Business Development Week SMARTstart Challenge Businesses will compete over the next couple of months for prize money up to $10,000. The SMARTstart Challenge is a business competition for new or growing companies in Pasco County. It is a collaborative effort being put on by the West Pasco Chamber of Commerce, Pasco Economic Development Council, City of New Port Richey Economic Development and SCORE. Businesses will compete over the next couple of months for prize money up to $10,000 and a 6 month membership in the SMARTstart Business Incubator Program. Judges will question any aspect of the presentation within the categories identified for the completion. 3 or 4 finalists will be se-

lected for the January 29th competition. • January 12th – 28th mentoring SMARTstart staff and advisors will meet with each finalist to determine what expertise is needed to create a mentor team that will help develop the final presentation for the business plan/idea. • January 29, 2015 - SMARTstart Challenge Finals The finalists will have 5 minutes to present their plan followed by Q and A from the judges. The judges will select the winner and runners up for the competition. Anthony’s Italian Restaurant The Taste of Brooklyn in Trinity By Dara Tucker In the Mitchell Crossing shopping center on the corner of Mitchell Boulevard and Little Road, you can find Brooklyn-style pizza and a variety of Italian meals, served with local hospitality. Karla Barkdoll has owned and operated the Trinity based restaurant since January 2007. Karla worked in the food service industry in various positions for years before she moved to the corporate world. Anthony’s allows her to combine her work experiences, creating a customer focused and family friendly restaurant that is a staple Italian restaurant in our community. Anthony’s menu includes traditional Italian appetizers such as crispy fried calamari, mussels drenched in marinara, and fresh bruschetta. Flat bread with feta, spinach and pine nuts or chicken wings that can come dripping with honey sauce, barbeque sauce or wing sauce, are an option when you’re in the mood for a more American fare. Sandwich options are great for lunch, but are also satisfying enough for dinner. Sandwiches such as shrimp parmigiana and the Italian combo come with chips or you can add fries and coleslaw for an additional $1.25. Dinners are served with soup or salad and your choice of linguini, spaghetti or penne. Anthony’s has three different red sauces for customers to choose from for their meals, truly satisfying their customers tastes! Karla says, “I’ve always focused on our patrons. I feel it’s important to listen to their suggestions, so when

a regular customer suggested we have a sauce that isn’t as sweet of an option we worked on creating a sauce that had more fresh garlic and white wine in it. The customer sampled three different red sauces that our chef Frank created for a tasting. As a result you can now order or traditional marinara, Corleone sauce, or Larry’s marinara, which isn’t as sweet. I’m sure it will be a big hit with other customers, too.” N.Y. Style Pizza Since Anthony’s first opened in 2001 the restaurant’s pizza chef has been Ernie, a Brooklyn born pizza connoisseur. Whether you prefer thin crust, stuffed pizza, white pizza, Sicilian, or even brick oven pizza, Anthony’s can make it for you. Their extra large is 16 inches wide, but they also have a 24-inch pizza, and a 30inch pizza, which is too large for a takeout box so it can only be ordered as dine-in! Toppings range from typical pepperoni to more exotic combinations like artichoke hearts and sundried tomatoes. If you are looking to order several pizzas at once, Anthony’s ovens can accommodate it – they can cook 24 pies every eight minutes! Mitchell High School varsity basketball coach Jared St. Charles uses Anthony’s pizza for concessions at their games because they can handle the quantity of pizzas the high school needs. Daily Specials Anthony’s daily specials make it easy to try different items from their menu every night of the week. All

specials, with the exception of Monday, are dine-in only, and don’t require a coupon. Monday––A 16” cheese pizza is only $8.75. Tuesday––Get two dinners for the price of one (pasta, eggplant or chicken dinners). Wednesday––Enjoy 2 free glasses of wine or beer with the purchase of 2 dinner entrees. Thursday––Kids eat free and “Tony the Balloon Guy” makes unique hats for the kids (one free kids meal with the purchase of one dinner entrée). Friday, Saturday and Sunday–– Dinner for two – pick two different items for $19.45 lasagna, manicotti, stuffed shells, veal, eggplant, chicken parm (choice of pasta) and comes with

a choice of dessert. I highly recommend their tiramisu! Karla also wants to thank her regulars with a customer loyalty program for lunch and pizzas. With a loyalty card, when you buy five lunches you get the sixth for free, and when you buy ten pizzas you get your eleventh cheese pizza for free. Catering Made Easy Anthony’s caters full trays (feeds 18-20 people) and half tray (feeds 810) of many of their menu items. Karla has put together a catering menu which makes it very easy to insure that the foods you choose will travel well and still be warm when they’re presented to your guests. Catering with Anthony’s is an excellent option during the holidays for

both parties and family get-togethers. When you don’t have to worry about the quality of the food you serve your guests it makes your get together even more enjoyable for you – and delicious for your guests! Full meals of lasagna, veal piccata, sides of sausage and peppers or broccoli with garlic and oil are just some of the options off the catering menu. Or, if you’re looking for more finger foods you can choose catering items such as vegetable platters, cheese platters, and cold cut platters. Kim Thomas turned to Anthony’s for catering when she and her husband

hosted an engagement party for their son. She says, “I knew exactly where to go to build a satisfying and delicious menu for a hungry, young crowd. The sausage and peppers were a huge hit! One of our bride-to-be’s guests was a chef and when he found out the food was from Anthony’s Italian Restaurant in Trinity, he said, ‘Now I know why everything tastes amazing – Anthony’s is the real deal!’ Plus the serving sizes are plentiful! I didn’t have to worry about running out of food.” Loyal patron Harris Taylor has been eating at Anthony’s twice a week

for eight years, and he says that he passes several other Italian restaurants to get to Anthony’s. Harris says, “They have a top notch chef here, and I can always get something different such as spinach lasagna or grandma’s lasagna. I suggested to Karla that I thought she could make a great white spinach pizza like I use to get in New York, and she made it, and even better than I had in New York! It’s a great family friendly atmosphere in here, and they have a terrific hard working owner who listens to their customers. They concentrate to be the best at what they do.”

One of the oldest and largest pediatric groups in the U.S., Pediatric Associates was originally founded in Hollywood, Florida in 1955. Ever since, they have been providing exceptional care to its families for four generations and counting. Regional Medical Center Bayonet Point’s New Graduate Medical Education Center is Where Residents Learn to Practice Medicine from the Heart By Kim Thomas It is fitting that Regional Medical Center Bayonet Point hospital’s logo incorporates the symbol of a heart. For one, RMCBP is well known by physicians throughout Florida and beyond for its stellar programs, including the nationally acclaimed Heart Institute and the Arrhythmia Center of Florida. In fact, RMCBP was recognized in US News and World Report as one of the “Top 50 Hospitals in the Nation” for heart and heart surgery. A recent visit to RMCBP’s new Graduate Medical Education Center to learn more about the hospital’s new Osteopathic Internal Medicine Residency Program made me think of another reason the simply sketched heart, familiar to us since childhood, fits – it symbolizes love. When you put your heart into something, your motivation is love, and the doctors who are working alongside the first round of residents in RMCBP’s Osteopathic Internal Medicine Residency Program are not only teaching the residents the technical aspects of medicine, but they also are mentoring these young doctors to really care for their patients and to provide medical care from the heart. Dr. Michael Strobbe, Program Director, is very excited about the Graduate Medical Education Program, which is the first of its kind in Pasco County. He and his colleagues worked for a year preparing for the Graduate Medical Education program at RMCBP.

Dr. Strobbe, says, “It is really nice to give back and it just feels great to know that we get to help train these doctors, and many will stay in the community. Sixty-seven percent of residents stay within 100 miles of their graduating program.” He adds, “We have a fantastic group of residents. This is the hospital’s first step in developing graduate medical education residency programs in a logical progression as Bayonet Point continues to expand its tertiary and specialty programs. The residents will benefit from learning at a Level II Trauma Center, where they will experience hands-on learning. Residents will also see patients at Gulf Coast Medical Center in Port Richey, which has been a trusted place for families seeking quality medical care for more than 32 years. Interestingly, Dr. Michael Strobbe, his wife Dr. Amy Strobbe, and Dr. Nick

Strobbe are providers at the Gulf Coast Medical Center, which was founded by their father, Steven Strobbe, DO. It’s very rewarding.” First-year resident Woody Taves, DO, is finding the program rewarding, and though residents must put in a superhero’s quota of hours – up to 80 a week – they are provided with what they need to be successful. Taves says, “Everyone takes very good care of us here and we have great exposure. Florida really is a melting pot and we have a very diverse patient population. I’ve seen patients from their teens into their nineties.” Dr. Taves is a native Floridian who grew up in nearby Lakeland, so having this program at RMCBP means he can stay here in Florida. He plans on practicing “mother medicine,” his term for good, old-fashioned medical care based on internal medicine. Satisfying my curiosity about the term, Dr. Taves explains that while serving in the United States Air Force, he was stationed at a Navy base in San Diego where one of the doctors teaching told them, “Everything comes back to ‘mother medicine.’” Dr. Taves has a four-year commitment to the Air Force following his residency and then he plans to return to Florida to practice. How Do You Do Turkey? By Julie Kanehl Thanksgiving is about bringing people together, sharing a fabulous meal and being grateful for our blessings, but outside of knowing we’re having turkey and the fixings, there are more ways to prepare a turkey than Black Friday deals! To baste or not to baste? To stuff or not to stuff? To brine or not to brine? To buy frozen or fresh? Or maybe we should just fry the turkey this year and be done in a fraction of the time? In this turkey of an article, we will give you some helpful hints on cooking the big bird. The fixings are up to you! Choosing your Turkey! Thanks to the letters and diaries of the early settlers, we know that a meal with the Wampanoag Indians would eventually become known as Thanksgiving. This meal included a smorgasbord of fowl and beef, seafood, fruit, berries, pumpkin and squash. We also know that wild turkey was a prevalent bird in the area at the

time and that a turkey hunting party had gone out prior to the meal! Ever since, Turkey has been the country’s go-to choice for this special occasion! Benjamin Franklin so adored the turkey that he wanted it to become our national bird! There are a few things to keep in mind when picking your out your bird. First of all, don’t wait until the last minute to buy your turkey! Here’s a helpful way to determine how big of a turkey you will need. The general rule for larger birds is to figure 1-1/2 lbs. per adult. If you’re having a more intimate Thanksgiving and are only feeding a few, remember that you’ll want to figure 2 lbs. per person for a smaller bird or any bird that’s 12 lbs. or less. When in doubt, bigger is always better because everyone likes leftovers! That said; don’t get a bird that’s so big that it won’t fit in your oven! Don’t laugh, it happens! Do you prefer fresh or frozen? Fresh turkeys are preferred among the chefs and cooking channel stars, and of course they are more expensive. The taste will be obviously a bit

fresher, but you want to be sure to pre-order your fresh turkey from a market and make sure not to pick it up too early, as a fresh turkey has a shorter shelf life than that of a frozen turkey. It really comes down to preference! If you’ve never done a fresh turkey, you should try it! Frozen turkeys are everywhere at this time of the year, and they’re an excellent and affordable option but plan for time to thaw! Don’t pull that big bird out of the freezer on Thursday morning and expect to have her on the table before the game! Martha Stewart, who we can agree knows her stuff, suggests 24 hours of thawing time for every 4 lbs. of turkey. Where? No, not in the bathtub or in a bucket in the garage! Trust me, you don’t want to serve your beautiful meal with a side of food poisoning, so place that

bird in a large pan and thaw that turkey in the refrigerator! A large party generally needs a 15 to 20 lb. bird, so that means your turkey will need 4-5 days to thaw before it’s ready to cook. In addition to fresh vs. frozen, there are some other turkey options out there you should be aware of. “Organic“ turkeys are a great choice because that means the birds were not raised or fed any hormones, antibiotics, artificial flavors, colors or the like. That sounds good to me! You might see the terms “free-range” on your turkey, which just means that your turkey was free to roam the farm and not stuck in one of those bird factories we don’t like to think about during its little lifetime. A “Kosher Turkey” is an excellent choice because during the koshering process, the turkeys are salted and preserved, making the meat very tender and juicy. Lastly, “pre-packaged” turkeys always have water added to keep the bird moist. So, your bird is thawed, the family is arriving, now what? Clean that turkey! Remove the giblets (and save them for making gravy if you’re so in-

clined) and wash the bird down with cold water. When the bird feels clean, dry it with paper towels both inside and out, and make sure that there’s nothing left in the cavity of your turkey. It’s always a good idea to set aside a special area for this activity and to make sure that you thoroughly clean any areas that the turkey touched! Preparing Your Turkey! Many people worry that their turkey will be dry, so to insure that their turkey will be moist and juicy, they brine it! Now, many people say that if you buy a Kosher Turkey that the process is very similar, which eliminates the need for brining and this can save you time before the big day. What is a brine? A brine is a water and salt mixture that helps to add flavor to the bird before it is cooked. There are hundreds of brine recipes online! Think of it as a marinating process! Please make sure that you have a good, trusty thermometer in the meaty part of the turkey breast. An electronic one is preferred if you have one! The little red ones that pop out of the turkey are a helpful tool, but really shouldn’t be your only thermometer. Loosely tie or truss the turkey legs together to keep them from getting in the way, and you’re almost ready to go! To Stuff or Not to Stuff? To Baste or Not to Baste? Survey says: DON’T STUFF! Do your stuffing separately, because as tasty as stuffing in the bird can be, it’s not worth the risk of the bacteria that’s proven to live in there. Instead, try stuffing your bird with aromatics like oranges, apples, thyme, rosemary, garlic and parsley. There are many ideas for using aromatics in your turkey online! Another way to add flavor to your bird is to place herbs like sage and rosemary under the skin of the turkey, this only takes a few minutes and can really add a lot of flavor. Basting has become somewhat of a tradition in many families! The theory is that by taking the drippings from the pan and rubbing them onto the turkey during the roasting process, the fat and grease will keep the turkey moist. If you like to baste your turkey, do so every thirty minutes to an hour. That said, many chefs claim that this just slows down the cooking process! Cooking the Bird! If you plan on roasting your turkey, there are two rules of thought

on the oven’s temperature. Many chefs suggest that you start your turkey off with a blast of heat-up to 500 degrees for thirty minutes! That said, slow and steady always wins the race, so don’t feel the need to rush. Instead, try 325 degrees from start to finish! Keep an eye on the turkey, baste if you’d like to, make sure that the oven door is shut and that you have a clear view of the thermometer! Don’t leave your turkey in the oven unattended. There are many house fires reported during Thanksgiving, so better safe than sorry! Speaking of fires, have you ever fried your turkey? This is probably the most dangerous and most exciting way to cook a turkey, and it’s gained a lot of popularity over the years! Fryers use oil to cook the turkey at a high temperature. The prep is the same as discussed above, but it takes a fraction of the time, especially considering that the recommended cook time is just 3 to 4 minutes per pound! That means you could have your turkey cooked in an hour if you use a fryer! As a precaution, keep the kids and pets far away from the fryer! Many people prefer to use their fryer outside, which is a safer, but regardless of where you fry your turkey, take as many precautions as possible and follow the instructions that came with your equipment! Whether you fried or roasted your turkey, you’ll know it’s cooked when your turkey thermometer reads 165 degrees in the breast (and 175 in the leg)! This is a good time to give your turkey a nice foil “tent and let it rest for 30 minutes before it’s served. This is the perfect time to make sure that the table is set and that the sides are ready to be served! Lastly, carving your turkey should be done with a very sharp knife or even an electric knife. Sometimes people will put the turkey on the table, give it a nice first cut, and then return the turkey to the kitchen where it can be quickly cut up into easier servings. This is a great tip for providing the best of both worlds-presentation at the start and ease of serving throughout the meal. However your turkey turns out, we hope that you have a blessed meal with the people that you love.
