The Kiwanis Club of Copiague met with several other Long Island clubs on Thursday, April 10th, at Sergio’s in Massapequa. Members from Copiague, Amityville, Commack, East Farmingdale, Huntington, Lindenhurst, and Deer Park, and a guest from the Copiague Library were represented. There were amazing speeches, and everyone shared upcoming events that will take place in 2025. Great job, everyone!

The Town of Babylon is reminding residents to be vigilant after reports of scammers posing as town employees to gain access to homes. All official Town of Babylon employees carry government-issued ID badges and will always present them upon request.

home without first verifying their identity. If there is any doubt, residents can call 311 to confirm whether an individual is a legitimate Town employee.
“We take the safety of our residents very seriously,” said Supervisor Rich Schaffer. “No one should feel pressured to let a stranger into their home. If you have any concerns, ask for ID and
call 311—we are happy to verify any Town employee’s credentials.”
The Town urges residents to take the following precautions:
• Ask to see ID – All official Town employees will carry Town-issued identification.
• Verify legitimacy –Call 311 to confirm if someone is a Town employee.
• Report suspicious activity – If someone refuses to show ID or seems suspicious, do not let them in and call local law enforcement immediately.
This warning follows a recent incident in which a West Babylon resident was scammed and burglarized by individuals falsely claiming to be Town workers. The Town of Babylon encourages residents to stay informed and share this message with friends and neighbors.
The Copiague Chamber of Commerce made their rounds again by giving back to the community. They donated to the Town of Babylon pantry, and water was donated to State Assemblyman Kwani O’Pharrow’s office for the Easter egg hunt.

The South Shore Audubon Society is offering two $2,000 college scholarships this year: one funded by Evelyn Bishop and her family, and one funded by Jay Koolpix. Each scholarship will be awarded to a different college junior, senior, or graduate student who is taking courses to prepare for a degree in an area of biological or environmental science. This includes wildlife management, forestry, animal behavior, ecology, marine biology, oceanography, mammalogy, ornithology or the field of sustainable and renewable energy. Recipe Of The Week: Pasta Primavera
Warmweather, blue skies and time spent outdoors are hallmarks of spring. Springtime is a season of rebirth and renewal. That’s evidenced by budding trees and the return of frolicking animals. Spring also can be a time to refresh meal-making. Now is the time to trade in those hearty, filling dishes that are perfect for cold winter nights for lighter fare. Recipes like “Pasta Primavera” from “Seasoned America” (William Morrow and Company, Inc.) by Chef Paul Prudhomme can be brought out in spring and enjoyed throughout the warmer seasons. In Italian, “primavera” means “spring,” making this classic, vegetable-infused pasta dish a favorite this time of year. The vegetable inclusions below can be switched out for your own favorite produce as well.
Makes about 8 cups
Seasoning Mix:
2 1/2 teaspoon dried sweet basil leaves
1 1/2 teaspoon salt
1 teaspoon dried thyme leaves
3/4 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 teaspoon olive oil
1 cup thin strips prosciutto
Directions:
2 cups cauliflower florets
2 cups sliced fresh mushrooms
1/2 cup sliced carrots (cut on the diagonal)
2 cups sliced zucchini
6 tablespoons unsalted butter
1 teaspoon minced fresh garlic
1 cup asparagus tips or 3/4 cups snow peas
1 cup chopped green onions
2 cups heavy cream
9 ounces of your favorite pasta
Combine the seasoning mix ingredients thoroughly in a small bowl.
Heat olive oil in a 12-inch skillet over high heat. When oil is very hot, add the prosciutto, cauliflower, mushrooms, carrots, and zucchini. Add the butter and, as it melts, stir in the garlic and the seasoning mix. Stir in asparagus tips or snow peas and green onions. Stir well and cook just until the vegetables are crisp-tender, about 4 to 5 minutes. Stir in the cream and bring to a boil. Lower the heat to medium and cook until the sauce has thickened a bit, about 3 minutes.
Cook the pasta according to package directions; drain. Add the cooked pasta to the skillet, toss well and remove from the heat. Serve immediately.

On Monday, April 14, 2025, the Town of Babylon held a press conference to announce the completion of a major renovation to the Babylon Central Fire and Rescue Alarm Corporation’s dispatch facility, located in the basement of Town Hall. The announcement coincided with the start of National Public Safety Telecommunicators Week, recognizing the vital contributions of emergency dispatchers and telecommunications personnel.
The event celebrated the essential role of our emergency dispatchers and featured remarks from Town leaders, including Supervisor Rich Schaffer, Councilman Terence McSweeney, and Town Historian Mary Cascone.

Now, through April 30, applications are being accepted for the fall 2025 semester for the Hope For The Warriors Military Spouse and Caregiver Scholarship Program. Since 2006, Hope For The Warriors has awarded Military Spouse and Caregiver Scholarships twice a year. The nationwide program recognizes and rewards post-9/11 spouses and caregivers for their strength, fidelity and resolve despite adversity as
they assume critical roles in the financial well-being of their families.
Scholarships vary from $1,800 to $2,500 and are applied toward higher education at an accredited U.S. university, college, or trade school. Unique to the program is a scholarship for spouses of the fallen, Restoring Family.
• Honorary Scholarship – awarded to those seeking graduate or post-graduate degree.
• New Beginnings Scholarship – awarded to those pursuing an associate degree, entry level classes or training.
• Restoring Family Scholarship – awarded to spouses of the fallen.
• Restoring Hope Scholarship – awarded to those pursuing a master’s or doctorate of social work, psychology counseling, or mental health counseling-
related field.
• Restoring Self Scholarship – awarded to those pursuing a bachelor’s degree.
Since the program’s inception, Hope For The Warriors has granted 290 Military Spouse and Caregiver Scholarships totaling $737,107.
