that can stand up to the dish without clashing. His recommendation? The Festive Thyme, a savoury and citrus-forward drink made with Old Brigand Rum, kola tonic, thyme and cumin syrup, and lime juice.
“This is a dish with a lot going on, so the cocktail needs to cut through the density of those flavours,” Bowen explained. The kola tonic provides a unique sweetness, while the thyme and cumin add a savoury complexity. “Thyme and cumin are often found in Barbadian kitchens, and they add a full-bodied character to the drink that complements the jug-jug.” The lime juice introduces a refreshing citrus element, ensuring that the cocktail doesn’t get lost

Green peas and rice is often served as a side dish to a variety of stews during the Christmas season. Whether it’s paired with pork, beef, chicken, or fish, this dish serves as a versatile base for many meals. To accompany it, Bowen suggested Not Granny’s Shandy, a cocktail that merges Bajan 1966 Rum, falernum, a dash of grapefruit juice, beer, and homemade lemonade.
“This cocktail is tailored more towards the stew,” Bowen explained, as the stew is the main source of flavour, while the rice and peas act as a blank canvas. The falernum and grapefruit juice bring a touch of citrus and sweetness to the drink, cutting through the richness of the stew. “The dry notes of the beer combined with the lemonade’s slight sweetness and citrusy kick work well to cleanse the palate,” Bowen added. The drink is a refreshing alternative to the heavier beverages that are often served with these types of meals, ensuring that the stew’s flavours are highlighted without being weighed down by a thick or overly sweet drink.
For dessert, there’s no better choice than the beloved great cake. While sorrel is often the go-to drink for this dish, Bowen decided to take a different approach, recommending Special Kinda Coffee. This cocktail, made with Mount Gay Black Barrel Rum, homemade mauby bark syrup, freshly brewed coffee, and Angostura cocoa bitters, offers a warming and rich experience to complement the cake.
“Mauby is underutilised in cocktails, but its bitterness works well here,” Bowen said. He noted that most people think of mauby syrup mixed with water, but when made from mauby bark, it takes on a more complex flavour profile. The Mount Gay Black Barrel Rum provides spice notes that blend beautifully with the mauby, while the coffee introduces a floral, roasted note. “This drink works with the cake’s dried fruits, and the cocoa bitters add another layer of complexity,” Bowen explained. The Special Kinda Coffee can be served hot, topped with whipped cream, or cold, shaken over ice and served in a cocktail glass decorated with coffee beans—perfect for any occasion.

LOWER COST OF HISTORIC BUILDING REFURBISHMENT

Repairs and adaptive reuse of old buildings was a routine practice in Barbados in “the old days”; it made obvious sense. The older schools began as residences and old Bridgetown houses became hotels and shops. The central building at The Lodge School was a plantation house, then The Chaplain’s Lodge for Codrington College. Mangrove Lodge on Roebuck Street became Harrison College, Grassmere became St Michael School, and so on.
There’s a recent myth that repairing and restoring old buildings is more costly than building anew. But nothing could be further from the truth. The misleading phrase “Throwing good money after bad” is often heard when repairing buildings. It was used to justify replacing the Geriatric Hospital at a huge cost. Some of this relates simply to a trend for “all things new”. In conducting research for the Barbados National Trust over some 20 years, I have ample evidence that restoration is usually much cheaper than building anew.
In addition to saving substantial costs, restoration has additional value. First, the reuse of materials saves on new materials, especially imported ones, thus saving foreign exchange. Secondly, it can be more labour-intensive, which supports employment while saving time as foundations, walls and maybe good roofs are still intact! And thirdly, it preserves the more attractive traditional designs of our distinctive heritage.
These benefits were made dramatically by the Barbados Light and Power Company when they proposed demolishing their historic headquarters building at Garrison Hill. Architect Andrew Steel compared the feasibility of restoration with internal re-design to provide more effective office space. The BL&P accepted his recommendations and reported in their Annual Report that the magnificent restoration came in at 60 % of the estimated cost of the first proposed new building! They won universal acclaim and a National Trust Restoration Award.
A similar experience was seen at The Lodge School in the mid-60s when the World Bank consultants and Ministry of Education proposed demolishing the Chaplain’s Lodge (now Headmaster’s Office) and Boarding Establishment. Inspection found no structural problems, and the entire complex was restored for the same quarter million dollars

The UNESCO property, Historic Bridgetown and its Garrison includes a dozen important derelict buildings – half at the Garrison. The National Trust has lobbied both for the restoration and re-use of these and other treasures. Restoration not only saves money but foreign exchange, and improves the environment and our World Heritage site.
All of the buildings described below were in very poor condition, after years of neglect, and most were abandoned for years.
Hastings House (1830s) was restored in 2012. Floors were gutted throughout, partial roof replacement, new double entrance portico and staircase, major restoration work out and in, with complete rewiring, A/C, plumbing, bathrooms and redecoration: cost - $204/sq. ft.
Verona (1830s) at Bank Hall was completely restored in 2013 by Government. Bush and trees were cleared, roof replaced, re-wiring, new plumbing, AC, fire alarms, security systems and generator, with government labour costs included: cost$220/sq. ft.
The Lodge School’s original classrooms of 1829 were restored in 2013. It was a major, authentic restoration. Removing plaster and pointing rubble and block coral stone, replacing staircases, replacing neo-gothic window tracery, internal remodelling, state-of-the-art office fittings, redecorating, re-wiring and plumbing with new restrooms, roof treatments: cost - $221/sq. ft
George Washington House (1720 / 1780s), The Garrison restored in 2006, was a major restoration, with special features,
restoring authentic detail, with demolition of modern additions. Damp provided a special challenge, but it cost only $302/sq. ft.
The Nightingale Nurses Home (1936), Jemmott’s Lane was restored in 2013 for the new Teaching Complex, Faculty of Medical Sciences. A new roof, replacing an asbestos roof, internal modifications for teaching, library, clinical laboratories, offices, elevator, new staircases, facilities for disabled, rewiring and extensive new bathrooms: cost - $308/ sq. ft.
These derelict buildings were restored and put to full use with great savings, from 60% to 80% of a comparable new building at that time, but with the advantages of foundations, sound walls and attractive facades preserved.
It’s worthwhile comparing a modern building on a greenfield site, built a few
years earlier – the new Medical Faculty Building at the UWI, Cave Hill (2008), a building with very large rooms, two floors with partial laboratory fittings, restrooms, an elevator, A/C and a large lecture theatre cost $464/sq. ft.
In conclusion, there is a popular misconception that restoring old buildings is too expensive and not cost-effective. However current building costs for modern domestic buildings (residences) are between $300 and $400/sq. ft, although luxury villas are closer to $600 to $800/sq. ft, all far exceeding the examples above. Commercial buildings are also more costly, at $500 to $800/sq. ft, depending on the finish, elevators, A/C, etc.
These historic buildings were abandoned for years, except for
the poorly maintained Lodge School building. They have had major restoration costing between $200 and 300/sq. ft; Hastings House, Verona and the Lodge School building – all three ancient coral stone buildings some 200 years old and badly neglected – came in at around $200/sq. ft – less than two-thirds the cost of a replacement new building! And these buildings, with their two-foot-thick walls and higher ceilings, are much cooler, have a long life compared with many modern structures, and provide aesthetic, historic and other additional value.
The case for cost-effectiveness is clear, with the evidence of these five historic buildings –recently saved; restoration costs are still far lower than “new build”.
