From the editor With COVID-19 upsetting most people’s plans in 2020, it’s great to see life returning to some normality. A big crowd converged on Speers Point at the weekend for the Lake Mac Autumn Fair, while another impressive turnout hit the streets for the May Day Parade at Hamilton. An annual event for the Hunter Workers, it slipped off the calendar last year due to the pandemic. But, it returned to its full glory on Saturday morning. Most of us probably don’t realise how important an organisation like that is, especially in this modern era. However, without groups such as Hunter Workers – formerly known as the Newcastle Trades Hall Council, we wouldn’t enjoy many of the things we now take for granted. Think 40-hour weeks and eight-hour days in the workplace, for example. They’ve represented working people in the Hunter Valley for more than 150 years since the early days of mining coal and the establishment of mining lodges across the region. On top of that, their representatives have campaigned to improve the lives, wages, conditions and social services for all employees and their families. So, congratulations to everyone who took part in the march down Beaumont Street. Until next week, keep smiling - Rod Thompson

news Top cop Max Mitchell bids force farewell after 40 years After four decades of distinguished service, Assistant Commissioner Max Mitchell APM will swap his prominent blue uniform for a wetsuit after bidding the NSW Police Force farewell last week. NSW Police Commissioner Michael Fuller, together with Deputy Commissioner Gary Worboys and NSW Police and Emergency Services Minister David Elliott, joined members of the Northern Region Command at Newcastle to celebrate the career of the popular officer, who marked his final day of operational service on Thursday 29 April. The ceremony also culminated in a March Out at Newcastle Beach, which included a guard of honour and a fly-over by the Aviation Support Branch. Assistant Commissioner
Mitchell then gave a last salute to Commissioner Fuller. “It’s time; I’m looking forward to the next chapter,” he said. “In fact, I’m happy to hand over the duties to someone else. “But, it was terrific to wind up my career in the area where I started. “It’s been an honour to serve the Northern Region.” Growing up in Lake Macquarie, Assistant Commissioner Mitchell joined the force in 1981, spending the early part of his career in the Newcastle and Lake Macquarie area undertaking both general and investigative duties at a number of commands. He was designated as a detective in 1989, before rising through the ranks and working at Raymond Terrace Patrol, Tuggerah Lakes Local

Area Command (LAC), Brisbane Water LAC and Newcastle City LAC. In February 2011, he led the NSW Police Force’s response to the Christchurch earthquake (Operation Monro) in New Zealand, overseeing a contingent of 130 police and emergency service personnel. Assistant Commissioner Mitchell was then seconded to the Australia New Zealand Police Advisory Agency (ANZPAA). “That’s probably one of the highlights of my career,” he said.
“When dealing with something so tragic, to see everyone work together was extremely rewarding.” Following this, he developed a proposal to establish the Police Transport Command, where he was promoted and started operations as the Commander in May 2012. For Assistant Commissioner Mitchell, his retirement means spending more time with family and friends, a bit of golf and surfing the best breaks around Australia. - Rod Thompson

news Hunter Workers march ‘loud and proud’ in annual parade The region’s employees were told to march “loud and proud” – and they did just that when the Hunter Workers staged its annual May Day Parade on Hamilton’s Beaumont Street on Saturday. To coincide with International Workers Day on 1 May, hundreds of locals recognised and honoured those who have been on the frontline during COVID-19, risking their lives and health. Hunter Workers, formerly known as the Newcastle Trades Hall Council, regularly campaigns to improve the livelihoods, wages, working conditions and social services for all employees and their families. “I’m very happy with the turnout,” secretary Leigh Shears told the Newcastle Weekly. “There are strong numbers here,
which is pretty pleasing. “And, I’m expecting more throughout the proceedings, too. “It’s a really good day. “It has been a while since we’ve been able to come together as a group. “Our first march took place in the late 1800s, so we’ve hosted this [May Day Parade] for a long time. “Understandably, we missed out in 2020 due to the pandemic.” Nationally and internationally, May Day boasts a rich history of union action and workers’ rights wins. But, Mr Shears acknowledged it had been a tough year. “In the past few months, healthcare personnel have been working hard to distribute and administer vaccines to our frontline

workers, so they can continue carrying out the work that keeps Australia running,” he said. “In Australia, our essential workers have braved floods, bushfires and droughts, all while providing us with the necessary services we need to function as a community. “Hunter Workers represents all working people around this region and in all industries. “So, we cover a broad crosssection.
“There’s not a workplace that you wouldn’t have coverage from one of our affiliates. “However, today [Saturday] is all about celebrating our frontline and essential workers. “We’ve always known employees have been vital to our economy and important to the fabric of our society. “We’ll continue to campaign for the things that matter for all workers across the region.” - Rod Thompson

Shining a purple light for domestic violence victims Port Waratah Coal Services is lighting the ship-loaders at the Carrington wharf facilities purple every night during May to help raise awareness of domestic and family violence. For the project, Port Waratah has joined forces with Got Your Back Sista, a local community organisation in Tighes Hill that specialises in assisting women and their children to start a new life after escaping the trauma of DV. “Unfortunately, domestic and family violence remains too prevalent in our community,” Port Waratah CEO Hennie du Plooy said. “This campaign is an opportunity for everyone, including organisations like ours, to show their support for real change.
“We’re inviting residents to participate in the project by taking a photo dressed or decorated in purple or with a ‘Say NO to Domestic Violence’ sign and send it to communitypartnerships@ pwcs.com.au, to be part of a social media awareness campaign.” Got Your Back Sista CEO Melissa Histon was delighted. “Sadly, most of us work with, live near, or are related to someone who has experienced violence in their home or in their lives,” she said. “This community initiative with Port Waratah Coal Services is a wonderful, visible way to remind the community that domestic violence is not acceptable – and it is never okay.” - Rod Thompson

news Anything that can be reused deserves to be, fashion label owner says When Bonnie Lee Tipper hosts her pop-up shop and exhibition this month, it’ll be the closest she’ll ever come to featuring in a shop front. That’s because the 28-year-old doesn’t like to be traditional in her approach to selling her wares. “I’ve been at music festivals, I’ve done markets, I’ve had sales in my backyard which are popular, and online is my main selling tool,” she said. “I also do repairs and alterations from my house, but I’ve never had a shopfront, and I don’t really want a shop front, so this will be an opportunity for me to ‘play shop’ for a week without permanently being there.” The event will be a culmination of a craft that began 13 years ago when Tipper first found her love of vintage fashion. “I think I started buying and selling vintage when I was about 15,” the former Port Macquarie resident said. “In the small country towns it was my thing, I’d watch all the old movies and be obsessed with
these old stars and their iconic fashions. “I’d go to op shops and find all this stuff that had no relevance in the small towns, and I’d feel so lucky I could have these pieces and make things with it and sell it again.” She has been honing her skills since then, completing a Bachelor in Fashion and Design and launching the label. “Chinchen Street is a Newcastle-based handmade and vintage fashion label,” Tipper said. “At its core, the label is driven by a passion for sustainable, slow fashion practices and inspired by romantic ideals of individualism, imagination and freedom. “Our range includes limited edition handmade clothes made from recycled materials, as well as an extensive range of handpicked vintage pieces.” Working with anything from materials with holes in them right through to vintage wedding gowns with not a mark on them, Tipper says her style is “old-world, glamorous, crazy, eclectic and totally unique”.

“It’s a weird glam-grunge combination – like trash and treasure,” she said. Her skillset doesn’t stop with clothing, the seamstress also brings new life to old furniture. “Anything that can be reused deserves to be,” she said. Event soars into Lake Mac One of the US Navy’s most devastating WWII warbirds will thunder over Lake Macquarie this month as part of a new festival. Based on the Rathmines Foreshore, Up in the Air will feature aerial displays by Australia’s only Grumman TBF Avenger – the heaviest singleengine aircraft of WWII famous for sinking the Japanese superbattleships Yamato and Musashi. The event will take flight on Sunday 23 May and also include aerial displays by a T-28 Trojan, a Rebel 300 aerobatic plane and a Pitts Special biplane.
Paul Bennet Airshows operations manager Glenn Graham said the aircraft would fly about 200m from the shoreline, with some planes operating just metres above the lake’s surface. “There will be four display pilots who have been top international aerobatic performers for the last 10 years,” he said. cover story Sarah’s love for her kids shines through A mother’s love for her children is unlike anything else in the world. That reigns true for Newcastle’s Sarah Fisher who is a fierce advocate for her two kids, nineyear-old Alex and five-year-old Penny. Her journey through motherhood has not come without its challenges though – Alex has Dup15q, a very rare syndrome that creates a strong risk for Autism Spectrum Disorder, epilepsy and intellectual disability. “Being their mum is amazing,” she said in the lead up to Mother’s Day. “I feel like I am constantly on the go and constantly thinking but it brings a lot of joy. “I can’t pretend and say it’s a walk in the park because it definitely isn’t. “I get a lot of joy out of it but there are also a lot of sacrifices, problem solving and grief involved. “With Alex things are very different, there are things that he finds challenging, but he is a very happy, affectionate and cheery boy most of the time. “With Penny we see her take the steps we
could only ever really imagine with Alex and when she hits those milestones, we are just completely in awe of what she achieves and what she does. “At the end of the day, Alex has this diagnosis but he is also Alex, he loves music, he loves The Wiggles, he loves water and trampolines. “One of the things we learn from him is that he gets a lot of joy from the simple things in life, things that we often overlook. “He is quite an inspiration for us.” Even though Alex is non-verbal, his love for his mum and family is easy to see. With support from their relatives and Alex’s school St Dominic’s Centre Mayfield – a Kindergarten to Year 10 school that provides an education of excellence for children with a range of disabilities – Sarah says it is exciting to watch him hit his own milestones, like learning how to communicate. Sarah’s experiences with her son and her professional knowledge as an occupational therapist have led her to be a strong advocate for him and other children with disabilities.

Big crowd flocks to Tocal Tocal Field Days was back, bigger than ever, with a record number of people attending the three-day event at the weekend. More than 25,000 locals and visitors went through the gates all up, with in excess of 10,000 there on Sunday 2 May. Event manager Wendy Franklin said it was great to be back after COVID-19 forced the cancellation of the 2020 extravaganza.
“The good weather seemed to encourage people,” she explained. “And, they were able to use their NSW Government discovery vouchers. “After drought and COVID-19, it was so good to see farmers getting together with each other and suppliers. “There was such a great vibe – I would say it was the best Tocal Field Day in the 12 years I have been managing the event.”

news Groups urged to apply for $300,000 funding Maitland state MP Jenny Aitchison is encouraging local groups to apply for a share in the $300,000 available to the electorate through the 2021 Community Building Partnership (CBP) grants program. The funding is accessible annually for infrastructure projects that deliver positive social, environmental and recreational outcomes. “Sports clubs, charities, schools and museums are just some of the groups that can benefit from this program,” Ms Aitchison said. “If your organisation or group needs extra funding for infrastructure, such as playgrounds, accessibility features, equipment or refurbishment projects, then I would strongly encourage you to apply.”
The Maitland Community Men’s Shed benefitted to the tune of $64,261 last year. It allowed the members to purchase and install a new wheelchair-accessible lift. “We were extremely blessed to gain funding, thanks to Jenny Aitchison,” vice-president Steve O’Brien said. “When I told the other guys about it, they all applauded the good news. “The $65,000 was the cost of the lift itself, so we were very happy to get the money.” Applications are now open but will close at 5pm on Friday 14 May. For most of us our teenage years are full of both fond and embarrassing memories. For some it’s a time they regret but for one 22-year-old from Newcastle they’ve served as inspiration for his first film. “Ever since I was about 10 years old, I’ve always wanted to make films and videos, any sort of media to do with the moving image,” Cameron Utiger said. “The film follows a group of best mates. They just finished their final HSC exam and there is a big 18th birthday party to commemorate finishing school. They realise it’s the last big night they’ll share before they separate into their more adult roles. “Some are going to university in a different city, others are taking on full-time trades and others don’t even know what they want to do, so it is kind of taking the opportunity of the 18th to have one last big blowout and then obviously being teenagers not everything goes to plan, and their friendship is tested. “The whole film is set in Newcastle and is based on real events. “Since I was young, I’ve been writing down all the funny stories and experiences myself and my
best friends have gone through growing up in Newcastle, so the film is kind of a culmination of what it is like to be an adolescent growing up in this city.” Called Cooked, Cameron wrote, directed, produced, and is currently editing the movie. His goal is to have it released in cinemas around the country, but for now he plans on submitting it to different film festivals. Entirely self-funded, Cameron saved the first half of the budget and ran a successful Kickstarter campaign to crowdfund the rest. Unlike many areas of the entertainment industry, the cast and crew believe the pandemic worked mostly in their favour. “Weirdly enough, it almost helped, it forced me to be inside and do nothing and focus 100% of my mind on the film,” he said. “There were a couple of times we were worried because a lot of the actors come from around Australia so we were worried about border closures, but somehow, someway it all worked out and COVID wasn’t too much of a hassle.” Follow @TheFilmCooked on Facebook and Instagram to stay up-to-date with the project. - Elizabeth Symington

375g filo pastry, thawed

11 eggs (or a dozen depending on the size of eggs)

Preheat the oven to 180 oC and grease a 28cm round baking dish or cast iron pan with olive oil.

Holding the baking paper and filo sheets from the top, drag it over your round dish or cast iron pan so it’s directly in the middle and gently press the baking paper/filo into the pan.
Put the filo sheets on a work surface and cover with a damp tea towel to prevent them from drying out. Place all the greens in a large pot on medium heat with the lid on and “sweat” them until they wilt. Remove from heat and set aside in a colander to drain and cool. Once cool, squeeze any excess water and chop into smaller pieces. This step prevents the crust from getting soggy. Place them into a large bowl. Meanwhile, heat the olive oil in a pan and cook the onion on medium heat until soft and lightly golden, then set aside to cool. Now add the cooled onion, garlic, feta, ricotta, nutmeg, lemon zest and herbs to the greens and mix well with a wooden spoon. Crumble the feta, and then the ricotta ensuring that the pieces aren’t too small as they’ll break up as you combine all the ingredients. Mixing the ingredients with your hands creates a nice even texture without over-mixing. Add two beaten eggs, combine, and then the breadcrumbs with a final few stirs so it’s all evenly combined. Use two sheets of baking paper and overlap them to make a large square. Drizzle with olive oil then place one filo sheet at a time on top, in a clockwise direction starting in

Depending on the size of your eggs, you should fit 9-10 eggs. Try to arrange them evenly, ideally with a yolk right in the centre. Using a sharp knife or kitchen scissors, trim the edges of the overhanging filo so it makes a rough circle. Gently fold the filo into the pie over the eggs, once again being careful not to break them. Drizzle olive oil over the top, scatter with sesame seeds and bake for around 45 minutes or until crunchy and golden brown. Serve with lemon wedges. Mother’s Day a special time on the calendar It’s almost that special day on the calendar – Mother’s Day this Sunday. I’m a difficult mum to buy for; I wrap flowers all weekend (none for me please) and naturally a beautiful pot and plant are also out. How many appliances, chocolates and ornaments does a mother need? Each year I say to my wonderful family: “Save your hard-earned dollars, a simple hug and ‘I love you’ is really all us mums need.” I really enjoy working on Mother’s Day, watching the tots come in with their dads, making the difficult decision about colour. And, I tell you, it is the little one’s favourite but mum will love it anyway. Then, of course, there are the young men (not being sexist) who have had a late night and are in a rush to grab a bunch of prettily-wrapped Chrissies. Speaking of Chrissies, these traditional Mother’s Day flowers are no longer quite as popular. Younger mums seem to prefer cyclamen, which is good as these potted plants tolerate the
cold, although a little care is needed. Don’t water the crown, lift up the leaves and if there is a sheltered spot outside, pop them out once or twice a week to freshen up, especially if they are in a heated room. Two of the most enduring plant gifts are anthuriums and peace lilies, both of which flower over long periods and are easily cultivated. Anthuriums are available in many colours from white, pink through to red and recently a deep purple almost black. Begonia elatior will also be in flower, available in many colours. The beauty of this plant is it requires little water. Orchids are extremely popular, their flowers don’t continue into the warm months, but their reproduction of new blooms is almost guaranteed. When plant shopping, there may be one disappointment - that is fi nding a rose which is often sought-after for Mother’s Day. They will be available in June but will be barerooted.
