Hattie’s Café and Beanery Carves Its Niche in the World–Class Coffee Arena By Pam Sica Known for its scrumptious sandwiches and pastries, as well as its unique blends of coffees and teas, Hattie’s has stepped things up this past year by beginning to roast all of its own coffee beans in-house. If you have the chance to stop by during the roasting process, which takes place about three times a week, you’re certainly in for a stimulating olfactory rush. As luck would have it, our inter-

view took place on a roasting day, so I asked owner Bruce Boore for some incite as to how Hattie’s got started in this new venture. Hattie’s has always utilized its own in-house coffee bean roaster, featuring their amazing “Roast of the Day” for its customers, and now you can see this magnificent machine prominently set up inside the café so they can roast and blend their coffees on a larger scale. Community News Briefs Hillel Academy Head of School Honored and Marketing Director Hired Hillel Academy is proud to announce that Head of School Amy Wasser has been honored by Jewish National Fund (JNF) at its annual Tree of Life Award Dinner. The dinner was held on Tues., April 8, 2014 at the Grand Hyatt Tampa Bay. Ms. Wasser was presented with the Lawrence D. Wasser Humanitarian Award, which is awarded annually to a non-profit professional who has exhibited traits and attributes of leadership excellence. Ms. Wasser joined the staff of Hillel Academy in 1996 and became the head of school in 2004. The forefront

of her work has been working with children and helping to instill in them a love of Judaism. Israel education is one of Ms. Wasser’s primary loves and she was inspired to introduce the annual Hillel Academy 8th grade trip to Israel more than 17 years ago. Ms. Wasser holds a B.A. from Columbia University and a M.A., B.A. from the Jewish Theological Seminary. She serves as an accreditation chair for the Florida Council of Independent Schools and is on the editorial board for the Community Jewish Day School Network’s national publication, Hayidion. She was a past director of USY on Wheels and a staff member of Camp See “News” on page 26.

Learn to Live Life Well at Carrollwood Black Belt Academy! By Pam Sica Owner Jean-Louis Miranda, known as Sensei Miranda at the academy, started martial arts training when he was seven, earning his first black belt in Shodokhan at age 18. “Growing up in the rough parts of Marseilles,” he noted that it was imperative to learn to control your emotions. Since he was a kid, he beamed, “I always wanted to open a martial arts school.” He came to the States and earned yet another black belt in Tae Kwon Do, then right here in Carrollwood, fifteen years ago, Sensei Miranda opened one of the first after school Karate instruction centers in Tampa. Originally housed in a 1500sq. ft. store front in the Cascades Shopping Center, Carrollwood Black Belt Academy’s reputation grew profoundly by word of mouth, at which point they moved to their current 7000 sq. ft. standalone building at 4125 Gunn Highway. Serving approximately 200 students, they certainly are a large martial arts presence in the North Tampa area. With their own fleet of vans,

complete with a converted school bus, Carrollwood Black Belt Academy is fully equipped to pick your children up after school from many different locations, including Carrollwood Elementary, Henderson Hammock Elementary, Essrig Elementary, Citrus Park Elementary, Cannella Elementary, Hammond Elementary, Northwest Elementary, Claywell Elementary, Lake Magdalene Elementary and Ben Hill Middle School. It was fascinating to learn that Sensei Miranda has students who started with him at age four, who are now in college and have black belts of their own, assisting him with his classes. And as it turns out, his longtime friend and fellow black belt (also turned brother-in-law) is in charge of their popular $50/week after school programming. Here’s a rundown of a typical afternoon: The kids are picked up from their respective schools and brought to the academy to tackle their homework for about an hour, with a certified teacher and assistants to help as needed. There is a fully-stocked library on premises so students can focus on their reading and report projects as well.

Then snacks are made available in the cafeteria and the kids can turn their attention to video games or arts and crafts while waiting for their particular karate class to begin. Note that uniforms (available on premises for $35) are required for this activity. The Little Dragon class (ages 4-6 yrs.) is held Monday-Thursday from 4:00 p.m. – 4:25 p.m. White Belt classes (grades 2-5) are conducted Monday and Wednesday from 4:30 p.m. – 5:15 p.m. and on Tuesday and Thursday from 5:30p.m. – 6:15 p.m. Advanced Yellow and Orange Belt classes take place on Monday and Wednesday from 5:30 p.m. – 6:15 p.m. The Family, Teen and Adult classes and sparring sessions run throughout the week from 6:30 p.m. – 7:15 p.m. Fun Fridays are reserved for just that – no classes, just fun! Monthly rates range from $59 to $125 a month depending on the level. Six months of study is required in order to test for each new belt level. To be sure, the students prepare diligently and look forward with great anticipation to the official Belt Ceremony, conducted twice a year at

rush hour traffic – pick-up time is as late as 7:30 p.m. Monday through Thursday (6:30 p.m. on Fridays). Spring Chicken Salad Ingredients: Spring Chicken Salad • 2/3 cup raw cashews • 1 tablespoon cider vinegar • Pinch fine sea salt • Pinch cayenne pepper • 1 large (10-ounce) boneless, skinless chicken breast • 1 1/4 cup green peas (boiled fresh or thawed frozen) • 1 bunch green onions, thinly sliced • 2 tablespoons chopped fresh dill • 4 cups chopped romaine lettuce or arugula, for serving Method: Place cashews in a cup and cover by about 1 inch with boiling water. card soaking liquid. In a blender, combine cashews, 1/4 cup water, vinegar, salt and cayenne, and blend until smooth; add more water a tablespoon at a time if necessary to purée. Place chicken breast in a small saucepan and add enough water just to cover. Place over medium-high heat and bring to a boil. Lower heat, cover, and simmer until chicken is just cooked through, about 15 minutes. Remove from heat, drain and cool. Dice chicken and place in a large bowl. Add cashew cream, peas, green onions and dill, and toss to combine. Serve salad on top of lettuce.

Lenli of Tampa Inc. Is Making a Difference in the Tampa Bay Area Lenli of Tampa Inc., a wonderful non for profit that provides employment services to people with disabilities in Hillsborough, Pasco. Alcinor Aurelien Alone in his home, suddenly the ground began to ferociously shake, the sound thunderous, and his home began falling in on him. It was January 12th 2010 and a 7.0 earthquake was shaking Haiti unlike anything before. As the quake subsided, Alcinor found he was buried in concrete debris, and began trying to pull himself out. The more he tried he realized that his left leg below the knee was completely crushed under the concrete, and he could not get out.

After many hours, rescuers found him. Unfortunately, they also could not remove the concrete from atop his leg. His leg had to be removed below the knee by guillotine amputation on site, and he was transferred to a makeshift hospital to be stabilized. It was there he learned that his mother and his young daughter did not survive the quake; the quake claimed 230,000 lives and left at least 1.5 million people homeless. After two weeks, he was airlifted to Tampa General Hospital where surgeons performed a clean amputation due to extreme infection, and also began treating his acute blood loss, anemia, malnutrition, and liver damage. He barely survived; his bacterial infection was so severe. After two months, he was stable enough to be transferred to a rehab facility. He was fitted with a simple prosthesis, what many have called a “peg leg”. He worked hard on his

rehabilitation and Catholic Charities helped him to obtain temporary housing. He found out about Vocational Rehabilitation (VR) though another Haitian friend who was also being helped by Catholic Charities and applied in July of 2012 – it had taken two years to become well enough to attempt to work. He was assigned to Frances Branch, Sr. VR Counselor at the downtown Tampa office. She helped him to obtain a lifelike prosthesis, and also sent him to an eye surgeon for removal of an object lodged in his eye from the earthquake, which had not been detected. She also provided him with eyeglasses after a vision test showed extreme myopia. During this time she employed the use of a Creole Interpreter as Alcinor had very limited English skills. Ms. Branch referred Alcinor to the CARIBE Refugee Program where he began ESL classes. (His first school-

ing, as he had never attended school in Haiti.) It took several months of adjustments to the prosthesis, stabilizing his health, and getting his work visas in order before he was referred to Linda Lennox, owner of “Lenli of Tampa, Inc.” for Supported Employment Services. Alcinor wanted to work so badly. It was his one dream. Linda networked into the business community and found a job for him very quickly, at Mister Car Wash. She also helped him get a Florida I.D. and helped him get an extension on his visa. The General Manager of the business became a wonderful mentor to Alcinor, teaching him how to do his job and also helping him with his English. (Alcinor has also taught his supervisor Creole). He can now carry on a conversation in English. Although it is broken English, he has made great strides in his almost two years with

Kindergarten Cultivates Inquiry with Wildlife Research Projects

Once completed, they stood before their classmates to present all they had uncovered on their topics, often with visual or multimedia aids, calling on peers during question-andanswer sessions. It may sound like a college class, but this is kindergarten at Corbett Preparatory School of IDS. Kindergarten students recently completed projects on wildlife for their unit “Sharing the Planet: Living Together in Harmony.” The process prompted students to think like researchers and learn to ask engaging

questions. Corbett Prep teachers Ashley Davis, Holly Ralph and Marla Vildostegui focused on creating wonder in the classrooms, using “I wonder” questions to help students begin thinking about how questions are asked. They encouraged inquiry throughout students’ research so they could uncover meaning and become experts on the animals they studied. Teachers laid the groundwork in the classroom, building background knowledge of wildlife and the seven continents while emphasizing creativity and critical thinking. Students also worked independently, in pairs and with families. In computer class, they teamed up with fifth-grade partners who helped them conduct research on safe websites and fill out their “animal fact sheet” with information about the animal’s size, color, classification and more. The cooperation assisted the younger students but benefited older ones as well. Fifth-grader Trey Hodges said he enjoyed working with 5-year-old Jackson on his rattlesnake research: “It was really fun because they like to try it on their own before they want you to step in, and then you can coach them better.” At home, families worked together

to synthesize the information and help them with visual presentations. Many of the students used cardboard displays to showcase their research, including photographs with their facts, which they pointed out during oral presentations to their class. Anna asked a teacher to help her stretch a string 6 feet wide to illustrate how broad a moose’s antler was.

Christopher passed around a curling snakeskin for his king snake presentation. Tyler used a video excerpt to allow his classmates to hear prairie dogs barking. Students took turns standing to ask questions after the presentations, wondering aloud what the animals ate, how big the babies were and whether they were dangerous or endangered. The final part of the assignment encouraged students to reflect on what they had done and complete self assessments. The kindergarten research project allowed students to uncover and share fascinating facts about animals, but the process they learned of asking questions and assembling research promises to turn them into lifelong

learners. The kindergarten teachers hope the students develop into inquirers who continue to ask “I wonder” and are fascinated by the world around them. minute and consider that every one pound of coffee is equivalent to the yield from one coffee bush. That is some intense manual labor we’re talking about. Hattie’s pays above market price for the “right thing.” Bruce noted, “Being a little radical, we think that is important.” Stepping out back, l saw how the coffee beans are delivered to Hattie’s by pallet from Thrive and then brought into the café to be roasted and blended. Jonathan Boore, Bruce’s son, and more notably, Hattie’s chief coffee bean roaster, has a nose for the bean and understands the complex nature of the roasting process. You’ll see him load up a batch of green coffee beans into the roaster, then hook up his laptop to this amazing machine so he can oversee the entire roasting process from a time and temperature standpoint. As she was savoring her coffee, long-time customer Kara Jolitz said, “I love this place. I am obsessed with their gourmet oatmeal and I buy their whole bean coffee – Papua New Guinea is my “fav”.” The perfect name for Hattie’s first blend was “La Boda,” which is Spanish for “The Wedding,” commemorating the marriage of flavors from their own roasted beans. “Dale

Coldbrewed coffee has become very popular as well. Bruce quipped that the coffee concentrate that they create is 3-4 times stronger than regular coffee without the bitter taste from the cof-
