Spiced Chai and Coconut Quinoa Porridge topped with Apple and Caramel Sauce!!

Ingredients:
PORRIDGE
1 cup quinoa (you can use white, black or red; make sure to soak the quinoa in 3 cups of water the night before)
1 tbsp coconut sugar
1 tbsp cinnamon
¼ cup of raisins, Goji berries or golden berries
2cm grated ginger
½ tsp ground star anise, ground cardamom, ground cloves and ground nutmeg
400ml coconut milk
CARAMEL SAUCE
200g unhulled tahini
150g coconut nectar
100g coconut oil
1 pinch of Himalayan sea salt
2cm fresh vanilla bean or natural stevia vanilla drops
Method:
PORRIDGE
Put all ingredients into a pot and cook on the stove over a medium heat for 10 minutes then simmer on low for another 10 minutes. You should have a beautiful creamy porridge consistency. While the porridge is cooking, grate a large apple, chop up 1-2 bananas and prepare your caramel sauce!!
CARAMEL SAUCE
Put all ingredients into a food processor or a blender and blend for a few seconds or you can use a small bowl and a fork and mix it by hand for a few minutes until you have a creamy caramel sauce.
Serving suggestions: Fill porridge into bowls and top with banana, apple and a healthy drizzle of caramel sauce.
