Introduction


Bread is

a staple food prepared from dough of flour and water, usually by baking. Bread is served in various forms with any meal of the day. It is eaten as a snack, and used as an ingredient in other culinary preparations, such as sandwiches, and fried items coated in bread crumbs to prevent sticking. Bread can be served at many temperatures; once baked, it can subsequently be toasted. It is most commonly eaten with the hands, either by itself or as a carrier for other foods. Bread can be dipped into liquids such as gravy, olive oil, or soup; it can be topped with various sweet and savoury spreads, or used to make sandwiches containing meats, cheeses, vegetables. Bread is used as an ingredient in other culinary preparations, such as the use of breadcrumbs to provide crunchy crusts.

Good bread is the most fundamentally satisfying of all foods.

Sandwich Chef’s Style


Ingredients serve 4 4 tablespoons Mayonnaise 2 tablespoons Dijon Mustard Salt, to taste Ground Black Pepper, to taste 3 medium tomatoes, thinly sliced ½ cucumber, thinly sliced 2 tablespoons good olive Oil 1 tablespoon white Vinegar 12 slices white bread 250g cooked ham 8 slices Edam cheese Method In a small bowl, whisk together mayonnaise and mustard. Adjust seasoning with salt and pepper to taste. Place sliced tomatoes and cucumber in a small bowl. Add olive oil, vinegar. Toss to combine and let sit for at least 10 minutes. Toast bread. Lightly spread each slice of bread with the mayonnaise mixture. To assemble: Top a slice of toast with 2 slices of ham, a slice of cheese, tomato, cucumber and another slice of toast, mayonnaise side down. Repeat the layers one more time ending with a slice of toast, mayonnaise side down. Cut each sandwich in half diagonally and secure with a toothpick.

Grilled Cheese Sandwich

Ingredients 4 slices white bread 3 Tablespoons Herb Spreadable Butter 4 slices Mozzarella cheese 60g jar prepared roasted red bell peppers, drained and sliced into narrow strips [Bought from food market] Fresh basil leaves [optional]

Method Spread herb butter lightly on one side of each bread slice. On 2 slices arrange half of the cheese, then red bell peppers, basil and remaining cheese. Top with remaining bread slices. Heat a grill pan over medium heat. Place sandwiches butter side down in the skillet and spread additional Roasted Garlic & Herb butter on the uncoated side. Cook until sandwiches approximately 4 minutes per side or until golden brown and the cheese is melted.

Note: Slices of fresh tomato may be substituted for red bell peppers.

Ingredients Sesame seeds bagel sliced Mayonnaise Rucola leaves or other lettuce of your choice Gruyere cheese sliced Gherkin sliced Salami Milano English mustard

Open-Faced Tomato Cheese Baguette

Ingredients 3 tablespoons olive oil 1 tablespoon chopped fresh oregano Red pepper flakes Salt 1baguette, halved lengthwise 1 large clove garlic, halved 1 medium tomato, halved and sliced 1/4 inch thick 120g sliced provolone cheese

Method Preheat a grill pan to medium high. Combine the olive oil, oregano, red pepper flakes and a pinch of salt in a small bowl. Brush the cut sides of the baguette with some of the flavoured oil. Grill cut-side down until toasted, about 4 minutes. Rub the grilled sides of the baguette with the garlic. Top with the tomato slices, season with salt and cover with the provolone. Grill covered, until the cheese melts, 3 to 5 minutes. Drizzle with the remaining flavoured oil. Cut into pieces.

Turkey & Edam Cheese Baguette

Ingredients 2 Tbsp mayonnaise 1 whole grain baguette (10 inch), cut lengthwise in half 80 g sliced smoked turkey breast 4 thin red onion rings 1 tomato, cut into 4 slices 2 Edam cheese slices or any other cheese of your choice 2 romaine lettuce leaves

Method Spread mayonnaise onto cut sides of the baguette. Fill with remaining ingredients. Cut in half. Serves for two.

Egg Sandwiches

Ingredients 4 Large Eggs 2 tbsp finely chopped fresh chives Salt 50g mayonnaise 5g Dijon mustard 4 slices brown bread .

Method Place eggs in boiling salted water in a saucepan and cook for 12 minutes. Drain. Cover with cold water; let stand until cool. Peel eggs, grate eggs into a bowl. Add chives, salt, mayonnaise and mustard; stir to combine. Place bread flat on work surface. Top two bread slices evenly with egg mixture. Top with remaining bread slices. Cut each sandwich in half crosswise to make four squares total. Cut each square corner to comer to make 16 triangles total.

To make finger sandwiches, cut crosswise into 3cm thick strips.

Cucumber cream cheese sandwich Ingredients 6 slices white bread 6 tablespoons cream cheese Mint leaves washed and dry 1 large cucumber, sliced paper-thin

Method Lay out 3 pairs of white bread. Use a butter knife, spread 1 tablespoon of cream cheese or less on each exposed side of the bread slices. Distribute 2 mint leaves evenly across 3 slices of bread, then top with 9 thin slices of cucumber. With remaining slices, assemble sandwiches by placing cream cheese side of the bread down on top of cucumbers. Cut off crusts and slice each sandwich into 3 mini sandwiches.

Apple & Tuna Sandwich

Ingredients 2 SERVINGS

1 can 170 g tuna, packed in water, and drained 1 apple, cored and diced 37.5 ml plain yogurt 10g Curry powder Lettuce leaves 4 slices whole-grain bread

Method In a medium bowl, fluff tuna with a fork. Add apple, yogurt, and Madras Curry powder. Stir to blend well. Place lettuce on two slices of bread and spread tuna on top. Cover with second slice of bread. Cut diagonally and serve.

Chicken Parmesan Sandwich

Ingredients Serves 4 125g flour Sea salt Freshly ground pepper 450g boneless, skinless chicken breasts (2 large breasts cut into 4 portions) 4 teaspoons olive oil, divided 600g baby spinach 250ml tomato sauce 60g grated Parmesan cheese 125g shredded mozzarella 4 soft whole-wheat sandwich rolls, toasted

Method Combine flour, salt and pepper in a shallow dish. Place chicken between 2 large pieces of plastic wrap. Pound with the smooth side of a meat mallet until the chicken is an even Âź-inch thickness. Dip the chicken in the flour mixture and turn to coat. 2 teaspoons oil in a large non-stick pan over medium-high heat. Add spinach and cook, stirring often, until wilted, 2 to 3 minutes. Transfer to a small bowl. Add 1 teaspoon oil to the pan. Add half the chicken and cook until golden, 1 to 2 minutes per side. Transfer to a large baking sheet. Repeat with the remaining 1 teaspoon oil and chicken; transfer to the baking sheet.


Top each piece of chicken with the spinach, tomato sauce and Parmesan. Sprinkle with mozzarella. Grill until the cheese is melted and the chicken is cooked through, about 3 minutes. Serve on soft rolls, or any other bread rolls sandwiches of your like.

Hawaiian Chicken Sandwich Ingredients 1 large boneless, skinless chicken breast 1 small can of pineapple rings, 4 slices 1 Tbsp soy sauce 1 Tbsp brown sugar 1 Tbsp English mustard 2 Kaiser Rolls or burger buns 2 slices of Ememthal, provolone, or Edam cheese

Method Pound out the chicken breast and cut into two pieces. Combine the juice from the pineapple can, soy sauce, brown sugar, and mustard. Marinate the chicken for 4 hours or overnight in the juice mixture. Grill the chicken for 15 minutes, flipping once halfway through. Add the cheese to the chicken when there is 1 minute remaining while the chicken is grilling; add the pineapple rings halfway through at the side of the grill pan turning once. Serve on the buns with two pineapple rings each.

Ham and Swiss cheese sandwich Ingredients 6 tablespoons butter, softened 2 tablespoons grated onion 1 teaspoon poppy seed 1 teaspoon mustard 4 French brioche hamburger buns, sliced or any other bread buns of your choice 8 slices Swiss cheese 240g smoked ham, thinly sliced 4 individual foil sheets (12x14 inches)

Method Heat the oven to 180°c. In small bowl, combine butter, onion, poppy seed and mustard. Spread tops and bottoms of buns with butter mixture. Layer bottom half of bun with 1 slice of cheese, 60g ham and 1 slice of cheese. Top with bun. Wrap each sandwich in sheet of foil. Place on baking sheet. Bake 15 for minutes or until cheese is melted.

Cheesy chicken Baguette Ingredients Serves 2 1 boneless skinless chicken breast 129g cut into strips Salt Pepper 1 teaspoon olive oil 125g sliced sweet red pepper 125g sliced green pepper 125g sliced onion 3/4 teaspoon white wine vinegar 1 small garlic clove, finely chopped 1/4 teaspoon hot pepper sauce [optional] 2 x 30g slices provolone cheese 2 x 10inch baguettes split

Method


In a large pan, sautĂŠ the chicken, salt and pepper in oil until nicely cooked and juices run clear. Remove and keep warm. In the same pan, sautĂŠ the peppers, onion, vinegar and garlic until vegetables are tender. Stir in pepper sauce if using and chicken. Place cheese on bun bottoms; top with chicken mixture. Put under hot grill for 4-6 inches from the heat for 2-3 minutes or until cheese is melted. Replace bun tops.

Easy Turkey Club Sandwich Ingredients serves4 6ml mayonnaise 8 slices whole wheat bread, toasted 8 lettuce leaves 250g thinly sliced smoked turkey 16 cooked bacon slices 4 slices Edam cheese 8 slices tomato

Method Spread mayonnaise over four slices of toast. Layer with lettuce, turkey, bacon, cheese and tomato; top with remaining toast.

Pita Bread Frittata Sandwich Ingredients

serve 6

12 eggs 185ml milk 10g chopped parsley leaves 2 tsp. onion powder Pepper 6 Pita bread (8 to 9-inch rounds) 360g cooked sliced bacon 360g Deli smoked turkey slices 450g grated yellow cheddar cheese

Method Blend eggs, water and parsley.


For each sandwich, pour 160ml egg mixture into a oil-coated non-stick 8-inch pan. Cook the omelette-style, until eggs are firm throughout with no visible liquid egg remaining. Place the pita bread. Add omelette onto the left side of the omelette, layer 60g bacon, 60g turkey, and about 75g cheese. Fold flatbread in half. Grill pita bread over medium heat on a grill pan just until cheese melts and heated throughout.

Grilled Sandwich Wife Style Ingredients 90ml olive oil, divided, plus more as needed 8 slices white country bread, about 1/4 inches thick each 5 small chopped oil-packed anchovy fillets 340g fresh mozzarella, thinly sliced 20ml pesto sauce 140g drained marinated artichoke hearts (about 2 whole hearts), very thinly sliced 4 very thin slices Mortadella

Method In a large pan, heat 3 tablespoons oil over medium heat. Working in batches if necessary, add bread and cook, swirling and moving the bread around for even toasting, until browned, about 3 minutes. Turn bread slices, add remaining oil, and continue to cook until browned on both sides, about 3 minutes longer. Alternately grilled the bread slices on a grill pan.


Spread minced anchovy evenly on half the toasts, and then top with mozzarella, pesto, artichokes, and Mortadella. Close sandwiches. . Transfer sandwiches to the pan and cook in a preheated 180°c oven until cheese is melted, about 5 minutes. Serve right away.

Apple & Cheddar Pita Pocket Sandwich


Ingredients 1 whole-wheat pita bread (6½-inch) 1 tablespoon French mustard 1 medium apple, sliced 60g shredded Cheddar cheese 200g mixed salad greens

Method Cut pita in half and spread the insides with mustard, dividing evenly between the two halves. Stuff the pita with apple and cheese, dividing evenly. Arrange on a foil-lined toaster-oven pan. Toast flipping once if necessary, until the cheese is starting to melt and the pitas are hot but not burning, 4 to 5 minutes. Remove from the toaster with a spatula. Carefully add greens to the pita pockets, dividing evenly.

Experiment with different slices of bread for your sandwiches. Try focaccia, toasted raisin bread, Ciabatta, croissants, bagels, pita bread, onion rolls, or toasted English muffins. Or put out flavoured tortillas and your guests can make their own wrap sandwiches. The most important tip is to make sure your recipe ingredients are impeccably fresh and top quality. For many of us, a sandwich was the first meal we learned to make for ourselves.
