To be honest, it’s one of those hidden gems that the locals know about, and the rest of us are mad that we’ve missed for so long. People say, “How did I not know this was here?!” Well, the secret’s out of the bag now, because more and more families are coming to the East Lake Café to enjoy their family-friendly atmosphere and the food, because really, it’s all about the homemade, made-to-order food that comes out of the kitchen.

Conquering ALS, One Mountain at a Time! Football player Steve Gleason, who played for The New Orleans Saints from 2000-2008, will always be remembered for his blocked punt on the night the New Orleans Superdome reopened for the first time after Hurricane Katrina. In 2011, Steve was diagnosed with Amyotrophic Lateral Sclerosis (ALS), also known as Lou Gehrig’s Disease, a terminal neuro-muscular disease. After his diagnosis, Steve and his friends and family started Team Gleason, in hopes of generating public awareness and raise funding for the research of this terrible disease. Recently, Team Gleason took on another endeavor – completing an epic adventure to Peru. Steve, along with Kevin Swan, Michel Rivers and Scott Fujita, a crew from NFL Films and Team Gleason members, endured a 7-day trek starting in Lima; taking countless buses, 2 trains, 7 planes and hiking 10 miles through the Incan trail. Their journey began in Cusco, where they spent 2 nights getting acclimated to the high elevation and visiting the Cathedral, Qoricancha Temple, the Inca fortress of Sacsayhuaman overlooking Cusco, Qenko and Puka Pukara. They went on to visit the village of Pisac, founded during colonial times, and continued their trip through the countryside town of

Urubamba to the ruins of Ollantaytambo. On Day 4, they woke up early to catch the Vistadome train headed toward Machu Picchu, taking in stunning views of the mountains and heading into the high altitude cloud forest. The 21-member group, which included Steve and Kevin in wheelchairs, and 18-month old Rivers, joined a group of porters before crossing a hanging bridge over the Urubamba River. At this time none of them had any idea what they were about to endure. The Incan trail is a combination of landscapes of high altitude mountain ranges (the Andes) and dense subtropical forest. It was extremely challenging to carry the 2 wheelchairs up and down the rocky narrow paths, but the fearless leaders, Scott, Blair and Marc, were not going to let the lack of water and sunlight stop them from getting to their final destination. After 10 hours they finally reached the Sun Gate and got their first view of Machu Picchu. Although the sun had been down for a few hours and the ruins could barely be seen through the moonlight, the group was excited to know it was the final leg and hour or their journey. Traversing downhill and along more steps in the dimly lit site, the group finally made it the Sanctuary Lodge for some much needed food, water and celebra-

The following day they were elated with a huge sense of accomplishment to finally see the magnificent landscape of the ruins and mountains. Despite his diagnosis, Steve is determined to motivate others by continuing to pursue life adventures, and has challenged the worlds of technology and science to identify their most promising developments toward new treatments and a cure. Steve is such an inspiration and proves that with strong will and determination no mountain is too high to conquer!

Palm Harbor Dermatology Plans Northwest Tampa Expansion Taking another step to widen its geographic presence in the Tampa Bay area, Palm Harbor Dermatology has announced that it plans to open its third area location at 11601 Sheldon Road, in northwest Tampa, later this year. Palm Harbor Dermatology, a thriving medical practice with offices in Palm Harbor and Brandon, is leasing and renovating the 4,140-squarefoot building on Sheldon Road. Ross Real Estate, LLC, represented by Rick Noll of that company, purchased the building earlier this month for $900,000 from Chiarito Enterprises, Inc. With a planned opening in November, the facility will be the first comprehensive skin care center in northwest Tampa staffed by physicians who are board-certified and fel-

lowship-trained in Mohs Micrographic Surgery. A wide range of skin care services - from spa services to routine skin checks to specialized treatments and surgical procedures for skin conditions and skin cancer will be provided at this location, which includes a medical spa and a fully equipped laboratory. “Many of our patients have been driving to Palm Harbor from Odessa, Westchase, and other communities in northwest Tampa, so it makes sense to open a facility closer to where they live,” said Dr. Amy S. Ross, president of Palm Harbor Dermatology. Dr. Ross is one of only nine fellowshiptrained Mohs surgeons (and the only female of the nine) in the Tampa Bay area, according to the American College of Mohs Surgeons. Area Chamber of Commerce is inviting everyone to join them for “HERE’S THE BUZZ” to be held at The Centre in Palm Harbor. The Greater Palm Harbor Area Chamber of Commerce will host the 1st Annual Spelling Bee at The Centre, 1500 16th Street, Palm Harbor on August 23rd, from 6 to 9 PM. Members of the community of all ages are encouraged to come out and enjoy this fun-filled indoor event. Sign up a team of four good spellers who will compete using words chosen from the Scripps Howardword list. There will be prizes for best costume, best theme and best spellers. A light dinner is included in your entry fee. The “Queen Bee” will moderate the competition. Each team will consist of four “Worker Bee” members. Each segment is timed, so players must work on their own, then quickly discuss the correct spelling. The team captain will make the final judgment on the correct spelling. There will be “bee keepers” buzzing around to check your answers. If the answer is not correct you may buy (“bribe”) your way back in with “buzz bucks”

Last year my husband Matt and I decided it was time to redo our roof, as our previous roof had been over 25 years old and was in desperate need of repair. ALS Association’s National ALS Advocacy Day & Public Policy Conference By Alexis Selby This past month nearly 2,000 people with Lou Gehrig’s Disease, family, friends and other advocates, including Cheval resident Gary Dassatti, gathered in Washington, D.C. during ALS Awareness Month for The ALS Association’s National ALS Advocacy Day and Public Policy Conference. While in Washington Gary, among with other ALS advocates, met with aides in 4 Congressmen's offices (Representatives Hastings, Rooney, Posey and Bilirakis) as well as with aides for Senator Nelson and Senator Rubio. Gary says, “We were basically seeing if they were aware of what ALS is and asked for continued monetary support from the House and Senate for the ALS Registry (where data is entered by current living pALS (people suffering with ALS) to try to help find a commonality so that a cause may be found. Currently we have no idea what causes ALS, only that Military personnel are twice as likely to contract this horrible disease. We were

also asking for continued monetary support for the ALS Research Program at the Department of Defense; this is very necessary, especially with the Military connection to ALS.” Another individual who attended the conference’s Rally Dinner was Baltimore Raven O.J, Brigance, who has been living with ALS since May 2007 and has been a leading voice in the fight against the disease. It’s Brigance’s first time attending the conference, and it’s the first time they are having a rally to open the festivities. Former New Orleans Saints safety Steve Gleason, who, like Brigance, is also battling ALS, joined via Skype. The ALS Association hosted this three-day conference in order to empower individuals from across the country with the tools to advocate for policies specifically designed to accelerate the development of treatments for ALS. “During the 3 days, we heard speeches from prominent Scientists and Research Doctors on various issues regarding our cause,” says Gary.

My encouragement will remind us of the root of resiliency, which permeates our cause. We will not stop until we find a cure.” While there are many causes to support, Brigance feels ALS is often overlooked when compared to cancer and other more well-known afflictions. Brigance recently visited the ALS

Therapy Development Institute in Boston to tour their facilities and was “excited by the prospects on the horizon.” But a cure can’t be found fast enough in his eyes, he said. He is hoping funding and procedures can be fast-tracked. “My hope is Congress will recognize the devastation of ALS and will champion our cause,” says Brigance. “There are countless researchers looking to unlock the mysteries of ALS. Unfortunately, people are dying in the prime of their lives because the answer isn’t coming quick enough.” Kim Hanna, President and CEO of the ALS Association Florida Chap-

Big Cat Rescue - Tampa Bay’s Best Kept Secret By Willow Hecht Across from the Citrus Park Mall in Tampa is a little dirt road leading back into the woods. This is Easy Street, and it ends at one of the largest big cat sanctuaries in the world, Big Cat Rescue. About 135 unwanted, abused, and neglected exotic cats live at the sanctuary in large outdoor enclosures. Fifteen species of cat call BCR home, the most variety of any facility in the world. They range from the tiny 4 lb. Geoffroy’s cat to an 800 lb. tiger, and include bobcats, lynx, leopards, cougars, and lions. Most were former pets, and others were rescued from fur farms, circuses, roadside zoos, and backyard breeding facilities. The sanctuary, a 501 (c) 3 nonprofit charity, has a two-part mission: 1) to house and care for the cats for the rest of their lives, and 2) to educate the public about issues facing cats in captivity and in the wild. BCR is actively trying to change state and federal laws governing the ownership of and contact with exotic cats. They also have a commitment to ending the trade in exotic cats and their parts. The sanctuary is completely hands-off,

and does not breed, buy, sell, or trade cats. Situated on 45 acres of beautiful woods with a lake in the middle, the refuge is truly a place of peace and safety. Daily animal care, administration, maintenance, and guest relations are done by a volunteer force of nearly 100, as well as eight paid staff. Big Cat Rescue was founded in 1992, almost by accident. BCR’s founder, Carole Baskin, answered an ad in the newspaper advertising bobcat kittens for sale. At the time, she didn’t know that exotic cats make terrible pets, and thought she’d like to have one. When she arrived at the specified address, she found fifty-six bobcat and lynx kittens in tiny, filthy cages. She was told that the place was actually a fur farm, and that the kittens would be slaughtered at one year of age and turned into fur coats. Horrified, she bought all fifty-six kittens and brought them to her home in Tampa. Word of mouth spread that Baskin would take big cats, and she began to devote all of her time to rescues and cat care. Over time, cages were built on the current 45-acre property Baskin acquired in a foreclosure, once a landfill. The mission of the sanctuary and many of its policies have evolved over time into the world-class facility that exists today, accredited by the USDA and the Global Federation of Animal Sanctuaries. Many of the cats besides the original fifty-six endured horrific conditions before their rescue. Cheetaro, an Asian leopard, was confined to a corn crib for the first five years of his life, constantly breeding cubs for the pet trade with his mate. They had little shelter from subzero New England winter temperatures. Joseph and Sasha, a male and female lion, were used as photo props, and had their claws and canine teeth removed so

Armani the Leopard they could be chained down and handled by guests. When they came to BCR, Sasha had a collar which had become embedded in her skin and had to be cut away. Sophia, an 18-year old cougar, lived in a chicken coop for 13 years and was suffering from fleas, renal disease, and a botched declaw surgery when she was rescued. All of these cats now have a permanent, safe, and quiet home with toys, good food, and medical care. Visitors to the refuge are allowed for guided tours only. Tours for those over age 10 are an hour and a half long, and are offered every day except Thursday. Children’s tours, for those under age 10, are Saturday at 9am

and let everyone know about our upcoming events and contests.” Charitable involvement with his local community has always been a priority for Dr. Albert. He is a member and Paul Harris fellow of the Rotary Club of Trinity, whose mission is supporting local children’s charities. Every year, Albert Family Orthodontics hosts a “Candy Buy Back” after Halloween, where sweets are donated to troops stationed overseas. GETTING READY FOR THE SAT, ACT, AND BRIGHT FUTURES By Dr. Wayne Adams, Former Dean and Full Professor of a Graduate School of Business Dr. Wayne Adams has degrees and advanced studies from Harvard, Yale, and Vanderbilt. He is one of the leading tutors in the country. Fewer subjects are closer to parents’ hearts than finding the best college education for their students at an affordable price. The Bright Futures program has been especially helpful. Unfortunately, the major increases in SAT and ACT score qualification requirements for Bright Futures this year will eliminate about 60% to 70% of applicants in 2013-2014 who would have been eligible last year. In addition, SAT and ACT scores are more critical today for college admission and for academic, athletic, music, and other scholarships. What are these standardized, national examinations? The SAT consists of Writing (Essay and Grammar), Reading, and Mathematics, with a maximum composite score of 2400. The ACT core consists of English (Grammar), Mathematics, Reading, and Science, with a maximum composite score of 36. Each exam is given multiple times in fall and in spring. Some key observations! Having tutored high school students for five years across the country with thousands of hours of face-to-face experience including general students and all types of athletes: Most students are poorly prepared for these examinations, especially in the areas of essays, grammar, critical thinking so vital in reading, advanced techniques for math, and overall test strategy. As one example, when I ensure students know all the vocabulary words in an SAT Reading section before starting, their correct answers jump around 50%! Reading the long passage sections on each exam before looking at the questions is, for most students, a waste of time. Time is not your friend on these exams. If you know how to approach the math, it can be greatly simplified. For example, recently I tutored a 7th grader who had not had algebra or geometry, and he scored almost 600 on the math section of the actual exam. His composite on the actual SAT Exam for Writing, Reading, and Math was 1780, a 500 point gain from his baseline.

Current teaching techniques are ineffective. For example, how can a teacher really know what an individual student needs without baseline testing, identifying the areas to be strengthened, and shaping each program around what each student needs for their maximum improvement? Students do not learn by listening; students learn by doing under expert guidance for individual learning styles. Students need to prepare early to do their best on these exams. I often tutor freshmen, sophomores, and juniors as they prepare for the big exam. And with the SAT, you can use the highest scores, present the composite to a college, and they will not know these scores came from different exams. On the ACT, you can miss a question without penalty, so guess at them all. Do not do this on the SAT. Some of Pergola’s experience, just to give you an idea, has been earned during directorships at high-end organizations such as The United Nations, The Met Museum, the Metropolitan Opera House, and the Museum of Natural History. Locally, he owned and operated Rocky Point Food Services in Tampa for a decade, and worked in management positions at well-knowns such as Maxwell’s Plum, Tavern on the Green, Top of the Park and the Sign of the Dove Group-Yellow Fingers, just to name a few. Wait, so what’s he doing here? Honestly, he’s doing what he loves. And until recently, he was doing it in Tampa as well, at the Jackson Street Bistro, but now, he’s completely focused on the East Lake Café, and you can find him there almost every day greeting his customers and making the rounds like an old friend.

clinical physician who now helps people lose weight and live healthier lives as a wellness coach. He frequents The East Lake Café at least a few times a week. He says, “This place has the healthiest food and the best food around, and I bring my patients here to eat. I see people eat better here, and it’s tops in the county. They even do substitutions, and that flexibility makes patients eat healthier.” Being on a diet myself, I went with “my regular” egg whites with toast and tomato slices, and I was impressed by the large portion! Also, the egg whites were not from a carton but from (gasp) eggs! My girls had Mickey-Shaped pancakes with whipped cream and fresh fruit, and, the pancakes were so good, I ate at least an ear by myself. With healthy menu items such as fruit parfaits, veggie quiche, wraps and salads, the health conscious will definitely have a plethora of choices to pick from, (which means I don’t have to have the scrambled egg-whites out of habit the next time I take my family out for brunch!). Pergola prides himself on his menu, and makes sure to feature signature items that you can’t find at
