Kitchen Season THERE’S A RUNNING JOKE between my wonderfully talented art director, Elaine St. Louis, and myself. Every time—and I mean every time—we find a stunning kitchen to share with you, I exclaim with excitement, “That’s the kitchen I want!” And Elaine just smiles and rolls her eyes, responding, “Oh, you don’t know what you want.” It’s an occupational hazard, I suppose. I am privileged to peek inside so many beautiful homes in the course of a day that it’s easy to pine for the one that happens to be in front of me. Why? Because no matter the style, good design is good design. And I am fortunate to see a lot of good design. Good design is especially important in the kitchen, where form and function need to blend seamlessly. After all, we spend a lot of time in that room, feeding our families and entertaining our friends. It’s where we linger and laugh and share our stories. The kitchens featured in this issue (starting on page 52) are certainly built for all those special activities. Although they vary in style—from sparse and modern to lavish and traditional—all are grand, professionally-planned spaces that work hard and look great. Just as kitchens should. We’re also excited to share new products that will add instant personality to that much-used room (page 21), as well as an interview with Tom Hartman, president of Kitchen Distributors (page 41). His family-owned, Littleton-based business celebrates its 60th anniversary this year. So, grab a cup of coffee, find a comfy seat and enjoy The Kitchen Issue. I know that as I peruse these pages, I’ll decide on a style I simply must have for my own kitchen. That is, until the next stunning space floats across my desk. Cheers,

earth The Senior Color Consultant at Denver-based Mandil Inc. shares sage advice about embracing a timeless neutral color scheme NO MATTER WHAT COLOR IS “IN” at a particular moment, Amy Troutman encourages her clients to consider starting with earthy, neutral colors—browns, taupes, warm grays— and then adding those big, trendy colors in small increments. “These warm colors are timeless and work year-round,” she says. “They provide a solid base onto which you can layer the bright, fun colors that show your personality.” As the Senior Color Consultant at Mandil Inc., a Denver-based company that helps homeowners and design professionals choose color schemes for residential and commercial projects, Troutman wants to keep her clients from making expensive, time-consuming color mistakes—especially when it comes to the exterior palette. “I had a client who wanted to paint her entire home purple. I convinced her to choose a soft taupe, then we upgraded the lighting, added colorful planters and painted the front door purple. Just that touch still announces that a bold and interesting person lives there.”

CH&L: So how exactly does a person go about starting an art museum?

Shirley Stocks: We were incredibly lucky. A friend and I had been talking about a museum for a few years, and finally one day we said, ‘Let’s just start one.’ So we began the paperwork, and we gathered a wonderful board of directors. Everyone was really excited, but we had no idea where it would be housed. That was December of 2005. A year later, the city came to us and said they had received a gift from the estate of Helen Rehder, a rancher here. She left a beautiful historic building in downtown Steamboat to the city with the stipulation that it would be preserved and used as an art museum.

So the museum was meant to be?

I certainly think so. The timing was incredible. Of course, right away the city asked if we could do a show in the front portion of the building because they didn’t want it dark for ski season. In two weeks, we cleaned and painted and mounted an exhibition. We showed work of artists from Steamboat, past and present. We had about 60 pieces, and we called it The Opening Exhibit. It sounds fabulous. Did it confirm your hunch that Steamboat needed a museum?

Definitely. There’s a rich history of art in Steamboat: everything from PerryMansfield Performing Arts School & Camp, which is the oldest [continuously running] performance camp in the country, to the Strings Music Festival. When we started thinking about the museum, the art scene in Steamboat was growing pretty rapidly. Several galleries had opened, and it seemed we needed something that people could be inspired by and aspire to. Your mission is to “collect, preserve, and present fine art to the public, with a primary focus on the culture and heritage of northwestern Colorado.” So does the museum have a permanent collection?

When we started in the building, we were only using a fourth of it. Now we have a little museum store, too. Because the building is so old, we have to bring each section up to code, which takes time and money, obviously. When we get the whole thing renovated, we’ll have a workshop room, three more exhibit spaces and an art research library. I can’t wait for more exhibit space. TOM HARTMAN HAS A LOT TO BE HAPPY ABOUT THESE DAYS: he’s celebrating the 60th anniversary of his family’s business, Littleton-based Kitchen Distributors; he’s just completing a major renovation of his showroom; and after braving the the recent economic crisis, he’s feeling confident that an upturn is beginning as he sees a renewed interest in kitchen renovations. Kitchen Distributors came to be in 1953 when Hartman’s father, Pius “P.G.” Hartman, a salesman for Denver’s Kearney Kitchens, was asked by the Geneva Steel Cabinetry Company to open a franchise. “Dad borrowed $250 from my grandfather and started the business,” Hartman says. “It was originally a wholesale distributor, selling to showrooms all over Colorado. The first store was on East 6th Avenue [in Denver] and Dad worked mostly on commercial projects like schools and hospitals.” The 1960s brought the introduction of wood cabinetry and Mr. Hartman found—and favored–a line designed by Paul McCobb and manufactured by Indiana-based Mutschler Kitchens. “They were very modern,” Hartman remembers. “They were off the floor with warmer finishes and signature handles. Very ‘Mad Men.’” Around the same time, Mr. Hartman was spending more time on residential projects. “He got tired of dealing with the government and the bureaucracy of commercial bids,” Hartman smiles. “He found working with homeowners and creating custom work much more appealing.” Hartman, along with his four siblings, grew up in this business, sometimes accompanying their father to work or riding along with a cousin who was an installer. “I remember going to the showroom with my little drawing

board, or sorting nuts and bolts in the warehouse for extra money.” A true innovator, P.G. Hartman was always looking for ways to improve the way kitchens functioned. He met a quadriplegic and noticed the problems someone in a wheelchair might have working in a kitchen. He spent a year working with the woman to develop an accessible kitchen. “He found ways to integrate concepts that were then only available in commercial spaces, like motorized shelving, ovens with side-opening doors and movable countertops,” explains Tom. At a 1972 home show, Mr. Hartman presented the Wheelchair Kitchen, for which he received national recognition. “He was always thinking about ways to make products better,” says Tom, reminiscing about a time not long ago when he visited a cabinet company and found that they had created a book that contained all the letters his father had written to them with suggestions on how to improve their line. When Mr. Hartman passed away in 1974, Tom was a student at the University of Colorado. “We were all a bit lost; we didn’t know what to do with the business.” Tom soon made the decision to return home and, with his sister Shirley, who had been her father’s secretary, took over the business. “This is the only job I’ve ever had.” Sixty years after his father opened that small showroom with one line of cabinetry, Tom Hartman is ready to start a new chapter with a new showroom. A celebration of the grand reveal will include a culinary arts series in November that will feature cooking demonstrations by some of the area’s top chefs. “Some people thought we were crazy to take on a renovation in this economic climate, but I have confidence in the market. You have to invest in the future and it will pay off.”

WE WERE JUST WONDERING... What’s your home kitchen like? My kitchen is sleek and modern. A little color comes from the cobalt blue countertop; the rest is dark cabinetry and lots of stainless steel. It’s clean and straightforward. Do you cook? I cook on the grill. [Hartman’s partner] William [Landeros] is the chef of the family. What do you like to do when you’re not in the showroom? We live out in the country, in Sedalia, and we have a couple of dogs, so lots of hiking and just being outside. Do you ever try to talk your clients out of anything? Mostly overdesigning. There are so many choices now, and with HGTV, we’re exposed to so many different styles. Some people want to combine too many things. I try to convince my clients that simple is best. What can we expect from the newly renovated showroom? Today, there is a “less is more” attitude with our clients, and the open concept home is still popular. So the space will be much more open and casual, with a simplified, uncluttered design, high-end finishes and comfortable furnishings. We wanted to create an open, friendly, engaging and relaxing space. Tell us another story about your dad. Gosh, there are so many. My dad had an incredible work ethic. He worked in the evenings and felt that everyone else should, too. Years ago, our family moved into a new house in Greenwood Village and we were having new landscaping installed. He came home one evening, work in hand, and saw the landscapers wrapping up at dusk. He put out floodlights so that they could keep working.

Boldly Balanced A remodeled kitchen has timeless appeal with a carefully curated mix of materials

WHAT DO YOU DO when your clients don’t want a traditional home but aren’t quite ready for modern? Interior designer Runa Novak, of In Your Space, suggested to the owners of this Basalt home that the perfect solution was transitional style, a design that would juxtapose clean lines with delicate details, masculine materials with feminine curves, formal style with casual elements. “Designing this kitchen was a constant balancing act,” Novak says. Her first step was to enlarge and open up the formerly cramped and dysfunctional kitchen. “We expanded up and out,” Novak says. “This is the gathering space for a family that loves to cook and entertain.” In designing a new floor plan, Novak replaced a peninsula with a huge walnut island that houses a prep sink, dishwasher drawer and cabinets, along with space for seating and dining. Furniture-like legs add a traditional detail. Novak topped it with unusual Gold Marinace granite that is naturally embedded with river rocks, a nod to the fly fisherman in the family. “The island is clearly the showpiece,” Novak says. “It is massive. To balance it we went with a big custom hood over the cooking area.”

The riveted zinc hood introduces some curvature and texture, spanning the eight-burner, double-oven Thermador range and extra counter space on either side. “I like kitchens to be symmetrical around the stove to keep the room balanced,” Novak notes. To that end, she flanked the area with counter-mounted upper cabinets that offer a wealth of storage. Vaulted ceilings allow for the cabinets to soar nine feet high. The Christopher Peacock perimeter cabinetry—solid maple and hand-painted on site—has a Shaker-style profile but is bigger in scale. Because the cabinets are so linear and angular (even the crown molding is stepped), the designer introduced curves to balance the bold geometrics: a swirled water-jet mosaic marble backsplash with ribbons of mother-of-pearl from Decorative Materials; rounded polished-nickel cabinet pulls; a pair of crystal-and-polishednickel chandeliers. “The chandeliers are large in scale but delicate in design because everything is so bold,” Novak says. “The new kitchen was instrumental in forging a design direction for the whole-house remodel that followed, determining the style of built-ins, doors, bathrooms and lighting,” says Novak. “We always start with the kitchen,” she adds. “It sets the stage for the entire house.”

The Un-Kitchen Simple and elegant, a clean-lined kitchen becomes one with its surroundings

THE TOTAL RENOVATION of this Boulder home began with the kitchen, which is an extension of the great room and the entertaining space that encompasses the entire level. “The homeowners wanted all the ‘kitchenesque’ parts to go away and for the kitchen to appear as a gallery,” says kitchen designer Angela Otten of William Ohs Showrooms. “The house is set up with white walls to show off the art collection.” Otten reconfigured the kitchen, adding and subtracting walls, to create a floor plan that flows gracefully through two opposite-facing peninsulas and a center island. She chose a high-impact neutral color scheme: warm walnut cabinetry that matches the floors, gloss-white accent cabinetry, white marble countertops and a mix of brushed bronze and stainless steel metals. Instead of emphasizing the range and hood as the focal point of the kitchen, Otten created a sleek cooking station with floating white cabinets, a low-profile induction cooktop and a stand-out backsplash that looks like a piece of abstract art. It is actually a slab of textural, leathered granite framed with mitered white marble that fits precisely into the space. Otten used similar framing techniques throughout the custom kitchen, allowing the island’s white waterfall countertops to frame the walnut base on one side, and using walnut to frame the white gloss drawers on the other side. “The island is very simple and as clean as possible to draw attention to the lines and mitered frames,” she says.

The designer also employed attractive solutions to hide typical kitchen elements. Paneled walnut cabinet doors are lightened up with white, while painted panels conceal a refrigerator and freezer on one side of the range and a coffee center on the other. Stainless steel tambour doors above the double ovens open to reveal a baking center; a second set of tambours and drawers near the sink hides dishes, silverware and table linens. “The homeowners host a lot of special events, parties and art openings,” says Otten. “With its clean lines and simple color scheme, the kitchen allows the whole floor to read as one.”

“NOTHING WAS LEFT TO CHANCE in renovating this 1980s Greenwood Village kitchen,” says designer Rob Osgard of Rob’s Interiors and Howard Lorton Galleries. “We were paying attention to detail, and it shows.” Those exquisite details—limestone floors laid in a classic French pattern, custom cabinetry with leaded-glass doors, handglazed tiles and a one-of-a-kind range hood —were admittedly a bit over-the-top, but with good reason. “The kitchen had to match the home and personality of the homeowners, who have European taste and flair,” says Osgard.

Right from the start, the designer made a grand statement with the stunning focal point of the room: an intricate range hood comprised of 17 different hand-glazed tiles from Decorative Materials, including mosaics, listellos and scrolled corner brackets. “It took a good part of a day to draw and design the hood—it was like putting a puzzle together,” says Osgard, who worked closely with Sasha Shaulsky of Colorado Tile Installers. “We taped the one-to-one scale drawing to the ceiling and rolled it down. The homeowner, who was very involved, said, ‘That’s it!’—and a kitchen was born.”

The hood drove the design for the entire space, Osgard says. He complemented the tiles’ delicate natural tones with creamy painted and glazed custom cabinetry. “We created movement by layering the cabinets—in and out, up and down—adding shadows, depth and interest,” he says. Decorative crown moldings, columns and furniture-style legs augment the Old-World feel. The designer embellished a dark cherry island with reeded Corinthian columns, adding an element of contrast to the light palette. He varied the countertop materials, installing honed Calcutta marble on the perimeter and Bursa Blue granite on the island, and introduced more warmth with oil-rubbed bronze hardware. French limestone floors laid in a classic Versailles pattern have a rich variation in color. They were placed strategically to show the fossils embedded in the stone. Leaded glass doors on the peninsula and curio cabinets allow the homeowner to display her collections of Presidential china and Italian pottery. “She has so many lovely pieces and we wanted all of them to have their spot,” Osgard says. “We let the kitchen be the backdrop for layering on all the pretties.”

4 Ornate Opulence

The heart and soul of a kitchen renovation is the elegant ornamentation that links it to the rest of the home

IT BECAME CLEAR from the start that a Band-Aid approach was not enough to rescue the original kitchen of this Westminster home. The work triangle and flow didn’t function well, and the builder-grade materials didn’t live up to the rest of the grand Tuscan-style house. Soon after contacting Bev Adams, CMKBD, of Interior Intuitions, the homeowners realized that nothing less than major surgery was needed. Adams began by reconfiguring the space, turning a little-used porch into a caterer’s kitchen and combining a butler’s pantry and wine cellar. She created a more functional flow in the main kitchen, basically designing

a galley kitchen on one side of a large island and an entertainment area on the other. “Designing a kitchen is about people and where they are placed. The island’s shape and mass protect the cook while maintaining contact,” Adams says. With a floor plan established, Adams went to work on the extensive ornamentation of the room. “It was a continuation of the thought process of the house, speaking in the same voice,” she says. Maple Ridge Cabinetry provided authentic European embellishment to the custom cabinets, with three-dimensional carvings and several rich, layered finishes of paint, stain and glaze. Stately Schonbek crystal chandeliers light the multi-level island, which features a distressed finish, fine furniture details, Austrian leather upholstery and extra-thick Typhoon Bordeaux granite countertops with hand-carved rope edging. “The countertops are exceptionally beautiful,” says Adams. “The mass of this kitchen demands the extra heft.” The perimeter counters have an exaggerated ogee edge. While the intricately carved and scrolled wooden armoires that house two refrigerators command attention, other elements draw the eye as well. Adams framed a Sonoma tile backsplash with a customdesigned extended range hood from Distinctive Mantels. Crown moldings up to five inches high vary in design and intricacy. Elegant curio cabinets rise to the ceiling in graceful arches. The kitchen design includes a great deal of symbolism, repeating the columns, scrolls and acanthus-leaf motifs found elsewhere in the house. “The soul of the design is the ornamentation,” says Adams. “The circular scroll form, repeated in the light fixtures, hood, cabinetry and countertop edges, not only provides cohesiveness, it depicts the joy and love of family that is so important to the homeowners.”

A Denver penthouse gains new life with an illuminating renovation

IT’S AMAZING WHAT a little sparkle—and a whole lot of elbow grease—can accomplish. Prior to a complete yearlong renovation, this penthouse in downtown Denver featured dark finishes, heavy drapes and dimly-lit rooms, all presided over by a majestic but musty old elk head. Now the home is transformed with sleek and stylish furnishings, glossy custom built-ins, abundant natural light and not a hair of taxidermy in sight. When Steve and Susan Kirkwood bought their Colorado getaway, they wanted to renovate the kitchen to add sophisticated style with plenty of shine, so they tapped Angela Otten of William

Interior designer Kristina Sterling reupholstered the homeowners’ existing living room sofas in a plush Romo fabric and added a geometric coffee table from Bolier & Company. Windows were left unadorned, letting in plenty of Colorado sunshine.

“When we do these renovations,” Otten says of the kitchen, “we usually remove walls. In this case, I added walls back in to distinctly separate the bar area from the kitchen area by creating a niche.” The upper cabinets of the built-in bar are clad in custom-mitered stainless-steel doors and the lower cabinets are high-gloss red satinwood.

Ohs Showrooms in Denver to create a contemporary, welcoming space for entertaining. But once the project got under way, their plans didn’t stop at new cabinets and countertops. “The existing kitchen was very traditional, as was the rest of the home, and they wanted something fun and modern. Once we started on the kitchen, the project just expanded from there,” Otten says. She turned to interior designer Kristina Sterling, founder of Denver-based Seek Interior Design, and together they created a kitchen design that served as the nucleus for the home’s new look. Dark walnut cabinets with a matte finish are offset by high-gloss red satinwood built-ins. Custom, mitered stainless-steel doors accent the bar area’s upper cabinets, and mirror the stainless-steel appliances to add balance to the room. Bubbly custom pendants hang over the island, which is curved to mimic the ceiling’s architectural detail. And to add just a touch of pizzazz, the range’s textured-glass backsplash and bar area’s onyx countertop and wall are illuminated by internal LED lights at the flick of a switch.

The kitchen’s design served as inspiration for the rest of the home, combining a neutral palette, rich wood finishes and plenty of shine. “We wanted the kitchen's stainless-steel elements to flow throughout the entire design. You can see it in the appliances, in the bar cabinetry, in the faucets and also in the entertainment center,” Otten says.

The designers continued the satinwood cabinetry, backlit onyx and stainless-steel accents in the family room, where Sterling introduced texture and warmth by layering in leather and chenille upholstery, and a soft-pile area rug with an earthy, organic pattern. Neutral walls and fabrics throughout the home create a serene envelope for rich wood touches, streamlined furniture and sophisticated, nature-inspired accents. In the dining room, Sterling surrounded the sleek table with contemporary chairs upholstered in cream leather. She crowned the room with a glamorous raindrop chandelier and grounded the space with an area rug that evokes an organic feel. (this page) Sterling created a welcoming perch in the transitional space that joins the kitchen and dining room with deep chairs by Pietro Costantini and a custom cocktail table that extends to make room for appetizers. “The sitting area is close to the bar, so it’s a great place to sit and have your drink and enjoy an incredible view of the city,” she says. In the master suite, Sterling enlivened the neutral color palette, tiling an accent wall in earthy tones and adding both subtle and significant splashes of turquoise blue, one of the Kirkwoods’ favorite colors. As in the main living spaces, the recessed ceilings in the master suite were painted to highlight their depth and add a bit of drama—just the kind of visual interest that the homeowners were looking for. “Once we took down those heavy drapes and dug into the renovation, we wanted this home to be fresh and fun,” Sterling says. “The homeowners wanted lots of pretty things to look at—without detracting from those incredible city views—so we just kind of ran with it.” “And don’t worry,” Otten says. “We found a new home for the elk head.”

Bright & Lively Sophisticated yet unpretentious, a remodeled Hilltop home blends vibrant colors and bold patterns with functional, familyfriendly spaces

HAVING A SUCCESSFUL LONG-DISTANCE relationship requires a measure of finesse—and faith. Take the case of Erika Rundiks and Katie Schroder, owners of Atelier Interior Design, who were given the charge of completely updating a five-bedroom Hilltop home while their clients remained in New York and prepared to move. And just to keep things interesting, the homeowners were also expecting a baby—so every room in the house had to be move-in ready within four months. Fortunately, the Denver design duo was up to the challenge and flew to New York for several days of intensive planning.

In the family room, which interior designer Erika Rundiks describes as “restful and relaxing,” Artistic Tile’s carved Lake Blue Ambra tile adds a sculptural quality to the hearth. A pair of Thayer Coggin sofas are covered in teal linen, and the chair in the foreground is covered in Schumacher’s Amazing Maze in kohl, an outdoor fabric.

“Our clients asked us to give their home a modern, eclectic vibe with a bit of mid-century modern,” says Schroder. “During our initial meetings we also learned that a global, rustic aesthetic resonated with both of them, along with vibrant earth tones and contemporary, geometric patterns.” After perusing furniture and fixtures at the New York Design Center, the group visited the Flavor Paper wallpaper studio in Brooklyn, where the homeowners were drawn to a boldly-colored, whimsical design that would eventually end up in their dining room and set the tone for a fun, practical family home with plenty of character. “The wallpaper was a brave choice and we loved it, because we’ve never been known as ‘the beige designers,’” Rundiks says. “Our strong suit is mixing pattern and color.” While the homeowners and designers communicated daily via a flurry of phone calls and emails, the craftspeople from True North Construction began the remodel. After removing obtrusive cabinetry that hung over the kitchen island to open up the space and bring in more light, they constructed a comfortable, built-in cushioned banquette for casual meals. Because of time constraints, Rundiks and Schroder opted to have the existing kitchen cabinets painted in a cool gray hue rather than replacing them. Dated counters were replaced with creamy honed marble topped with a glass mosaic tile backsplash, and the hardwood floors were refinished with a walnut stain.

The show-stopping Flavor Paper Cocobolo wallpaper makes a bold statement in the open dining room and sets the color scheme for the rest of the home. Green leather chairs from Crate & Barrel surround a rustic Chamca Freeform table; the wood buffet, from Global Views, adds a MidCentury modern vibe.

Colorful bottles and chunks of slag glass reflect light in the kitchen nook. A custom table has a kid-proof galvanized zinc top, and the bench cushions are covered with easy-care faux leather Anzea fabric from Egg & Dart. The green chairs are from Crate & Barrel, and the Audrey drum pendant light is from Stonegate Designs. To save time and money, the designers kept the existing kitchen cabinets and had them refinished in a limed-gray wood tone. The Tozen Vanadium Silk glass mosaic backsplash contrasts with countertops of honed, sealed marble—a practical choice for the homeowner, who loves to bake. Overhead Fuji pendant lights are by Oggetti Luce.

The fireplace’s pink marble surround in the family room was chiseled off and replaced with sculptural, carved limestone tile. American Clay—a natural, soft finish similar to Venetian plaster—was troweled onto the chimney and walls. The contractors updated bathrooms, painted walls and trim, swapped out light fixtures, hung new window treatments and replaced hardware. Using nine coats of paint in five different colors, a team of painters refinished the fireplace mantel, bookshelves and stair banisters, transforming the plain woodwork with deep, tonal browns and grays. Furnishings were chosen with style and durability in mind. “Katie and I both have kids, and we believe you can have a beautiful home where you enjoy being a family if you choose tough fabrics and furnishings that are practical and fun,” says Rundiks. A custom, zinc-topped farmhouse table in the kitchen with faux-leather vinyl cushions on the banquette eliminated worries about spills. The designers eschewed formality in favor of a simple, rustic wood dining table and a sealed, copper-top coffee table in the living room. Other sturdy choices include commercial-grade rugs, outdoor fabrics on some of the furniture and a pair of vintage ABS plastic Vico Magistretti Gaudi chairs in the children’s playroom.

Despite the complicated logistics, the home was completed on time and the homeowners were able to move in before the baby arrived. “The clients are down-to-earth, they know what they like. They were decisive and they trusted us,” says Rundiks. “Those are good elements for making any long-distance design project successful.”

Designing the Perfect Event DesignWorks is a full-service wedding and event coordinating company based in Denver. Co-owners Mike Roffino and Dave Squires founded the enterprise in 2000; the business has grown into a thriving corporation with a reputation for excellence and attention to detail.

DesignWorks has helped create everything from weddings to corporate events, fundraisers, birthday celebrations and more. The team coordinates décor, lighting, floral and graphics to create distinctive, unforgettable events. They can create an intimate gathering at home or make an impression at an event with thousands of guests with equal ease. The company’s reputation is known far beyond the Front Range, as they have helped create special events across the country and around the world; recent affairs include weddings in Costa Rica and corporate events in Istanbul and Greece. A DesignWorks trademark consists of custom lounge settings—inviting vignettes placed throughout a venue. “We like to landscape and finalize the scene with detail,” explains co-owner Mike Roffino. Their graphics department is able to print on everything from paper to canvas, and can create small table accents, tall banners, and everything in between. Floral services range from centerpieces that reach for the ceiling to room arrangements, bouquets and much more. “The whole thing about the departments that we have,” says Roffino, “is that it allows us to keep everything focused, and present a concentrated, cohesive design.” One of the reasons that DesignWorks remains a go-to choice for clients around the world is because Roffino and Squires are always looking for strategies to add value for their customers. They recently invested in LED technology for their lighting department, as well as hiring Alexander Reshetniak, formerly of the DCPA, to head up their lighting department.

The pair also continually purchases new furniture elements for their lounge seating areas. “Our furniture is eclectic, it’s not like anyone else’s,” says Roffino. “We carry unique pieces, ranging from the Great Gatsby to a more rugged Ralph Lauren look, Victorian, outdoor pieces, the whole gamut.” The company partners with wedding and event planners, along with other industry professionals, to create their signature soirees. They recently presented an Ultimate Mixer, inviting 150 talented planners to their 56,000-square-foot Denver warehouse for a showcase of all that DesignWorks has to offer. At the Ultimate Mixer, DesignWorks created lounge settings and backdrops, along with tablescapes featuring beautiful food presentations. They created a meandering labyrinth of vignettes, each with a different theme and focus. “We wanted to remind people of our attention to detail,” says Roffino. “We wanted them to think outside the box and get creative at their next event.”

Azpiroz, a true pizza enthusiast who, with business partner Bill Freeman, started the Bay-Area-based Patxi’s Pizza after discovering that the Chicago-style pies he loved were woefully under-represented outside the Windy City. The first Patxi’s Pizza opened in Palo Alto, Calif., in 2004. Nearly a decade later, there are 11 restaurants, with two opening within the last year in Colorado—one in Englewood and another in Cherry Creek. Plans for a third in downtown Denver, set to open in November, are in the works. “I worked in a pizzeria while in college, then spent time in Chicago to study the whole pizza culture—iconic places like Lou Malnati’s and Gino’s East,” says Azpiroz. “I loved the feel of these traditional pizzerias, with the red-checkered tablecloths and those red plastic soda glasses. It’s a communal experience, a feeling that we wanted to capture in our restaurants.” Beyond the restaurants’ comfortable, modern-rustic atmosphere, Patxi insists on the best ingredients, going local when possible. “But we get our sausage from Chicago,” he points out. “It makes all the difference.” Recently, Patxi has been experimenting with grilling pizza, and offers some tips (see the sidebar below). “It’s not terribly easy, but with a little practice it works surprisingly well,” he says. “I love being outdoors and not having to turn on the oven, and this method accomplishes both of those goals.”

Grill It! Grilling pizza takes a little practice, but the benefit, according to Patxi Azpiroz, is that a grill can be heated to the prime pizza temperature of around 700 degrees F (a temperature most home ovens can’t reach), resulting in a crust that’s perfectly crispy on the outside and chewy on the inside. ■ Preheat your grill to 700 degrees F. If using a gas

grill, try adding a small aluminum foil packet of wood chips to add the flavor of smoke. For charcoal grills, wood chips can go directly on the coals. ■ If you own a pizza stone, place it on the grill while it

is preheating; it’s important to make sure the stone is thoroughly preheated before placing a pizza on it. ■ Using a pizza peel, slide prepared pizza onto the

preheated stone; if you do not have a pizza stone, use a rimless cookie sheet or place the pizza directly on the grill. ■ Cover and cook for about three minutes. ■ As all grills are a bit different—and external tempera-

ture and humidity are a factor—make sure to check your pizza after a minute or two to get a bearing on how fast your pizza is cooking. You can always let it cook a little longer, but it’s impossible to go back! 140

Patxi’s Neapolitan Pizza

Enough for 4 to 5 9-inch pies 1 quart warm (between 105 and 115 degrees F) water 1 /2 ounce yeast 1 ounce salt 1 ounce extra virgin olive oil 21/2 pounds ‘00’ flour or high-gluten allpurpose flour (available through King Arthur Flour) In a large bowl, mix the yeast in warm water until fully dissolved. Add the salt and olive oil. Add the flour, a little at a time, and mix by hand until dough is smooth and elastic. When the dough begins to pull away from the sides of the bowl and off of your hands and fingers, it should be ready. Cover the bowl with a damp kitchen towel and let rise in a warm area on the counter for 2-3 hours. Divide the dough and roll into four or five 8-ounce balls (about the size of baseballs). Arrange on a cookie sheet dusted with flour and paint the tops of the dough balls with extra virgin olive oil. Cover with plastic wrap and refrigerate overnight. (Refrigerated dough will last 2-3 days and can be frozen.) Remove dough from the fridge 2-3 hours before using. Flatten the dough on a liberally floured countertop or large cutting board and roll into a circle. removing as much air as possible. Gently lift the dough and stretch to form a thin disc about 10-12 inches in diameter.

3-4 ounces Tomato Sauce (recipe below) 5 ounces cubed whole milk Mozzarella Meats/vegetables as desired Place the disc of dough on a liberally floured pizza peel; ladle on 3-4 ounces of sauce.Top with cheese and your choice of toppings. NOTE: Do not overload the pizza with toppings as it will take longer to cook all the way through; with practice you will find your ideal amount as well as flavor profile. Right now my favorite is ham, mushroom, and eggplant. Be creative: instead of the standard pepperoni and sausage, try grilled chicken or roasted red peppers and artichoke hearts. Experiment with leftovers!

Patxi’s Fresh Tomato Pizza Sauce Enough for 4 to 6 12-inch pies This is a base for a great pizza sauce, but it can also be adapted for pasta or meatballs. 10-15 ripe large tomatoes 3 tablespoons olive oil 1 clove garlic 10 fresh basil leaves, roughly chopped Hand crush the tomatoes in a large pot and simmer over low heat for about 10-20 minutes, until soft.

Margherita Pizza with Grape Tomatoes 8 ounces dough, stretched to 10 inches 3-4 ounces tomato sauce 6 ounces mozzarella, freshly shredded 8-12 cherry tomatoes, cut in half Sea salt to taste Drizzle of extra virgin olive oil 1 tablespoon fresh grated Parmesan 5 leaves fresh basil, thinly sliced Preheat oven to 500 degrees F. Place stretched dough on cornmeal-covered cardboard round or pizza pan. Using a small ladle, spread sauce in a circular motion, evenly covering the dough, leaving a 1/2” rim of dough uncovered. Ensure that there is minimal sauce in the middle of the pizza. Sprinkle cheese from the outermost edge of the sauce, with lesser amounts as you go toward the center. Bake for 12-18 minutes. Remove from oven, sprinkle with grated parmesan, drizzle with olive oil, then place fresh sliced tomatoes and thinly sliced basil leaves on top. Using the pizza cutter, cut pizza into 6 or 8 slices; serve immediately.

Meatballs 1 pound ground beef short rib 1 pound bulk Italian garlic fennel sausage 2 teaspoons fresh ground pepper 2 teaspoons Kosher salt 1 cup dry bread crumbs 3 /4 cup whole milk 1 egg, lightly beaten 3 /4 cup fresh grated Parmesan cheese 12 ounces fresh Ricotta cheese 24 ounces high-quality marinara sauce 1 tablespoon fresh basil leaves, julienne Wedge of Grana Padano In a large bowl, mix beef, sausage, salt and pepper, and set aside. In a small bowl, combine milk and bread crumbs; add egg and lightly mix, then add to beef mixture. Add Parmesan and Ricotta cheeses and gently mix by hand (be careful not to overwork the mixture as it will become tough when cooked). Line a cookie sheet with parchment paper and form meatballs into 5 oz. rounded portions and space evenly. Bake in preheated 450-degree oven for 30 to 40 minutes. Remove meatballs to a glass baking dish and evenly ladle marinara over the meatballs. Refrigerate for 24 hours. Reheat meatballs at 425 degrees until heated through. Grate fresh Grana Padano on top and finish with basil.

Burrata Bruschetta This impressive-looking and tasty appetizer is easy to make at a moment’s notice. 4 ounces Burrata cheese, room temperature 1 /2 cup prepared or homemade confit tomatoes (recipe below) 2 tablespoons prepared basil garlic pesto 1 loaf focaccia bread 1 teaspoon extra virgin olive oil Sea salt

Cut focaccia into 8 equal pieces, 3/4 of the way through. Brush focaccia with olive oil blend and sprinkle with a pinch of salt. Place in preheated 350-degree F oven for 5 minutes. Using a slotted spoon, scoop tomatoes out of oil, drain, and measure. Place into a small serving dish. Place Burrata portion atop the tomatoes, then spoon pesto over the top of the Burrata. Serve with warm focaccia. NOTE: for confit tomatoes, bake halved cherry tomatoes in olive oil with garlic cloves on a baking sheet at 350 degrees F until tomatoes begin to soften.

Let the tomatoes cool; run through a food mill to remove the seeds and skin (these make the sauce bitter). Simmer the milled/strained tomatoes again on low until about 30 percent of the water has evaporated; the tomatoes should have a much thicker consistency. Let cool. Add olive oil to a skillet over medium heat. Add a clove of garlic and cook until yellow; remove garlic from oil. Add basil and 12-16 ounces of your reduced tomatoes and simmer for 8-10 minutes.

Bottled Brilliance A European-inspired wine room uncorks some clever design solutions BY LAURA BEAUSIRE

WHEN THE GLOBE-TROTTING OWNERS of this Basalt home decided to remodel, a wine room was at the top of their wish list. But rather than go the route of a dark cellar, interior designer Runa Novak of In Your Space devised a bright and innovative solution. “Let’s make it look like your favorite wine shop from one of your travels,” she suggested. And a beautiful wine room was born. In keeping with the storefront concept, Novak came up with the idea of a wide, floor-toceiling wall of glass that would mimic a shop window. Then she reinforced the village feeling by choosing a Colorado buff stone flooring reminiscent of aged pavers. Initial plans for a bar table and chairs were scrapped when the owners, who have a background in the commercial display case business, fell in love with a particularly handsome glass case in Italy. Novak refers to it as a “lightbulb moment” that also solved the problem of wine glass storage. The display case was faithfully re-created by Precision Cut and Design, and now balances the wall-to-wall walnut and stainlesssteel wine racks, custom-made by Brushaber Wood Design and ECH Woodworking. Novak chose the Italian, hand-blown glass chandelier by FLOS because it reminded her of a bouquet of upsidedown champagne flutes. Borrowing space from a master bedroom closet, the designer was able to include a loft area for overflow storage, reached via a hook-on-rail ladder inspired by those in oldfashioned libraries. Clearly beautiful yet eminently practical, the entire room is also temperatureand humidity-controlled, resulting in a complex and full-bodied design success. 144
