This week... From the editor Winner, winner chicken dinner. It was a winning weekend in Newcastle, with all three of the city’s major sporting teams – the Knights, Jets and Northstars – posting wins. The Jets’ campaign, although lacklustre compared to last year’s grand final entry, ended on a sweet note with victory over Sydney FC. The Knights broke a fivegame losing streak at home, while the Newcastle Northstars had a stellar start to the Australian Ice Hockey League season with a double-header win. Slightly further afield, long-time cricket mates Matt Gawthrop and Luke Stewart were crowned winners of My Kitchen Rules Season 10. The boys, hailing from Lake Macquarie and Maitland, could barely string two sentences together when they spoke to Newcastle Weekly on Monday after Sunday night’s grand finale went to air, blissfully overwhelmed by the win. As MKR producers had filmed two endings to the show, Matt and Luke only found out they’d won with the rest of Australia. As with anything in life, success is only the tip of the iceberg. “The price of success is hard work, dedication to the job at hand, and the determination that, whether we win or lose, we have applied the best of ourselves to the task at hand.”

there were no studies that looked at what type of exercise might be the most beneficial. “It is the first study in the world to look at this, so we’re really excited to see what the results show.” Raymond Terrace’s Suzanne Climan is doing moderate exercise for the study and is already feeling the benefits. Since moving to the region from Penrith six years ago, Ms Climan has already found her asthma has significantly improved, including halving her medication, which she has attributed to both the change in environment and the support for the condition she is now able to access through HMRI and a specialist. “When I was in Sydney, it was nothing short for me to have three or four asthma attacks a year and I was on Prednisone constantly,” she said. Participants are split into three cohorts and, for three months, undertake either moderate exercise, vigorous exercise or nothing at all. Baseline testing is conducted at the start, then they are retested at the end to see if there are any improvements in their asthma status. Early results indicate that moderate exercise is more beneficial than vigorous, however, the ideal amount is yet to be determined. Researchers are hoping to incorporate the final findings into asthma management guidelines. “We know that exercise improves asthma, but we haven’t actually looked before to see what intensity of exercise might be better,” the University of Newcastle’s Dr Hayley Scott told Newcastle Weekly. “We were really surprised when we looked at the literature and

news Happy campers all ‘round Campers far and wide welcomed the reopening of Williams River Holiday Park over the Easter and school holiday period. Thirty-seven campsites, in addition to the 25 that had already been reactivated in the caravan park, came back online just before the Easter long weekend. The park had been closed since February while Dungog Shire Council worked to address “profound” safety and compliance issues, including a lack of fire hose reels and water taps. The park also required the necessary approvals to operate at both a local government and Crown Lands level, meaning the council was unable to secure approvals to operate, generating major insurance concerns. Maitland’s Paul Tilden, whose growing convoy of family and

friends has camped there every year for 14 years, told Newcastle Weekly he was pleased the council managed to pull it off in time for Easter. “We love to support the local businesses while we’re here, so it’s good news for them because the Dungog economy would’ve suffered without it,” he said. A council spokesperson said, due to the park’s social and economic importance, “a significant proportion within the local community therefore reacted to the temporary closure with shock and some indignation”. Mr Tilden admitted he was one of those people. “I was a little bit up in arms about it because of how close it was to Easter,” he said. “It shouldn’t have been allowed to get to that point [of being noncompliant] in the first place.”

The spokesperson added the council “regretted the concern generated by its action but had no choice but to act in the way it did because the licensing, regulatory, safety and insurance issues were so profound”. The council has appointed a new management team, directly employed by it, to oversee the park’s

day-to-day operation. The 62 campsites that reopened is less than the 110 sites the park previously held consent for, which elapsed some years ago, however, the council will release “a large number” of new sites during major events and consider other options for additional permanent capacity. - Georgia Osland

Hemp seed could be the key to remediating PFAS-contaminated soil, with University of Newcastle researchers obtaining promising results from early research. The study has received $4.7 million from the 2019-20 Federal Budget to further investigations led by Dr Brett Turner and Laureate

Professor Scott Sloan, from the university’s Priority Research Centre for Geotechnical Science and Engineering. Per- and poly-fluoroalkyl substances (PFAS) have contaminated groundwater and soil in several sites around Australia, including near the Williamtown

RAAF base. The manmade chemicals have been used in firefighting foams, insecticides and electronics, however are considered to be almost non-degradable. Kickstarted by a $600,000 state government grant, early research has found that the high protein content of hemp assists in the breakdown of PFAS chemicals. “We found that hemp has a remarkable affinity for PFAS chemicals in groundwater,” Dr Turner said. “So, we expect that this can be applied to remediate contaminated soil – an area where currently there are no options.” The next stage of research will look to create a more cost-effective method of removing the chemical compounds from soil, groundwater and surface waters naturally.

Flood forums Flood talks will be held in Lake Macquarie this month to help shed light on flooding and tidal inundation risks in Pelican, Blacksmiths and Swansea. The first Let’s Talk event, planned for Tuesday 7 May from 5.30pm to 7pm at The Swansea Centre, includes presentations from the SES and Lake Macquarie council about preparing for natural disasters and community evacuation plans. The second session, on Monday 13 May at the same time and location, includes a presentation by coastal and environmental engineering expert Dr David Wainwright. Dr Wainwright will discuss findings from a councilcommissioned assessment gauging coastal hazards and potential damage for the area. Admission to both forums is free and bookings are not required.

She hopes the findings will inform improved support services for others who have been diagnosed. “I didn’t have a lot of help when I got my asthma; the doctors I originally saw just went, ‘Take some more medication, bump up the Ventolin’,” Ms Climan said. “If I can do something to help someone else with the testing that I do, or the exercise that I do, someone else will get the support that I didn’t get in the beginning.” Dr Scott is leading the study with the University of Queensland’s Professor John Upham. Money talks: students learn the basics Financial literacy will be taught to more than 500 Hunter high school students this term. The Greater Bank Finance Academy is set to deliver its pilot Fundamentals of Financial Literacy Program at 20 schools across the region, in collaboration with the University of Newcastle. The program is part of a five-year partnership between the institutions, which has seen the establishment of the Greater Bank Finance Lab, coupled with the delivery of community education programs and practical workshops. Students will learn how to make informed financial decisions when managing money and how to achieve their goals. Greater Bank’s head of marketing and customer experience, Matthew Hingston, said he was thrilled to be working with the university on the initiative. “We will harness the strength of the university’s theoretical background with the application of Greater Bank’s practical, realworld experience to develop an industry-first

program that will extend to benefit young people in the community,” he said. The pilot will run for the rest of the year. The course content covered, as well as feedback from students and educators, will help shape the schools-based program’s evolution, in addition to external, universityfocused workshops. Thousands of people are expected to join in Hands Across the Sand action against seismic testing and offshore gas on Sunday 5 May at Nobbys Beach. The protests come as gas company Asset Energy is soon expected to lodge its Environment Plan for 3D seismic testing over 1,000 square kilometres of marine waters off Newcastle and the Central Coast. Hands Across the Sand aims to draw awareness to what is at stake with whales, dolphins and other marine creatures inhabiting the area. Protestors will join hands in a symbolic statement of opposition to seismic testing and offshore gas, calling instead for renewable energy investments. The community can join the action from 10am.

Online influenza tracking is already in full swing, with illness rates estimated to be two to three times higher than normal. A joint initiative of the University of Newcastle, Hunter New England Population Health and the Hunter Medical Research Institute, the system, named FluTracking, allows the public to sign up to take a weekly survey

The annual fundraising drive supports 33,000 children nationwide who visit the foundation’s in-hospital Starlight Express Rooms and benefit from the Captain Starlight program. Last year, almost 1,800 of these were at the John Hunter Children’s Hospital, where 10 Captains Starlight brought a world of fun to almost 900 kids in the Starlight Express Room and another 900 in wards, the emergency room and outpatient clinics who were unable to visit the room. The Starlight Express Room is open seven days a week and provides an escape from humdrum hospital life. “It’s a medical-free zone where kids can just be kids,” Newcastle hospital programs manager Alicia Johnston said. “They’re being poked and prodded in a smelly hospital, but here, they’re being distracted by love and laughter.”

The goal is to redecorate and replace ageing equipment. “The room hasn’t had a facelift in a decade,” Ms Johnston said. “It’s red and white at the moment, which is cool, but sometimes you need that lower sensory stuff. “It’s also not your usual foot traffic that goes through, there are a lot of large art projects – all that glitter!” All donations made before the close of Starlight Day will be doubled by corporate partners. news Walking together into the light

Newcastle will hold its inaugural Darkness into Light event next week.

Next weekend the Newcastle community will come together for a sunrise beach walk in support of people in suicide distress and families who have been touched by suicide. The city’s inaugural Darkness into Light event will be held on Saturday 11 May and will see participants do a four-kilometre round trip from Bar Beach to the Merewether baths, raising funds for Australian preventative mental health organisation batyr and Irish support service Pieta House. Newcastle Darkness into Light committee member Brodie Apthorpe said that there was already lots of interest in the event, both by people affected by mental illness and those who just wanted to show support. “That’s what is special about the walk,” she said. “It’s at sunrise, so everyone is there in the dark and then they walk into the light together. “It’s got a beautiful symbolism.” Darkness into Light began in 2009 when 400 people walked through Phoenix Park in Dublin to raise money for Pieta House, who

provide therapeutic help for those in suicide distress or engaging in self-harm. It has since grown to more than 200,000 participants in 150 locations. In Australia, walks are also held in seven other cities. The Newcastle event was kickstarted by a local woman who lost a cousin to suicide in Ireland. “It’s got a massive Irish following, so a lot of Irish communities have brought it across,” Ms Apthorpe explained. “Being a part of this has given me a better belief in humanity. “It’s been a really lovely thing seeing this all come together.” As well as supporting Pieta House, funds raised will also go to batyr, which runs programs in schools to teach students and their parents how to break the stigma around mental health and have healthy conversations. The Newcastle Northstars have kicked off their 2019 Australian Ice Hockey League campaign with two wins, defeating Sydney Bears and Melbourne Ice at Hunter Ice Skating Stadium on the weekend. Already 3-0 down with seven

Persimmon & herb chicken salad Serves: 4 For the salad 2 Fuyu (crisp) persimmons 400g chicken breasts, chargrilled or barbecued 2 cups flat leaf parsley 1 cup mint leaves 1/3 cup toasted macadamias, roughly chopped cracked pepper, to serve

Cut persimmons in half and thinly slice. Slice or shred chicken breasts. In a large bowl, toss together persimmon, parsley and mint. Divide salad between four plates and top with chicken. In a small bowl, combine all dressing ingredients and spoon over salad, season with cracked pepper to serve.

For the dressing ½ cup Greek yoghurt 1 Tbsp lemon juice 1 Tbsp water ½ tsp thyme leaves, chopped

4 Fuyu (crisp) persimmons 1 vanilla bean 2 Tbsp honey

through. Add vanilla bean to baking dish. Dissolve honey mixture in hot water and pour over fruit.

Preheat oven to 180C. Cut persimmons in half. Place bases cut side up in a large ceramic or glass baking dish. Cut tops into quarters and remove stem. Add to dish.

Cover dish with foil and bake for 45-60 minutes, until persimmons are soft. Preheat grill until hot. Remove foil, spoon syrup over the top of the fruit. Place dish under grill for 5-10 minutes or until fruit begins to caramelise on top.

Scrape seeds from the vanilla pod, add to a small bowl with honey and stir seeds

Serve hot or room temperature, with syrup and yoghurt or cream if desired.

110g unsalted butter, room temperature ½ cup caster sugar ½ tsp salt 1 egg 2 cups plain flour 1 tsp baking powder 1 tsp ground ginger 1 tsp ground cinnamon ½ tsp ground cloves ½ tsp ground nutmeg 2 Tbsp (heaped) chopped crystallised ginger 1 cup raisins or dried currants 1 cup chopped walnuts or pecans 2 ripe Hachiya (soft) persimmons, peeled and pureed Preheat oven to 180C or 170C fan-forced.

With an electric cake mixer, beat butter, sugar and salt until pale and fluffy. Add egg and beat until combined. Add half the flour and mix. Then add persimmon puree and mix with a wooden spoon until combined. Add remaining flour, baking powder, ginger, cinnamon, cloves and nutmeg, and mix with a wooden spoon until combined. Add raisins or currants, nuts and crystallised ginger, and mix until combined. Drop heaped tablespoons of the batter onto a baking tray lined with parchment and bake for 12-14 minutes. Cool on a wire rack before storing in an airtight container. Tip: You can also use crisp Fuyu persimmons for this recipe once they ripen.

Author sends healing message Helping others is the driving force behind Newcastle author Bernadette O’Connor. As a practicing kinesiologist, it’s no surprise that self-discovery and healing have embedded themselves into her two works, Let’s Go Home and Beneath the Veil, which were launched just 12 months apart in February 2018 and February 2019. “The level I work in is mostly around emotional blocks and personal and spiritual goals,” O’Connor told Newcastle Weekly. “Both books have themes along those lines.” Let’s Go Home follows a young woman who falls into work, alcohol and drugs in order to cope with feelings of abandonment but learns to find home within herself, while Beneath the Veil goes back to mid-20th Century Ireland

where a young woman must use her inner strength to battle emotional demons. O’Connor sees her writing as a continuation of her practice, just in a different medium. “This is telling people how to heal, but it’s done with story,” she said. “When people are reading the story, they are changing within themselves and that’s really beautiful. “When we’re reading these stories there’s a vibration in the words and that stays with us.” Launching two books in the space of the year is no mean feat, but O’Connor described the process as being natural as the story ideas just landed with her. “I’ve always been a hard worker, but I actually think I’m working less,” she said.

“If I need to work, I work. “I trust a lot that what is meant to be is meant to be.” Serendipitously, Beneath the Veil was launched the same day that 50 copies of Let’s Go Home were included in the gift bags of Oscars attendees including Lady Gaga, Ellen DeGeneres and Nicole Kidman. That was made possible by a conversation with a public relations agent and then through O’Connor’s persistence, pushed by her belief that you need to pursue opportunities that come your way. She hopes that with copies of Let’s Go Home now floating around Hollywood, it may fall into the right hands and become a film, but said she wasn’t seeking fame – she just wants the message to be accessible to more people. “It’s not about ego – I’m a

“Surreal” win for Hunter duo Novocastrians and long-time cricket mates, Matt Gawthrop and Luke Stewart, are yet to come back down to Earth after their impeccable My Kitchen Rules 2019 grand finale win. “We’re feeling great – it’s just so surreal,” Matt told Newcastle Weekly on Monday after Sunday night’s episode aired. The boys, hailing from Lake Macquarie and Maitland, respectively, knocked rivals Ibby and Romel for six with a near-perfect score of 92 out of 100. They found out they’d won by four points with the rest of Australia on Sunday night, alongside about 200 family and friends at a packed Souths Merewether leagues club. In the all-male, all-NSW grand finale, the two teams were tasked with serving more than 100 plates to a packed restaurant of family, friends and previously-eliminated competitors, plus, for the first time, 10 judges in celebration of MKR’s 10th anniversary. Matt and Luke’s winning five-course menu consisted of confit salmon with peas; duck ravioli with wild mushroom; barramundi with roasted fennel; beef cheek with parsnip mash; and, finally, peach bellini for dessert.

It garnered them perfect 10s from three of the judges, with many commenting on the tenderness of the beef cheeks – something Matt said they’d been waiting to cook all season. As chef Pete Evans remarked, they “saved the best for last”. The road to being crowned champions wasn’t always a smooth one, with a few missteps early in the series, but Luke added it made the victory all the more sweet. “I wouldn’t change a thing [about the journey], even from the start; all those dishes led to the win, and you learn more from your bad days,” he said. With university studies for Matt and a family and a house for Luke, the boys said the “lifechanging” $250,000 prizemoney would go a long way toward setting them up for life, but, having figured out that they work so well as a team (and not just when a cricket bat is involved), it would be remiss of them not to follow their passion for food in some capacity. To that end, Matt and Luke will host two dinners at Maitland Regional Art Gallery on Saturday 18 May (sold out) and Saturday 1 June, with more dates to come, potentially in Newcastle. - Georgia Osland

Sow seeds now, reap reward later May is an ideal month for gardening; warm days, cool nights and less humidity give way to digging and planting. It is time to plant out spring bulbs before the month is out. Tulips and hyacinths need a couple of weeks in the fridge crisper to trick them into thinking they are under the snow. One of my favourite plants, Cymbidium orchids, will begin to bloom towards the end of May. They are wonderful to have indoors during the winter months; their green, strappy growth from which the blooms emerge provide a real highlight as the flowers open. May is also an ideal time to divide strawberries. After transplanting the new strawberries, apply Flourish regularly to establish the runners.

Try growing strawberries in a wall garden. The elevation prevents them from being eaten by slugs, snails and grubs. May chores can be endless, but the work will produce great new plants for spring, for example, divide clivia and agapanthus now while the weather is cool – after division, water well and apply a slow-release fertiliser to encourage growth until winter. Once heating is turned on, give house plants a little extra care. Keep an eye out for the emergence of winter grass; these pretty green tufts fool many gardeners. It should be sprayed now before it goes to seed.

SPORT I enjoyed playing rugby, go-karting and golf when I was younger, but now, to keep fit, I go to the gym and attend the Beaches Park Run, including various other organised fun runs.

My favourite things MOTORCYCLES I have completed two charity motorcycle rides around Australia on my Honda CBR125, and have obtained three Australian records on a 125cc motorcycle – fastest time to circumnavigate the Australian continent (27 days), lowest fuel consumption in circumnavigating (31.6km/litre) and most number of deserts visited in a month (10).

ACHIEVEMENTS As well as obtaining my three Australian records, I received a NSW Police Award in March 2015 for saving an elderly gentleman’s life after a motor vehicle collision. I conducted CPR until the ambulance arrived, and he made a full recovery.

Gerald Frogley

RIDE AROUND AUSTRALIA FOR DISABILITY ORGANISER

On 1 May, Gerald Frogley embarked on his third fundraising motorcycle ride for Maitland’s Mai-Wel Group. His son, Stephen, was diagnosed with autism before he turned two and for the past 15 years, Mai-Wel has provided Stephen with meaningful employment and support. Gerald grew up near Wellington NSW, and after leaving school he worked on the family farm before starting a motor mechanic apprenticeship. He moved to Newcastle in 1989 with his family to enrol Stephen in a specialised school. In Newcastle, Gerald worked as a mechanic, obtained a position as an RTA Inspector and did six years in an Army Reserve Royal Australian Electrical and Mechanical Engineers unit, before joining the NSW Police Force. He was stationed at Newcastle LAC and later obtained a position in the Crash Investigation Unit. Now 60 years old and semi-retired, he does various casual work in the Newcastle area. TRAVELLING I love travelling throughout Australia. My rides have taken me along Highway One, through deserts, and this time I will be visiting Australia’s highest and lowest points (Mt Kosciusko and Lake Eyre), and most northern and southern points (Cape York and South Cape).

FAMILY I am married to Kerri and have two children, Melissa and Stephen. Melissa now lives in Brisbane with her husband, Nathan, and my two-year-old granddaughter, Bonnie.
