Do you have a little extra space in your home, a bit of free time, and some love to share? If so, consider becoming a foster parent for a litter of homeless kittens. With the arrival of “kitten season” in early spring, animal shelters and rescue organizations are flooded with kittens who cannot be put up for adoption until they are eight weeks old. These groups rely on the assistance of volunteer foster parents to save lives by providing temporary care. Not only does becoming a volunteer foster parent help busy humane organizations, but it can also be great for you, too. Perhaps you are considering adopting, but aren’t sure if a kitten is right for you. Maybe you travel, and can’t have a “permanent” pet. Or maybe you just want to experience the joy of kittens again and again. I know I did and found a permanent memer of our family in the process; a gorgeous polydactyk cat I decided to adopt and named Santiago, like the main character in the famous Hemingway novel “The Old Man & The Sea.” Whatever your reason, you are sure to find that fostering is one of the most rewarding volunteer experiences there is, I can tell you from my own experience. I volunteered with St. Francis Animal Rescue for several months, and watching these baby kitties go from barely eating on their own to running around in their new families’ homes was one of the most fulfilling experiences of my life. Sadly, due to my husband’s allergies, I had to stop fostering, but I still feel very strongly about this particular organization and would like to take this opportunity to share a message in the name of St. Francis: Following last year’s hugely successful premiere KittyCon, St. Francis Society Animal Rescue announces its second annual fan convention devoted solely to the love and rescue of cats. KittyCon Tampa Bay 2019 will be held at the DoubleTree Hotel Tampa Airport - Westshore on Saturday, November 30, 2019 from 11am6pm and Sunday, December 1, 2019 from 11am-5pm. It is an all-volunteer, 501(c)(3) nonprofit animal rescue dedicated to saving and improving the lives of homeless cats and, when possible, dogs by providing healthcare and placement into suitable forever homes. SFSAR receives no government funding and depends solely on the generosity of donors to save the lives of cats and dogs who would otherwise be surrendered to shelters, euthanized, or left to die. Tech Talk with Bob: Farewell Windows 7 By Bob Dalles There have been notices of this online, in the newspapers, magazines and television. Come January 2020, Microsoft will no longer be supporting Windows 7. So what does this mean if you currently use Windows 7? Quite simply, Microsoft does not intend to make any more repairs to problems found with the Windows 7 operating system. They would love for you to upgrade to their newest Windows operating system; currently Windows 10. But they will no longer provide repairs to Windows 7 with patches and updates. Patches and updates are fixes for vulnerabilities discovered in Windows 7. Microsoft has been providing these weekly since Windows

7 was released back in 2009. Patches and updates deal with issues usually concerning your computer system’s performance and security exploits that have been recently discovered and repaired by Microsoft. These patches and updates are vital to keep your computer running smoothly and securely. You have probably been receiving these every week, perhaps without even knowing it. Your computer usually receives them in the background while your computer sits idle or while you are doing some light computing work. This is accomplished through the service referred to as “Windows Update.” So for most users it’s a no-brainer. The danger of Windows Update being a no-brainer

is that some users are not aware of the importance of keeping their Windows operating systems current. If you were not connected to the internet you would not be as much of a target to cyber criminals and therefore would not need to be as concerned about keeping your Windows operating system up to date. But since you probably do have an internet connection, you will become more and more vulnerable to cyber criminals, as each week passes, once Microsoft’s support ends. Now don’t be alarmed thinking that, all of a sudden, your computer is going to stop working in January. Your computer will continue to work just as it does today. The exception being that after January 14th you will become

an easier target for cyber criminals. It has always been my company’s policy to not recommend unnecessary upgrades to clients. Just because a manufacturer releases a new version of something doesn’t mean you need to upgrade to it right away. Plus, I prefer

that my clients not spend money on upgrades until they really need to. You need to upgrade when it is feasible both financially and from a security standpoint. So, if you are currently using Windows 7 this is my recommendation to you. If your computer never connects to the internet, and all of your current programs and devices are functioning properly, then you are in good shape. Leave well enough alone. There is little chance your computer will be involved in a cyber attack. However, if your computer is connected to the internet, you must upgrade. The Gregg Schindler State Farm Agency November Student Athletes of the Month: Conner Bacca and Bethaney Bradshaw Beginner finds success on the golf course By Emma Rogers and Ashley Hoskins Connor Bacca, a senior golfer at Mitchell High School, received December’s male Gregg Schindler State Farm Agency Student Athlete of the Month award for his talent and passion pushing through from match to match. Despite facing challenges on and off the green, Bacca continues to persevere and provide solutions to keep playing the game he loves. “I started golf about a year and a half ago because I didn’t have enough time in my schedule for baseball anymore. All my friends played golf, so I figured it would be a fun activity to take part in. Coming from baseball without any experience playing [golf] was a big challenge,” Bacca said. Despite Bacca’s inexperience on the green, he continually shoots at

about par on a course with 9 holes. His golf team on a scholarship. perseverance shows through continual practice almost every day to better his game for his next match. “In golf, I typically shoot in the low 80s, if not breaking 80. This year my best score through 9 holes was a 39 and on that course, in particular, that was 3 over par,” Bacca said. To Bacca, playing golf is about more than just hitting a ball towards the flag; he enjoys meeting new people and making friends on the course. “My favorite part of golf is how social it is and the comradery you get with the people you are playing with. It is a lot more social, you get to talk to people and really just have a good time,” Bacca said. Trinity Empanadas & More

When I think Trinity, Florida, the last thing that comes to my mind is an empanada. Trinity is home to many things like great schools, beautiful golf courses, and better housing developments. But to my surprise, a wonderful Colombian woman known as “Sol” is tucked into one of these neighborhoods, creating empanadas as you’ve never seen or tasted before. Many believe food can tell a story when it is truly made with care. Sol is taking the food she grew up eating to the next level. A family tradition that goes back nearly a century, and Sol’s small recipe tweaks

and hard work create delicious empanadas and mouthwatering “pandebonos.” Pandebono or “Pan De Bono” is a type of Colombian bread made of cornflour, cassava starch, eggs, and cheese. Sol and her husband welcomed me into their home with genuine Hispanic hospitality. What I experienced was people who undoubtedly cared about the product they are releasing, and trust me, the taste is evident to the carefulness that was taken in making them. I could taste the culture that brought it to be the end product that it is today. Who Are Sol and Jimmie Willis?

The story begins somewhere in Cali, Colombia, over 60 years ago. A family of eight, including Sol, lived in a modest “barrio” (neighborhood). Sol describes learning “the value of family, hard work, and total honesty.” In 1981, Sol immigrated to the United States and began a life that would eventually lead her to Jimmie Willis. In the following ten years, the rest of

her Colombian family would also immigrate to the U.S. for the promise of opportunity.

Sol began a 50-year career in banking that she only recently retired from. Upon retiring, Sol, with the help of her husband Jimmie, whom she explains, “she would not know what to do without him”, started Trinity Empanadas and More. She believes they are a TEAM and uses TEAM as the acronym for their business (TEAM = Trinity Empanadas And More). With the tender hand of Jimmie supporting her, Sol began preparing and selling authentic empanadas as a home-based business. Soon after, through word of mouth, the company started to explode. As of 2019, they developed the small family recipe into a successful growing business.

The Food The hero of this story is, of course, the long-standing family recipe that began with Evaristo and Sofia Luengas, Sol’s parents. Sofia prepared fresh empanadas for the eight kids in Colombia as often as she could. Through the years, Sol’s sister, Esperanza, learned how to make those unique empanadas from their mother. Sol said, “We all loved our mother’s empanadas, and it was amazing to know they would be coming to the U.S. with us.” Esperanza’s empanadas began to have a loyal following when they moved to their new nation. Flash forward to the present day, an urban American kid sits down at a table that is filled with Colombian heritage and is handed a lesson in the pride it takes to bring that culture to life.

Sol prepared a fresh batch of Empanadas for me and brought with it homemade salsa, which is called Aji (pronounced A-he). Me having no idea how to react, I went to break the empanada in half for the middle to cool. This was the wrong move. Sol stopped me, “no, no, no,” she said. There is a certain way to eat the empanada that brings out the most profound flavors. First, you must take a bite off the tip end of the empanada. So I did, and what I experienced was tender shredded beef (never ground beef, Sol says shredded is the only way to go) with a crisp outer layer. It was by far the best empanada I had ever eaten before I tried with Aji. The next step is to squeeze the empanada in a way, so the pocket opens up revealing the tasty filling. Then take a spoonful of Aji and pack it into the empanada, and enjoy the rest. The process was precise, but for a good reason. First, enjoy the pure taste of the natural ingredients made from corn, not flour for you glutenfree people out there. Then get a bit of that spice that Hispanic food is famous for. Pair with a delicious Colombian soda and the authentic experience is unlike anything

This allows us to connect with the human being on the other side.” The response to the tele-appointments has been overwhelmingly positive. One hundred percent of patients polled that have used the service would use it again. It has allowed patients who were not exceptionally punctual in returning appointments to be more attentive to their personal healthcare. “Compliance rates and satisfaction is higher. There are not many times that 100 percent of the people agree 100 percent,” said Dr. Eldridge. Dr. Shirmo explained tele-visits eliminate busy patients going to a walkin clinic where the doctor doesn’t know him or his history. “Who better than to take care of you than your own doctor?” asked Dr. Eldridge. “We know you.
