Keto Rich Dark Chocolate Cake

Ingredients:

BASE

1 heaped cup desiccated coconut

2 tbsp raw cacao powder

1 tsp vanilla

¼ cup pepita seeds

1 tbsp stevia powder or monk fruit

Pinch sea salt

2 tbsp coconut oil, melted

FILLING

2 cups raw cashews

1 cup ripe avocado

1¼ cups full fat coconut cream

¾-1 cup raw cacao powder

½ cup stevia powder or monk fruit

1 tsp vanilla

1 tsp fresh orange rind

¼ tsp sea salt

¾ cup coconut oil, melted

Method:

1. Line a 20cm springform pan with baking paper.

2. Place the coconut, cacao, vanilla, pepitas, stevia and sea salt into a Vitamix blender and pulse until very fine crumbs. Add the melted coconut oil and further blend until resembles a doughlike consistency.

3. Press onto the base of the lined pan and place aside while you prepare the filling.

4. Place cashews, avocado, coconut cream, cacao powder, stevia, vanilla, orange rind and sea salt into the cleaned Vitamix jug and blend on high speed using your tamper stick to ensure the filling is very smooth. Place the melted coconut oil into the mixture and further blend until combined. Pour over the base.

5. Place into the refrigerator to set for 24 hours.

6. Remove from the pan and slice with a warm knife and serve with your favourite side condiments.

Top Tips: Ok here I have some yummy tips. If you are not worried about if this cake is keto and want it slightly more indulgent, omit the stevia for 1 cup of pure Canadian maple syrup. If you choose to do this, please use the AYAM full fat coconut cream as this cream sets firmer. If you are using stevia use any full fat coconut cream as the AYAM will be too firm with the stevia. If you don’t have oranges and have edible essential oils, use 3 drops of orange oil. I love wild orange. You could make this cake chocolate mint by using a couple drops peppermint oil, but only start with 2 drops, taste, then reassess if you need more as peppermint, if you add too much, is not very forgiving.
