This week... From the editor Men’s Health Week runs until June 21 and hopefully the message gets across to us blokes about looking after ourselves physically and mentally. Like a lot of males, I very rarely visit the doctor – generally we prefer to ignore the warning signs as our health deteriorates and when we do fall ill, we instead choose to whinge to our partners about how sick we are, rather than actually do anything about it. So ladies, perhaps you will need to force the males in your lives to read our story on page 5 and then make them visit www.menshealthweek.org.au for information on the various events taking place this weekend. Our feature story this week highlights the fantastic effort of three local rugby players - Sarah Halvorsen, Mollie Gray and Tanisha Stanton - to have made the Australian women’s rugby sevens team for the upcoming Pacific Games in Papua New Guinea. When you consider the squad consists of only 12 players, it’s a great achievement for the Hunter region to provide a quarter of the team. Stepping up to the international rugby stage The Hunter region will provide a quarter of the Australian women’s rugby sevens squad for next month’s Pacific Games in Papua New Guinea with Sarah Halvorsen, Mollie Gray and Tanisha Stanton selected in the 12-person line-up. Australia and New Zealand have been invited, for the first time, to compete at the Games which will be held in Port Moresby from July 4 to 18 and feature more than 3000 athletes from 21 countries competing in 28 sports. More than 40 Australians will participate in sailing, weightlifting and taekwondo as well as the rugby sevens. All three Hunter selections will be making their international debuts at the tournament. Gray, 25, and Stanton, 19, are based in Sydney as part of the Australian Rugby Union’s full-time program while Halvorsen, 19, is studying civil engineering at the University of Newcastle. Halvorsen told Newcastle Weekly she had taken up rugby only two years ago and had quickly developed a passion for the game. “I went to Merewether High School and received a lot of support from one of the teachers there, Bob Harrison,” she said. “In the 15s, I play centre for the University’s team but in sevens you pretty much end up all over the field.” With Australia having qualified for next year’s Rio Olympics, head coach Tim Walsh said the upcoming matches were a vital build-up. “The Pacific Games are a perfect opportunity for members of the Australian women’s program to gain tournament experience for what is the most important year in the sport’s history.” Team captain Nicole Beck, from Bulli, south of Sydney, has also been chosen as the Australian flagbearer for the opening ceremony and said the squad was fit and rearing to go. “We’re all eager to bring back the gold medal,” Beck said. “We have a nice mixture of youth and experience in the squad all keen to impress the rugby sevens management and the watching public back in Australia.” The Pacific Games will be telecast on National Indigenous Television (NITV). - Paul Monforte

All clear for Marina Resort Port Stephens Council has approved the final component of a multi-million dollar redevelopment of one of Nelson Bay’s landmark accommodation properties, paving the way for a reinvigoration of the CBD. The first component of the Marina Resort development comprising two towers and associated works was approved in June last year and plans for the $6.35 million eastern tower to house 22 apartments, hydrotherapy pool and car park were lodged shortly afterwards. The total development will deliver 94 one, two, three and four-bedroom apartments, two pools and a 400-seat conference centre to the site on Magnus Street. The total project is worth more than $26 million.

Time for men to look after themselves lokes of all ages and walks of life are being urged to take a moment for their own wellbeing during Men’s Health Week (June 15 – 21). Hunter New England Local Health District Men’s Health Coordinator, Ken McKenzie said many deaths and diseases were preventable and it was vitally important that both women and men were aware of the factors that affect the health of Hunter men and boys of all ages. “Major killers include heart attack, pneumonia, asthma, and other lung conditions, stroke and diabetes as well as lung, bowel, prostate, skin and testicular cancer,” Mr McKenzie said. “But just as important is the often ‘hidden’ incidence of male suicide, depression, self-harm, violence and accidents, which most people aren’t aware are the
biggest killer of young men and boys between the ages of 5 and 45.” Men’s Health Week is a global initiative, organised in Australia by the Men’s Health Information and Resource Centre, at the University of Western Sydney. The centre’s director, Professor John Macdonald, said small changes in lifestyle could make a significant difference to long-term health outcomes. “For many men, it can be difficult to find time to exercise, eat healthy meals regularly and spend quality time with their family and friends,” he said. “However, by making very small adjustments to a daily routine, blokes can find ways to integrate healthy activities into their everyday lives. “Small changes like parking the car further from work or the

news Nominate a deserving community volunteer ominations are currently open for the 2015 NSW Volunteer of the Year Awards until Friday, July 17. Cessnock City Mayor ,Councillor Bob Pynsent said he was particularly proud of the contribution that volunteers make in the Cessnock local government area. “Volunteers are the lifeblood of our community and are often unrecognised for their valuable, selfless commitments,” Cr Pynsent said. “I recognise and appreciate the day-in-dayout contribution that volunteers make there’s hardly an area of life which is not helped by volunteering and I know many valuable projects and programs would not exist without them.” The NSW Volunteer of the Year Awards is a state-wide program for the 2.4 million volunteers in NSW. There are five main categories for nomination this year:

We are just going to have to do the best that we can in getting our troops back on the park.” Stone also spoke about the departure of centre Joey Leilua, who was released from his playing contract earlier in the week after
mounting media speculation. “We haven’t had a lot of trouble with Joey, but he’s obviously been a little bit unsettled since he got here at the start of January,” Stone said. “The bottom line, I suppose, is he doesn’t want to play for us anymore. “I don’t want anyone who doesn’t want to play for us, so we’ve released him and we’ve moved on. “I suppose, culturally we’ve made a decision and we’ve made a bit of a stand for what we think is expectable at our place.” Sunday’s NRL match kicks off at 2pm and will be preceded by the under 20s at 11.45am. Dementia not just an older person’s disease A new campaign launched last week has highlighted that a staggering 1 in 13 people with dementia are now under the age of 65 – and a number of these people are in their 30s and 40s. The ‘No Longer a Statistic’ campaign reveals that in NSW there are specifically now at least 8,400 people under the age of 65 with dementia (referred to as “Younger Onset Dementia”). By 2020 this will have jumped to an estimated 9,020 in NSW.

She’s an amazing talent in her own right, but when Melinda Schneider hits town next weekend, she’ll be shining a light on one of her biggest musical inspirations.
Melinda Schneider will bring her love of Doris Day to Newcastle next weekend.
While she’s certainly no slouch in the musical department herself, with six Golden Guitars under her belt, on her latest outing, one of Australia’s best-loved country music stars, Melinda Schneider will be paying homage to one of her musical heroes, Doris Day. Having plumbed the depths of Day’s formidable musical catalogue, that includes such timeless classics as Que Sera, Sera, Sentimental Journey, Secret Love and Everybody Loves a Loser, with her album Melinda Does Doris in 2010 and, more recently, with her acclaimed theatrical production Doris, this time around, Schneider told Newcastle Weekly audiences could expect a more stripped-back version of the theatre show. “I was in Newcastle about a year ago with the theatre show and it was a real hoot - Newcastle always is,” she said. “But what we’re presenting this time is a little bit different in that it will be more of a concert version of the theatre show – I’ll be bringing a little jazz trio with me and a great selection of songs. It’s going to be great fun.” The daughter of Australia’s legendary queen of yodelling, Mary Schneider, music has always loomed large in Melinda’s life and she said that the music and films of Doris Day were one of her earliest touchstones and biggest influences. “I think I was about ten years old and I saw Calamity Jane on the
tele – probably the Sunday midday movie – and I was just transfixed with her,” she said. “As you can imagine, growing up the daughter of a country singer and watching Doris in Calamity Jane really resonated with me – she was a real, all-singing, rootin’ tootin’ cowgirl. “I thought she really had the best of everything and when I grew up all I wanted to be was Doris Day.” While it was Day’s appearance in the iconic musical western that first grabbed Schneider’s attention, it was the breadth of her work and formidable talent that continues to inspire. “She is just such an amazing talent,” she said. “She was just so versatile - she was a great singer, a great dancer as well as being a great actress. “Her movies are just fantastic and those songs – they are just so much fun to sing. There’s a lot of joy in those songs.” Schneider said that, after she puts down the Day songbook, she plans to pick up her own again with the multi-award winning songwriter starting work on her next album of original material. “I’m starting to write for a new album now and it will be an all original record,” she said. “It’s been six years since the last one came out so it’s well overdue.” - Melinda Does Doris – Lizotte’s Lambton, Sunday, June 28 - Stephen Bisset 17

“We’re also really lucky to have Davey Lane on board as well – he’s always been on the periphery as he plays in Charles’ [Jenkins – frontman] band the Zivahgos but we’re fortunate to have him step in as he really knows his stuff – he’s a great player.” Robertson said Ice Cream Hands had basically been in hibernation since playing their last shows in 2008, while Jenkins continued to plumb the depths of his considerable songwriting talent with six critically acclaimed solo albums. He added, though, that while there were no plans for the band to start recording again, in celebration of the rare regrouping, they will be releasing a remastered vinyl edition of their ARIA-nominated, Wayne Connolly-produced album Sweeter Than the Radio. “We’ve never actually said the band was kaput, but there are no definite plans to do more recording, but we won’t say never – if it turns out we have too much fun with these shows it might just happen. A PERSONAL JOURNEY aving blown the Australian record-buying public away with his deeply personal debut long player, Surrender, last year, Dewayne Everettsmith will be returning to Newcastle with the album and a few freshly-inked tracks as part of his national Beyond Surrender tour. Speaking to Newcastle Weekly in the middle of the 21-date run, Everettsmith promised Newcastle punters an emotional and personal show. “The shows, so far, have been going really well,” Everettsmith said of the tour. “I had a very clear goal when I set out to on this tour and that was that I wanted to create an atmosphere where each audience member felt like they were in their own personal bubble – that I was communicating directly to them.” While there’s no denying that Everettsmith presents himself as an artist laid bare on Surrender, with tracks dealing with such topics

WAR, RUGBY AND SOCIAL POLITICS here’s no doubt that music, rugby league, history and social politics aren’t usually things that go hand in hand however, Canberra’s Griffyn Ensemble will be mixing these unlikely bedfellows with their groundbreaking multimedia show The Dirty Red Digger, that offers up a unique perspective on the First World War and Australia’s role in it. The show, which features the talents of Michael Sollis (composer/mandolin), Susan Ellis (soprano), Holly Downes (double bass), Laura Tanata (harp), Chris Stone (violin) and Kiri Sollis (flute), presents a well researched and richly illustrated history of rugby league – that carried its devotees through many dark times and golden eras in Australia’s history. Premiering on ANZAC Day in Canberra this year, The Dirty Red Digger also draws on meticulous research, spoken text and archival footage. “During World War I, rugby league was the only competitive sport played in New South Wales
and given its association with working class Australia, there are also parallels to the sport and things like class struggle and the rise of the union movement in this country,” Michael Sollis told Newcastle Weekly. The show also explores the conscription debate, depression in both returned servicemen and the young rugby league players of today and the importance of music in propaganda and social commentary. “In a way this production aims to give an artistic voice to rugby league,” Sollis said. “There are a lot of stereotypes surrounding rugby league at the moment which can negatively effect the young people playing the game and this production tries to give the audience a glimpse into that world while touching on those national identity themes of mateship, and the importance of belonging.” The Griffyn Ensemble’s Dirty Red Digger – Friday, June 26, Newcastle Panthers. - Stephen Bisset

CAVILL SEEKS HIS DESTINIY aving wowed all and sundry when they launched their debut record Know Your Destiny at the Stag and Hunter earlier this year, Melbourne outfit Chris Cavill and the Prospectors will be returning to the Stag in support of the release of the album’s second single Midnight Train. With lashings of lilting ukulele, harmonica, lap steel and lush harmonies, Cavill told Newcastle Weekly that Midnight Train was one of the most meaningful songs in his current set. “It really is a reflection of my life as a musician up to this point. I had had a little bit of local success [with previous outfit Chris Cavill and the Long Weekend], but in around 2007 to 2009 all of that kind of slipped away a bit and I was in a position where I

esponsible for such timeless American classics as Chattanooga Choo Choo, In The Mood, Tuxedo Junction, Moonlight Serenade and Little Brown Jug, there’s little denying that the Glenn Miller Orchestra is one of the best-loved and most accomplished jazz and swing big bands in the history of popular music. When did you first know you wanted to be a professional artist? I don’t know that I ever made that decision, but an art practice is something I have incorporated into my life, as something that exists sideby-side with other endeavors and commitments. It’s a balancing act. Describe your work I am a printmaker who creates woodcut blocks as my templates. I use both traditional handcarving as well as more precision based methods, and produce predominantly abstract prints which explore colour, pattern and line. I also have an interest in manipulated digital photography, and use this as a means of exploring the urban built environment. What inspires you? Just looking at the work of other artists, in all mediums. It’s always inspiring and surprising to see how

Having been open for a decade, the popularity of the dinosaurs is waning so, behind the scenes the scientist boffins have bred a genetically enhanced dino behemoth and, as is the case with such experiments, things go horribly wrong. Then it’s up to raptor trainer and all round good guy Chris Pratt to save
the day, amid mammoth set pieces of all-out dinosaur war and culminating in a behemoth of a finale to rival any of the “creature feature” blockbusters of the last five years. While never living up to the Spielberg original, this reboot, refreshingly, does have some good things going for it. Verdict: A big, bold, and fun thrill ride. 3 stars - Stephen Bisset

character emotions and the colourful world that exists within Riley. Parents will relate to the psychological undertones that form the basis of the story and will find themselves relating to the differences that exist not only between children and their parents, but also between mums and dads themselves. CHOCOLATE ARANCINI THAT’S AMORE Former Masterchef contestant Liliana Battle has released her debut cookbook – Easy Home Cooking Italian Style. A wonderful collection of cherished recipes, passed down through generations, and fresh new creations to inspire every mealtime. Arancini are little balls of risotto, normally filled with meat and cheese. Why not chocolate? Think sweet rice pudding crossed with a cinnamon doughnut and you’re almost there. The explosion of the oozing chocolate hazelnut centre is what will take you over the edge. These aren’t just good, they’re nirvana. You will need to start these the day before. To celebrate, Liliana and New Holland Publishers are giving you the chance to make these delectable chocolate arancini at home. Enjoy!
INGREDIENTS
METHOD
4 cups water
Put the water into one pot over high heat and bring to the boil.
4 cups milk 1 ½ cups caster sugar 2 ½ cups Arborio rice 2 tsp vanilla extract 2 cups Nutella 1 cup plain flour 1 cup dried breadcrumbs 4 eggs, whisked with ½ cup water 1 cup granulated sugar 1 tsp ground cinnamon Oil for frying Makes approx. 30
Once boiling, add the rice and cook, stirring every now and then for 15 minutes Meanwhile, put the milk and sugar into a medium pot , heat, stirring, until sugar is dissolved and milk is simmering. Do not boil. Add the vanilla and pour into the par-cooked rice mixture. Heat on medium, stirring every now and then for another 10 minutes, or until rice is cooked. Put the rice into a large, shallow dish or container, cover and refrigerate overnight. The rice will set and become easy to handle. Line a tray with baking paper. Scoop the Nutella into a piping bag and pipe round blobs, about 2cm in diameter, onto the tray. Place in the freezer to set. When ready to complete the arancini,

put the flour into a bowl, the egg and water mixture into another and the breadcrumbs into a third. Take roughly a 1/3 cupful of rice, flatten it out in your hand, take one Nutella blob and place it in the centre. Now, close your hand, moulding it around the Nutella to fully enclose and make a ball shape. Dredge in flour, then egg, then breadcrumbs and set aside on a tray while you make all the arancini.

Mix the granulated sugar and cinnamon in a shallow dish. Heat enough oil in a deep saucepan or fryer to come halfway up the sides to 180-degrees C. Cook the arancini in batches until they are golden, about 3 minutes, drain off excess oil and then drop them straight into the cinnamon sugar mixture. Roll around to coat. Serve warm. 29
taste BLESSED ARE THE CHEESEMAKERS ombining an early love for the fromage and a strong interest in education has become a consuming passion for Newcastle-based business owner Kate Ross whose venture – With Miss Kate – cuts straight to the heart of all things cheesy. With Miss Kate started life around four years ago after Ms Ross, a former high school history teacher, discovered just how easy the cheesemaking was. “It all came to be when a friend, who was a chef, taught me how to make ricotta in my kitchen and I was really amazed with how simple it was,” Ms Ross told Newcastle Weekly. “So I bought a home cheesemaking book and added marinated fetta, haloumi, labna, quark and paneer to my repertoire and started the business soon after and largely doing classes or cheesemaking parties in people’s homes in two hour workshops where I take all the ingredients and equipment and they pay $40 per head and we all have a lot of fun. “Fresh cheeses or unripened cheeses, which are the ones I teach, can all be done somewhere

LITTLE NEL IS BIG ON FLAVOUR ucked away in the Nelson Bay Resort, opposite the Nelson Bay Marina, the Little Nel Café is definitely one of the gems of the Port Stephens food scene as this reviewer found out after making a lunchtime visit last week. After a quick peruse of the menu, I decided to head Stateside and sample the Little Nel Ultimate American Cheeseburger and if I were forced to describe this concoction in two words, they would be delicious and massive. Almost impossible to eat without the aid of cutlery, this granddaddy of all cheeseburgers came complete with a beautifully spiced and deliciously moist meat pattie, fresh salad, gherkin, crispy bacon, cheese and aoli and the addition of a healthy portion of golden brown house-made fries and a zesty herb and garlic aoli, taking this classic dish way above the next level. My dining partner was also no less disappointed with his choice of crispy-skin Atlantic salmon, served with a salsa verde, salad and the same delectable housemade fries and, when you are presented with such a perfectlycooked piece of fish, how could you be disappointed? Aside from the star of the dish being cooked to moist perfection,

the skin, like the menu suggested was crispy while the herbaceous salsa verde and fresh and zesty salad provided enticing layers of texture and flavour. While the lunches at the Little Nel Café are certainly worthy of writing home about, it is the breakfast menu where this eatery really shines. The 22-dish menu is essentially a who’s who of morning delights – from the classics – bacon and egg roll, big breakfast, sautéed mushrooms, and tomato bruschetta – to more adventurous fare like quinoa porridge with vanilla, lemon, raisins, blueberry compote and pistachio, coconut and blueberry chia parfait with natural muesli, greek yoghurt and honey, a salad of watermelon, strawberries and pomegranate with rosewater, pistachio powder and yoghurt or even Tunisian baked eggs with spicy sausage, tomato, peppers and smoked paprika. Wash any of that down with a rich and heady Suspension espresso and you have yourself a breakfast experience to remember.
