BLUEPRESS JUICE Cold pressed juicing at its best

As the juice market expands to include a whole range of healthy (and unhealthy) products, it’s becoming increasingly harder to know what you’re actually getting when you’re looking to drink your fruit and veggies. What may seem like the latest buzz word to hit health food stores across the globe, "cold-press juicing" is actually nothing new. It is, in fact, decades old but its popularity has grown exponentially over the past few years. Although the concept is being enthusiastically embraced here in Australia, there is still much confusion as to what cold-pressed juice is and why it is better for you. To give you a bit of background, regular juicers - known as centrifugal juicers - have blades that operate at extremely fast speeds which generate heat and essentially 'cooks' the produce as it Written by Alexandra Seitman, Founder of Blue Press Juice

is put through the juicer, killing off much of the essential nutrients. Ever wondered why you've bought or made a juice in the past that turns brown after just an hour or two from being made? That's caused by the oxidisation process which occurs when the blades move quickly thus stirring more oxygen into the juice. Cold-press juicing is a slow and meticulous process that requires much love and patience but results in a far superior product. The juice is extracted by gently crushing and grinding fresh produce to ensure vital enzymes and minerals stay intact. The slow method of extraction provides a minimum mixing of air with the juices which results in very slow oxidation and enables the juice to be kept (without preservatives) for up to 72 hours. Not to mention it tastes much better!

I created my cold-pressed juice business, Bluepress Juice, late last year because I felt flooding your body with nutrients from fresh fruit and vegetables wasn't exactly rocket science or fadlike to me. I'm a big advocate of drinking juice whenever the mood strikes and not necessarily turning to it for cleanses, detoxes or as a meal replacement. I'm often asked which cold-press juicer is best for home use and which recipes I make in my spare time, when I'm not in the kitchen for work. Although many of my regular customers have their own machines, most still choose to buy their fresh juices instead of making it themselves as it's usually easier, cheaper and - let's be honest - there's nothing to clean up afterwards! However for those keen to try a DIY juice at home, here's a couple of my favourite recipes that are just made for the warmer months: This is a great combination for those new to green juice. It's sweetened by a bit of apple but is still a nutritionally rich and cleansing juice.

I tend to avoid fruitier juices but this combination is perfect for hot summer's days and is always a crowd-pleaser at special events with family or friends over the holiday season. It's sweet, refreshing and loaded with vitamins A & C, fibre, potassium, phosphorous and calcium.

Saffron robed Monks, majestic green rolling hills, pristine landscapes and smiling faces. Laos is a country yet to be untouched by the demands, stress and fast pace of our western existence. Its beauty lies in the Lao people, century old traditions and its lush beautiful landscapes. For New York based designer Elizabeth Suda, it has become her second home. A trip to the Southeast Asian Country in 2008 gave Elizabeth a ‘light bulb’ moment, a moment that is now transforming lives.

03. PEACEBOMB Hidden by the vibrant culture of present day Laos lays a dark past. Laos PDR is the most bombed country in the world per capita. Even though Laos was never officially involved in the Vietnam War, the US military dropped 260 million cluster bombs on this small neighboring country. Around 30 percent of the bombs failed to explode immediately, continuing to take lives to this day. For Elizabeth, her first experience with the legacy of the so-called “Secret War” came when she travelled to some remote villages in Northern Laos when working for Helvetas, a nonprofit bringing hydropower to the area. The vehicle she was travelling in was moved on by a local crew about to detonate a bomb in a farmer’s field. It was here that she first discovered villagers melting down bomb metal in crude earthen kilns to craft spoons. It was this little piece of ingenuity that gave Elizabeth the ‘light bulb’ moment to create a bracelet to serve two purposes. “It could expand their production potential and link to a global market; and the object had the ability to tell a story. That would literally allow us to buy back the bombs,” she said. “Seeing ‘rocket mortar’ written in English across a piece of shrapnel and watching the artisans transform deadly pieces of history into spoons, something useful, I felt this story had to be told.” Elizabeth went on to launch her organization (*what sort of organization), Article 22 and the

peaceBOMB range of jewellery, cast from recycled post war scrap metal. The first piece created was a gunmetal bangle with the words “Dropped + Made in Laos” on the interior. The range has now grown considerably to include simple and stylish pieces for both men and women, inclusive of leather bracelets bound with bomb material, rings, earrings, and bomb shards cast in precious and semi-precious metals. The peaceBOMB jewellery range is now sold in 120 boutiques spanning across 39 counties, including through Australian based eco conscious online store, Behind the Green Door. Owner of Behind the Green Door, and passionate supporter of ethically produced goods, Cheryl Forster, read an article on the PeaceBOMB project in 2011. This article struck a chord with Cheryl, impressed that not only did the project benefit the artisans, but the whole community. “The support and feedback I have had from my customers for the peaceBOMB project has been amazing. They make a great socially conscious gift and are a great conversation starter!” Cheryl said. By buying back the bombs, consumers directly help in developing the local economy in Laos, raising funds to clear unexploded bombs from farmland and fields, and by collaborating with organisations specializing in unexploded ordance removal and education to improve the war-scrap metal supply chain by making it safer for local artisans to collect the warscrap metal.

Alice Couttoupes is a ceramicist working primarily with porcelain. Throughout her practice the focus of her work has been informed by an exploration of notions of history, national memory, identity and processes of cultural exchange, appropriation and domination. Inspired by a fascination with the natural – particularly botanical – world, her current practice is preoccupied with the processes of colonial botany and their consequent enduring socio-political and environmental implications. The historical and cultural associations, and the traditions of the material with which she works – porcelain – so too provide her with an intellectual framework that underpins her artistic practice. More recently Couttoupes has expanded the scope of her practice beyond the confines of three-dimensional sculptural works to explore the potential of presenting ceramics within a Fine Arts capacity, via a mediation of the objects through photography.

CLEAN CUT FASHION LAUNCH Australia’s sustainable fashion advocacy group, Clean Cut launched the first sustainable event at Mercedes Benz Fashion Week with an intimate show. Clean Cut is dedicated to supporting the Australian fashion industry and the future of sustainable and fair practices.

SUSTAINABLE TABLE: GIVE A FORK! MEDIA LAUNCH To celebrate the launch of the Give A Fork! campaign, New Future PR hosted a media event showcasing documentary Waste Deep featuring Sarah Wilson, Tim Silverwood and Costa Georgiadis whilst enjoying a three-course meal prepared by chefs from Studio Neon using donated food that would otherwise have been wasted.

SADHANA KITCHEN Sadhana Kitchen hosted a dinner degustation for media and bloggers, offering a variety of delicious raw foods. Each course, ranging from a mÊlange of seasonal fruit, to beat ravioli and neoplitan cheezcake, was prepared lovingly and without exceeding 40°C.

LUNCH TIME RETREAT WITH CARMELLA BAYNIE Carmella Baynie, Ambassador for the Positive Sound Vibration movement launched a meditation app and five devotional songs dedicated to healing the soul and revitalizing the spirit with a lunch time retreat with media.

The concept for Marble Basics originated from a true fascination with Marble. Bliss and Bonnie were both largely inspired by the uniqueness of the medium – “each piece is individual, with its own unique coloring and vein direction, telling its own story”, says Bonnie. Australian consumers are beginning to appreciate more genuine, and higher quality alcoholic beverages, a trend recognized by founder of Noble Spirits, GrĂŠgoire Bertaud. FAIR Quinoa Vodka is stemmed from unique French know-how, produced and bottled in France, in the Cognac area, using Bolivian quinoa seeds cultivated according to the methods of organic farming. It took almost two years of research and development between Bolivian producers and French distillers to obtain this unique vodka, born out of a double brewing operation, and subsequent distillation. The sugar cane used for Fair Rum is grown in Belize, utilizing organic and sustainable farming methods on small farm plots. Each sugar cane stalk is carefully hand harvested, to ensure only the best quality is used, and to protect the valuable land on which it is grown. Noble Spirits has a strong relationship with all of their sugar cane farmers, all being members of the Belize Sugar Cane Farmers Association, BSCFA. Noble Spirits has a strong commitment to all farmers producing their quinoa seeds and sugar cane, guaranteeing them higher margins on product sold, and by donating 2.5% of its annual turnover to finance local development programs in both Bolivia and Belize. Q&A IMMERSE INTERNATIONALLY Tara Winkler, Founder of the Cambodian Childrens Trust Despite a promising film career ahead of her, at just 21 years of age, Tara Winkler dropped everything and opened an orphanage in Battambang, Cambodia. In 2007, Tara discovered that the children were suffering from severe neglect and abuse, so she took the bold step of renting a home, hiring staff and establishing the Cambodian Children’s Trust. The Cambodian Children’s Trust is much more than an orphanage. It is a community development and outreach program, focused on supporting underprivileged families in the Battambang region

I visited a few orphanages, however one orphanage in particular really grabbed me. After this, I decided to go home and raise funds for this orphanage, and take the money back to them myself. In this process I spent a few months at this orphanage, helping to establish water filters, organizing doctors and dentists for the children, I bought them clothes and bicycles, and started teaching them English. After returning from this trip, I knew I had to return to Cambodia. The children were suffering gross neglect, physical and sexual abuse, and I knew I had a calling to help them.

Starting a new life in Cambodia was never a planned project. I had a job working within the film industry, and it truly did not live up to my expectations. On a holiday to South East Asia in 2004, I was travelling through Cambodia where

1.What was the final decision to give up your life and start a new one in Cambodia?

2.How many years have you been working in Cambodia now, and do your family regularly visit?

I have been in Cambodia 7 years now. My parents are heavily involved in running the Australian side of the Cambodian Children’s Trust, however they do come and visit regularly.


3.What has been one of the significant personal highlights on this journey for you? One young woman, Mohm, has a truly remarkable story which has been a significant personal highlight for me. If paving the way for Mohm is the only thing that I achieve in life, then I will die a happy woman. When I first met Mohm she had just lost her parents and had spent her whole life taking care of her young siblings, never getting the chance to go to school. She was completely illiterate and had given up all hope for her own future. We put her through literary classes at the Cambodian Children’s Trust, and sent her to do some training with David Thompson, the owner of a very famous restaurant in Bangkok called Nam, one of the fifty top restaurants in the world. After her training, Mohm was offered the role as the head chef at Jaan Bai, a restaurant we established to provide training and employment for youth in our programs. She’s absolutely in her element now. Mohm now lives entirely independently of the Cambodian Children’s Trust. She has her own apartment, and she has a consistent wage from Jaan Bai. It is truly a phenomenal transformation that has definitely made an impact on me for life.

Alternative Education program, focused on self organized learning environments. Within the near future we also wish to extend the array of programs we host at the Cambodian Children’s Trust, including the addition of critical thinking learning, an activity center, cultural sporting activities, garden classes and yoga classes. 7.Lots of people were moved by your story on the ABC, what can every day Australian's do to assist with the organization, other than just a money donation? The goal of the Cambodian Children’s Trust is to see Cambodia free from poverty, with access to world-class healthcare and education. This is a job for an entire generation, something we cannot do on our own. Everyday Australian’s can help us empower that generation by running a fund raiser, attending a benefit concerting, spread the word about the work we are doing, come over and work with as at the Cambodian Children’s Trust or by sponsoring a child.

5. Would you say you are on a spiritual journey? This journey has been full of personal growth, personal tragedy, and has made me ponder all of the big questions in life. So yes, some may consider this personal journey as a spiritual journey. 6.What are your plans for the Cambodian Children’s Trust in the next 5 years? The Cambodian Children’s Trust is currently going through a huge period of growth. Our primary goal, as a secular, non-profit NGO has been, and always will be working to enable children in Batambang, Cambodia to break free from the cycle of poverty, and become educated, ethical and empowered future leaders of Cambodia. One of our main goals is to try to improve the education system in Cambodia, and ensuring that the children in our program are receiving a great education. "SIMPLE, HONEST, HANDMADE DESIGN WITH INHERENT NATURAL BEAUTY" 1. Tell us a little bit about yourselves We got married young, some would say too young - but we didn't care...when you know... you just know. 6 years later we have a business and two daughters their names are Selah Grace and Oak Louise. When we got married we had no idea what we were doing or where we were heading but we just went ... went about life as if we did and figured it out as we went along. We figured out that home was something important to both of us. A place to hide, a place to gather, a place you can be as messy, or for Nathan, a place to be as neat and orderly as you would like...colour coordinated wardrobes and all. Home was ours. 2. If you could describe Mr & Mrs White in 10 words, what would they be? handmade, quality, minimal, clean, natural, neutral, timber, linen, leather, family 3. What sparked your interest in creating such gorgeous textiles and furniture?

Nathan's (Mr White) eye for detail and his love for timber led him to the study of boat building where he completed a four year shipwright apprenticeship. Meanwhile, I (Mrs White) studied at uni and completed a degree in design majoring in Graphic design. Life was busy yet something was missing. After uni I found myself meddling with a sewing machine and Nathan gave up boats for furniture and suddenly, everything seemed a little clearer. The smell of timber, the touch of linen, that giddy feeling from seeing a concept sketch become something tangible something we can sit on, eat on, organise and store things and most importantly something that gathers people - yes - this is what we were meant to do... together. 4. From where does your strong belief in the importance of handmade furniture and textiles originate? The appreciation of handmade started from a young age when Nathan would watch his pop (a


city planner and skilled cabinet maker) make timber tables and chairs for his family and friends. It wasn't until later in life when he embarked on a shipwright apprenticeship that Nathan appreciated the skills and wisdom passed down to him. His pop taught him the importance of detail, to never compromise on quality, and how woodworking and patience go hand in hand. For me, I have always loved natural materials..the beauty is found in their quality…not the amount or or what you do to them. That is why all our products are simply but lovingly handmade to bring out the best in the material, whether it be timber, linen or leather. 5. What influences the design and personal style of Mr & Mrs White? Lifestyle has a major influence on our designs. Our desire to live life simply and minimally has contributed to us creating furniture that fits within that lifestyle. Anything natural and neutral. Japanese and scandinavian design. 6. What is your favourite piece of furniture Mr White has custom made for a client? My favourite custom piece would be the solid oak refectory style dining table. In our own collection - my favourite piece is the box chair. We have been working on and perfecting the design of this one for over a year and am very excited to launch this very soon. 7. What are your plans for the future of Mr & Mrs White? Continuing to introduce new products, expand the team and hopefully extend the showroom to include a cafe.

From Accountant to Candle-Maker

The Candela Collection offers a beautiful range of hand poured candles, crafted using 100% pure and sustainable harvested soy wax, the finest scented oils, and premium wooden wicks which gently crackle as they burn. Founded by Michael Bellemore, the Candela Collection balances sophistication with simplicity, to offer a truly unique and luxurious aromatic experience. 1. From Big 4 Accountant to candles – what made you make the switch? I’ve never been one to sit still, so when the accounting firm I was working in at the time closed over Christmas, I decided I needed a hobby! I’ve always loved candles but hated the massive price tag, so I taught myself how to make them, quickly realising that it was much cheaper to do it this way! The accountant in me was immediately attracted to the volume discounts, so I ordered my first pallet of candle jars. What started out as a hobby quickly consumed every spare minute of my day and week. When I wasn’t at work, I was making candles. And when I wasn’t making candles, I was designing packaging, thinking about the next scent, or building the Candela Collection website. 2. Have you always been the entrepreneurial type? Surprisingly not! From a young age I had always desired to be a high school teacher, however working in an accounting firm where you are fully

immersed in a culture of ambitious and motivated achievers and entrepreneurs changed this. When I saw my clients, or even my colleagues taking on a new challenge and pursuing their dreams, it inspired me to do the same. I have always believed in Simon Sinek’s life maxim, that “working hard for something hard we don’t care about it called stress; working hard for something we love is called passion”, pushing me even further towards becoming the entrepreneurial type. 3. What has been the biggest challenge with the Candela Collection so far? My largest challenge has been letting go, and investing everything in my dream! When I first started out, I had 3 credit cards while piled up in debt, I had to put overdrafts on all of my bank accounts so I could pay my rent and buy food. It has been an extraordinarily tough journey, however there is nothing I would do differently if I could go back. It is phenomenal to see the risks you take, and the hard work you put in grow into something you are so passionate about! 4. How is the Candela Collection different to other candles on the market? The Candela Collection uses exclusive and simply beautiful wooden wicks rather than cotton wicks. These wicks gently crackle as they burn, just like a fireplace, providing the candle user with a never before sensory experience. These wicks are made from a soft pine wood which is sustainably


grown and forested in North American forests. The fragrances in our range are also vastly different from other candles on the maker. Each fragrance is named after, and inspired by the rich past and present of many of Sydney’s eleclectic and cultural hubs. The Paddington, The Bondi, The Newtown – you name it! 5. What influenced your choice to use sustainably harvested soy wax for the collection? The Candela Collection only uses NGI EcoSoya wax – the best in the world in terms of quality and ethical manufacturing NGI utilises soy beans grown on family owned farms in the United States, so it is supporting local and sustainable agriculture. NGI is also Kosher Certifies, environmentally friendly, reneweable, sustainable and biodegradable. It is also the most expensive, however I wouldn’t have it any other way! The alternative to soy wax is paraffin wax, a product used by the majority of commercial candle companies. Parrafin wax is actually a by-product of petroleum refining, emitting harmful carcinogens into the air when burnt. Many commercial brands also use stearic acid and vybar in candles to enhance the scent – however we utilise the finest and most beautifully scented oils. Next time you pick up a candle you are thinking of purchasing, make sure you have a sneak peak at the ingredients used!

between the suburbs and scents are based on my personal experiences and appreciations, however, since we have started selling the collection, I have found that our customers also share many of these experiences! To take one example, The Bondi is infused with an aromatic Coconut, Lime and Vanilla fragrance. This was inspired by my reminiscing of strolling the Bondi esplanade licking a citrus Calippo with a sea breeze sweeping through my hair, and experiencing the soft scent of coconut tanning oil! The whole process is truly a lot of fun, and something we would love for our customers to get involved in for our next collection! 7. Have you got any big goals for 2015? We are currently working on expanding the connection between the Candela Collection, the community, various organisations and charities. Last month in October we developed a signature fragrant candle to support National Breast Cancer awareness month, an affiliation we are extremely proud of and wish to continue. We are also starting to be stocked all throughout Sydney which is extremely exciting, so all I can say is watch this space!

6. How do you come up with the scent associations? I have lived all throughout Sydney – the inner west, east and the north, all influencing and inspiring this range! I wanted to share my love for each unique part of Sydney with everyone. A lot of relationships

VINTAGE LED: CHANGING THE WORLD, ONE LIGHTBULB AT A TIME Disappointed with the uninspiring and clinical aesthetic of energy saving lighting options, design duo Dan McKinley and Chris Cormack started Vintage LED, a range of inspiring, aesthetically beautiful, and environmentally friendly light bulbs. Vintage LED offers a selection of lights and fittings to suit the contemporary retail, cafĂŠ, restaurant or home. Their collection centers on the idea that lighting should be functional, warm, efficient and beautiful.

1. Can you tell us about Vintage LED brand and how it came about? Dan: I have an IT consulting company called Dog and Bone, and a few years ago I needed to come up with a lighting design for our new office in an old 1930’s art deco bank. Wanting to avoid the usual stark-white office lighting, our interior designers came up with a beautiful concept that suited the building using carbon filament Edison light bulbs. They looked great but kept blowing and after an energy audit we found out that lighting was our second largest use of electricity! So I started to look for alternatives and found my options for beautiful but energy efficient lighting wanting. My search for a solution brought about the idea for Vintage LED. As the name suggests, we have chosen to focus solely on sustainable carbon friendly lighting (our most powerful globe is only 6w). Chris: Dan and I came up with Vintage LED while standing around at a children’s birthday party! We were kicking around ideas for energy efficiency businesses and this was the one we got excited about. I was heavily into LEDs and loved this vintage style and hadn’t come across anything like these products before. 02. What are your backgrounds and how did you start working together? Chris: We actually meant through a local kindergarten – we both have 4 year olds sons named Finn! I am an Energy Efficiency and Energy expert who has been running Energy Efficiency programs for a large Energy company for over 10 years. I have been involved with LED lighting since they first came on the market – and watched the quality steadily improve, although always lamented the lack of beauty in original LED and CFL lighting. Dan: I guess I’ve always been entrepreneurial, from selling ice cream and hand made postcards at markets as a kid, to starting my other business,

Dog and Bone, when I was 19. I’ve now been running Dog and Bone for 13 years. I’ve always had an interest in architecture and design, and could no longer resist the temptation to start something new. 3. What are the benefits of energy saving light bulbs? Chris: Energy saving light bulbs use up to 90% less energy than the incandescent or halogen alternative. The website includes a calculator to allow anyone to calculate the savings they will make. Typically the pay-off period for these lights is less than 1 year and the ROI is >40% if you replace carbon filament or halogen lights. But they also last much, much longer – up to 30,000 hours. 4. Why Vintage LED over regular energy saving light bulbs? Dan: Our light bulbs don’t look like energy saving light bulbs – but they are! Chris: They also have no mercury content as CFL’s do. Our bulbs also operate at a much warmer colour temperature 2200k-2400k which is very much the same as the incandescent light bulbs most of us grew up with. 5. What new plans do you have for Vintage LED in 2015? Dan: We want to let people know that there is now an alternative to carbon filament Edison light bulbs, without having to sacrifice on the look and feel of old school lighting – which has exploded everywhere in Australia over the last few years. We plan to increase our range and partner with lighting designers to create new and interesting lights – potentially a crowd funding campaign. Chris: We would also like to integrate our light bulbs into one or more home control platforms to allow people to turn on off and dim with their smart phone.

Q&A We know you’re a bit of a stud with the ladies…apart from wanting to impress in the kitchen, what ignited your passion for cooking? [Laughs] Stud would mean I am actually successful with the ladies! It all started because of that simple love and desire for family time. When I was 12, my family enjoyed some of the best times around the dinner table, simply engaging in conversation and sharing a meal. Soon I realized I wanted to be the one catering for these special family times, particularly after seeing Jamie Oliver do his thing on the big screen! Whether they were “rubbish” meals or great successes, it was amazing seeing what I call “The Power of Food” in that it brought the family closer together. It is for those reasons, plus my love for eating which has inspired me to stay and continue practicing in the kitchen! What inspired your approach to health and wellness? Being one of three boys, and growing up on the northern beaches of Sydney, I have always been really active. Whether it be playing rugby or enjoying the beach, we were always outdoors! I think this is where I developed the love of feeling healthy, active and full of energy. During high school, I began training people, leading me to start my own

Upon leaving school, I was a little unsure of what I wanted to do, so I married up my love of sport and activity to university studies, enrolling in a Bachelor of Exercise Science. Once this was completed, I completed a Masters in Exercise Science (Strength, Conditioning and Nutrition). At this point I had grown my business and knowledge to the point I was doing keynote speaking, training professional athletes and absolutely loving it! I guess this comes to the point that I have always been truly inspired by loving what I do! I loved being healthy, so I just took it to the next level and wanted others to also experience this. My personal philosophy on food is… As I earlier mentioned, food has an amazing power to bring people together. It evokes so much happiness and positivity. Think about it – when has there been a time you are not enjoying eating? Its pretty hard


to pin point that one! I am also realistic when it comes to food. I want to get more people into the kitchen, and I want them to realize how simple it is to cook delicious meals with wholesome, and healthy product. I know how much happiness food brings, and I want everyone else to experience this too! In terms of my personal food choices, I eat whole food product, rarely consuming gluten or added sugar. However I do place an emphasis on treating yourself now and again! When you’re not cooking, experimenting with recipes for your next cookbook, or finding a new spot to eat, how do you wind down? I think I have come to realize I don’t have a lot of downtime [laughs]! I don’t like a lot of downtime, so I definitely prefer it that way. Believe it a lot, my “downtime” is when I am physically pushing my body, whether that be at CrossFit, the gym, stand up paddling, boxing, or sand dune sprinting – they all do wonders for my mental state! Every morning I get a long black, and read the paper (sport section first!) for around an hour. This is definitely a good moment of time to myself! Other than that I try to grab a coffee with mum at least once a week, go home to cook for my family, and spend time hanging out with my mates – all are very dear to me, keeping me sane and level headed! If you could choose one final meal, what would it be? It’s such a hard choice – I don’t think I can choose just 1! The most sentimental dish I have in the family in Spaghetti Bolognaise, as it brings back so many great family memories, it was the first dish I nailed from scratch (pasta and all!), and growing up it was a once a week staple before rugby game day. However, in saying this, I LOVE American BBQ, from short ribs, to brisket and pulled pork! …BUT then you have fresh seafood like the Black Cod from Nobu…and then you have lamb shoulder…definitely too many to choose from!

What is your favorite, fresh and never-fail summer meal? Hands down Crispy Salmon with a Watercress and Apple Salad. Its crunchy, super healthy and ridiculously easy! When finished off with a ginger dressing, it will not only satisfy the taste buds, but make your outdoor table look even more glamorous on a warm day! Have you got any new and exciting ventures coming up over the next year that people should keep an eye out for? I am very fortunate to have a lot going on over the next year. I have been earning some serious miles going back and forth to the US, as I am launching my books over there next year. I am also starting my first TV series, coming out in 2015 in Australia. My website is gaining massive traction within Australia, to the point we are launching some new and exciting features soon, such as plenty of free e-books, so make sure you subscribe online! My role with Thr1ve, a revolutionary health and wellness brand, providing Paleo inspired, freshly prepared fast food and beverages is just getting bigger and better as they are continuing to do wonders in the quick service restaurant industry! We are opening out 5th store in Brisbane in November 2015, and then next year we are holding a massive 3 day Primal Con event with speakers and presenters such as Sarah Wilson and Mark Sisson. Tell us a little about yourself and your background. I was born in the remote highlands of New Guinea where life was simple. We had no running water, electricity, television-none of the things we take for granted in our modern world. I lived there until Independence in ‘75. Still to this day, my village family remains as my extended family. I have seen first hand simple tribal lives, and I believe it is possible to make a difference to their daily lives within their own unique culture. From PNG, to finding a career in the film and television industry, I thought I was fortunate enough to live a varied and interesting life. And then came Cascada. What is the story behind Cascada? Cascada was born from travelling to South America where I discovered a little known textile called Cashllama. I remember venturing into a small boutique and picking up one of the softest textiles I had ever felt, Llama. Back home I did my research. Six weeks later I found myself with husband in tow in a factory in Bolivia designing home wares. At this point I think it worth mentioning that I knew nothing of designing home wares! But I do have a firm belief in following your passion and anything is possible. My Cashllama (100% Llama, but dehaired from the tummy of the baby llama) is found in one factory in the world in Bolivia, in the high and harsh Altiplato of La Paz. It was here that I fell in love with the simplicity of the people and their amazing and unique fiber. I felt if I could make a difference to these people it was by way of introducing the finest of textiles to the discerning consumer market. By designing from their unique textile I could make a direct difference to their lives. What differentiates Cascada from other soft textiles designers? I travel every year to Bolivia and Peru, doing my design work, going to each factory to check their Fair Trade principles, and talking to the weavers and knitters about their lives and their children. I know them all by name. My factory is located in El Alto, just outside of La Paz, the highest city in the world. Being so high, means the air is very thin, causing me to experience altitude sicknesses. I suffer badly and have to travel with an oxygen mask at all times, including beside me at night. My travel experience is a third world one, not one from 5 star resorts and gourmet diets. I truly live and breathe my designs, each are created with hand picked materials, and each have a unique story embedded within them. What direct impact does Cascada have on the lives of the Andean people? By educating our potential buyers that buying Fair Trade helps put meals on tables, helps educate children, and most importantly - helps women find

their voice, all contributes to making a better life for our artisan women. We help train our women artisans in the older traditions of weaving, knitting and embroidery techniques that may have been lost through the generations. This in turn not only gives them regular incomes but also most importantly allows them to educate their children and gives them self-esteem to go out to their community and hand down their skills. It is the women who dominate the textile industry. They alone have the opportunity to give their children an education and take them out of poverty. Our principal goal is to make each artisan a truly independent self-sufficient business owner who has control of her own destiny.

What are your plans for Cascada in the future? I would love to see my online portal (www. myorganicclothing.com.au) represent talented unique sustainable designers throughout the world and thereby help spread the word of sustainability. As for me personally, I have always toyed with the idea of starting an educational facility for the children of my factory in the poorest parts of Bolivia (where most of my textiles are sourced), however this has proved to be difficult with the Bolivian government regulations. Ultimately, if I can help children in third world countries receive an education then I know I have succeeded.

My passion in life is… Helping those in third world communities achieve a better lifestyle through education, sponsorship and support, all whilst keeping their cultural beliefs, and customs alive. Is there any significance of the Cascada logo to your vision for Cascada? My vision with Cascada was to touch each other’s lives through education and support. Though we come from different parts of the world we are essentially all the same. I believe my logo supports this. I was fortunate to find a graphic designer who clearly saw what I wanted to ultimately portray in my business - ‘simple, elegant designs, woven within tribal cultures.’

À la recherche du temps perdu (In search of lost time) is Marcel Proust’s most well known work, on the theme of involuntary memory. 
The brand, established by Melbourne based Claire and Airdrie, is known for its fluidity of form & function, quality fabrics, cosmopolitan styling and modern elegance. All garments are designed and made in Melbourne, keeping manufacturing miles low and the ecological footprint even smaller.

Q&A Tell us a little bit about yourselves, your background, and how you entered into fashion world Claire and I are both originally from Queensland, but we didn’t meet until we were both based down in Melbourne. Claire studied fashion design in Brisbane, and I completed an Arts. Claire worked with other designers in Melbourne before starting her own label, however I did not enter into the fashion world through what some would call “a traditional route”. I worked a few “regular person” jobs prior to starting a jewellery label which slowly but surely introduced me to the fashion industry. I originally met Claire through some mutual friends, and a year later we were collaborating on fashion pieces! About 5 years ago we submitted a piece to the inaugural Spirit of the Black Dress awards for a dress with an ecological and sustainable focus, where we were one of the winning submissions! If you could use one sentence to describe Temps Perdu, what would that be? Beautifully cut garments for outstanding style and comfort. Do you both share the same design ideas and style, or do you merge two differing styles to create the Temps Perdu collections? We definitely do have similar styles, however Claire is definitely the design genius! I would have no clue how to draft a design pattern (shhh!) – that is all Claire! We are both quite visually inspired, so we work together predominantly on drafting visual inspiration boards, and coming up with concepts for our collections. Is there an underlying significance to the name “Temps Perdu”? À la recherche du temps perdu (In search of lost time) is Marcel Proust’s most well known work, on the theme of involuntary memory. In our case it refers to the time that is lost (never wasted, of course!) in the creative process. Hours can slip by without you noticing when you are

so immersed in the world of designing and creating. I’m sure many people can identify with that! What was you inspiration for your current line – Primary Shapes? The collection is inspired by the most uncomplicated and simple of shapes – the triangle, rectangle and circle. Much as a painter mixes a palette from the primary colours red, yellow and blue, the method of Primary Shapes takes the triangle, rectangle and circle, and twists, turns and folds them to envelop the body in stunning designs. What differentiates Temps Perdu from other fashion brands? We design and make everything here in Melbourne! This keeps our ‘fashion miles’ very low, also helping to keep jobs and dollars here in Victoria. Of course this also means our eyes are watching over everything – ensuring our quality control is it also helps keep jobs and dollars here in Victoria. And of course it means that our quality control is very good too. What are your favourite materials to work with when designing and producing garments? Definetely natural fibres! Linen in particular, is a big favorite of ours. I’ve also heard about a new fabric developed from milk that would otherwise be discared – so it is eco-friendly! It was invented by a German biochemist called Anke Domaske. I am so intrigued, and would love to check it out! I think Claire thinks I’m a bit mad… Do you have an upcoming collection for 2015 readers should keep an eye out for? There are some new things in the pipeline, yes! Q&A WITH THE GRIFFITHS BROS Back in 1879, John & James Griffiths established Griffiths Bros, one one of Australia’s first and only coffee and tea distribution companies. Almost 140 years later, Griffiths Bros is still offering the Australian market a variety of Brazilian, Colombian, Kenyan and Ethiopian coffee, roasted to perfection! We sit down to have a chat with Peter Patisteas, Managing Director of Griffiths Bros, to have a chat about what makes Griffiths Bro’s so unique. Peter started working on the factory floor at Griffiths at age 15. At this time, the business was run his father and uncle. As a part of Greek heritage, it was natural to work in the family business, so Peter begun learning how to roast and prepare coffee. Yet it was not until 2000 that he joined the business where he now runs it alongside his brotherin-law, Chris Togias. After a London-based stint in investment banking opened his eyes to what he did not want to do, Peter travelled to Middle East and Africa for two years. It was in Africa where Peter visited green

bean plantations, that he rediscovered his passion for coffee. He returned to Melbourne, where he began to work in the family business once again. 1. How did Griffiths Coffee come to be? In 1879, James Griffiths established one of Australia’s first tea and coffee distribution companies at 30 Flinders St, Melbourne, which is now, occupied by the boutique Lindrum Hotel. Established with his brother John, recent immigrants from England, Griffiths occupied the highest position in the commercial world during their many years as distributors of tea, coffee, cocoa and other products throughout Victoria and Australia. The Griffiths brand was a guarantee for quality of product and service as it still is today. This extensive service was provided to customers via horse drawn carts serviced by rail from Melbourne. 2. In the world of specialty coffee there is a wide range of origins, roasts and flavors. What areas do you focus on or enjoy the most? Whilst we source and roast beautiful and


varied blends of coffee from 18 countries across 3 continents, we predominantly focus on the quality of these roasts. At Griffiths Bros, we are one of the only coffee roasters to have a built-in quality lab where every element of the coffee, both green bean and the roasted bean, goes through a quality control process to ensure that the quality is second to none. This approach to quality has been significant, helping us to maintain our ISO, HACCP, Organic and Fairtrade certifications. 3. What are some of the trends have you observed in coffee roasting over the years? One of the most predominant trends we have noticed is purchasing green beans from fairtrade certified collectives, something we have believed in from the beginning! Doing so, a coffee company, such as ourselves is able to support the farmers and their families directly, give back to the community who are providing us with such amazing beans. This is all achieved through these fair trade collectives who ensure that farmers are paid a fair market price! Despite this being slightly more costly than going directly to the farm, you are ensured that fair working conditions are in place, that there is an absence of child labour, fair wages are being paid, and local initiatives are being supported. This premium is vital for our peace of mind in ensuring that we can offer our customers coffee which is not only delicious, but ethically sound. 4. What is your favourite Griffiths Bros Coffee blend, and most importantly, why? My favourite blend is definitely the “Old School Blend”. It is a blend which reflects the history of the company, and has been perfected over the course of Griffiths Bro’s operations in Australia. It is a very strong and rich roast which takes me back to when I was younger and working in the roster with my Dad!

ABDUL ABDULLAH: AN EXPLORATION OF CULTURAL IDENTITY, MEMORY AND NARRATIVE

Abdul Abdullah was born in Perth, Western Australia in 1986. He graduated in 2008 from Curtin University with a BA in Fine Arts. Since, Abdul has received Highly Commended in the NYSPP at the National Portrait Gallery in Canberra (2009), was selected as a finalist in the 2011 Archibald prize, and won the Blake Prize for Human Justice (2011). Abdul Abdullah’s work has been included in the collections of the National Gallery of Australia, the University of Western Australia, Murdoch University, the Islamic Museum of Australia and the Bendigo Art Gallery.

1. Have you always felt you were an artist, even as a small child? I guess I was a pretty creative kid, but I never considered myself an artist. It was never a viable option. It wasn’t perhaps until the second year of art school that I decided that’s what I was, and I haven’t looked back since. 2. Did your parents encourage you? If so, how? Yes absolutely. My parents always encouraged my creativity. My mother would draw and colour in with me from when I was tiny. They are some of my first memories with he. My father really encouraged me to read. I read the Hobbit and The Power of One when I was just 9! 3. What was your first artistic medium and how did you use it? I can’t quite remember honestly. I guess coloring pencils when I was really little were my first true artistic tools. As a teenager I would always do drawings with lead pencils and then ink them with art liners, just like in comic books. 4. Do you have any defining moments in your childhood that you reflect upon now that help spur your creativity? There is a lot about my childhood that spurs my creativity. A sense of dislocation. A sense of alienation. A sense of difference. A sense of family. 5. What kind of family life / home life did you have in Perth? My parents were very religious. My Father was the secretary of the Federation of Australian Islamic Councils. On one hand everything was by the book, but on the other I haven’t seen another household anywhere that was so free. Our parents believed that our privacy was a priority. Our rooms were our property and we did what we liked in them. Self-determination and accountability was key.

6. Which artist really struck you for the first time? I have very early memories of seeing a giant Jaun Davila painting at the Art Gallery of Western Australia when I was a little kid. My mum would often take me to the Art Gallery. The painting was pretty brutal, as most of Jaun Davila’s works are. There was a dog with a penis in its mouth. I also remember a hyper real sculptor at the gallery of a male artist sculpting a female nude, with the life model looking on. As a little kid I was taken by the life model – she was nude! [laughs]. 7. Is there a running theme to your artwork? If so, what it is it? As a self described ‘outsider amongst outsiders’, my practice is primarily concerned with the experience of the ‘other’ in society. My projects have engaged with different marginalized minority groups and I am particularly interested in the experience of young Muslims in the contemporary multicultural Australian context. 8. Who do you think at the moment is creating cutting edge art? Ian Strange, my brother Abdul-Rahman and Sophia Hewson. Shit, I look at new stuff everyday - I could write you a list as long as my arm! 9. Do you have your sights on exhibiting internationally? If so, where and with what gallery? I have an exhibition opening in November at Future Perfect Gallery in Singapore, In February I’ll be showing with Fehily Contemporary at ART15 in London, and I am having a show at Chasm Gallery in New York in July. I really would like to be curated into an international institutional show, but Australia is my priority. 10. How do you think art affects relevant social issues, if at all?

I think art has the capacity to effect positive change. People give a lot of time to generous art – more time and thought than perhaps many other mediums and processes. I am trying to stimulate thought, because I think when a person really thinks about something - when a person allows himself or herself to empathise with an idea then the battle is won. 11. What do you have your sights Who would you most love to paint? I’ve asked Paul Keating if I could paint him twice, but he said no. So I’ll probably ask him a third time. Apart from the commercial shows, I have some institutional projects coming up

This is your second Bsession event, how do you decide on the subject matters? The narrative of each event is generally driven by current themes and trends within contemporary culture; currently, I'm focusing on sustainability and innovation. The main aim is to cultivate awareness and provide a context that can act as a catalyst for change. My main aim is to encourage and incubate collaborations - the guest list is curated for that purpose.

What is your favourite part of putting the events on? Lighting the fire... from getting to know each collaborative partner through working with them to tease out their creative ideas, to spending time with each guest, I really enjoy getting a good understanding of what it is that lights the fire within each individual and then trying to stoke it. Curating the guest list for the evening is really important. The numbers are limited and each person has been selected to add a certain element to the evening. This creates a really safe and personal environment that encourages people to drop their barriers and explore questions they might have about how they can integrate sustainable practices into their every day life or businesses.


What has been the highlight for you so far? The fact that each event translates into real impact. The conversations generally translate into new relationships - once that fire is lit, there's no stopping it. I love seeing the collaborations that come from each event. One recent example includes House of Riot Founder and Model Ollie Henderson teaming up with the lovely Simone from Oxfam to be a part of the #heartbreaker campaign https://www. oxfam.org.au/explore/workers-rights/ just-group/heartbreakers/ - this duo have more to share soon I'm told! It's always really encouraging to see both attendees and those I work with to get the events off the ground, integrate sustainable thinking into their lives. I've had feedback from guests that have actively changed their consumption habits. It was also really nice to see

Sarah Wilson (guest at my first session) plan her birthday party in a similar fashion. I'm also really proud of some of the collaborations we've been incubating since the last events.

You are also a Founder of a PR agency, The Bravery - any tips for managing multiple projects at once? Find a good team and treat them well! My business partner over at The Bravery Claire Maloney is amazing - we support each other through everything and share a co-leadership role at the agency.

Newromantic is built on the ethos of collaboration. Over the years I have built a community of people that I call my 'Bsides' - these are a group of passionate, creative and ambitious people that I trust working with on a regular basis - we throw around ideas and collectively get things off the ground. I also try and connect these people to as many opportunities as possible outside of projects that we're working on.

What is your vision for the Bsessions? To become known as a platform that encourages important conversations to be had, incubates collaborations and creates real impact. I would love to map out the connections made and projects developed one day... until then, we've got two more events in the pipeline - one of which is being used to launch a project we've been incubating for a while and will hopefully create some real impact and change within the apparel / fashion industry.

Banana Coconut Cake

I created this cake for my beautiful mum's birthday - it's a fantastic cake for any celebration! Replace the blueberries with gojis, and sprinkle a little more coconut 'snow' and you have a beautifully healthy and wholefoodspacked alternative to your traditional christmas cake! For the base blend 12 dates (or a few more if they are small) and 2 cups almonds with 1/3cup almond oil in a food processor, until it starts to stick together. Add a little water if it's not sticking enough. Simply press into a 20 x 20cm tar pan to make a base, and place in the freezer. For the filling: blend 2 bananas, fresh flesh of 1 coconut, 2 tbsp psyllium husk, 2 tbsp rice malt syrup, 1 tbsp coconut butter, 2/3 cup cashews, 5 drops stevia concentrate and 3 tbsp flaked coconut. If you don't have coconut butter you can use coconut oil. Cover base with the mixture. Top with more coconut, blueberries, sprouted buckwheat groats and almond paste watered down a little so you can drizzle it. Chocolate Avocado Mousse

A healthy dairy free chocolate mousse made with nutrient-rich avocado. Prep: 5 mins | Cook: Nil | Serves: 2 Ingredients: Flesh of 1 ripe, large avocado 2 tablespoons pure maple syrup or raw honey 1 1/2 tablespoons cacao powder 1/8 teaspoon vanilla powder (optional) Method: 1. In a blender, food processor or stick blender with attachment, combine all ingredients until smooth, scraping down sides occasionally. 2. Gluten Free Panforte Ingredients Dry filling •1/2 cup coconut flour (or other GF flour or nut meal) •1 tbsp mixed spice •1 tsp ground ginger Other Filling •120g hazelnuts, dry roasted* •110g almonds, dry roasted*

Snowballs

Bliss balls are a favourite of mine - they are packed with natural energy sources and superfoods, and for christmas, they are perfect as they resemble little snowballs! You can store them in the freezer for weeks to keep them fresh, and if you don't have an ingredient, its easy to substitute whatever you have in your pantry! I stick to the ratio of 1 part dates to 1 part nuts - that way the consistency is usually pretty perfect! Try 1 cup of pitted medjool dates (about 12 dates), 1/2 cup almonds, 1/2 cup mixed walnuts and sunflower seeds (or any other seed you fancy) plus a few other ingredients: 1 tbsp coconut oil, 1 tbsp chia seeds, 1 tbsp tahini paste, 2 tbsp raw cacao powder and 1/4 cup goji berries. Simply whiz in your food processor until it you can form it into balls, and simply add a little water (1 tbsp at a time) if the mixture is too thick. Roll into balls, coating in desiccated coconut 'snow' and an extra goji berry for decoration! Refrigerate or freeze as required. •1 cup (10 large) dried figs, torn once or twice each •60g dark chocolate, roughly chopped (see recipe here) •zest of 1 orange, finely grated Caramel •150g coconut sugar •150g rice malt syrup •1 tbsp water

*Dry roast hazelnuts and almonds together by placing them on a tray lined with baking paper and baking for 15 minutes at 160C. Once cooled, use a tea towel to rub the hazelnuts to remove the skins. Method 1.Preheat a fan-forced oven to 160C. 2.Grease a 20cm round cake tin, line the base with baking paper and set aside. 3.Sift the Dry Filling into a mixing bowl. 4.Add all Other Filling ingredients, mix to combine and set aside. 5.In a small saucepan, add the caramel ingredients and stir until the sugar dissolves. Bring to a light boil and wait until the temperate reaches 115C on a sugar thermometer.* 6.Move quickly to then pour the hot caramel into the mixing bowl and stir to combine. 7.Scrape and flatten the mixture into the cake tin, spreading to the sides. (It’s handy to use a spare sheet of baking paper to help press down on the mixture without it sticking to your hands or spatula). 8.Bake for 15 minutes, then remove from the oven, allowing to cool completely on a wire rack. 9.Once cooled, dust with extra coconut flour and slice ready to serve. *Don’t have Sugar Thermometer? – Bring to the boil and remove immediately once caramel reaches ‘balling’ point - when it forms a little solid ball when you place a drop in cool water. Coconut Chia Muffins with Baobab Icing

Ingredients: 1 cup desiccated coconut 1 cup wholemeal spelt flour 2 teaspoons baking powder 1 teaspoon bi carb soda 1 tablespoon coconut butter 1 teaspoon vanilla essence or 1/2 teaspoon vanilla powder 1 tablespoon chia seeds 1 ½ cup milk (nut or dairy) 1 cup fresh ricotta 3 heaped teaspoons organic baobab powder 1 level teaspoon organic raw honey 2 tablespoons orange zest The juice of half a medium orange Method: 1.Add 12 patty pans to a muffin tray. 2.Sift spelt flour into a large bowl then add the rest of the dry ingredients. 3.Warm the coconut butter on very low heat in a pan on the stove then add to the dry mixture along with the milk and vanilla. 4.Divide the mixture up evenly into the 12 patty pans in the muffin tray and bake for 20 minutes or until a fork comes out clean. 5.Let stand until they are room temperature. 6.For the icing, place the ricotta in a medium sized bowl and gradually add the organic baobab & raw honey, mixing well. 7.Grate 1 tablespoon of orange rind on a medium thickness into the bowl (too thin and the zest will have too much moisture). 8.Once you have enough orange rind, juice half the orange and stir it into the mixture. 9.Ice the muffins and sprinkle the remaining orange zest on all the muffins. 10.Enjoy! 8 Superfood White Christmas

Ingredients •250g raw cacao butter, melted* •250g coconut oil, melted* •2 cups puffed GF grain: eg. puffed brown rice, puffed quinoa or puffed amaranth •1 cup desiccated coconut •1 cup mixed dried berries e.g. noadded sugar cranberries, sour cherries and/or goji berries •1 cup sultanas •1 cup flaked or slithered almonds, toasted** •1 tsp vanilla powder •1 tsp ground ginger *Melt the raw cacao butter like you would chocolate, in double boiler (in a bowl, set atop of a saucepan of simmering water) and mix the coconut oil through once melted **Place the almonds in a dry frying pan over medium heat, stirring regularly for a couple of minutes until lightly golden Method 1.Line a 20 x 30cm baking tin with baking paper and set aside. 2.Once the raw cacao butter and coconut oil are melted and the almonds are toasted, combine all ingredients in a mixing bowl, stirring to combine. 3.Pour the mixture into the cake tin, spreading it evenly, into the corners, flattening the surface. 4.Freeze for 30 minutes, or until set. 5.Once solidified, slice into squares. Nut Free Paleo Brownies with Ground Sunflower Seeds & Shredded Coconut Ingredients •150g coconut oil •4 eggs •12 medjool dates, pitted •1 vanilla bean, hard stem removed (or 1 tsp vanilla extract)

•1/3 cup raw cacao powder, sifted •1 & 1/3 cups of sunflower seed meal*•1/3 cup shredded coconut •1/4 tsp sea-salt •1 pinch bi-carb soda

*To make the sunflower seed meal, blitz 2 cups of whole raw sunflower seeds in a blender for 20 seconds until a fine meal is achieved. Measure out 1 & 1/3 cups for this recipe. You can keep the left over sunflower meal for the next batch of the same, or use elsewhere in place of almond meal. Method 1.Preheat a convection oven to 160 degrees Celsius. 2. Grease and line a 20cm x 20cm baking tin with baking paper and set aside. 3.In a Vitamix Blender or a food processor, whiz the coconut oil and eggs until light and fluffy. 4.Add the vanilla bean and the dates one at a time until caramel-like in colour and consistency. 5.In a separate mixing bowl: add the cacao powder, sunflower seed meal, shredded coconut, seasalt and bi-carb soda. Stir with a wooden spoon until evenly combined. 6.Pour the egg mixture into the bowl, scraping with a spatula to ensure you get all of the mixture from the blender jug. 7.Mix the batter with a wooden spoon until uniform in consistency. 8.Pour into the baking tin and spread evenly into the corners. 9.Bake for 40 mins until just firm to touch. 10.Cool on a wire rack before slicing.
