We discovered ten..."hidden secrets" and present them to you! ■ Routsouna waterfall of Keramoti: Two

rivers originating in Koronos and Fanari converge at Keramoti creating a 20m waterfall.

■ Olive trees at Damarionas: Olive trees

with a trunk diameter of over 10m are believed to be over 5,000 years old.

■ A well-hidden cave at Abram: The bay of Abram is a place with alternate landscapes, rich vegetation and an idyllic beach combining sand and pebbles with crystal clear and vibrant blue water. There you will find a well-hidden cave at the knoll above the sea. As the tradition has it the ascetic Abraham lived there giving his name to the region. ■ A visit to the southeastern coast of Naxos: Indulge yourself in the unspoiled beau-

ty of the area and literally get away from it all. Take a drive along the coast, gaze at the islands of the Small Cyclades and find your own "piece of heaven".

■ Swim with Caretta - caretta turtles:

The turtles find refuge on the island and they have been seen at the beaches of Agia Anna, Agios Prokopios and Plaka.

■ Go bird - watching at Alyki (wetland next to the airport): With 122 species recorded, of

which 100 visit on an annual basis, Alyki is the perfect spot for bird watchers. 50% of the birds that have been observed in this wetland are listed as "endangered and protected species". Visit the area, observe and admire the birds with great care and without disturbing their natural habitat.

■ Agios Sozon - A chapel built with oil and wine: The tiny whitewashed chapel of Ag-

ios Sozon, is located on the south coast of the island and is perched on a cliff above the sea, in the area of Agiassos. According to legend, the chapel was built by a merchant who shipwrecked in the region during the Byzantine pe-

riod, vowing to God that he would use his commodities (oil and wine) to build it if he survived. And so it happened ... He builds it, pouring the oil and wine in its foundations giving it the name Agios Sozon.

■ Two unique caves in Mesi: Mesi is a picturesque village with few inhabitants, at mid point of the Apollona-Skado route. There you will find two caves, the Drakontospilio and the cave on the beach of Saint George. Both are known for the beautiful stalactites and stalagmites formations as well as for their size.

■ The Marianna shipwreck: On July 24th,

1981 the ship Marianna crushed into a reef of rocky islands known as the Amarides between Naxos and Paros. Pieces of the wreckage were moved to Agios Prokopios and still remain underwater while the funnel of the ship is rusting on the rocky shore. The primary bulk of the ship remains lying at the bottom of the sea, south of the reef and it is still in very good condition.

■ The Atsipapi settlement: Atsipapi is a

medieval village of northeast Naxos. It dates back to the 15th century, although some of the building materials suggest that it may be older (8th - 9th centuries). The landscape is rugged with many trails. Most of the dwellings are ruined and only a few are kept in good condition and used as farmhouses. According to historical evidence, Atsipapi was an area that had been occupied by Arabs from Crete (Atsipades) giving the settlement their name. A note of interest is that in Rethymno Crete there is an area called "Atsipopoulo".

A “treasure” amidst a valley of olive trees…

he vast blue expanse of the sea, the sandy beaches and the dry Cycladic landscape suddenly give way to a lush valley of age-old olive, plane and oak trees, vines and fruit groves surrounded by towering summits –a landscape reminiscent of mainland Greece.

Start your tour at the church of Panagia Protothroni, operating continuously since 1052, considered to be one of the more significant churches on the island. Behind the church, the

imposing three-story Barozzi - Gratsia tower, built in the early 17th century by the Barozzi family will certainly grab your attention. A church, a story recorded through the centuries... Naxos will captivate you at first glance. Nothing that you have seen so far can compare with the feelings and impressions you will have once you get acquainted with this Cycladic Island... In Naxos with the constant variations in landscape, apart from its natural beauty and its endless beaches, seek its culture and history ... Towers, castles, museums and numerous other monuments scattered around the island, waiting to be explored... Churches, a treasure waiting to be discovered An important part of the history and culture of the island are its churches, “gems” you meet everywhere adorning villages, mountains, the countryside and beaches, resemble a visible treasure you can discover. At Moni, Panagia Drosiani has the oldest frescoes in the Balkans, Panagia Protothroni in Halki with a 2000-year-old history and Ai Giorgis Diasoritis, another church with a long history and unique beauty. In Kerami the church of the Agoii Apostoloi bring to mind a beautiful painting with an olive grove as the background and Saint Mamas in Potamia, a 9th century Byzantine monument of great importance.

Churches and chapels with multiple architectural styles, aniconic (ie the iconoclastic period) and “two-section” churches where one section is Catholic and the other Orthodox, from a period when the unification of the two churches was pursued. Panagia Protothroni The Church of Panagia (Virgin Mary) Protothroni at Chalki is one of Naxos’s oldest and most important religious monuments. Initially built in the early Christian period as a three-aisled basilica, it was converted into a cruciform, domed church in the 9th century. Two additional aisles were built later. The interior has five layers of frescoes, from the early iconoclastic Christian period, of the 9th century, 10th, 11th and 13th centuries. The fresco in the alcove of the altar depicting Virgin Mary with a spindle is considered unique in the Balkans. According to legend, the church was named Protothroni because it was the first to be built in Naxos, and has been in uninterrupted service since 1052. The Church of Panagia Drossiani The Church of Panagia (Virgin Mary) Drossiani – a short distance from Moni, on the way to Chalki- is one of Naxos’s oldest.

The church, part of an old monastery, has a unique architectural style, with bare stone-walls, a three-part roof with a dome and three adjoining chapels on the northern side with square dome bases on their roofs. Some of the frescoes that have been saved date to the 6th century and are considered among the oldest in the Balkans, while the rest belong to the period between the 11th and 14th centuries. The church also features a marble temple; marble stands for votive candles and the old icon of Panagia Drossiani – connected with many legends and traditions. According to one of these, the church was so named because the area was blessed by Virgin Mary with plentiful waters and was therefore “cool” (Drossia=cool). Agii Apostoli Agii Apostoli is a cruciform domed Byzantine church built in the10th -11th centuries and of rare architectural style, being the only two-story church found in Naxos. The top floor, which was probably a chapel, is accessed via an external staircase above the entrance. The interior retains very few frescoes of the 12th-13th centuries, discovered under a whitewash cover.

Agios Mamas The lush valley of Potamia hosts the Byzantine chapel of Agios Mamas – patron saint of shepherds. Widely known as Theoskepasti, the 10th century chapel is one of the island’s oldest and was most likely built on the foundations of an early Christian church. It is cruciform and of considerable architectural and archaeological interest, with noteworthy sculptures and frescoes inside. Agios Mamas was originally a Greek Orthodox cathedral that was converted into a Catholic church by the Frankish conquerors in 1207. It is accessed via a footpath starting at the village of Potamia. 1 slice of Gruyere cheese (2-2.5 cm thick) 1 egg Breadcrumbs Salt, pepper and oil for frying

Preparation

Heat the oil in a pan on medium heat. Beat the egg in one bowl and combine the breadcrumbs with the salt and pepper in another bowl. Dip the slice of cheese in the egg and then in the breadcrumb mixture. Once the oil is hot place it in the pan and fry it on both sides until it turns slightly brown. Serve warm with lemon.

Preparation

Mix the cheeses together. Take the puff pastry squares and place a little bit of the mixture in the center of each square. Fold the corners of each square onto the mixture. Place the squares on a well-greased pan and brush some olive oil on them. Sprinkle with the sesame seeds and bake in a 180 degree oven. Once they brown remove them from the oven and drizzle them with the honey.

Millefeuille of vegetables and Gruyere

Toss the sliced vegetables with the salt, pepper, olive oil and bake until they are tender. In a pan place a layer of the Gruyere cheese topped with a layer of the vegetables and repeat until you have a layer of the cheese on top. Bake at 180 degrees for 10 minutes or until the cheese melts.

Mix all ingredients together. Cut puff pastry in long and narrow sections. Place some of the mixture on each puff pastry section and roll. Fry in hot oil.

ooking to discover every corner of Naxos, one Sunday afternoon on our way home from Agios Prokopios beach, we decided to explore Stelida... A fascinating and charming area with magnificent views of the Aegean Sea ... I wanted to stay there as the light changed towards sunset and here was the ideal place, Stelida Restaurant at Kavos hotel.

Up a few stone steps and it was as if we had entered paradise! Nestled amongst bougainvillea and palm trees, Stelida Restaurant welcomes you to its romantic setting, with the delicious surprise of discovering this top quality restaurant in a stunning location, offering the best you can encounter on an Aegean island. Sitting next to the pool sipping a cocktail while taking in the breathtaking views of the Aegean, we felt we had indeed discovered a gem!
