Community News Briefs Carrollwood Cultural Center Hiring Teachers and Camp Instructors The Carrollwood Cultural Center, located at 4537 Lowell Road in Tampa, is hiring teachers and camp instructors. The arts-based nonprofit organization currently offers approximately 60 classes during any given time, ranging from art to Zumba®, and would like to double that number by the end of the year. The Center is equipped with studio space for art (painting, drawing, etc.), ceramics, computer-based programs, dance, piano and theatre, in addition to several multi-purpose rooms for other classroom-orientated courses like foreign language and creative writing. Each year, the Center introduces new classes contingent upon who is available to teach. Several classes have been part of the curriculum since 2008. “We want to build our faculty so we can offer more options to our students,” said education outreach director Helen Michaelson. “Several of our

6

classes consistently sell out, so to be able to increase the days and times a class is offered will provide a wonderful service to the public. In addition, we are always getting requests from the public to grow our curriculum. ” Students submit requests for anything from acrylic painting to Spanish. Dance, piano, watercolor painting and drawing are also popular. “Often, an instructor will approach us with a subject they are qualified to teach,” said Michaleson. “Sometimes we will try the class and come to find people really gravitate toward it. Several of our more popular classes started that way.” While the majority of the classes currently offered target adults, the Center has a need to increase the number of classes offered to toddlers, elementary school children, tweens and teenagers. “We have some classes for children, but we can certainly offer more,” Michaelson said. “We need instructors who are available in the evenings and Saturdays and know how to work with children.”

In addition, the Center is also searching to qualified instructors to help with the Summer Camp program. The camp program, much like the classes, is also arts-based with an educational component. Camp will run for nine weeks starting June 9 and concluding August 15; however, individual instructors are not required to be available for the entire summer. (The Center will not offer camp June 30 through July 4.) Michaelson is looking for people who are experts in their particular subject with a proven ability to instruct. Interested camp instructors should apply as soon as possible to be considered. Interested teachers who want to teach throughout the year can apply any time. For more information, please call Helen Michaelson at (813) 269-1310 or email a cover letter and resume to helen@carrollwoodcenter.org.

Education With Character! Intelligence plus character – that is the goal of education.” Purposefully, that is Carrollwood Day School’s mission: “To integrate a challenging academic experience with a strong character education initiative to prepare lifelong learners equipped to succeed in an ever-changing world.” The first International Baccalaureate institution established in Florida, CDS is also the sixth school in the United States to hold all three IB designations: By Pam Sica A gorgeous tree-lined drive beckons you to further explore this sprawling campus hidden just off Bearss Avenue. As you approach the entrance of the main building, you’ll encounter a park bench that bears an inscription quoting Dr. Martin Luther King, Jr., which says it all. “The function of education is to teach one to think critically.

There is truth to the old saying that if at first you don’t succeed, try, try again! Learning how to take calculated risks, gracefully accepting failure and using it to your advantage promotes out-of-the-box ideas to percolate throughout the school and ultimately, within each student’s life experience. Diversity is heartily embraced and

celebrated at CDS. It is the key component of the team building practice that sets this school apart from any other. Finding out what makes each of us different from one another and how that strengthens the team as a whole is a life skill that will serve each student well into his or her future. For instance, there are twelve visitors from Beijing between the ages of two and ten who are currently attending CDS,

At Carrollwood Day School, students experience an environment where they are nurtured to excel and thrive. Their programmes are by far some of the best in the nation, and their curriculum offers a huge diversity in classes, from sports to music, to computer technology. The stimulating academics offered at CDS ensure that each student will grow to love the challenge of learning how to succeed without impediment. who were encouraged to help the entire school celebrate the recent Chinese New Year by singing native songs and sharing their cultural practices. There were festive decorations abounding with a parade to punctuate the event, eliciting sweeping applause. It was most certainly a lively learning experience for all to share. I understand that there are IB students from Spain and Brazil attending this year as well, adding Latin flavor to the mix! When, if ever, have you witnessed open lockers in a middle or high school setting? Clearly, I was surprised, as I

learned how to use a combination lock by the 5th grade in New York! Character education is heavily stressed at CDS, where trust building is a part of life and the expectation of respect for others’ property is paramount. I was readily impressed by the manners exhibited by several students who walked by during our open door meeting. Big, wide smiles were emblazoned on their faces while they waited to be acknowledged, which is certainly a testament to the school’s mission in action. Coupled with the stimulating academics offered here, students grow to love

the challenge of learning how to succeed without impediment. Exposure to computer technology is essential in today’s world. It starts at the Early Childhood Center on Casey Rd. at age three! Elementary grades on the Bearss campus have access to Mac carts and computers until they start carrying their own IPads in the fourth grade. There are computer labs for each Programme level, where Elementary children are taught introductory computer science, Middle school grades learn design technology and work on presentations and High School students are taught coding and web design. With that under their belts, these talented kids continue on to develop new businesses, complete with business plans, logos and advertising media, to boot! It’s cool to be smart at CDS! Most folks agree that music and art studies are a fundamental part of a well-rounded education. At CDS, students learn about beat, rhythm and pitch by singing and playing instruments in the early grades. They are then exposed to music from a range of times and cultures, music notation, culminating in the composition of their own masterpieces. In the higher grades, you can even be part of a rock band – what fun! For the actors on campus, there is an award-winning thespian troupe to join. From what I hear, the highly accredited Audio Visual department is also turning out some amazing students, especially considering the size of the school. A well-rounded education would be lacking without school sports as an integral part of the mix. There are many offered at each Programme level, including Football, Volleyball, Golf, Cross-Country, Cheerleading, Swimming, Soccer, Basketball, Track and Field, Baseball, Softball, Tennis, Wrestling, Equestrian and more. Stu-

dents are encouraged to try out early in their school careers, where they can develop basic skills, then excel with practice. Students who participate on teams in the higher grades compete well against their peers (as is witnessed by the plethora of trophies on display). In keeping with the school’s mission, the soccer coaches emphasize the need to give back to the community by taking their teams down to volunteer at Metropolitan Ministries. That is team building in action! Before and after classes, school assistance is available that reaches out to the whole student population. In addition, there are homework labs, senior speech prep groups, art labs, karate lessons, career planning sessions, as well as other student-driven clubs like cricket! As you can see, there’s likely to be something for every student’s taste or need. Suffice it to say, that when you have had the privilege to graduate from Carrollwood Day School, you are well equipped to pursue a college career. As a matter of fact, with an IB diploma, you are guaranteed the highest level of the Bright Futures Scholarship. It is not unusual for prestigious colleges to actively recruit these young folks for their athletic, arts and academic programs. It’s no wonder... they are prepared to succeed! Carrollwood Day School’s Main Campus (1st through 12th grade) is located at 1515 W. Bearss Avenue in Tampa and can be reached at (813) 920-2288. Their Early Childhood Campus (ages 2 – 5 years) is located at 1206 Casey Road in Tampa, (813) 963-2388. For more information please visit their website at www.CarrollwoodDaySchool.org. Comprehensive Foot And Ankle Center Is A True Asset To The Community! By Alexis Selby Often over-looked and taken for granted, our feet are two of the most valuable components of our bodies. Yet, quite often enough they are something we tend to neglect – that is until, a problem arises. As a long-distance runner, my feet tend to take a beating, and unfortunately, last year they suffered a de-habilitating injury which left me unable to run, and barely able to even walk. I was heartbroken – in an instant all my hard work and training had gone down the drain. The only positive thing in all this, was that I knew exactly who to call – Comprehensive Foot and Ankle Center (CFAC), located in the Oakstead Professional Center on St. Road 54 in Land O’ Lakes. I first met Dr. George Tjamaloukas, DPM, FACFAS and his wife Dr. Kathy Tjamaloukas, DPM, FACCWS, the owners of CFAC, a few years back when I wrote an article about their practice for the Odessa Area Neighborhood News – I was really impressed! Not only were they extremely knowledgeable and informative, but also really nice and down-to-earth. Further to that, after their story ran, we received so much positive feedback from people in the community who absolutely loved the doctors and raved about how great they were. From the moment I called their office to set up an appointment, I knew I had made the right decision! The front desk was extremely accommodating and helpful – not to men-

tion so positive and nice – and was able to get me an appointment for that same day! Upon arrival she greeted me with a warm welcome and I was instantly made to feel comfortable and relaxed. “Our staff is very important to us at Comprehensive Foot and Ankle Center, and patients can always expect a smile, as well as a warm hello and goodbye,” states Dr. Kathy. The quality care continues after you leave the waiting room, and certified x-ray technicians and medical assistants will treat you with the utmost care and compassion. After my vitals were taken, I was taken to one of the patient rooms, and at that point I saw Dr. George. Using an ultrasound and x-rays (which they do in-house) Dr. George was able to diagnose my condition instantly – and at that point I found out I had a major tear in my plantar fascia in my right foot and plantar fasciitis in the other (the plantar fascia is ligament that connects your heel bone to your toes, and plantar fasciitis is a series of small tears to that valuable ligament). He was very informative and helped me to better understand what could have caused this and how to prevent further injury in the future. I was so impressed with my experience – not only were they able to get me in right away, but I had a definite diagnosis within 10- minutes of arriving for my appointment! At Comprehensive Foot and Ankle Center the doctors go after the root cause of your problem, not just the symptoms, allowing them to fully understand what issues their patients may be having. “We spend quality time with our patients,” states Dr. Kathy.

“We want them to leave feeling happy and satisfied, as well as educated, with the care they have received.” CFAC instantly gave me something to look forward to – my recovery. Before leaving Dr. George had the medical assistant wrap my feet to offer support to my plantar fascia and gave me exercises to better stretch and strengthen those ligaments. Following my appointment I also came in once a week to get it re-wrapped as to continue the healing process. Gradually I recovered, and after a 4 months I was finally able to return to running. Thanks to the amazing staff and doctors at Comprehensive Foot and Ankle Center, I was able to resume my beloved past time! I don’t believe I would have been able to do it without them!

The Amazing Cashew at Whole Foods Carrollwood Ladies and gentlemen, kids of all ages, allow me to present your newest get-healthy best friend: the cashew. This versatile, mild-flavored, healthy nut should not be confused with any of its other family. While you’ve seen cashews in trail mixes, energy bars and on salads, you may have not realized that this nut can be an incredible dairy substitute and natural thickening agent.

Ditch The Dairy For years, the residents of South America and India have used cashews to thicken, sweeten and add a “milky” flavor to their dishes. Cashews can replace traditional dairy options in recipes such as cashew sour cream, creamy cashew "risotto" butternut squash or make a dessert as found in sweetened cashew cream (Visit wholefoodsmarket.com/recipes for all the recipes bolded in this article).

Provide Healthy Fats Incorporating cashews in your diet is a great way to include a food with low saturated fat and absolutely no cholesterol! Make sure to buy nuts raw

and unsalted to keep them the nutrient powerhouses they are. If you prefer a deeper flavor, roast or toast them yourself. Tossing cashews in a dry pan on medium heat can help bring out the essential oils, give off a delicious fragrance and enhance the flavor in as little as two to three minutes!

Do The Dip Cashews make an incredible base for all kinds of dips and sauces. By soaking them for 30 minutes to eight hours, you can modify their texture. Try a raw cashew butter in place of peanut butter on your Health Starts Here multigrain bread for a quick breakfast or opt for some carrot cashew spread for your next dinner party or game night.

Take Back Your Sweet Tooth As if cashews could not get any better they are also a wonderful base for sweet spreads. Try a creamy lemon cashew frosting or the more mild creamy vanilla cashew frosting the next time you’re baking a cake for your officemates or for a birthday party.

Money-Saving Tip

Cashew Fettuccine Alfredo

Buy cashews from the bulk bin. You can purchase as little or as much as you like and the price per pound in the bulk section, is often cheaper than the pre-packaged pricing.

Equestrian Inc. Horse Rescue of Tampa Bay – Bringing People Who Love Horses Together With The Horses They Love By Alexis Selbyl Nestled just off Gunn Highway amongst 15 acres of wooded farmland and beautiful green fields lies a secret oasis and safe haven for some of life’s most magnificent creatures – horses. Dedicated to providing a rehabilitative sanctuary for abandoned, abused, unwanted or slaughter-bound horses, Equestrian Inc. Horse Rescue, an amazing non-for-profit organization, has been rescuing, rehabilitating and re-homing horses for the past 35 years. “Our mission is to bring people who love horses together with the horses we love,” says Glenda Smith the founder of Equestrian Inc. Horse Rescue of Tampa Bay. Since starting Equestrian Inc. Horse Rescue, Glenda has made it her mission to stand up for neglected and abused horses, giving them a productive second chance at life and the opportunity to experience the true love of a caring family. “I came out of the womb loving horses and started riding at 5 years old,” says Glenda. “I bought my first farm in Land O’ Lakes in 1978 and bought a couple Arabian horses – I love the breed. I later found out about how overly bred their breed was and how so many people were just abandoning them and turning them loose in the state forest. I never bought another horse again; instead I started Equestrian Inc. Horse Rescue as a way to save these abandoned horses and provide a loving rehabilitative home. Word quickly got out about how much I loved the breed and that I was willing to help horses in need.” Glenda runs

Equestrian Inc. alongside her daughter, DeeAnn Smith and stable manager Anthio Marcos. Equestrian Inc.’s handson board of directors and dedicated volunteers make up the rest of the team. “Everyone has such a passion for the horses and it is obvious how much they love them by the way they for them,” adds Glenda. In recent years, Equestrian Inc. Horse Rescue has transitioned to helping more and more off the track Thoroughbred horses, whom if not for Equestrian Inc. would otherwise be destined for uncertain futures. Through Bob Jeffries, head of the HBPA at Tampa Bay Downs, trainers frequently contact Equestrian Inc. to give their former racehorses the opportunity of a second career rather than turning them over to individuals who do not have their best interest at heart. Unfortunately, horse slaughter is a major concern in this area and throughout the United States. Glenda also reaches out to the community and encourages horse owners to call her if they are longer able to provide proper care for their horses, whether it be because of monetary problems, health-related issues, or any other reason. Her organization works with the Sheriff’s Office and tries to help people who can no longer afford to feed their horses. In addition, Equestrian Inc. works in conjunction with other horse rescues in the area, and if they are unable to take your horse they will help you find a place that will. Founded upon Glenda’s love of horses, Equestrian Inc. is 100% volun-

teer run and operates solely on support from people in the community through monetary donations, volunteering, sponsorship of horses, and donation of services. Equestrian Inc.’s grain and hay expenses exceed $5,000 per month. “As a 501 C3 charitable organization, in order for us to continue our work and succeed at helping horses it is important for people to help out in any way they can,” says Glenda. The organization also provides community service opportunities for high school

students. Donations can be made through Paypal on their website at www.EquestrianInc.org, or by checks made payable to Equestrian Inc.

Advanced Equine Dentistry & Vet Services Inc. Providing full-service mobile dental care for horses, Advanced Equine Dentistry & Vet Services Inc. is an extraordinary company that out of the kindness of their hearts, donates their services to Equestrian Inc. Horse Rescue, and on my previous visit I had the opportunity to witness a much-needed tooth extraction on a beautiful horse named “Which Way Do I Go”. Operated by Dr. Richard Grist, C.EQ.D. and Dr. Jay Clifford DVM, for the past 7 years Advanced Equine Dental has been providing the ultimate equine dentistry experience throughout Florida and Georgia. “It is because of people like Rich and Jay that we are able to do what we do for horses,” says Glenda. How to Adopt a Horse At Equestrian Inc. Horse Rescue they DO NOT sell horses, but instead facilitate the rescue, rehabilitation, retraining and re-homing of those animals in their care. They do have some permanent residents, but their main focus is to adopt out as many animals as possible to loving, forever, informed homes. If you are interested in adopting a horse, they have a wonderful selection of horses to choose from – from young to old, Arabians to Thoroughbreds, companion horses to trail horses; they even have a donkey! Glenda says, “We depend a lot on people in the community to get the word out about where we are and what we do. If someone is interested in adopting a horse,

we believe in full disclosure – we will tell them everything we know about the horse.” Equestrian Inc. is very particular and careful about whom they adopt horses out to and they do a great job of matching horses with a suitable owner based upon their personalities and what they are looking for in a horse. Because of this, Glenda is very proud to announce that they have NEVER had a horse returned by an adopting owner! Glenda is adamant about giving back to her community and does a lot of work with underprivileged children, as well as handicapped children. Throughout the year she also takes a few of her horses and ponies to schools in Tampa Bay and allows the children to groom them. She also spends a lot of time educating youths about these magnificent creatures, and teaches them how to properly care for a horse. Equestrian Inc. is available for field trips. “The future of these animals lies in the hands of children,” says Glenda. “It is very important to educate our youths on how to treat horses properly so they can continue the cycle.”

Dynamite Lessons Equestrian Inc. offers a great lesson program, including private and group lessons. Fun and educational, each class includes grooming, saddling, horse riding lessons and the care required after riding.

For Valentines Day my husband and I (top) rode horses with my mother (left) and sister (right) and had a really great experience! Taking us for a lovely tour around the property, the staff was really accomodating and nice!

Summer Camp Starting in June, Equestrian Inc. will also have an exciting 4-week summer camp, which will be five days a week from 8 a.m. – 12 p.m. This awesome camp will teach all aspects of horse care, including general horse care, education on the anatomy of horses, witnessing visits by the veterinarian and equine dentist, as well as numerous opportunities to ride the horses. All experience levels are welcome; whether you are an advanced rider or new to horse care, these camps prove to be fun for all.

Trail Rides A new concept to Equestrian Inc., this wonderful horse rescue will now be offering trail rides to the public. For Valentines Day my husband and I got to experience these trail rides first-hand and we had a blast. Riding Thoroughbred-racing horses, we took a ride around the property, basking in the beautiful nature. I was so excited – I have ridden horses before, but the fact Carrollwood Area Neighborhood News

that I was riding on a retired racehorse, was awesome – where else are you going to get the opportunity to ride on this type of horse? My mother and sister accompanied us on the trail ride and they really enjoyed it as well. The staff at Equestrian Inc. was really informative and Anthio gave us all lessons and tips before we got on the horse to make us feel comfortable and relaxed while riding. Overall it was a great experience! The trail rides are a $20 per person donation and reservations are required so contact Equestrian Inc. today to schedule your next ride! Equestrian Inc. Horse Rescue of Tampa Bay is located at 4902 Timberlan St. in Tampa. For more information or to make a donation, visit www.EquestrianInc.org or call (813) 407- 6805. “O’Briens” Continued from page 1 “At O’Brien’s we strive to create a similar environment, in a traditional sense, of what a Public House is in Europe; the focal point of a community; a place that is perfect for every occasion, where the community comes to hang out,” says General Manager Joe Carey. “We have both an adult angle and a family angle; we just want everyone to feel cozy and loved.” Moving from its previous location a few years back, O’Brien’s is tucked just off of Dale Mabry in the Dibbs Commercial Plaza at 15435 N Dale Mabry Hwy in Tampa. Upon moving, owners Bernie and Teresa O’Brien made some awesome new changes to their beloved Pub, including a great new concept and even more delicious food. “By switching locations, this gave us a new opportunity to change our concept a bit,” says Joe. “We hired a classically trained chef and revamped our menu. The response from the community has been great!” Their menu now includes fresh seafood and premium cuts of steak and each weekend chef Patrick showcases different up-scale specials – which by the way are fabulous! The specials change each week, and can be

From menu favorites like the Drunken Shrimp (L) to unique specials such as the Bacon Wrapped Scallops (R), O’Brien’s has something for everyone! found listed on every table, with upcoming specials mentioned at the bottom, so if you see a special that really interests you, make sure you come in and try it before it is too late. My husband and I sampled some of their specials just last week and to say they were amazing would be an understatement. The first special we tried was their Filet Bordelaise served with au gratin potatoes. A prime cut, cooked to perfection and topped in a sweet bordelaise sauce made of dry red wine, roasted shallots, caramelized carrots and lamb marrow, the filet was so tender it literally melted in my mouth and the sauce was one of the best preparations I have ever tried.

The next special we sampled was their Conch Fried Shrimp served with herb and cheese grits. Coated in a crunchy conch breading – which was fabulous by the way – the shrimp had a yummy flavor that was really quite unique. The grits were a great accompaniment to the fried shrimp, and when scooped on top of the shrimp it made for a wonderfully delicious combination. As tasty as everything was, my favorite of the night was their Bacon Wrapped Scallops. Featuring fresh scallops wrapped in candied bacon, each bite was simply amazing! For those looking for more traditional pub fare, you will not be disappointed at O’Brien’s Pub & Grill.

Their extensive menu features a little bit of everything, including traditional fish & chips – fresh Atlantic Cod hand-dipped in beer batter then fried golden brown, pork dumplings – steamed dumplings drizzled with a sweet sesame seed teriyaki glaze, and my personal favorite, the drunken shrimp – sautéed shrimp in a vodka bacon tomato cream sauce. Served on a bed of Basmati rice with fresh vegetables, this is a perfect compliment to any one of their yummy libations. They also have a nice variety of salads, sandwiches, flatbreads, burgers, and specialty Irish dishes, such as chicken potpie, bangers and champ potatoes and so much more. upscale dining, O’Brien’s menu has a nice variety and selection for every taste and preference. Live music is just another reason why O’Brien’s Pub is such a great place to hang out! Featuring different live bands every Thursday, Friday and Saturday, their fun, upbeat atmosphere makes it the perfect spot for every occasion. “We have a diverse mix of nightlife, and feature a nice variety of good bands and awesome music,” says Joe. The Purrfect Experience For Your Cat By: Susan Mango, DVM, owner of All About Amore Cat Hospital Veterinary visits for cats can be very stressful. Many owners become anxious and this adds even more stress to the cat. There are ways to reduce both your anxiety and kitty’s stress level. Let your cat always have access to and be able to see their carrier. Make the carrier attractive and comfortable for your cat. Place a soft blanket inside and remove the door. Soon your cat will be taking afternoon naps in it. Next, look for a veterinary practice that is cat friendly. Is it cats only? This would be your cat’s first choice. There are veterinary practices that have separate entrances and waiting rooms for cats and dogs. This will reduce some stress with your cat because they don’t have to sit next to a large dog that may be sniffing or looking into the cat’s carrier. Also, look for the presence of Feliway diffusers in the waiting area and exam rooms. Feliway is a synthetic of the facial pheromone which cats leave as they rub their cheeks on you and their surroundings.

30

MARCH 2014

This scent tells them this territory is safe and secure. Next, if there are stainless steel exam tables, make sure there is a blanket on the table waiting for your cat. Once you find a practice where you and your cat are comfortable you will be able to ensure your cat gets the preventative medicine that they deserve. Just because your cat is indoors doesn’t mean they don’t need to be examined by your veterinarian. A complete physical examination is one of the most important components of your cats’ healthcare. Cats are notorious for hiding illnesses and many times when they are taken to the veterinarian they are in critical condition. With a physical examination your veterinarian will evaluate your cat from its nose to tail looking for any abnormalities or subtle changes. Your veterinarian may also recommend testing the blood and urine. Ideally the results will be normal and you then know your cat is healthy. If an abnormal finding is discovered there is an opportunity to make some changes for your cat to help resolve the issue or in other

cases support your cat if the findings are not curable. Dietary and supportive care can be offered to your cat to help ensure a long comfortable life with early detection of some diseases. Call your veterinarian today for an appointment. Your cat will thank you by hopefully living a long and healthy life. All About Amore’ Cat Hospital is located at 6178 Gunn Highway in Tampa. Their hours are Mon., Tues., and Fri. from 8 a.m. to 5:30 p.m., Thursday 11a.m.-7p.m. and every first and third Saturday from 8 a.m. to 2 p.m. They are closed on Wednesdays. For more information
