Reader Submission - Favorite Memory From 2013 submitted by Lauren Nolan We have many great memories from 2013, but there is one that stands above the rest. In 2012 we introduced our 2 sons, Gavin and Dylan, to the sport of wrestling. This sport has taught our families so much about ourselves. Dylan (8) had gone all of 2012 with out winning any tournaments and very few matches. He pressed on even with the mounting losses. In January of 2013 he won his first gold medal at a local tournament. A few more followed, enough so that it was recommended that he attend the Florida State Championships in Kissimmee. Up to the last minute we were hesitant, due to a sound defeat the week prior. Dylan assured us he would do well and we ventured to the center of the state. Dylan surprised everyone – including himself – by winning the first 3 matches and putting himself in the finals. As he prepped for the last match he was told that he accomplished his placing by himself and he should be very proud of making to the finals. Dylan then began to cry and doubt himself as the match started. The other kid had taken an early lead, and leading into the final round Dylan, who was vis-

ibly upset stated that he could score and began to believe in himself. With 40 seconds to go he took the lead and never relinquished it. Once he won and began taking his ticket to the head table, with no one other then his father watching, he raised his hands and congratulated himself. He, with the help of the Caveman Wrestling club, began winning more and more matches. His selfconfidence began to grow and he went from a mild and timid kid to one who walks with confidence and understanding of what he can accomplish! As I previously stated, we also have Gavin (6), who, from watching his brother, began wrestling. Over 2013 he gained his own confidence and became one of the best in the state in his age and weight bracket. On 12/29/2013 our boys entered into the Dixie Nationals in Atlanta Georgia.

Dylan and Gavin were now in a tournament with the best wrestlers in the country. Gavin went into the semi-finals against a great wrestler from Tennessee with one thought on his young mind – he would not be beaten. The match took 4 overtimes to be decided, but my 6-year old Gavin refused to give up or even give an inch and was ultimately declared the winner! These two events in 2013 will never be forgotten, as we watched our children dig deep within themselves to accomplish the lofty goals they had set for themselves!

Dr. Bishai earned her veterinary degree from the University of Pennsylvania in 2012. Prior to enrolling in veterinary school, she attended the University of Florida, where she completed a doctorate degree in Cellular Microbiology in 2007. She completed her undergraduate studies at the University of South Florida, earning her BS in Biology and a minor in music history. After graduating from veterinary school, she moved back home to Tampa, FL. She loves all aspects of veterinary medicine (but admits she has a soft spot for kitties) and is always striving to learn more and stay up to date on the most current therapies. She enjoys volunteering for spay and

neuter days at local shelters and cat rescues whenever she can. In addition to spending time with her own furry feline friends – Fuzzy Man, Rogue, and Chimera – she also enjoys playing and listening to live music as well as travelling domestically and abroad.

The Sky Is The Limit At Corbett Preparatory School Of IDS Alexis Selby Touring the Corbett Preparatory campus, I was in awe. Nestled amongst the Cypress trees on a beautiful lake and adjoining pond, the picturesque scenery reminded me of something straight out of a fairytale. Walking along the boardwalk, it was easy to see why this school is often referred to as “The Magic Kingdom.” Yet, as breathtaking as it is in the outside, what goes on inside is even more impressive. What The Students Have to Say: On my previous visit I had the pleasure of meeting a variety of different students, ranging in age from 1st graders to 8th graders; their excitement for learning was obvious. When asked how you treat people, each student happily responded, “with dignity and respect.” 6th grade student Emma says, “Everybody is really nice and the teachers are fun. I like the open campus and all the afterschool activities. I take private piano lessons and dance. In Spanish, if you are lucky and you speak Spanish well, when exchange students come from Madrid you get to host them for 3 weeks.” What Emma is referring to is the International Exchange program at Corbett Prep. This past year Emma’s

family hosted a student from Madrid, who was accompanied by one of her teachers. The teachers visit Corbett to learn about the curriculum and teaching methods in order to bring back the knowledge they have learned to help their schools. This summer Emma’s family will be hosting another exchange student from China. Taylor, another 6th grade student, says, “This school is not like any other school. It is special and different in its own unique way. There are a lot of activities. The games are educational, but fun, allowing us to learn in an exciting way.” “We are very real with our students, therefore we expect them to be real with us,” says Dr. Swarzman. “Calendar” Continued from page 5 Corbett Preparatory School of IDS Hosts Admissions Open House Feb. 12 Corbett Preparatory School of IDS, a school for PreK3 through eighth grade, will host an Admissions Open Houses on Wednesday, Feb. 12, beginning at 8:30 a.m. during which prospective families can become acquainted with the school. The Admissions Open House will begin with an overview of the school conducted by Headmaster Dr. Joyce Burick Swarzman. Dr. Swarzman will discuss the school’s dynamic

academic curriculum as well as its extraordinary fine arts, sports and technology programs. Eat Healthy with Whole Foods Market Carrollwood! In my house, February means we are faced with a new month to revisit any resolutions we made for the new year. Unfortunately for many, bad habits have already begun to creep back in. But don’t give up just yet! Remember that it is more effective to commit yourself to health each and every day, rather than doing so only at the beginning of the year. Bison Chili Ingredients: • 1/2 pound ground bison • 1 large onion, finely chopped • 1 large carrot, finely chopped • 1/2 head cauliflower, stemmed and cut into small florets (about 3 cups) • 1 medium green bell pepper, finely chopped • 3 large garlic cloves, finely chopped • 2 teaspoons ground cumin • 2 tablespoons no-salt-added chili powder • 1 tablespoon apple cider vinegar • 1 (15-ounce) can no-salt-added diced tomatoes

• 1 (28-ounce) can no-salt-added crushed tomatoes • 1 (15-ounce) can no-salt-added kidney beans, drained and rinsed • 1/2 cup loosely packed cilantro leaves, chopped

Method: Heat a large Dutch oven or pot over high heat. When the pot is very hot, add bison and brown it, stirring often for 5 minutes. Add onion and carrot, and cook, until both begin to soften, about 5 minutes. Add 1/2 cup water to deglaze the pan, scraping brown bits from the bottom of the pan as the water evaporates. Add cauliflower, bell pepper and garlic and cook until vegetables begin to soften, about 5 minutes. Add cumin, chili powder, vinegar, tomatoes and beans along with 1 cup water. Bring to a boil; reduce to a simmer, cover and cook, stirring occasionally, until vegetables are fork tender, about 45 minutes. Serve garnished with chopped cilantro.

Hanover Floors – Building For America’s Bravest A huge 20 x 40 foot American flag was moved as the crowd shouted, “Move that flag!!!” The big reveal was for the home built near Mc Dill Air Force Base for Sgt. Michael Nicholson, a Marine veteran who served in Afghanistan. The home was built under the Building for America’s Bravest, a program of The Stephen Siller Tunnel to Towers Foundation, in proud sponsorship with the Gary Sinise Foundation. The program was developed to build smart homes for catastrophically injured service members. The home was presented to Sgt. Nicholson on January 9th, 2014. Hanover Floors owners Jim and Beth Nesbitt and partner, flooring manufacture Mohawk, provided the flooring and expert installation in this first home built in Tampa for Building for America’s Bravest. “It was an honor to be here and be a part of this home for one of America’s Bravest, Sgt. Nicholson. This is an inspiring organization that is making a difference and Hanover Floors Carpet One is proud to be part of it,” said Jim Nesbitt from Hanover. The Smart Homes built by Build-

ing for America’s Bravest are custom designed to fit the needs of each individual. The goal of each home is to help severely injured heroes live better, more independent lives. Smart Homes host a myriad of features, such as automated doors and lighting, wider doors, and special showers to accommodate wheelchairs, as well as cabinets and counters that can be raised and lowered, and central heating and air conditioning systems that can be controlled by iPads. “We’re so happy to have Carpet One and Mohawk on board with all our builds,” said Frank Siller, from Tunnels to Towers Foundation, at the Tampa ribbon cutting. The Tunnel to Towers foundation was founded to honor the sacrifice of firefighter Stephen Siller, who laid down his life to save others on 9/11. The legacy began when Siller was on his way to meet his three brothers to play golf. When he heard on his scanner what had happened at the World Trade Center, brave Stephen strapped on 60 lbs. of firefighter gear, rushed on foot through gridlocked traffic and ran from the

Brooklyn Battery Tunnel to the World Trade Center site. Stephen was last seen with his fellow firefighters of Squad 1; all of who died saving others. Stephen’s loved ones organized the Stephen Siller Tunnel to Towers Foundation. The organization helped to establish the Tunnel to Towers Run, a living, breathing tribute to all that died on 9/11 and to those who serve in the line of duty to protect our country. Participants of the run retrace the final footsteps of heroic Stephen Siller from the Brooklyn Battery Tunnel to the World Trade Center site. “We are excited to help this organization in any way we can,” said

One of my personal favorites is Sea Dog Wild Blueberry, a fruit-flavored beer served with fresh blueberries – yum! At Brass Tap, the beer experts are constantly on the look out for the best beers, and rotate their taps daily to ensure that you can always expect to find a new favorite. “There is not a day that goes by that we aren’t getting in new beers,” says Joe. So, it’s the end of the night but you don’t want the party to end? Brass Tap Carrollwood has a solution! Offering over 250 different bottled beers, and specialty-size bombers that are available for carryout, stock up and keep the party going in the comfort of your own home! Brass Tap Carrollwood also sells 32 oz. Growlers, allowing you to buy your favorite beer by the jug. But, there is no need to worry; the bartenders really know their brews and can easily guide you to your new favorite beer! The Brass Tap bar staff is very friendly and helpful and will happily recommend and educate you on new beers, and whether you are a seasoned brew connoisseur, or new to craft beer, you are sure to find something you’ll truly love. “The staff is really knowledgeable on the different styles of beers, and are able to recommend some great options based upon what you like,” says Joe. Brass Tap also projects their beer menu on a big board and on their TVS and has a phone app, so you always know exactly what beers they have on tap. If you are having trouble making a decision about what beer you want, perhaps a flight of four beers might be the best route to go. “The Brass Tap flights are great,” says Heather, the Senior Director of Marketing at Brass Tap Carrollwood, “especially if you’re not sure what you like. They are a good way to try a couple different styles.”

From Craft Beer to Top Shelf Liquor to Delicious Food – Brass Tap Has it All! In the past year, Brass Tap in Carrollwood has made some impressive strides, and now is one of the only Brass Tap locations in the Nation to offer not only a full liquor bar, but also a delicious selection of gourmet food. With the great new addition of their craft cocktail menu, those who prefer liquor over beer can now hang out in this upbeat bar and enjoy the entertaining atmosphere and company of their friends without having to worry about what to order. Although, after seeing all the wonderful options you’ll probably be tempted to try a brew or two and might end up realizing that you have been missing out all along! Joe says, “We have beer for people that don’t even think that they like beer. My son came in last month with my daughter in law – who doesn’t like beer. I recommended she try The Radler – a specialty brew consisting of 1/2 juice and 1/2 beer – she loved it!” I tried this beer on my last visit, and wow, it was good! With a hint of citrus flavor, this beer is really refreshing and pairs great with almost anything on their food menu. I had it alongside their Wedge Salad. Featuring baby Iceberg lettuce, topped with tomatoes, bacon and goat cheese, if you’re looking for something light, the Wedge

Salad is a great choice. Topped in their signature Peppadew Ranch Dressing – a secret recipe that is by far one of the best dressings I have ever had – this salad was an exceptional compliment to the light, fruity beer. Looking for the perfect food to pair with your beer, or vice versa? Your bartender will happily guide you to the perfect match. On the menu you will also find suggestions as to what type of beer goes best with each item. From salty to tangy to sweet, you're sure to find a flavor to compliment your beer and appease your appetite on their new menu. On our previous visit, my husband and I had the feast of a lifetime as Joe brought out a variety of menu items for us to try. Joe also gave us some great recommendations as to which beers to pair with each food, and even let us sample the different brews – giving us the true Brass Tap Experience! Great to share, the Margherita pizza, made on their one-of-a-kind, lightly salted pretzel dough and topped with basil, Mozzarella cheese and fresh tomatoes is fabulous. The pretzel dough gave the pizza a unique taste and the slightly salted flavor was brought to life with the addition of Big Storm Wavemaker, an amber ale brewed in Odessa, Florida. Tap’s BBQ Pork Sliders, featuring pork drizzled with Sweet Baby Ray’s® BBQ sauce served on a pretzel roll, were deliciously sweet and, served alongside a glass of Hinterland White Cap IPA was one of my favorite combinations of the night! Hinterland White Cap is a mild White IPA that has an impressive hop profile that makes for a refreshingly tasty beer. For those who want something to munch on, the Sabra® Hummus with Peri Peri Drizzle is exceptional, and served with yummy fresh baked pretzel pieces is easy to eat and provides plenty enough to share – although after one delicious bite you might not want to share. The spicy flavor of the Hummus together with the zing of Cigar City Jai Alai IPA, an American IPA brewed in our very own Tampa, gives an extremely awesome taste that packs a punch! With its deliciously smoky flavor, the Pulled pork flatbread coupled with the Stone Smoked Vanilla Porter, a heavier full-bodied beer boasting a smoky chocolate aroma, made for a really amazing duo, and although I didn’t think I liked heavier beers, I really enjoyed the Vanilla Porter. Looking for something flavorful? The Chicken Tacos are a must try! The taste basically jumps off the plate, and the juicy chicken and tasty poblano sauce are a great combination of sweet and spicy. Some other great options on the menu include their Samuel Adams® Beer Cheese Dip served with fresh baked pretzel pieces, and their Amsterdam Sweet Fries, served with balsamic ketchup and malt vinegar aioli. After eating here, I’ve come to realize that no matter what you order and no matter what your taste preference is, you are guaranteed to find something, or many different things, that you will really love!

Girl Scout Cookies Are Back! The wait is over! On Jan. 6, Girl Scouts throughout west central Florida began taking orders for all your Girl Scout Cookie favorites. This year’s cookie line-up includes: Do-Si-Dos®, Dulce de Leche, Samoas®, Tagalongs®, Thank U Berry Munch™, Thin Mints, Trefoils™ and Savannah Smiles®. Cookies will be sold throughout Girl Scouts of West Central Florida’s eight-county jurisdiction of Citrus, Hernando, Hillsborough, Marion, Pasco, Pinellas, Polk and Sumter counties. Each box is just $4. Through participation in the Girl Scout Cookie program – the largest girl-run business in the world – girls have the opportunity to learn goal setting, decision making, money management, people skills and business ethics, and are empowered to become accomplished women who will use these skills to benefit not only themselves, but the world around them. Donations of cookies through this program will be sent directly to U.S. military troops serving in combat zones overseas. Donations may be made in person through a Girl Scout at any time through March 16;

Last year, 65,000 boxes of Girl Scout cookies were donated by generous customers in our local communities, providing a much-needed taste of home and encouragement for our troops.
