SometimeS colorS come more to life when they’re already bigger than life.
Colors this vibrant can never be confined.
They must burst free. They must show their true beauty. The works of Dennis Pendelton and Tanis Bula are living proof of this. Note the careful attention to detail. The use of watercolor. Yet to truly experience such splendor, it’s best to see these firsthand here within Elements 5280. Come to our gallery gushing with many larger-than-life colorful pieces from Tanis and Dennis, created to dazzle the eye and touch the heart. Mention this ad and take 40% off of a set of Tanis Bula’s wonderful floral notecards.

Warm-Weather Wishes Award Winning Design Firm
ANOTHER BEAUTIFUL COLORADO WINTER has come and gone—one that brought a very pleasant balance of sunny days and much-needed snowstorms—and now I’m ready to welcome a lovely high-country summer. I’m ready to bring out the outdoor furniture, fill the flower beds (which I always do just a little too early) and watch the grass turn green. I’m certainly not the most outdoorsy person in the state, but these warm, dry, sunny days—and my energetic Bernese Mountain puppy—pull me from the house, into the yard and out into the world, and I am happy for it. I suspect you are ready to usher in the new season as well, which is why we’ve devoted this issue to the great outdoors. From the latest furnishings and accessories for your patio to our featured outdoor living spaces, this issue offers plenty of new ideas. We hope it inspires you to create an outdoor space that beckons you to entertain your friends, play with your pooch and linger until the sun leaves Colorado’s cool evening hours in its wake. We’re also excited to share our interview with artist Lawrence Argent—the man behind the famous blue bear outside the Colorado Convention Center (page 31)—as well as some fresh summer recipes from one of Colorado’s most beloved mountain restaurants (page 105). So in between your outdoor adventures, take a few quiet moments to enjoy this issue, and join me in hoping we don’t have a flower-bed-busting late frost. Cheers,

Bach Meets Rock CLASSICAL MUSIC AND CLASSIC ROCK, under one roof? Hear it at the 20th annual Colorado Symphony Ball, where you can enjoy the sounds of the symphony alongside the beloved Colorado cover band, The Moderators. With silent and live auctions, dinner, entertainment and dancing, this year’s gala, “From Bach...to Rock!,” raises funds for the Colorado Symphony and honors long-time contributors to the local arts community. Hosted by CBS4’s Ed Greene, the black-tie (“with rock flair”) event is Saturday, May 4, at Denver’s historic Fillmore Auditorium. For information and tickets, visit coloradosymphony.org.
Foodie News CHEF MATT SELBY, known for his culinary talent as executive chef of Denver’s long-loved Vesta Dipping Grill, has begun a delicious new endeavor: Corner House, a bistro in the city’s Jefferson Park neighborhood. As executive chef, partner and general manager of the recently opened spot, Selby has created a thoughtful menu that centers around local ingredients. The rustic-yet-modern space—and its sassy signature cocktails—will keep diners coming back. cornerhousedenver.com

A New Treat in Town THE MOMENT DENVERITE HEATHER ALCOTT TASTED the Euro-Japanese dessert called Baumkuchen, she knew she had to bring the delicacy back to the Mile High City. And after spending two years sourcing the ingredients and equipment to authentically create these cakes, she’s finally opened Glaze: The Baum Cake Shoppe. Sweet and light, these unique desserts have a flavor and texture that calls to mind cakes, danish pastries and crullers, all rolled up into one delectable treat. glazebaumcakes.com
A History of Second Homes
{
IT’S FUN TO HEAR ABOUT— and peek inside—the mountain escapes of the rich and famous. But these retreats haven’t always belonged to the wealthy. In her recently published book, High Country Summers: The Early Second Homes of Colorado, 18801940 (University of Arizona Press), architectural historian and CU Denver Senior Instructor Melanie Shellenbarger explains that a hundred years ago, the demographic of secondhome owners was far more diverse than it is today. Travel back in time with Shellenbarger and discover how the mountain towns we know today were created and shaped by summer residents of long ago. uapress.arizona.edu

Color Story
A Hint of
Mint Color expert Dee Schlotter of Pittsburgh Paints shares good news: this quiet, softened version of green provides calm in a fast-paced world “WE ARE ALL SO BUSY, trying to see how much we can get done in a day,” says Dee Schlotter, National Color and Marketing Director for Pittsburgh Paints, “and this color honors everything that’s natural. It’s a restorative color that brings nature indoors.” Perhaps that’s why we’re seeing this soft, minty hue everywhere, from the runway to household appliances. Schlotter says that these “grayeddown” greens work well with other natural colors, such as the orangybrown tones of hardwood floors and well-worn copper. “Really, anything that looks like it’s been sitting outside, weathered by the elements or faded by the sun, blends beautifully with these shades of green.” Prefer a more modern look? The gray undertones, Schlotter adds, make the hue extremely versatile. “Pairing the color with a creamy white, such as [Pittsburgh Paints’] Cream Puff, changes the look to modern and minimalist. It also complements darker, more dramatic grays like graphite.”

Soft Green 106-3 Pittsburgh Paints “This muted green works well with other earthy colors,” says Schlotter, who suggests pairing it with natural hardwoods and copper.

The People’s Sculptor I SEE WHAT YOU MEAN, 2005, COLORADO CONVENTION CENTER; PHOTO: TIM RYAN
Sculptor and Denver resident Lawrence Argent is one of the West’s most beloved public artists. He gave the Colorado Convention Center its iconic sculpture, I See What You Mean, and more recently, he installed Leap, a giant red rabbit leaping toward a suitcase, in the Sacramento International Airport. Here, he reveals how he creates largerthan-life sculptures, why he won’t make another bear— and why public art matters
BY HILARY MASELL OSWALD
Lawrence Argent: Not at all. But I’ve always been an artist who creates with the whole in mind, meaning I think about how my work gets seen, how people will experience it, the control of the lighting—all of it. And public art can be a very powerful experience in total. I got tired of seeing some of the bad public art that’s around, and I thought, ‘I’ve done commissions for private collections before, so I’m not new to the game of creating large pieces.’ And I started to like the idea that I could affect change on a greater scale than the exclusivity of a gallery setting or an individual’s collection. Art can seem inaccessible. I thought it would be important to give people a sense of confidence, that they can participate in and understand art. I want to undermine this notion that art ought to be a certain thing.

It has to do with the site. [Since the completion of I See What You Mean,] I’ve been asked to make a 100-foot bear, and I said, ‘It’s not going to work because that bear was designed for Denver. It belongs in that particular place.’ The sculpture addresses this city, this life. But how did I do it? Let’s talk about the rabbit. I wanted to deal with the idea of how you feel when you arrive from a journey. What happens on our own journeys, physically and mentally? How do we process those things? When you enter an airport, there’s fear of what you have to do, fear about security, fear of the airline losing your favorite T-shirt. All these things create a cacophony of energy that’s not necessarily positive. So how does an artist create something for this huge environment that gives you a moment to diffuse that energy? I wanted to create

something personable—a suitcase—that’s connected to this idea of journey. And I chose the rabbit because there have been so many parables written about the hare that it transcends culture and civilization. I’ll tell you first, when the rabbit occurred to me, I was embarrassed. I knew it was right for the space, but I thought, ‘I’m going to be known as the guy who does big animals.’ To make these sculptures, I work a lot in the digital realm. From clay models, we create a 3D digital model and work from there. I work with a crew of people who are really knowledgeable. And when it came time to install the rabbit, we spent three months inside the airport building it, bringing 1,780 panels through the doors you would normally enter and exit. Yes, not so glamorous. That’s a good question. It’s essential to our environment because it can alter our experience of place and site. It can surprise us, can make

us stop and be mindful of a moment we would otherwise ignore. I designed these big ice sculptures in Vail, and I got an email from a woman recently. She wrote that she had been diagnosed with a traumatic brain injury seven years ago. She said, ‘I sat down and looked at your sculptures, and I felt relaxed. I haven’t felt relaxed in seven years.’ It changed her. Public art gives you a chance to embrace peace and inquisitiveness. You become a part of it, and you’re changed.
Don‘t do it. Just kidding. It’s important for people to engage in a passion that opens them up to ideas, helps them wonder about what they don’t know. Creativity is letting go of what we think we know and jumping into the deep end, allowing something to surface that we can’t predict. If you decide to create art or become a doctor, the journey needs to be attended to with creativity and passion. If we knew what the next day was going to bring, then why would we live? A TUDOR
Tale A family builds its dream house, a storybook Tudor, by mixing authentic wood details with fanciful color BY SALLY STICH PHOTOGRAPHY BY KIMBERLY GAVIN
WHEN THE DESIGN CHALLENGE IS to build a new home that shows off a historic style—and puts a fresh spin on the look— finding the right team of people to do the job is essential. In the case of this Greenwood Village home, the owners hired builder Ed Venerable of Paragon Homes, who knew how to recruit the dream team: architect Brooks Bond of Brooks Bond & Associates and designer Cheryl Scarlet of Design Transformations, pros whom Venerable had worked with before and had the talent and skill to realize the clients’ vision for a Tudor home.

(this page) Benjamin Moore’s Aspen Skies paint pops from within the walnut bookshelves, which house pretty accessories in every color used throughout the house. Green paisley chenille by Duralee covers comfy chairs that cozy up to a quatrefoil ottoman covered in a Brunschwig & Fils floral pattern. (opposite page) Custom arched doors with iron scrollwork lead to the entry of this classic yet whimsical Tudor. The Brunschwig & Fils wallpaper adds lightness to the rich walnut walls and wainscoting and introduces the color blue, a theme throughout the home.

(opposite page) Classic details continue in the open kitchen, with traditional cabinetry, a large center island and charming Colony Imports light fixtures from J J & S Lighting. The Grange counter stools are upholstered with lime-green oilcloth, protecting them from sticky little fingers. (this page) For her kitchen table, the homeowner ordered the same style Grange chairs as the barstools in a different finish. An octagonal sisal rug (designed to fit the bay window) defines the eating area, and a green paisley cornice fabric by Robert Allen adds a fun pattern.
Bond’s love of the Gothic-inspired style goes back to his childhood outside of Cleveland, Ohio, where he lived in a neighborhood lined with Tudors, including his family’s home. Though this particular site was perfect for just such a home, city-imposed height limits presented a major constraint for the architect, a challenge given the 6,000-square-foot, two-story design the team had in mind. “We were still able to achieve the look of a house that appeared to be a series of rooms added on over time,” Bond says. Designer Cheryl Scarlet was tapped because she had done the interiors for several of Venerable’s spec homes and the pair shared a similar creative vision. Her first meeting with the clients took place in their previous home, where Scarlet was able to see the furnishings they already owned and get a sense of what they wanted. “The homeowners loved Tudor architecture for its dark woods and traditional style,” she says. “They already had a few pieces that 47

(above) In the dining room, leaded windows are highlighted by arched crown molding that lines the entire room. Designer Cheryl Scarlet added rosettes at the top of the drapes that mimic the trim at the bottom. The couple brought the dining room set from their former home, and it fits perfectly into the elegant-but-cheerful space. would fit perfectly in the new home.” But their major request was to move away from the dark reds, greens and golds common to the Tudor style, toward a lighter, less “medieval” look. Scarlet jumped right in, selecting lively paint colors such as sky blue, apple green and creamy yellow to lighten the dark walnut walls, beams and floors. “Every room is a different color,” the designer says, “but they work together because they are all within the same tonal range.” She also created flow by accenting every room with accessories in the same shades of blue, green and yellow. Though most of the furniture is brand new (the family moved from a home half the size of their new space), Scarlet was able to reuse two red sofas and an ottoman in the new formal living room, as well as the couple’s dining room table and chairs—their first purchase as a couple many years earlier. “They are sentimental pieces,” says Scarlet, “and they actually work perfectly in the new dining room.” 48

(top) A soothing retreat, the master bedroom’s walls are painted in Benjamin Moore’s Aberdeen Green. Two bedside chests, custom finished in dove white and maize, nestle against the four-poster bed, while the curvy white Chloe Console from Whitney Evans sits under the window. (left) Sweet and simple, the master bath is painted in Bath Salts by Benjamin Moore, a slightly different shade of green than the bedroom. A Schonbek chandelier lights the freestanding tub; onyx mosaic floor tile surrounds it. (opposite) A large porch, divided into two seating areas, is united by two 8-by-10-foot rugs sewn together. Much of the furniture is from Restoration Hardware, along with the concrete fire pit near the sectional. Outdoor lamps, which create drama when the sun goes down, were found at LightingUniverse.com.
While traditionally patterned wallpaper graces the entry, powder room and laundry room, the prints are far from matronly. “Many companies now take traditional patterns and redesign them in an oversized scale, which makes them cool and contemporary,” Scarlet says. The home is filled with Tudor touches—a double-arched entry with scrolled ironwork, beamed ceilings and walnut wainscoting, crown molding in a Gothic arch design. But the design is hardly stuck in the past. The light-filled spaces and fresh fabrics and furnishings make it a family home for the present day and years to come.

Making Outdoor Spaces as Inviting as Indoor Spaces Designer Cheryl Scarlet offers these tips for creating outdoor rooms that are just as comfy as those inside:
Buy comfortable furniture, like wicker or wood. (Much of
the furniture on this porch is faux wicker from Restoration Hardware.) Cover the cushions in weatherproof fabrics, many of which are now available in fabulous colors and patterns. Add pillows for coziness. To define your outdoor space, create intimate seating areas with area rugs that can stand up to the elements. Rather than installing sconces on your home’s exterior walls to illuminate the outdoors, invest in some weatherproof table lamps, which provide task and accent lighting, as well as drama. Mix up colors and patterns just as you would inside the house. No need for everything to match perfectly. Use a fire pit as the focal point of your seating area—and a heat source in cooler weather. (The one pictured here is from Restoration Hardware.)

WITH SPACE AND VIEWS at a premium in Denver’s urban neighborhoods, it is rare for one property to offer so many soughtafter features—panoramic views of both cityscape and mountains, contemporary living in a historic neighborhood and access to spacious outdoor venues. But sometimes all the right ingredients come together. Such was the case for former suburbanites Liza Kampstra and Craig Evans, who found the perfect location in Denver’s Lower Highlands neighborhood—and the right architect and interior designer to bring their vision to life. “A friend brought us to the property, and as soon as we saw it I knew it was the one,” Kampstra says. “I knew it would fit our vision of a modern house that captures the views, with a big lot to include everything we wanted.” Located on a bluff that overlooks the city, the new structure is decidedly contemporary, yet in tune with the older homes that surround it. “The proportions are designed to complement the neighboring historic houses, with large windows on the first floor and smaller windows above,” says architect David Berton of Denver-based Real Architecture. “We mimicked the features of old stone houses but used more contemporary design and materials.” (top) The 1,400-square-foot deck is outfitted with a full outdoor kitchen, dining space, lounge area, custom fire pit and hot tub. A system of poles and shade sails offers shelter from the sun. (above) The clean-lined exterior mixes brick, stucco, metal, glass and exposed concrete. “There is a lot of movement in this house, a lot of light and circulation.” — Samantha Bales
The design was guided by the extraordinary views of Denver’s skyline. “The east side of the house addresses the city at large,” says Berton, who served as both architect and general contractor for the project. To open the main living areas and master bedroom to the entire cityscape, he designed and built a 27foot-high, two-story curtain wall of windows that the homeowners love. “We wake up to the sunrise coming over the city. It’s phenomenal,” Kampstra says. “And we go to bed with the twinkling city lights.” The homeowners drew upon the expertise of interior consultant Samantha Bales of Studio 2b to help furnish their new home. “We wanted a house that was beautiful but very comfortable and livable for our family and friends,” Kampstra says. Bales hit just the right note with a blend of contemporary European furniture, warmed up with a mix of textures and materials that are sleek and simple. The interior architectural elements and colors were kept neutral.

“The one way we introduce color is through the artwork,” Kampstra says, pointing to a one-of-a-kind backsplash in the kitchen. Designed by Jared Hankins of Blender Design Group, the feature is made of an original piece of art that was enlarged and applied to the back of glass panels. “Any time you take art and apply it to a different, non-traditional substrate, it enhances the space and makes it more lively and interesting,” Hankins says. But while the couple readily embraced their new life—and home—in the city, they weren’t willing to give up the outdoor lifestyle they love. So they created their own outdoor oases: a spacious side yard (made possible by the home’s narrow footprint) and a 1,400-square-foot rooftop deck with 360-degree panoramic views of downtown Denver and the mountains. Whether watching fireworks over Coors Field or the sun setting behind the mountains, the deck is the homeowners’ favorite spot year round. “It’s a big, wonderful outdoor space that we love to share with friends and family,” Kampstra says. “Our home has everything we love about the outdoors and the city.”

With comfy seating and plush accessories, this redesigned patio features many of the same touches found in a contemporary living room
BY ERIN ENGLISH PHOTOGRAPHY BY DON RILEY
THERE WAS A TIME, not so long ago, when patio furnishings were remarkably different than their indoor counterparts. These pieces were made with frames of metal, wood or plastic that deteriorated over the course of a single season, and featured unfashionable fabrics that bleached easily in the bright summer sun. Today, thankfully, there’s no shortage of patio furnishings and accessories that are stylish enough to go indoors—and durable enough to stay out. The backyard of this Cherry Hills Village home, revamped by Heather Rossi of Secret Garden Designs and Lane Oliver of LEO Interior Design, shows off many of these gems: an array of chairs, sofas, lounges, tables, rugs, draperies, lamps and accessories that blur the line between indoor and outdoor furniture.
the Inside Out
This luxurious outdoor space, created by landscape designer Heather Rossi and interior designer Lane Oliver, is made up of several seating and lounging areas, highlighted by upholstered furniture and stylish accessories.

The homeowners had made small improvements to their outdoor space over time, including the addition of a fire pit and pergola, before deciding to invest in some major changes. They installed a new spa in a far corner of the property and added a bathhouse to the main Italian Villa-style house, upgrades that prompted them to overhaul the entire backyard to make it more functional for entertaining, both during the day and into the evening. Using a palette of light colors with accents of dark plum to create a “serene, spa-like” feeling, Oliver went to work creating spaces for conversation, sunbathing, serving food and drinks, dining, reading and relaxing. “The scale of the furniture is substantial and the cushions are lush and thick,” she says. “I added lamps for peaceful lighting and selected tables with clean lines and sleek silhouettes. These details mirror furnishings that you would have inside the house, creating a comfortable outdoor living space.”
Draperies frame the main seating area and soften the heavy wood columns of the pergola; a pair of weatherproof table lamps from Patio Living Concepts are hand woven with PVC wicker and create a soft glow at night. Even though the homeowners’ neighbors aren’t far away, landscape designer Heather Rossi says the backyard “feels like an oasis.” The fullness of plants and trees along the fence creates a sense of privacy, says Rossi, who chose mostly native plants that require less water. She also reworked the yard’s irrigation system to include MP Rotator sprinklers to improve efficiency.

A custom dining table and chairs by McKinnon and Harris are finished with upholstered seat cushions set atop a coordinating rug. The quiet, covered dining space is elegant but “not so serious,” Oliver says.
A single handcrafted round table from McKinnon and Harris ties everything together. The piece is placed between the lounging and dining areas, so that no matter where guests sit, they feel like they’re part of one continuous room. “It’s a grounding area for serving appetizers and drinks,” Oliver explains. “Everyone will come back and forth between that spot.” Outdoor rugs warm the expansive brick patio, and draperies soften the pergola, providing a welcome respite from the heat. Upkeep of these supple outdoor fabrics, made by Kravet of solution-dyed acrylic, is surprisingly simple: “You can just hose off the fabric,” which Oliver says feels as soft as those you’d find indoors, “and use a leaf blower to keep the rugs clean.” While the designer selected elements to soften the space, Rossi addressed the hard surfaces. To break up the large expanse of the patio, she replaced some of the existing brick with decorative squares of concrete,
installing a new grid in a small grassy area next to the pool. This feature also helps connect the main patio with the new spa. Collaborating with Oliver, the landscape designer selected a pretty mix of mostly native perennials and annuals for the edges of the yard and the large pots on the patio. “We chose flowers in white and purple tones to give the space a little bit of punch,” she says. “The majority of the plant material is white, which is great for an evening garden party. You can see the garden when the moon is out, because the white flowers reflect the light.” With that enchanting glow emanating from the surrounding foliage, and the fire pit and lamps lit throughout the patio, this “room” is as beautiful and comfortable as any indoor space. As a result, it’s quickly become a favorite place for friends to linger on a warm summer evening, long after the sun has dipped behind the mountains.

(top) Furniture by McKinnon and Harris was selected because of its unique silver finish and beautiful design details. These pieces are meant to be left outside year-round, and can withstand even the harshest Colorado weather. (above) Previously, the patio was filled with dark, heavy wood furniture that was much smaller in scale, with cushions and accessories in hues of red and orange. Oliver chose a new, lighter color palette to better complement the patio’s brickwork. The owners are avid entertainers, and the new yard offers something for everyone: lounging, swimming, eating and chatting. 65

A Sweet Basil Summer A legend in Vail (and beyond), Sweet Basil shares recipes for some of its best summery eats BY CAROLINE EBERLY
S W E E T B AS I L R E S TAU R A N T H AS T H R I V E D FOR 35 ye a rs in a mountain town; its devotees return to their favorite dishes like they do to their most-loved ski runs; and the hotspot recently published a new cookbook, spurred by multiple recipe requests each week. It’s no surprise that diners are clamoring for recipes; while the service is thorough and the space is warm, the restaurant’s success is largely due to the food itself. Co-owner and managing partner Matt Morgan calls it “contemporary, creative American” cuisine, and the menu features dishes that are creative yet familiar, interesting yet unpretentious—and centered around fresh, seasonal ingredients. For Executive Chef Paul Anders, that focus on seasonality isn’t a trendy undertaking; it’s simply the proper way to cook. “Seasonality drives everything [we do],” he says, “not only which ingredients are in season, but also the feel of the season as well.” With that philosophy in mind, the restaurant’s summer menu trades braised meats

and comfort foods for lighter salads and entrees that highlight the freshest produce. (Sweet Basil receives many of its veggies, some of them just a day out of the dirt, from Borden Farms near Hotchkiss.) Diners who want to savor this fare all season (or year) long can get their hands on the recipes through The Sweet Basil Cookbook, a compilation that contains classics that no longer appear on the menu as well as more recent dishes. Here, you’ll find a few favorites: Duck Confit Taquitos that feature the light and bright flavors of summer; Butter-Roasted Corn Chowder that makes the most of Colorado’s Olathe corn; and Hot Sticky Toffee Pudding, a dessert with a following that approaches cult status. Don’t want to waste another minute in the kitchen—or indoors? Then snag a seat on Sweet Basil’s brand-new outdoor patio, which opens later this month and overlooks Gore Creek. It doesn’t get more “Colorado summer” than that. COLORADOHOMESMAG.COM

chiles, plantain, garlic and onion. Sweat until the onion begins to soften, then add the spices and cook for four to five minutes. Reduce the heat to low and add the chicken stock; simmer for 30 minutes. Remove the cinnamon stick and cloves from the mixture. Puree the contents of the pot in a blender and then return the ingredients to low heat. Bring the mole back up to a simmer and whisk in the chocolate until melted. Continue to cook for two hours over very low heat, stirring often. Remove from heat and strain through a chinois. Season with salt, to taste.
Duck Confit Taquitos with Mango-Fennel Salsa, Mole Poblano Sauce and Shaved Jalape単o Pictured on previous page; makes 40 small tacos TACO SHELLS* 3 gyoza wrappers per person Preheat a fryer to 350 degrees F. Fry the wrappers, one at a time, until golden brown. Remove the shells and, while still hot, shape them to your desired taco size. Place on paper towels to drain. Store in a cool, dry place. *Gyoza wrappers can easily be replaced with store-bought taco shells or tortillas. Just portion out more filling for bigger taco shells. DUCK CONFIT 1 cup kosher salt 1 tablespoon whole black peppercorns 2 cinnamon sticks 1 tablespoon coriander seed 1 2 / ounce fresh rosemary 1 2 / ounce fresh thyme 2 bay leaves 8 large duck legs Duck fat, as needed In a mixing bowl, combine the salt, spices and herbs. Rub the mixture over the duck legs and place the legs in a deep-sided, flat pan. Cover and refrigerate for 24 hours. Preheat oven to the lowest possible setting, approximately 180 degrees F. Remove the legs and rinse off legs and pan. Pat dry and place them back in the pan. Cover the legs completely with duck fat and place on stovetop at low heat for 30 minutes. Cover the pan and place in the oven for 12 hours. When done, the meat should easily pull off the bone. Remove the pan from the oven and cool the legs in the fat until you are ready to use it. If the legs are completely covered in fat, they will stay fresh/preserved for at least a month. Pull the

Preheat oven to 350 degrees F. Roast the corn in a roasting pan in the oven with one pound of whole butter, salt and pepper, until tender. While the corn is roasting, place the remaining vegetables, herbs and eight strips of bacon in a pot with four ounces of butter and sweat until tender. Deglaze the pot with white wine and reduce until the liquid is gone. Add enough chicken stock to cover the vegetables and simmer for 30 minutes. Remove the corn from the oven and cut the corn off the cob; add the kernels to the vegetables and stock. Add the heavy cream and simmer for 10 more minutes. Transfer the ingredients to a blender or food processor and puree until smooth. If the soup is too thick, use the chicken stock to thin it out. Strain through a china cap and season with salt and white pepper, to taste.
On a Japanese mandoline, shave the chili into paper-thin slices. Place the slices in a bowl and cover with vegetable oil. PLATE 8 thin crostini (French bread sliced on a bias, brushed with olive oil and baked until crisp) 16 sprigs cilantro Place a crostino in the bottom of each of eight soup bowls, then place one ounce of seasoned crab on top of the crostini. Scatter a few pieces of the remaining bacon over the crab, then top with five or six slices of Serrano pepper. Pour eight ounces of chowder over the garnish and serve.

CRAB 1 /2 pound jumbo lump blue crabmeat Salt, to taste White pepper, to taste Pick through the crabmeat to remove any shells, being careful not to break up the lumps of meat. Season the crab very lightly with salt and white pepper. SERRANO PEPPERS 1 green Serrano chili Vegetable oil, to cover
TOFFEE PUDDING CAKES 2 1/4 cups pitted dates 2 cups water 2 teaspoons vanilla extract 2 teaspoons baking soda 1 pound all-purpose flour 1 teaspoon baking powder pinch of salt 1 2 / cup butter 1 3/4 cups sugar 2 whole eggs 1 cup heavy cream
Preheat oven to 325 degrees F. Cover the dates with water in a saucepan and bring to a boil. Cook for two to three minutes, then remove and drain; discard the blanching water. When the dates have cooled enough to handle, peel and chop them. Return dates to saucepan and cover with two cups of water. Bring back to a boil, then remove from heat and set aside. When the dates have cooled a bit, stir in the baking soda and vanilla. In a small bowl, sift together the flour, baking powder and salt. In a separate bowl, cream the butter and sugar together with an electric mixer; add the eggs and mix well. Stir half of the dates into the butter mixture; stir the rest of the dates into the dry ingredients. Combine dry and wet ingredients, a bit at a time, until the batter is smooth. Spoon batter into individual four-ounce greased tins. Place tins onto a sheet pan, and then top with a piece of parchment paper and another tray. Bake for approximately 15 minutes. When the puddings are slightly browned and firm, remove from oven. Let cool and remove from tins. Fill the tins about a fourth of the way full with toffee sauce (recipe below), then return the puddings to the tins. They may be kept in the refrigerator or the freezer until ready to serve. TOFFEE SAUCE Yields about 10 four-ounce portions 1 2 / cup butter 2 cups tightly packed brown sugar 2 cups heavy cream 2 tablespoons Myer’s rum
Melt butter and sugar together in a 2-quart saucepan. Stir in the cream and bring to a full boil. Remove from heat and let cool a bit before stirring in the liquor. PLATE Before serving, remove puddings from the tins and warm in a microwave oven for one minute with some additional sauce. Top with soft whipped cream. Our Favorite Room
Modern Oasis What was once a forgotten, unused space is now a tranquil escape

IT’S HARD TO BELIEVE THAT THIS SMALL BACK YARD was once “a leftover space,” as Jeff Sheppard, architect and principal of Denver-based Roth Sheppard Architects, calls it. To give new purpose to the small plot of land, the architect, who also reworked the interior of the 1950s Hilltop home, designed a modern, Zen-like retreat. “Our goal was to make the space a surprise; a soft, comfortable gem for relaxing with a book or entertaining a few friends,” he says. The quiet, simple design, installed by Designs by Sundown, features a sleek custom bench that accentuates the long, narrow footprint and a natural-gas fireplace made of precast limestone. To hide the utility boxes on the back of the house, Sheppard chose a species of high-altitude bamboo, called “yellow groove,” that is drought- and cold-tolerant. “It’s a great vertical plant that covers the wall but still allows access to the utility boxes,” says landscape architect Adam Hallauer of Designs by Sundown. A simple wood screen hides the air conditioning unit; carefully chosen plants, like English ivy (which will grow to cover the retaining wall) and ornamental grasses, used sparingly, keep maintenance low. “Everything is structured and made with very few materials,” Sheppard says, explaining that in a small, modern space, simplicity is key. “People try to incorporate as many materials as they can, but then nothing is special.”
STYLE TIPS ■ Don’t fight oddly-shaped or small spaces; work with them. “We stressed the linearity of the space by adding the wood screens on either end as a focal element,” Sheppard says.
