ealthy food is our theme this month, and thankfully we are blessed to be surrounded by healthy food choices in San Diego. After a month of learning more about the gut and how food affects it, I feel inclined to default to sharing my new fascination with mealworms due to its novelty. Many of us locals love to surf. And we also know that—like most of our human toys—surfboards are not exactly eco-friendly. Recently, I took a three-hour tour (sounds like Gilligan’s Island, eh?) at EcoTech Surf where owner Ryan Harris is making strides to change all of that. In the green spotlight on page 19, you’ll learn that one of First time on Eco friendly the ways Ryan is helping to green the surfboard industry lightweight surf board. is with meal worms, who literally eat unwanted surfboard foam and it comes out the other end as organic soil. How amazing is that? Toxins go in, and organics come out! I am happy to announce that I will be on one of Ryan’s eco-friendly boards enhancing my experience and relationship with the ocean. The expression “my gut feeling” holds a whole new meaning to me now. Our gut is the core that rules our physical and mental health and on page 13, local nutritionist Isabelle Yang shares this truth with us. While it can take more time and money to prepare healthy food, as we are orchestrated by our busy personal schedules and tight budgets, the benefits are enormous. San Diego has a vast amount of healthy food choices to choose from as more and more home delivered organic food delivery services and even drive-through organic restaurants are popping up. Balancing mind, body and spirit is not an easy job, unlike the mealworm. Reprogramming our brains is often necessary. According to a study in the journal Arthritis, it’s an effective tool in the battle against rheumatoid arthritis. Ginger adds a zing of healthy flavor to hot teas and stir-fried veggies such as broccoli, green beans, carrots or mushrooms.

“One of cinnamon’s super powers is that it may help regulate blood glucose in patients with Type 2 diabetes,” Roy says. In a study published in Diabetic Medicine, subjects taking two grams of cinnamon daily for 12 weeks exhibited much better blood sugar control. Roy suggests sprinkling it on oatmeal, apples, pumpkin pie and brownies. Roast chicken flavored with cinnamon and other spices is another treat.

Gooseberries are Good for the Gut Researchers from Malaysia’s Islamic Science University tested 30 patients with gastrointestinal issues, dividing them into three groups. One received lactose, a placebo; another group was given omeprazole, an over-the-counter remedy; and the third Phyllanthus emblica Linn, an ayurvedic treatment for gastrointestinal issues also known as Indian gooseberry. The research found the herbal treatment resulted in less pain, vomiting, sleep loss and other issues. Participants’ intestinal walls also showed signs of significant healing. The researchers concluded, “Findings indicate that the ethanolic extract of P. emblica fruits has gastroprotective effects in humans that justify its traditional use.”

HELPING SENIORS with Better Life Solutions by Erin Lehn Floresca
T
ina Buchanan of Visionary Care Consultants in San Diego, didn’t originally set out to work with seniors. “In 2004, I was in my under-grad program at San Diego State working toward a major in psychology or sociology. Social work just kind of landed in my lap. A friend thought I would enjoy it and eventually, I agreed that it might be a good fit, so I chose a degree in social work. At that time, I really wanted to work with underprivileged children and those in the foster care system.” As part of her senior year, Buchanan and her classmates were assigned internships. However, instead of working with kids as she had hoped, the program paired her with a nursing home. At first, she was devastated. And then she met “Mary,” an isolated hospice patient with no family or support system. Buchanan visited with Mary daily for weeks and was even with her on the day she died. “I became her support system. The whole experience was surreal. I’d never had a relationship with anybody in Mary’s shoes,” she says. “I was heartbroken; and it forever changed me.” It also forever changed the course of her career. During her master’s program, Buchanan was able to pick out her own internship. This time around, she chose a grade school. However, she wasn’t in love with the work the way she thought she would be and decided that work-

ing with seniors was a better fit, after all. After graduation, she landed a job as a social services director in a nursing home followed by a job in home health care where she worked for eight years. “It was an eye-opening experience, to say the least,” says Buchanan. “I saw how fragmented the system was for seniors living at home. Many of them lacked access to basic resources like transportation and meals. It was so frustrating and heartbreaking to see them struggling so much while trying to navigate a broken system. What they needed was an advocate to help guide them.” In 2017, Buchanan decided to become that advocate. “I wanted to branch out on my own so that I could help people learn how to navigate the system.” At the same time she decided to launch her business, she became the health care advocate for her own grandparents, helping them coordinate end-of-life care. Although losing her grandparents spun her world into heartache, it was exactly the experience she needed to propel her forward. “Going through this on such a deep and personal level helped me realize exactly how important all of this was. It helped me really define the vision for my business.” According to Buchanan, although it’s taboo to talk about death and dying in our culture, it doesn’t have to be. “Believe it or not, seniors actually want someone to have conversations with about death.
While it might be uncomfortable for us, as family, it’s not about us—it’s about them. They need that support, emotionally, so they can enjoy their last days and have a better quality of life.” Buchanan says she can help guide family members on how to start those crucial conversations. “They need to be had—and the earlier the better. For my grandparents, it was so peaceful and so cohesive, and I wish this for everyone else. To age with dignity and die with dignity. We can frontload that by making many of these decisions early so we aren’t making hard choices in times of crisis.” Buchanan affirms that she can act as an advocate on any level—from liaison to manager, to families all around the globe. “When you invest in services with me it can be on a monthly basis to get questions answered or I can help implement the resources we discuss. I believe that, in life, we often sink down a bit before coming up stronger. If the blueprint for health in your mind is written to overcome set-backs, you’ll be fine. Eliminating Waste from the Surfboard Industry with Switch to Zero Program
R
yan Harris, the owner and founder of Earth Technologies, Ry Harris Shapes and H2SUP, constantly strives for greener and more sustainable materials to build surfboards with. This leader in eco-conscious boards considers himself a life-long environmentalist. “I’ve always been outdoorsy with a strong connection to nature,” he says. After growing up in Portland, Oregon, and working in product design at Nike for years, Harris left the soggy Pacific Northwest and moved to Southern California. Although not a surfer before his arrival, he quickly fell in love with the surf culture. Within his first year of moving to Los Angeles, he began shaping boards on the side, to supplement his bartender income. Soon, his hobby became a full-time gig, and 17 years later, Harris is regarded as one of biggest driving forces in the green board movement. With his awareness of how toxic surfboard materials are to the environment, from resin to foam, Harris’s goal is to eliminate all waste from surfboard factories. His Zero Waste program is a giant
leap in the right direction. “The first step for us came about 10 years ago when we began using eco-resins,” recalls Harris. “But the resin was yellow and you know that surfers equated yellow with Ryan Harris old. Fast forward to now, this eco-resin is so clear and beautiful and it’s superior from a performance standpoint.” While he was excited to offer more eco-friendly boards, he had a lightbulb moment last year when he realized his factory was still making a ton of waste that ends up in landfills. So, Harris set out to
find solutions with several programs that help him properly deal with the waste. Harris has partnered with companies like Waste to Waves, a company that recycles surfboard foam; and Pushfins in Portland, a company that makes eco surfboard fins out of glassing room waste. That’s because the Environmental Protection Agency has identified at least four possibly dangerous chemicals commonly found in some synthetic mattresses—benzene, propane, naphthalene and styrene— especially bedding made in China and overseas, where such governing agencies do not exist. Consider these facts: ● Typical mattresses made from artificial materials are known to emit potentially harmful gases in your bedroom—a phenomenon known as off-gassing. ● Laboratory researchers in the U.S. and Europe have identified up to 61 potentially harmful chemicals that off- gas from typical synthetic mattresses. ● Exposure to these 61 chemicals has been associated with irritation of the skin, eyes and digestive systems. ● Additionally, the chemicals off-gassed by synthetic mattresses have been associated with headache, fatigue, depression and even hearing loss. ● Your skin, the most porous entry point into your body, has contact with a mattress for 8 hours every night, on average. ● Children, who breathe faster than adults, are especially vulnerable to chemical exposure. Every night, we lie down with minimal clothing for a seemingly good night’s sleep. But in reality, while lying on a conventional mattress, we are breathing in and absorbing through our
skin a range of chemicals from synthetic materials—chemicals that can disrupt our sleep cycles and negatively impact our health. Our mattresses emit gases from a toxic brew of components used to cre- ate them. From the polyurethane foam used in the padding to fire retardants and other additives, conventional mattresses continue to release chemicals in gaseous form long after they roll out of the factory. Even after they have finished off-gassing, the chemically based construction of a conventional mattress provides an ideal environment for dust and dust mites, whose excrement is the #1 trigger for asthma attacks. And get this. You know those white labels on a mattress that say, “Do Not Remove”? Incredibly, the law actually allows manufacturers to include potentially hazardous chemicals in your mattress without disclosing the fact on any label. But if a true list of ingredients were available for conventional mattresses, it would likely include TDI (a common component), a known carcinogen, which can cause respiratory ailments such as bronchitis and asthma. In addition, liver damage and breathing problems have been linked to vinyl chloride monomers, another common mattress material. The list goes on. Unfortunately, it is highly unlikely that you would be given information about any of these chemicals from a manufacturer of conventional, synthetic mattresses.
The Natural Alternative
One of the most significant actions we can take to reduce our exposure to toxins and improve our overall health is to make changes to the one household item that is in direct contact with our bodies for one third of our lives—our mattresses. “There are more ways than ever to sleep better and wake up pain-free on a natural, organic mattress,” says Pablo Hernandez, president of Mattress Makers, in San Diego, CA. “Many people, like me, are in search of a natural sleep system. I was shocked to learn that toxic emissions from mattresses are a major source of daily pollution in our lives,” says Hernandez.

What’s the difference between an organic mattress and a conventional one? “Organic mattresses are crafted from natural materials. Conventional mattresses are made mostly of artificial materials from nonrenewable sources, such as plastic and other petrochemicals,” says Hernandez. Do organic mattresses come in different firmness? “Yes, there are two main types of organic mattresses: Natural rubber and inner-spring. Both styles are available with varying firmness options to suit anyone’s sleep needs,” says Hernandez.
What To Look For
When researching natural, organic mattresses, look at these areas: 1. Visit a store that carries mattresses made with either 100% all-natural latex or certified organic latex. “A lot of mattress companies market their mattresses as being all-natural but in reality either use a blended latex made with synthetics or just a little layer of latex combined with polyurethane foam,” says Hernandez. 2. Try out a new mattress for at least 15 minutes. Lie down in various positions, to simulate a night of sleep. Look for a store that offers a clean pillow to test out. “It’s important to dress for the occasion. When mattress shopping it’s best to wear loose fitting clothes or something similar you would wear to bed to get a good idea of how the mattress responds in your sleep ware ,” says Hernandez.
