Mental and dietary “junk foods” have a negative impact on a child’s physical, emotional and behavioral health. Munro, a naturopathic physician, works with children and their parents to improve these dietary and lifestyle habits. “Naturopathic physicians and Stacey Munro pediatricians agree upon limiting processed food and screen time,” she says. “Fast food and snack foods marketed to children are nearly always processed, and these foods are nutritionally devoid. an changing the intestinal bacteria be an effective, safe and tolerable way to slow the inflammatory process involved in multiple sclerosis? The Yale-Griffin Prevention Research Center, the Multiple Sclerosis Treatment Center at Griffin Hospital, and Yale University are teaming up to help address this question as part of a pilot investigational study. Multiple sclerosis (MS) is an autoimmune disease. Some studies have found that an imbalance of intestinal bacteria can lead to inflammation in the immune system. This study will provide oral capsules with fecal material (“poop”) from healthy donors to people with MS to see whether it leads to changes in their intestinal bacteria, and whether this could slow the inflammatory process involved in MS. The study team, led by neurologist Dr. Joseph Guarnaccia, is recruiting people who are 18 to 40 years old and have been diagnosed with MS. They must be able to visit Griffin Hospital eight times over four months. Those who complete the study will receive $800. The capsules, procedures and tests are free of charge. The State of Connecticut Department of Public Health is funding this study. Opioid Symposium at U of Bridgeport

he University of Bridgeport’s College of Health Sciences will hold its first annual Health Science Symposium, entitled “Building Bridges: Healthcare Solutions to Prevent Opioid Addiction and Chronic Pain in Connecticut”, on October 17. The all-day event will foster a deeper understanding of the opioid problem in the context of chronic pain, as well as promote a pragmatic discussion about treatment best practices for both pain and addiction. This important event will be a forum for approximately 150 leaders in health care, research, education, public health and policymaking who aim to improve knowledge, practice and legislation concerning pain and addiction in Connecticut. Sessions will focus on opioid abuse in patients with chronic pain, models in integrated pain care, ending addiction, supporting providers and opioid overdose reversal training, among other topics. Speakers will include experts from the University of Bridgeport, Yale University, University of Connecticut, University of Pennsylvania and AmeriCorps, as well as the Chief Medical Examiner of Connecticut. Environmental Destruction Tapped as War Crime
Twenty-four scientists from around the world published a letter entitled, “Stop Military Conflicts From Trashing Environment,” in the journal Nature, urging the United Nations International Law Commission to create protections for the environment in armed conflicts. It reads, “We call on governments to incorporate explicit safeguards for biodiversity, and to use the commission’s recommendations to finally deliver a Fifth Geneva Convention to uphold environmental protection during such confrontations.” The four existing Geneva Conventions and their three additional protocols are globally recognized treaties that establish standards under international humanitarian law for the treatment of wounded military personnel, shipwrecked sailors, prisoners of war and civilians during armed conflicts. Violating the treaties amounts to a war crime.
Conflicts Heating Up Over Arctic Reserves
Scientists warn that the Arctic is heating up much faster than the world average because of rising greenhouse gas emissions. Over the last five years, the region has been warmer than at any time since record keeping began in 1900, which is opening up untapped reserves of oil, gas, uranium, gold, fish and rare earth minerals. At a May meeting of the Arctic Council,U.S. Secretary of State Mike Pompeo warned Russia and China against “aggressive” actions in the region, saying, “This is America’s moment to stand up as an Arctic nation.” Gao Feng, the head of the Chinese delegation to the council, whose mission is to foster cooperation among Arctic countries and protect the fragile environment, says, “It’s [the U.S.] a country that stepped out of the Paris Agreement and then they’re talking about protecting the environment of the Arctic.”

Askwsar Hilonga, Ph.D., a chemical engineer and public health scientist in Tanzania, grew up dealing with waterborne diseases such as cholera that made him ill. According to the World Health Organization, he has used his scientific expertise and local knowledge to develop a purification system based on nanomaterials. While the filter is still under study, stations have been set up throughout Tanzania, mostly managed by women, to help those that otherwise would not have safe drinking water.
The National Oceanic and Atmospheric Administration estimates the algaechoked “dead zone” in the Gulf of Mexico near the mouth of the Mississippi River spanned 7,829 square miles this summer, roughly the size of Massachusetts and considerably above the 6,000-squaremile five-year average. The largest recorded Gulf dead zone to date was 8,776 square miles in 2017. Dead zones occur when algae sinks and decomposes, sucking oxygen from the water and making it impossible for marine life to exist, jeopardizing billions of dollars generated by commercial fishing in the area. The phenomenon is primarily attributed to chemical fertilizer runoff from Midwestern farms into the Mississippi, exacerbated by warming trends.

Climate Crisis May Promote Superbugs
A new analysis links climate change to the recent global rise of a multidrug-resistant fungal superbug, Candida auris. A decade after it was discovered in 2009, the superbug has popped up in many genetically distinct strains in more than 30 countries on three continents. Mystified, scientists say that fungal diseases are relatively uncommon in humans because of body temperature, but if they adapt to rising temperatures and aren’t easily treatable with medications, they could increasingly endanger human health on a global scale. “Global warming may lead to new fungal diseases that we don’t even know about right now,” warns Arturo Casadevall, lead author of the study published in mBio and chair of molecular microbiology and immunology at the Johns Hopkins Bloomberg School of Public Health.

Protect Kids From Bullying to Lower Risk of Teen Depression
Children born with low vitamin D levels have an approximately 60 percent higher risk of elevated systolic blood pressure between ages 6 and 18, reports a study of 775 Boston children published in the American Heart Association journal Hypertension. Those with persistently low levels of vitamin D through early childhood had double the risk of elevated systolic blood pressure between ages 3 and 18. Higher systolic numbers increase the risk of cardiovascular disease later in life. Because infants’ vitamin D levels are determined by the mothers’ levels during pregnancy, researchers suggest exploring an official recommendation for vitamin D supplementation during pregnancy.
A three-decade study of 3,325 young people in Bristol, UK, found that kids that were bullied at age 10 had eight times the rate of depression in their teen years, and that it persisted for some into their adult years. Using detailed mood and feelings questionnaires and genetic information, researchers found that childhood bullying was strongly associated with depression. Bullied children had a greater risk of both limited depression occurrence and persistent depressive issues. Other risk factors found to be associated with depression in the children included anxiety and the mother’s postnatal depression.

enowned psychic and spiritual advisor Peter Marks, who makes his home in Connecticut, recently took time out of his busy schedule to give Natural Awakenings readers insight into psychic readings, alignment, growth and one thing he wouldn’t do for a client.
How would you describe your vocation? As a spiritual advisor, I don’t label myself as just an astrologer or just a psychic or just a medium because I work with spirit guides that come to me through signs, visions and direct conversation. They provide me with information about a client, but I also take the time to set up a natal chart. My spirit guides assist me in knowing what makes each person totally unique.
How did you discover your ability and your passion? Prior to doing this, I was a TV producer at WTXX in Prospect, and when guests came to be interviewed on one of our talk shows, I would prep them for the show by asking questions about things they’d done. They couldn’t figure out how I knew so much about them, and I would be very hesitant to tell them how I knew. I have an aunt who also has this ability, and she told me I too would be using my special gifts one day. So I began to segue out of television into giving readings. I believe that God and the universe directed me to my calling.
What role do growth and alignment play in your readings? I tune into a client’s life path, their potential for fulfilling their spiritual goals, and align that with areas of growth—where they are lacking, where they are excelling, where they are most sensitive. I
work with them on the growth process because the guides show me how I can help them to become their total spiritual being.
What excites you most about the work you do? I believe I’m most excited when I receive phone calls from my clients who say that at the time of their reading, they weren’t quite sure if the information I gave them was part of their divine ensoulment, but since then their lives have unfolded as I predicted. I get excited when my clients are excited.
What do you do if you see something negative during a reading? I don’t always believe that a situation is going to be negative. I believe that if we have a positive mindset, we can turn negativity around into a positive situation. I try to change what one perceives as a negative situation into a positive outcome. Other psychics might say, “I see you getting divorced,” but I’ll say, “I see another relationship that is much better for you, is more harmonious, but it’s going to be up to you to make this decision.”
What elements of your work frustrate you? I get very frustrated when a person comes for a reading, and I’m working very diligently to help this individual turn their life around with positive suggestions and they say, “No, I can’t do that.” That frustrates me because we all can turn our lives around. A lot of people don’t want to change; they don’t want to exert the energy to make their lives more positive.
What is the strangest request a client has ever made of you in a reading? One of my clients asked me to set up their natal chart with the compatibility of musician Chris Robinson of The Black Crowes. They gave me Robinson’s address and asked me to send him the compatibility chart to persuade him to divorce his wife at the time—actress Kate Hudson—and marry my client. I did set up the compatibility chart for both of them, but I wasn’t going to send it to him.
What would you most want our readers to understand about what you do? I would love for people to have more of an open mind about accepting us, all of us—holistic health practitioners, mediums, astrologers, psychics—because we are all here to be messengers of God. A lot of people in the church see psychics, mediums and astrologers negatively. Most of the people I know who do this work are filled with love and light, and they just want the world to realize what their positive contribution to society can be. Odell, who has been teaching internet art and digital design at Stanford University since 2013, says she is compelled by the ways in which attention (or lack thereof) leads to consequential shifts in perception. Her new book, How to Do Nothing: Resisting the Attention Economy, proposes that we use our attention to rebel against the seductive pull of 24/7 availability and manipulation by algorithms. She tells us that redirecting our attention toward nature allows us to gradually remake our lives and forego the mentality that tells us that we must have a constant return on investment. True productivity, in the end, may very well be connected to our role in the environment and our understanding of happiness, and to make those connections, we must put our attention to doing nothing.
What is the “attention economy” and why do you believe it’s important to resist it?
The attention economy includes anything designed to capture and direct human attention. The entire history of advertising has been about exploiting attention. But the attention economy takes on new dimensions with something like social media, whose notifications, pop-ups and design are aimed at keeping someone on a platform…[contributing] to a general feeling that one needs to be always on… participating… available. Someone who participates deeply in the attention economy is liable to be kept in a loop of anxiety, fear and shallow reaction. Ironically, this feeling drives them back toward the attention economy, creating an unhealthy spiral of attention that could be more meaningfully directed elsewhere. 18 Hartford County Edition

What inspired you to rethink conventional wisdom about productivity, progress and the mentality that we must have a constant return on our investment—including how we spend our time and where we direct our attention? Right after the election, in late 2016, a warehouse fire in Oakland claimed the lives of many artists. I became aware of how difficult it was becoming to step away and process anything, not to mention mourn. I found that it was only by stepping away that I was able to ask questions about what it was I really wanted and how I could act meaningfully. Both social media and the cult of productivity are seductive, and when we’re caught up in them, we don’t question them. Understanding anything requires perspective and standing outside of it; productivity is no different. Temporarily ascending to a broader, removed view, you might find that you’re struggling in all the wrong ways, or in the wrong direction.
How is “doing nothing” different from meditation? It certainly shares some of the same goals. But whereas certain forms of meditation emphasize physical stillness, “doing nothing” for me includes things like wandering and observing.
What is the relationship between our well-being and being unproductive for a part of each day?
When we’re caught up in the idea of productivity, we’re often not thinking about our own well-being. And yet, the “unproductive” part of one’s day is likely the one in which you remember to take care of yourself or even listen to the needs of your mind and body at all.
How do we go about challenging the forces that are disconnecting us from nature and each other?
I think the first step is simply a movement of attention. Addictive as social media may be, it is not difficult for me to move my attention from that to what is happening in physical space. Sometimes this leads to meeting other people; I’ve had great conversations with strangers when we were both peering up at the same tree, looking at the same bird.
What do you hope people will take away from the message of your book?
I hope it creates a space in which someone might begin to look at the ways they currently direct their attention and how they might want to change that. I also hope it helps people find each other. Age-Defying Bodywork How to Turn Back the Clock by Marlaina Donato
I
t has been said that stress kills, and it often can be a slow and premature process, leading to common but avoidable symptoms of decline: impaired memory, loss of mobility, fatigue and decreased libido. Good nutrition, getting enough sleep and staying active contribute to vitality; however, fortifying the nervous system is critical to combating age-accelerating stress hormones like cortisol. The key to keeping body and mind young may lie in the therapeutic modalities of bodywork, an umbrella term for up to 350 methods that include massage, energy work and meridian-based therapies like acupuncture, shiatsu and reflexology, which can improve quality of life and promote cellular integrity. Once considered a luxury confined to spas and private home sessions, bodywork is moving into the medical mainstream with reputable hospitals like the Memorial Sloan Kettering Cancer Center, in New York City, which offers reiki sessions and instruction for patients and caregivers. According to a survey by the American Hospital Association, reiki and its close cousin Therapeutic Touch comprise one of three top complementary therapies in American hospitals, 20 Hartford County Edition

along with massage therapy and music. The Arthritis Foundation recommends massage for all types of arthritis and pain syndromes like fibromyalgia, as it can reduce discomfort and stress.
The Chemistry of Premature Aging Busy lives without enough downtime can set up the body to be in a chronic state of “fight-or-flight”, which compromises cardiovascular health, nutrient absorption, waste elimination and immunity. Thanks to groundbreaking researchers like Nobel laureate Elizabeth Blackburn, it is now understood that prolonged daily stress weakens DNA structures by shortening chromosome-protecting telomeres, a major component in premature cell death and the trigger of genetic, predisposed markers for disease. Studies by Dr. Owen Wolkowitz, of the University of California, San Francisco, demonstrate the link between shortened telomeres and insufficient response to free radicals, resulting in chronic inflammation, now believed to be the catalyst of most degenerative diseases. Craniosacral therapy (CST) focuses on the cerebrospinal fluid and the meninges surrounding the brain, spinal cord and related connective tissue, and helps the body drop out of excessive fight-or-flight mode.
Pain, Serotonin and Substance P Bodywork and its ability to impact the chemistry of stress has far-reaching effects on most bodily systems. Studies in 2016 from the Touch Research Institute at the University of Miami School of Medicine have shown that massage therapy helps to regulate hormones, boost immunity, improve attentiveness and ease the symptoms of depression. ing to research published in Proceedings of the National Academy of Sciences by Sheldon Cohen of Carnegie Mellon University, in Pittsburgh, changes how the body regulates inflammatory response. “Stress and inflammation cause pain and disease,” says Certified Reflexologist and holistic practitioner Martha Garland, of CreativeSpirit Healing Arts, in Baltimore. “All of this that we carry in our bodies will make us feel much older than our years.” Through application of pressure on specific reflex zones on the feet, hands and
counteracting the energy-sapping effects of stress. “When the digestive system doesn’t go into the ‘rest-and-digest’ state via activation of the parasympathetic nervous system, it can affect muscles, joints, organs and hormones. This, along with elevated cortisol, can certainly make us function less optimally, making us feel older and less vibrant.” Traditional massage modalities such as Swedish, deep tissue, Thai and Lomi Lomi help reduce blood pressure, boost immunity by augmenting natural killer cells, decrease symptoms of depression and support the cardiovascular system. It can also assist lymphatic movement, which can prevent cold hands and feet and achiness. Massage also raises serotonin and dopamine levels, neurotransmitters that play vital roles in memory, mood regulation and immunity. Most significantly, higher serotonin levels are linked to lower levels of substance P, a neuropeptide that is central in pain perception. It soars during times of stress, anxiety and insufficient sleep, and has also been linked to tumor growth and inflammatory conditions.
Multidimensional Well-Being Bodywork can assist the physical body, but it can also be a restorative balm for the emotions and psyche. “As human beings, touch is so important. Massage modalities invite safe, healing touch,” says Anita Bondi, licensed massage therapist and a founder of the Wellspring Holistic Center, in East Stroudsburg, Pennsylvania. “A good therapist will also educate a client about other benefits of a more holistic lifestyle. I believe any time we give ourselves permission to listen to the body’s wisdom and follow its lead, we reduce stress and increase well-being.” While women are more apt to include bodywork sessions in their health care, men can be hesitant. Connolly encourages both women and men to experience CST and other modalities. “Sometimes men are a bit nervous about being touched, whether the practitioner is male or female. Even when open to hands-on therapy, some men believe extremely deep pressure
is needed in order to be effective.” Not so, says Connolly, who cites the experience of Mark Bertolini, CEO of the Aetna health insurance company, who credits CST with saving his life when he was contemplating suicide and suffering severe neuropathic pain from a skiing accident.
Menopause and Cognitive Function CST can also have an impact on women’s hormonal changes. “Very slight movement of tissues near the pituitary gland can exert a subtle pumping motion on the master gland in a way that will facilitate its ability to produce and release hormones,” explains Connolly. The therapy is sometimes used in conjunction with acupuncture, which also impacts hormones and works on the brain. A 2018 study by Chinese researchers published in the journal Evidence-Based Complementary and Alternative Medicine shows neuronal improvement through acupuncture in both cognitively impaired patients and healthy individuals.
Tools for Life Most practitioners believe that deriving benefits from bodywork requires consistency, which can support longevity in unexpected ways. Garland says, “What really makes a difference in reducing chronic stress is consistent stress reduction. One session occasionally will feel good and reduce tension temporarily, but will not make a major difference in reducing stress in the long term.” King agrees: “A massage once a month is my recommendation for ideal overall maintenance, and more frequent sessions for specific conditions or goals.” Research and results confirm that well-being is not a luxury, but a necessity, and puts to rest the idea that bodywork is a guilty pleasure. “The more we do to help ourselves, the better our lives will be as we age,” says Bondi. By the following fall, Whelehan’s daughter’s brain function had rallied, allowing her to take the ACT and apply to college. Before flying off to her freshman year in Hawaii last month, she traveled solo throughout Southeast Asia—a scenario that seemed impossible less than six months earlier. athy Whelehan, her son and her daughter all suffered with symptoms of Lyme disease for years. They sought help from conventional medical providers and medication, and worked with a naturopath to supplement with dietary changes and herbs. For Whelehan’s daughter, the Lyme disease attacked her brain—so badly that often she couldn’t get out of bed, and sometimes couldn’t remember her own name. More modern takes on this methodology, however, are based on the “new-fangled” research of Nikola Tesla, Royal Rife and Georges Lakhovsky, early 20th-century scientists who experimented with frequencies to observe how they affected the human body. In today’s high-tech world, many healers have rediscovered their findings, incorporating them into devices that bring a tech-centric approach to sound and vibrational healing. “Rife showed a long time ago that you can vibrate frequencies that will destroy a bacteria or virus,” says Dr. Adam Breiner, a naturopathic doctor at the Breiner Whole-Body Health Center in Fairfield. Breiner uses a variety of frequency healing therapies in his practice, including BEMER, BioCharger and Pulsed Electromagnetic Field (PEMF) therapy. “We’ve found it helpful with Lyme patients, with people who are fatigued, those who have injuries they want to recover from. We’ve had instances of people with arthritis immediately being able to move their hands more easily, as they stand in front of the BioCharger.” Breiner says frequency healing technologies have a profound effect across the body and the more a person uses them, the more “charged up” their cells will be, as the treatments have a cumulative effect. “Obviously, our cells recharge on their own and you don’t need [these technologies] for that, but at the same time, the sicker you are, the more toxins you have in your environment, the more you burn the candle at both ends, the weaker your cells become,” he says. “Cells that have a lower electric potential tend to be unhealthy cells and that’s when we see symptoms of disease in our bodies.”
AmpCoil The AmpCoil, the wellness tool which yielded such powerful results for the Whelehans, utilizes sound transmission technology to listen to the messages from your body through voice stress analysis. Unless they are identified and addressed, negative feelings associated with these events in our subconscious can affect our feelings and how we behave throughout our lives. Each of these types of stresses creates interference that moves us away from balance and lessens the ability of the body to heal itself from within. As long as we hold on to these stresses, our bodies remain out of balance, which keeps us from healing naturally from within. Common examples of how these stresses manifest themselves include headaches and migraines, tight muscles, TMJ, sleep apnea, substance abuse and other physical pain. How Does B.E.S.T. Balance The Body?
B.E.S.T. eliminates these interferences so the body can create its naturally intended balancing of nerve function and communication between the conscious and subconscious divisions of the central nervous system. ix thousand years ago, the Vedic religion named Tachyon particles mondajava—”the stuff the gods are made of ”. Tachyons are subatomic particles that travel faster than the speed of light. In our Einsteinian worldview (the standard model of particle physics) Tachyon particles are hypothetical because, according to Einstein, nothing can travel faster than the speed of light. As Tachyon technologies are quite popular in science fiction writing, one might falsely conclude that anything traveling faster than the speed of light is fantasy. However, in a quantum physics worldview, Tachyon particles not only exist and travel faster than the speed of light, but they infuse physical matter with Spiritual Light, also known as energy, light and information. They are subtle energy and considered by some to be the very source of the frequencies of the chi or prana—the life force existing around us at all times. Tachyon particles are not frequencies; rather they act as the bridge between all frequencies and their source, which is located at the zero-point energy field, or the ground of all being. The body no longer holds on to fear, shame or humiliation, and it begins to incorporate love, sense of purpose and meaning in life. Healing is the process of bringing energy back into your chakras. The process is the same for all chakras. Once you use your intuitive abilities, you will be able to detect and correct the issues faster. Chakra balancing can be the path to personal enlightenment. hakra balancing is more than knowing that the root chakra is red and is related to your safety and security. It’s understanding what the emotional issues in the root chakra mean and then acting to uncover the initial cause of them. That’s where the real healing begins. You have to trust your gut instinct, also known as your intuition. We all have it and now is always the best time to learn to use it. Chakra balancing helps you figure out where your blockages exist, and then dig deeper to uncover the emotions hidden in those chakras. When we discover the emotion and then work to bring it back up again, the work has begun. Be open to receiving any answer in order to change your life. Be aware of your emotional response to the feelings, and allow yourself to cry, scream and release the feelings. Only when there are no emotions left are you ready to proceed to the next step. The next step is to forgive. Forgiveness is an extremely difficult topic for many of us. It may require considering that the person may not have understood what they did was hurtful to you. If a medical condition was affecting them, this is pos-
sible. Or perhaps they were never aware of an issue because of their upbringing. Can you forgive them? It doesn’t mean you ever have to talk to them again or send them a birthday card. It is just about ridding yourself of the feelings. Try writing them a letter, and then burn it. Forgiving simply allows you to no longer think about an issue or situation 24/7; once it is released from your physical body, the heaviness disappears. Forgiveness is done for your highest and greatest good. The final step is to accept that there is a lesson for you to learn. We come to Mother Earth to learn and grow. We can’t grow if we aren’t learning. What lesson did you learn from your blocked chakra? Once you acknowledge the lesson, and know it because you are smiling, you have rebalanced your chakra. hiropractors are often perceived as back pain specialists, but optimal chiropractic care treats the whole person from the inside-out, starting with the nervous system. This means practitioners can address many conditions that transcend typical expectations.
The human spinal column sports 31 pairs of nerves, some corresponding directly to digestive, reproductive and respiratory organs, which might explain why regular spinal adjustments and other chiropractic techniques can be helpful for seemingly unrelated condi-
tions like asthma, chronic headaches, hormonal imbalances and temporomandibular joint (TMJ) disorders. A scientific review of 179 published papers focusing on various non-musculoskeletal conditions shows benefits of full-body chiropractic treatment for asthma, infantile colic and cervical vertigo. Results are also promising for middle ear infections in children and pneumonia in seniors. Clinical evidence suggests the nervous system is a cohesive factor in achieving overall wellness. “In chiropractic and holistic philosophy, the body is considered a self-healing organism,” explains chiropractic physician and applied kinesiologist Marc Terebelo, of the Chiropractic Wellness Center, in Southfield, Michigan. “The nervous system controls the body, so issues in the toes or fingers may be caused by spinal issues in the neck and low back. Likewise, bladder and menstrual cycle problems can be caused by injury to the low back or pelvic regions.” William J. Lauretti, a New York Chiropractic College professor in Seneca Falls, concurs with the benefits of holistic treatment. “Chiropractors view the body as an integrated unit, and problems in one area might affect a seemingly unrelated area,” he says. “Most chiropractors have a wide variety of treatment approaches to offer, including advice on nutrition, lifestyle, stress management and exercise.”

In his practice, Lauretti has observed better digestion as a positive side effect to regular adjustments. “I’ve had a few patients over the years who reported improvement in digestive problems after chiropractic treatment of the mid- and low back. In some of those cases, the improvement was serendipitous, because the patient didn’t discuss their digestive symptoms initially, only after they noticed the improvement.”

Chiropractic treatments often provide reliable relief. “The TMJ is a very important joint in the body, with thousands of neuroreceptors. TMJ involvements can cause headaches, particularly around the ear or side of the head, vertigo, tinnitus and other hearing issues,” says Terebelo. Cailteux notes that aside from experiencing jaw pain and headaches, someone suffering from TMJ disorder may have difficulty chewing, and may experience an audible clicking of the jaw with movement. “Chiropractic adjustments can be particularly helpful, especially when delivered to the TM joint and the neck. Slow Food Takes Root Global Movement on Fast Track by April Thompson
T
he global Slow Food movement is fast gaining momentum, uniting more than 100,000 people in 150 countries with a shared passion for delicious food and a moral conviction about the people and places that sustain it. It satisfies foodies’ hunger for a deeper appreciation and understanding of their meals’ origins, from farm to fork. “The key principles of Slow Food are good, clean and fair,” says Laura Luciano, a board member for Slow Food USA and Slow Food Governor for New York State. “It’s the opposite of fast food, where you are in and out with no idea where your food comes from or the stories behind it.” Fair, says Luciano, means fair to farmers, and paying a fair wage to workers picking and growing food. “Fair also incorporates principles of equity, inclusion and justice. Good means good for the climate, the Earth and us as individuals. Clean means not using GMOs and pesticides in the food,” she explains. Slow Food has its roots in Italy, where food and wine journalist Carlo Petrini took up the cause in 1986 to halt the homogenous fast food chains encroaching on the country’s rich, diverse food culture. Slow
Food USA has taken off since its founding in 2000 with 150 chapters boasting 6,000 members nationwide. Many convene annually at Slow Food Nations, a food festival for all in Denver, to swap stories, share strategies, celebrate victories and of course, break bread together. The backbone of the movement is its local chapters. “Food has a regional identity, connected to history, culture and family,” says Luciano, whose blog Out East Foodie shares the stories of her Long Island edibles. For Bob Quinn, an organic wheat farmer in Big Sandy, Montana, and the founder of the heirloom grain company Kamut International, the Slow Food movement has been a kind of welcome homecoming and acknowledgment of his company’s efforts to protect workers and nourish consumers. “To me, Slow Food is a return to the roots of agriculture and the soul of organic, because it focuses on the food—the end purpose of agriculture—rather than profits and yields that are the focus of the industrial food system,” says Quinn, author of Grain by Grain: A Quest to Revive Ancient Wheat, Rural Jobs, and Healthy Food. “Slow food offers an appreciation for farmers’ efforts to improve the soil and the nutrition,

flavor and aroma of the foods we grow.” The Slow Food movement also connects producers like Quinn with chefs like Steven Satterfield, author of Root to Leaf: A Southern Chef Cooks Through the Seasons and board vice president of Slow Food’s Atlanta chapter. “As a chef, Slow Food to me means honoring your ingredients and going out of your way to get the freshest, most sustainable, seasonal ingredients,” says Satterfield, who came to Slow Food early in his career as a young line cook interested in the provenance of food and protecting its cultural heritage. At Miller Union, Satterfield’s awardwinning Atlanta restaurant, all dishes are made from scratch, mainly from farms

Satterfield’s dishes also feature traditional Southern varieties from Slow Food’s Ark of Taste, a catalog of more than 200 culturally significant foods in danger of extinction. One Miller Union favorite is a hummus made from sea island red pea and benne seeds, an ancient variety of sesame originally brought by slaves from Africa to the South Carolina coast and cultivated in hidden gardens as a staple food. Beyond engaging diners, chefs and producers, Slow Food also campaigns for big-picture policy changes, like farm-to-school programs to introduce fresh produce and get kids excited about healthy eating, says Luciano. “Eating is a political act. The choices we make speak volumes about what we stand for,” says Luciano. “We talk about joy and justice. There is the joy in food and the justice and stories behind it. Continue to simmer over medium heat until the bok choy is tender, but still has texture and bright color, about 4 minutes. With a slotted spoon, remove the bok choy and set aside, but leave the citrus peels and spices in the pan. Continue to simmer until the broth is reduced by half or more.

Taste the sauce for seasoning, then at the last minute, return the cooked bok choy to the glaze and reheat all the way through.

Heat the oven to 400° F. In a large mixing bowl, stir together the mustard, garlic, salt and pepper. Whisk in the olive oil. Toss the cauliflower in the mustard mixture to coat. Spread in a baking dish in a single layer and roast until it’s just tender and lightly browned on the edges, 20 to 25 minutes.

One of the qualities I love about bok choy is how easily the crisp rib absorbs the flavors of whatever it is cooked with. If it is not closely monitored, however, its tender leaves wilt quickly and the rib may turn mushy. I address this issue by quickly pulling the bok choy from the pan when it just begins to turn tender and succulent, allowing the sauce to reduce and intensify on its own. This recipe is perfect with a rice dish or with a delicate fish that could be poached in the cooking liquid for a full meal.
1 cup chicken or vegetable stock 1 orange, quartered, seeds removed 1 lemon, quartered, seeds removed 2 Tbsp unsalted butter 4 star anise pods 12 black peppercorns 1 tsp kosher salt 4 small bok choy, halved and washed

Mustard-Roasted Cauliflower Cauliflower and mustard are both members of the genus Brassica, so it’s not surprising that the seed of the mustard plant is compatible with its big-headed cousin. Try it for yourself in this incredibly simple vegetable roast, which makes a terrific side dish with fish or fowl and is also hard to stop eating straight out of the pan. If you come across the orange, green or purple cauliflower varieties, mix them together for a stunning presentation.

I
n common conversation, the word “wild” is often used to describe something that is out of control, uncivilized or lacking reason, but these interpretations are misleading. “Wild” also has many positive connotations, including being in tune with nature, fully present, confident and resilient. All animals, even domesticated ones, retain some “wild” characteristics that provide great wisdom for humans.
Wildly in Tune Wild animals are in tune with nature. As the seasons change, they adjust their routines, such as by storing food for the winter, building shelter or moving to a more hospitable location. Squirrels store nuts, bears find dens for hibernation and monarch butterflies migrate hundreds or thousands of miles every year. Animals’ bodies also adapt to their seasonal climates. Horses, for example, develop thicker coats in winter and shed them in summer to remain comfortable in changing temperatures. Animals also know how to respond to severe weather. During the recent hurricane, the wild horses in North Carolina did just fine; they know how to band together as a herd and stand with their backs to the wind to ride out the storm. Wild animals are also in tune with their bodies, unlike humans who tend to spend more time in our heads. Wild animals will naturally exercise through stretching, rolling, running and playing; they sleep when they are tired and eat when they are hungry. They know how to keep themselves well. They even choose their food wisely, generally avoiding poisonous berries and plants. As the seasons change, go a little wild. Wild animals possess a natural self-confidence borne out of living on their own without human intervention. As the saying goes, “a bird sitting on a tree is never afraid of the branch breaking, because her trust is not on the branch but on her own wings.” Wild animals generally do not expend their energy worrying about what could happen unless actually faced with an imminent threat. They are fully present and mindful and respond to what is, rather than all the things that could be. Animals, wild and domestic, do what they want in each moment and are willing to ask for what they need if they aren’t able to get it on their own. Watch your dog or cat a few minutes past their usual mealtime. If you haven’t fed them, they will probably try to direct your attention to the food or food bowl. They are asking for what they need. If you don’t give it to them, they will find another way to satisfy their needs, including jumping on the counter to sample your food. Animals prioritize self-care, in part as a matter of survival. Humans can learn to be wild in this way too, trusting in their own strength and asking for what they need.
Wild Relationships Wild animals also can teach humans about working together and having healthier relationships. Wild dolphins work together to drive smaller fish into shallow water so they can catch them more easily and wolves often hunt in packs to take down large prey. Predators aren’t the only ones who work together; prey animals can be sophisticated collaborators. Horses organize themselves in herds where they utilize each individual horse’s strengths: Some horses take on the role of sentinel and watch out for predators, some raise the foals, some lead the herd to water. Each member of the herd has an important job. Roles and relationships change over time and animals don’t seem bothered by these changes. Humans fret over empty nests, but birds don’t. When fledglings are too big for the nest and ready to fly, the parents encourage them and then take off themselves. Many other animals follow the same pattern; they nurse and train the youngsters, who then head out on their own. Humans going through relationship changes could lower their stress levels by accepting the change as natural rather than expending energy resisting it.
Wild Trust When a wild horse decides a situation is uncomfortable or unsafe, the horse moves to a safer situation, whether that is back to the herd or away from the perceived threat. Humans often
override these same impulses, because they don’t want to offend someone or because they talk themselves out of being “irrationally” afraid, often to their detriment. All creatures have intuitive or instinctive senses. Animals live by these senses, but humans

Goats on the Yoga Mat

hen 50 to 60 strangers gather in a barn for their first goat yoga experience, it’s a bit awkward and there’s not much interaction—until the goats come in. “It is an immediate icebreaker, and the place suddenly fills with giggles and laughs,” says Sharon Boustani, whose family runs Gilbertsville Farmhouse, in South New Berlin, New York. There is just something about miniature goats walking around on people’s backs while they do yoga that immediately destresses people and makes them downright happy, she adds. It may be fun, but it’s also a form of serious therapy that’s taken off across the nation and around the globe in recent years. Yoga by itself is proven to help with stress and pain relief, better breathing, flexibility and cardiovas-
cular health. Add goats to the mix and the benefits are compounded by the well-documented benefits of human and animal interaction. A number of studies, like one published in June by the American Educational Research Association, have shown that spending time with animals can lower blood pressure and decrease levels of the stress hormone cortisol. Other studies from the fields of psychology, animal welfare, counseling and anthro-

pology note that these interactions offer additional positive health impacts and can reduce loneliness, boost moods and increase feelings of social support. So combining adorable goats with a physically and spiritually beneficial yoga regimen just made sense to Lainey Morse, of Corvallis, Oregon, widely regarded as the mother of goat yoga. In 2015, Morse was diagnosed with a disease and was going through a divorce. “I would go out to my barn or out in the field and just be around my goats,” she says. “I wondered why they didn’t use goats for therapy like they do with horses.” Goats, she says, have a sense of calm. “When you are around them, you take on that energy, and it’s hard to be stressed out and have anxiety. But they are also really funny animals. They make you laugh.” She started with goat happy hour at her farm, inviting friends she knew were going through issues of their own. “Everybody left happy,” she recalls. When she discussed it with a yogi friend, goat yoga was born. Morse now has 13 partnerships around the country where others teach the classes and she handles the business end. “For me, it’s still about nature and getting out in nature.” Morse says she’s not quite sure why it took off like lightning, but she guesses it’s just because many people love the interaction. April Gould and Sarah Williams run their Arizona Goat Yoga classes at the Welcome Home Ranch, in Gilbert, Arizona. It is now a major tourist destination for the state. “Three to four times a week, we walk about 150 people out
into one of the pastures,” Gould says. A lot of visitors from out of state return every time they’re in the area, she adds. And many Arizona residents come once, and then bring back friends and family. “People say it’s the best day of their life. It’s something you kind of have to experience to know why it’s so popular,” says Gould. Those that are more experienced can make it as difficult as they want. “And some people just want to play with the goats.” For Bisk Education, an eLearning company based in Tampa, bringing goat yoga to its campus was a way to inspire and de-stress employees. “There is a way to integrate wellness into your corporate programs that makes you a differentiator,” says Chief People Officer Misty Brown. “When it comes to a perk, I want to make sure those investments are memorable. It gives Bisk the reputation as more of a progressive culture.” Boustani calls it an escape experience. “That’s primarily what it is. Yoga in general is kind of geared toward letting go of your everyday worries and trying to come to some peaceful or therapeutic state.” Introducing something so lighthearted to something that many people take so seriously, like yoga, is interesting to watch, Boustani says. “It is nice to see that even dedicated yogis are so open to it.” Yvette C. hildren, four-legged family members, Thanksgiving overeaters and the occasional squirrel on a branch have mastered an art that eludes most of us, and they engage in it without a shred of guilt. Defying our cultural habit of constantly being on the go and embracing the respite can be an active meditation, an invitation to cultivate uncommon stillness. Answering the siren’s call of a nap might very well be one of the most beneficial acts of self-care we can give ourselves. Both body and psyche crave chill-out times for good reasons. Using study subjects ranging from NASA pilots to emergency room staff, curling up for a 20- to 30-minute siesta has been clinically proven to lower blood pressure, boost immunity, improve motor skills and enhance job performance and creativity. Power naps—the short-but-sweet kind—give us the opportunity to nourish the most neglected part of life, the inner life. Rest-fueled “me-time” can be a daily ritual punctuated with both practical and aesthetic inspiration. Choosing a spot drenched in inviting natural light or close-curtained tranquility and reserving a favored pillow, chair or luxurious coverlet can usher in blissful time-out. Adding the presence of
aromatherapeutic essential oils like lavender, Roman chamomile or tangerine or a vase of simple fresh flowers can signal the ever-diligent sympathetic nervous system to cut back on overtime. Dropping down into unhurriedness like an anchor into port can prompt deeper and longer breaths and offer us the shameless chance to invest in quality daydreaming. Playing recorded sounds from nature—ocean waves, soft rain or gentle wind in the trees—can set the stage for a satisfying nap. Inviting the resident cat or pooch for a sleep-spell can also effect release of beneficial endorphins. Scheduling a nap into the day like any other appointment not only ensures follow-through, but presents a succulent slice of something to look forward to. Putting the computer on sleep mode and turning off the phone signals the brain that it’s time to recharge. Social media interaction and phone chats can wait.
