from thepublishers Do they make baby gates for baby mouths? Didn’t think so. Pureed sweet potatoes is so last month. Cubed and steamed vegetables and chicken is the way to go. Now if Adam would only swallow the food mommy makes him. A mini storage for pea gravel, mulch chips and toast is not what the mouth is meant for, but try telling that to a 10 month-old who’s goal in life appears to be to see how many sweet potato cubes he can hold in his mouth before his parents scoop it out with their fingers. The same goes for toast. Some of it he eats. Some of it he wears. Some if it he saves for later. As Adam gathers food for the winter, Angelo continues to hunt. The other night, as we prepared to eat dinner on the deck, the cat showed up with an uninvited dinner guest. Poor rabbit. Frankly, it’s a nice change from the intense thinning of the blue jay and squirrel population we’ve witnessed this year. I know we’re going to catch grief for this but we don’t care. I’m sure salty pickle wedges aren’t recommended for babies but the boy loves to suck on those things. It’s not an

everyday event but when we’re eating out, he enjoys mashing pickle pulp. Some kids suck on icy pops. Adam sucks on pickles. I guess we’re one of “those” parents. Oh, and we’re also “those parents,” the ones who let their kids sample beverages in bottles. The Blenheim at Ambrosia is amazing. The ginger is spicy and, crazy enough as it sounds, Adam has no problem swallowing it. Perhaps we need to be steaming the sweet potatoes in ginger ale? Enjoy! Yvette and Tommy Stafford

basicnecessities By Kay Pfaltz kpfaltz@mbc.edu www.basicnecessities.com Virginia Wine, Flying Pigs Part I One of Robert Parker’s flunkies once said, “Virginia will make good wine when the pigs fly.” Well, the pigs are flying high!...and have been for some time. I guess it’s about time I sing the praises of Virginia wine. My lack of mention is born not of dislike but humble fear that in this arena I fall short. As a Francophile and student of French wines my experience lies abroad. But I bucked up and started taking my homework seriously: a bottle of Virginia wine a night. Okay, shared. First let’s dispense with the high prices. Not all Virginia wines are pricey but those that rise out of the $20 range have reason to when you consider the size of operation here versus that of South American (whose favorable exchange rates allow for added bargains), Europe or even California. A ton of grapes in Virginia costs between $1200 and $1600 versus as little as $100 (for concentrate) or $600-$900 (on aver-

age) in California. Some vines thrive in Virginia (Cabernet France, Viognier and the ubiquitous Chardonnay which is easy to grow most anywhere) and others not at all (Grenache, Syrah, Pinot Noir) although I do know a few vineyards have planted and bottled Pinot Noir. But in general it is a cool climate grape needing a long ripening period to develop interesting characteristics and flavor compounds. Petit Verdot, a blending grape of Bordeaux, is the hot grape of the moment and seems to be doing surprisingly well. Virginia’s climate is hot like the southern Rhône valley, but where organic or sustainable viticulture is standard practice in many areas in France, Virginia’s humidity makes producing organically an ordeal if not a financial impossibility. The white wines appear to be the most reliable and successful, including a number of excellent late harvest dessert wines, but the reds have a style unto themselves and are holding their own. Virginia claims the indigenous Norton, first cultivated in Richmond. Norton is most likely vitis aestivalis,

maybe vitis labrusca, but not vitis vinifera the species of vine from which most of the world’s wine is made. It is probably a hybrid of one or more native varieties and one vitis vinifera. (Note: A “hybrid” is the offspring of two varieties of different species as distinct from a “cross” between two varieties of the same species.) Some summer favorites: Veritas, Sauvignon Blanc, reserve, 2008 – New world in style with the classic Sauvignon Blanc aromas of gooseberries and grapefruit. Good minerality, slightly herbaceous, with cut grass and hay. On the palate look for lemon and lime flavors. An elegant and balanced wine. Pair with oysters, fish, salads and goat cheese. $26.99. Delfosse, Reserve d’Oriane, 2006 – This is a complex blend of Chardonnay and Sauvignon Blanc with a touch of Viognier and Petit Manseng. Tropical fruit and grilled pineapple flavors make for a rich, smooth wine. Pair with creamy poultry dishes or Asian food. $22.99. continued from page 10 Three and a half years ago, Chris Zirker took his girlfriend to Wintergreen Resort for a day of snowboarding. Both he and Catherine are outdoorsy people and even though it was the first snow of the season, they were hitting the blue-level slopes almost right away. “There’s a spot up at the top where it’s pretty steep and there are a bunch of snow blowers and the snow piles up,” Chris explained. “The whole previous season, I’d been using that snow as kind of a ramp to launch.” After about an hour and a half, Catherine had seen Chris make the jump several times. It’s probably safe to say she was sufficiently impressed when Chris headed for the ramp once more. “I came up behind him and he went up and over backwards, which I’d never seen him do before,” she said. She rushed over to Chris, and joked with him before she got almost immediately worried. Then he told her he was conscious, but couldn’t move. Luckily, help was nearby and Chris was stabilized within five minutes, but he still couldn’t move. He was at the hospital within an hour. At first, Chris was paralyzed throughout most of his body. He has a great deal more mobility now, but is to this day undergoing physical therapy. And Catherine, who Chris can now call his wife, stuck by him the whole time. In time, the couple joined Wintergreen Adaptive Sports, a non-profit organization that exposes people with disabilities to outdoor sports like skiing and kayaking. Michael Zuckerman runs the group. “This young man came to our program and from day one, has been totally available, totally full of life, willing to try anything, with this incredibly supportive girlfriend [at the time],” he said watching Catherine spray Chris’s body with bug spray. “We were very, very gentle on asking if he wanted to consider skiing again because he broke his neck snowboarding and we made sure that it was going to be his decision.” Such a traumatizing, life-changing experience might have destroyed a weaker relationship in such early stages, but for Chris and Catherine, it only brought them closer. “With a life-altering event, everything changes,” Catherine pointed out, but said her now-husband didn’t change one bit. “From my perspective, he’s still Chris, he’s still the same person. Chris remembers telling Catherine to hit the road at one point.

And even though Chris admitted that he wasn’t overly assertive in telling her to leave, Catherine was in it for the long haul. “That truly is a testament to the character of [her] being because many, many relationships do not survive that kind of trauma,” said Chris. “The fact that [she] took that attitude is truly a testimony to [her] character and behavior.” After two full years of rehabilitation and a career switch for Catherine – at the time of the accident she was working toward a Master’s in teaching and working as a full-time substitute teacher – the happy couple was on a trip to Hawaii when Chris popped the question and they were married early this year. Zuckerman was there to see the couple tie the knot. “It’s just astounding to see this young couple that is so perfectly suited and has been through so much,” Michael said. “They’re just rockin’.”

Now, as Catherine finishes up her Doctorate in physical therapy and Chris works on completing his Master’s in mechanical engineering, the newlyweds will not be kept indoors. This summer, the Zirckers are spending quite a bit of time on the water in kayaks. In the winter season, Catherine volunteers as a ski instructor as Chris hones his skills on the monoski. Just three years after Chris’ accident, he was back on the slopes. “Everybody disapproved,” said Catherine, though she eventually warmed up to the idea after Chris got the okay from his doctors. “Yea, it’s risky to go out and keep skiing, but there are plenty of things I do that are a lot less fun that [have] risk involved,” said Chris, now a pretty accomplished mono-skier. “In life, you’ve got to do what’s fun.” And today, Chris and Catherine are finding their fun in a kayak on Lake Monocan. In its 12th year, the Wintergreen Performing Arts Festival has nearly tripled in size over the course of just three years, attracting performers from all over the world. But a few participants didn’t have very far to travel. World-famous cellist Tanya Anisimova and her husband Alexandra Anufriev, a painter, have lived in Nellysford for several years and couldn’t be happier. Tanya, who grew up in Russia, said Nelson is very much like the city of Groeten, the capital of Chchnya, where she was born. “Also beautiful mountains and pure air and wonderful people,” she said. Tayna loves the mountains so much she has been composing a piece for and about them since 2007 called “Appalachi.” “It is dedicated to the mountains,” she said. “The Appalachians are the oldest mountains in the world and the theme of the festival this year.” When Tanya found out the theme of the festival was “Appalachian Roots,” she knew she was meant to have the world premiere of her newest composition right here in her home town. “I don’t believe in coincidences,” said Tanya. “I think that we are presented with things.” She first started composing the trio as a solo piece back in 2007,

before she had any idea of the theme of this year’s Wintergreen Summer Arts Festival, but transformed the pieces into a trio in preparation for the performance. She performed with pianist Lydia Frumkin and violinist Olga Yanovich. In addition to “Appalachi,” a piece Tanya said is very boisterous, lively and sometimes even a little scary, Tanya performed several other pieces in her July 11 performance in a program she called “The Time That Has Not Passed” in honor and celebration of the Appalachian Mountains. She also performed three improvisational cello pieces, each dedicated to a syllable in “Appalachi,” and several other traditional solos for stringed instruments. Tanya believes that she is one of very, very few cellists who improvise both using the instrument as well as one’s voice. During Her most recent performance was both well-attended and well-received. While Tanya obviously does not know what she will perform ahead of time, she does have to prepare her improvisations. “The main thing is one needs to empty his mind as much as possible and receive the music that is there,” said Tanya. “I believe that there is music there always, it just needs to be opened up.” NCL

With so much to say and so little space, I am going to get right down to business. Here is a quick mid-year summary of what “has” and “is” happening in the Nelson County real estate market. Mid year figures reflect a time period of January 1 to June 30, 2009 and active property figures were pulled on July 15th. Land Countywide Summary; mid year - 19 parcels of land sold within the county. In 2008, 50 parcels were sold as compared to 2007 in which 98 parcels sold. There are currently 256 parcels of land for sale within all of Nelson County. Wintergreen (Mountain); mid year - 2 lots have sold with a median lot price of $105,450. In 2008, 13 lots sold with a median lot price of $119,000 as compared to 2007 in which 17 lots sold with a median price of $120,000. There are 51 active lots and the median asking price is $110,000. Stoney Creek; mid year - 2 lots

have sold. Last year 4 lots sold which was down from 2007 figures in which 17 lots sold. There are currently 61 lots for sale at an average price per acre of $112,623 and a median lot price of $129,500. County Properties (Excluding Wintergreen & Stoney Creek); mid year - 15 parcels of land sold within the county at an average price per acre of $9,602. In 2008, a total of 33 parcels sold with an average price per acre of $10,710. There are 144 parcels of land for sale with an average price per acre of $21,577. Jim Turpin and Susan Prokop have been toiling in and tilling through the vineyards of democracy for months … literally. Their new venture, Democracy Vineyards, is the newest addition to the Nelson County wine scene and they are getting ready to host their first-ever wine shin dig, The Birth of Democracy Festival. “Calling ourselves Democracy does lend itself to all kinds of cute things,” said Susan. In an adventure that started with a simple love of Virginia wines, Jim and Susan have ended up with 45 acres of prime grape-growing land. “Jim, bless his heart, actually took courses at Piedmont Virginia Community College in Enology and Viticulture program, which was extraordinarily useful,” said Susan who, with Jim is splitting her time between the Lovingston area vineyard, and their home in Arlington.

Even after Jim learned the ins and outs of the winemaking business, there was still some research to do on the topic of where to plant so he checked with Virginia Tech’s viticulture program and found a great spot here in the county. Jim and Susan bought the land, which was formerly used as a highly successful orchard, from Tom Bomar. years ago, the property was known as the Village View Orchard and then the Harvey Orchard – the land has been used for growing fruit for almost a century. While Jim and Susan both have political backgrounds and Charlottesville definitely has its feet deep in the ocean of American history, Susan says the name of the vineyard actually sprung from Jim’s affinity for political junk. “He has an extensive collection of historic campaign paraphernalia, broadside buttons, badges and

some international political posters covering our basement at home in Arlington,” she said. “And when we began thinking of moving down here, a little light went on in our heads and we thought, ‘Oh! We can decorate the tasting room with that!’” There’s no tasting room yet, but during festival, there will be plenty of sipping. Democracy’s two wines – Declaration and Velvet Revolution – each have both a good taste and a good history lesson behind them, as will all of its future wines (including the Village View Gold apple wine that will be available in the fall). Declaration, the vineyard’s white blend, represents the philosophy of the founding fathers of the United States. Velvet Revolution, the blended red wine, celebrates the 20th anniversary of the reestablishment of democracy in Czechoslovakia, which is where Susan’s folks are from. NCL

When I first began growing perennials professionally in 1991, I was introduced to a plant that I had long since seen in many an heirloom and cottage garden – the bearded or German Iris. This plant adds wonderful grandeur to the garden for the 3 or so weeks that they are in bloom – the blooms are enormous in size and can be found in a kaleidoscope of colors. Success, as with most plants, is not as easy as 1) dig a hole, 2) insert ‘green side up’. Lessons and tricks of the trade that I have learned over the years have helped me to understand this species and help it thrive. The best time to plant iris is in early fall (September) so that the roots have enough time to get established before ‘old man winter’ arrives. Consider them an evergreen, therefore they will be giving off water vapor (or transpiring) through their leaves all winter long – translated, you got to keep the hose handy in the off season (first year only). The best place for iris is in an area where they get at least 6-8 hours of direct sun a day (when I refer to 6-8 hours of direct sun, I am referring to summer sun – the most intense light and therefore heat that they will ever receive). Success with irises comes from following the golden rule with this species – provide for proper drainage. It is always best to plant on a bit of a hill or incline where they can get some water but are never found sitting in damp soil for extended periods. If you do not have an area of this nature in your landscape use rocks to create a raised area where the iris can thrive. If you are a ‘perennial’ reader of this column, you already know what I would say about proper soil preparation – you MUST do it. For those who may be new, dig deep,

add tons of compost, peat, gypsum and organic fertilizer and then plant. Once you are ready to plant, look at the plant carefully. Typically you will be looking a single ‘fan’ or foliage that has been cut back, a rhizome (the fleshy ‘foot’ like part of the plant where the roots are attached) and then the roots. The rhizome must be visible (literally basking in the sun) once you are finished planting, NOT below the soil level. This is to assure the iris will not rot. Distance between plants should be around 1-2 feet. Water regularly until established, typically until the end of fall, then cut the hose off! Iris like deep watering at transplanting and are ‘rooting in’ and then they prefer to be on the dry side. Spring may require a bit of hand watering but err to the dry side – ALWAYS. In regards to food, we typically look to bone meal, superphosphate and 6-10-10 – they are all effective and will produce absolutely phenomenal blooms. Avoid high nitrogen fertilizers which will produce beautiful foliage but terrible bloom sets. Regarding pests and diseases, my biggest issues are always borers (controlled with an organic spray called Murphy’s Oil in a ratio 1 part oil to 10 parts water), aphids (controlled with insecticidal soap) and leaf spot (controlled by removing and discarding infected foliage and then treating plants with 2 alternating fungicides from your local garden center). All in all, this species is mostly maintenance free and is a wonderful addition to your cut flower or border garden adding stunning color in any vase in your home. Until our next article, Cheers!

asktheDr. By Dr. Steve Schmitz Afton Family Medicine Dear Dr. Steve, I have been hearing a lot about vitamin D lately. What can you tell me about it? Vitamin D does seem to be the hot new thing to consider in medicine recently. The main thing we know it does is help calcium be absorbed into our bodies from the food we eat. That allows our bones to be strong. Low vitamin D levels can therefore lead to stunted growth, bone deformities, and weak bone development in children, and thin bones (osteoporosis), increased risk of fracture, and weakness in adults. There is now also thought that low vitamin D levels can be linked to cancer, infections, heart disease, depression, schizophrenia, pain, fatigue, and the list goes on. I think we would be wise not to jump to the conclusion that vitamin D is the answer to all of our problems, but at the same time it may be a factor in lots of diseases. We can get vitamin D naturally by eating it (oily fish like salmon, fortified dairy products like milk) and by sun exposure. It is not to surprising that we are deficient as many people don’t get

in much sun on a regular basis. Furthermore, we have really pushed for the use of sun screen and sun avoidance to try to stave off skin cancer-which is wisebut as a result people are just not getting much sun on their skin. Probably just exposing your arms and legs to the sun for about 15 minutes twice per week is enough to help you make sufficient vitamin D, and would not increase the risk of skin cancer very much. The recommendation is that breast fed babies be given 400IU of vitamin D daily, children and adults to age 50 take 200IU daily, age 51-70 400IU daily, and over 71 get 600IU daily. This can be done through diet, sun exposure, or supplements (over the counter). If, however, you are concerned you could actually be low on vitamin D, discuss it with your doctor. He or she can help decide if your level should be checked and then if replacement is necessary. Hope that helps!

This month’s column is written by Bindu Johnson, Certified Health Counselor. For many years, I was a sugar addict. I craved sugar and ate a lot of sugar. I was emotionally unstable and difficult to get along with. I had a multitude of physical problems caused, in part, by my sugar addiction. It took me years to wean myself off of my sugar addiction. My experience has educated me as to the helplessness we feel around sugar addiction, the physical, emotional and mental problems caused and the journey of freeing ourselves from this epidemic yet accepted addiction. The United States is the largest consumer of sweeteners in the world. The average American now consumes more than 100 pounds of sugar and sweeteners per year. The USDA recommendation is no more than 10 teaspoons per day, yet most Americans eat about 30 teaspoons per day—three times the recommended daily value. Sweet foods are a natural part of our

diet. Sugar is a simple carbohydrate that occurs naturally in whole foods such as grains, beans, vegetables and fruit. Unprocessed sugar contains a variety of vitamins, minerals, enzymes and proteins. When whole foods are cooked, chewed and digested, the natural carbohydrates are burned smoothly and evenly, allowing your body to absorb all of the nutrients. Refined table sugar, also known as sucrose, is very different. Highly processed, it lacks vitamins, minerals and fiber, and requires extra energy to digest. The body must deplete its own store of minerals and enzymes to absorb sucrose properly. Therefore, instead of providing the body with nutrition, it creates deficiency. Also, sugar is addictive. Once hooked, it is almost impossible to stop eating it. Sucrose also enters the bloodstream swiftly first pushing blood sugar sky-high—causing excitability, nervous tension and hyperactivity—and then dropping it extremely low—causing fatigue, depression, weariness and exhaustion. Today, sugar is found in many of the usual suspects, like cakes, cookies and candy. But you will also find it in canned vegetables, baby food,

cereals, peanut butter, bread and tomato sauce. It is often disguised in fancy language, labeled as corn syrup, dextrose, maltose, glucose or fructose. Overconsumption of refined sweets and added sugars found in everyday foods has led to an explosion of overweight, obesity, hypoglycemia and type 2 diabetes.

No doubt, a quick-witted sense of humor and disposable income are the hallmarks of a good drinking buddy. But those who can say, “Yeah, I own a brewery,” probably make the best-drinkingbuddies ever. And if that’s true, then Matt Nucci and Taylor and Mandi Smack are steady making friends. In the two years since their crew opened Blue Mountain Brewery -the first brewery, at the time, in Nelson County - roughly 20,000 cases of beer have flowed from their Afton operation. Add that to the kegs of draft beer being shipped, and a person can find a bit of Afton in more than 300 places statewide, Taylor Smack said. But, in July the crew became the first brewer in

Virginia to pour themselves into a can - a move they hope will broaden their appeal. “It’s extremely environmentally friendly, and that’s kind of one of our reasons for it,” Taylor Smack said. Which may be welcomed by Blue Mountain drinkers in Nelson and other locales where bottle bins at recycling centers have gone the way of pull-tab beers. “You can recycle these in Nelson County,” Mandi Smack said. Cans also keep a brewski fresher, longer because light exposure - which skunks a beer - is zero, Taylor Smack said. And they’re easier to float down a river with, and lighter to hike into the woods, Mandi Smack added. continued on page 38

Taylor Smack of Blue Mountain operates the 6-pack machine. His brewery and three others in Virginia, were in Washington in late July on an invite from the Smithsonian’s Resident Associate Program to talk about how they brew what they brew. The seminar was hosted at the Brickskeller. Additionally, brewers from Blue Mountain, Crozet-based Starr Hill Brewery and Roseland’s Devil’s Backbone will be teaching a brewing class this fall at Piedmont Virginia Community College in Charlottesville. A brochure touts the class as a way to get an MBA, or “Masters of Beer Appreciation.� Stephen Beaumont, an Ontariobased journalist who has spent the last 20 years writing about the world of beer, said there is a growing number of craft breweries (micro-breweries, whatever) that are now bottling and canning, especially in the United States. He pointed to the Coloradobased New Belgium Brewing Company which last spring rolled out its popular “Fat Tire� label in a can. “If you wanted to can beer [more than five years ago] it was an investment and a half,� Beaumont said. Blue Mountain’s beer-canning machine is roughly the size of a hot dog cart and its first run is scheduled to crank out a hundred cases. Cost aside, the move to cans comes saddled with the perception that beer tastes better out of a bottle. But Beaumont said the can-liners used today have shuttered that argument for even the most refined palate.

“There really is no metal-to-beer taste,� he said. Taylor Smack echoes that. “Haven’t we all had canned beer in the last 20 years,� Smack asked. “They invented a liner like 30 years ago, there’s no canned-beer taste.� And while Blue Mountain’s first canned run of their signature “Full Nelson Pale Ale� may not grab the taste buds as something different, a study of the can will. “Our regular [bottled] six packs are very serious, they’ve really got the branded look,� Smack said. “[The cans are] kind of new angle for us.� The label reads, in part: “Demand fresh beer: Check my butt to make sure I’m not older than I look.� And as long as it’s still fresh, that might just be enough to put aside, for an evening, the bottle-to-can debate. Well, at least if your sense of humor is in drinking-buddy mode. NCL
