CO-OP GRANTS SUPPORT THE COMMUNITY By Folayan Barnes, Board Director Betton Hills School, located off of Thomasville Road, is a private school that believes that every student deserves a nurturing, supportive environment in which they can reach high expectations and individual goals. They are also New Leaf Market’s recent Community Grant recipients. When Duane Robinson’s wife mentioned New Leaf’s Community Grant to him, he felt it would be a great way to help fund his Garden Club and its mission. Mr. Robinson is a member of the administrative team at Betton Hills in addition to being the Garden Club coordinator. In applying for the grant, he had hopes of enhancing his program by creating hands-on opportunities to develop basic labor skills, while helping to foster a love for gardening and healthy food choices for his students. He desired to promote this throughout the school and local community. After a recent visit to Betton Hills, it can be seen that his vision is coming true. Students have the opportunity to play an active role in all aspects of gardening, including soil cultivation, planting, mulching, tending and harvesting. This provides the students with true life skills. The success of the school’s garden is also seen in the abundance and wide variety of food they are able to produce. The school’s garden is currently growing tomatoes, cauliflower, collard greens, a variety of peppers,

potatoes and eggplants, as well as strawberries. Once harvested, many students are able to take items home to share with friends and family. It was impressive to see the different approaches and containers used for growing. Some plants started from seedlings, some started from clippings. Plants grew from bins, crates and even tires! The garden has seen such a great success that New Leaf Market has reached out to Mr. Robinson regarding the possibility of getting some of their locally grown fruits and vegetables into the co-op. The Garden Club is in the process of collecting containers for their Gatorade greenhouse which will be made almost entirely from recycled Gatorade bottles. Many of the Garden Club achievements were made possible by the hard work and dedication of the Betton Hills School community, along with the support of the New Leaf Market Community Grant. If you are interested in New Leaf Market supporting a local community project that relates to local food production, a sustainable environment, or healthy lifestyles, be sure to apply! Celebrating Mother’s Day & Father’s Day in a non-traditional way.
The “Firsts”
When it comes to holidays, we typically focus on the “A-listers” — basically anything from October 31st through January 1st. We adorn our homes with decorations, drink festive, adult-friendly concoctions, and delight in the company of loved ones. Then, there are the “B-listers;” the holidays that employees won’t receive increased pay for working; the holidays that fluctuate in importance depending on where you’re at in life. Mother’s Day and Father’s Day are two such holidays. That said, just because there isn’t an entire season dedicated to these holidays, that doesn’t mean they shouldn’t be celebrated. The trouble with holidays like Mother’s Day and Father’s Day is, as previously mentioned, the degree of celebration directly correlates to one’s unique relationship (or lack thereof) with his or her parents.
The important thing to remember is this: Mother’s Day and Father’s Day can be whatever you want them to be. There is a bounty of information online that is dedicated to celebrating these holidays in traditional, two-parent households. If you frequent our co-op, you know that New Leaf is not a traditional grocery store. As such, it only makes sense that we provide you with a wealth of information to help you celebrate Mother’s Day and Father’s Day no matter what your family dynamic happens to be.

The “firsts” are the parents that are celebrating Mother’s Day or Father’s Day for the first time. This is not only an exciting time in their lives, but an overwhelming one as well. Obviously, asking for a day of pampering can be a bit uncomfortable. If you know a “first,” or if you are a “first,” giving the gift of time is very appreciated. Hire a cleaning service; send mom (or dad) out for a massage; get dad (or mom) tickets to a game. This is an exciting time for the “firsts,” but it’s also a tiring time. Gifting moments of relaxation are not only appreciated, they are very much needed.
The Singles Being a parent is hard work, and many would argue that being a single parent is harder. This is a murky area because there are a lot of factors at play. The most important thing to remember is that, if you are a single parent, you are a rockstar. If you still communicate with your child’s other parent, consider helping your child with shopping or making a gift for their mom or dad. If communication is not on the table, do something fun with your son or daughter. A fun and easy idea? Come into New Leaf and assemble an array of foods to take on a picnic! Head to the deli for some delicious sandwiches and take advantage of our bulk foods section for all of the sweets you can carry. Then, head to a local park for a fun and relaxing day with your favorite person.

The Dads and The Moms Are you a part of a two-dad or two-mom household? If you’ve felt a little unsure about how to handle the two holidays, you are not alone. In fact, there have been many articles in recent years depicting the strange situation these holidays put a lot of couples in. For brevity’s sake, this all comes down to personal preference. For those that know parents that fit into this description, communication is key. Some couples have adopted and have open communication with their child’s mother or father; some couples opt to celebrate both holidays, labeling them “Parents’ Day;” others bring the whole family together to celebrate parents, grandparents, and everyone in-between. There is no rule. The greatest gifts you can give to a same-sex parent household are open ears and respect for however they choose to celebrate these two days (and no one would ever say no to a date night babysitter).
The Caretakers We should preface this by saying that every parent is a caretaker to an extent. However, some parents find themselves in hospitals more than they find themselves at home. Some parents have had to rebuild bathrooms and doorways so they are wheelchair-accessible. Some parents are drowning in medical bills. Some parents will never receive handwritten cards on Mother’s Day or Father’s Day, adorned with finger paint and adorably misspelled words. While they would never ask for it, these parents deserve recognition and encouragement. They are super moms and super dads and deserve to be treated as such. Even something as simple as a care package loaded with travel toiletries, makeup, men’s grooming tools, healthy snacks, and nerve-calming supplements can go a long way. Every household is different. Every parenting-style is unique. What works for one family, won’t work for another family. The important thing to remember is this: Mother’s Day and Father’s Day can be whatever you want them to be. If the day is difficult for you, it’s okay to acknowledge the difficulty you’re facing and to practice some self care. If the day is confusing for you, that’s okay too. If you aren’t quite ready to be a parent yet, but have a strong, parental love for your pet, spoil that fur-child to your heart’s content. Either way, no matter the path you take, New Leaf will be here to help you celebrate Mother’s Day and Father’s Day the way that you see fit.

It’s almost that time of the year here in our Sunshine State: hot weather and summery attractions push us outdoors. Whether you are at the beach, an amusement park, on the water, or simply working in your own backyard, there is one item that all activities involving the great outdoors should start with: sunscreen! With so many to choose from, which one is “the best?” Knowing what is available and what advantages and disadvantages each type of sunscreen offers, allows for an easier decision-making process. When looking for natural sunscreens there are two categories to keep in mind. The actual sunscreen agent in a product can either be a chemical sunscreen or a physical sunscreen. The most common chemical sunscreens include oxybenzone, octinoxate, octisalate, homosalate and octycrylene. The most common physical sunscreens are the minerals titanium dioxide

and zinc oxide. Some products may use a combination of physical and chemical sunscreens while others may exclusively use one type or the other. Look for them under the “Active Ingredients” part of the label. Chemical sunscreens absorb ultraviolet (UV) rays while physical sunscreens block the sun’s rays. If you have sensitive skin, please note that chemical sunscreens are more likely to cause skin irritations but tend to offer the higher levels of SPF (Sun Protection Factor) without being thick and opaque. When applied, chemical sunscreen products are colorless, have less of an odor, and cost less across the board than physical sunscreens. Ultraviolet radiation consists of three wavelengths: UVA, UVB and UVC, which is not a factor in skin cancer. Chemical sunscreens also offer full UVA and UVB ray protection, but you must wait 20 minutes after application for the most effective sun protection.
There is no one perfect answer for all people due to different skin types, protection needs and desired price range. The physical sunscreens, titanium dioxide and zinc oxide, offer sun protection at a lower risk of irritating the skin (though titanium dioxide can, at times, irritate the skin of those who are sensitive to mineral makeups). They are considered more natural than their chemical sunscreen counterparts but offer some disadvantages as well. Physical sunscreens become thicker and more opaque as the SPF coverage increases and do not always protect as well against UVA rays as chemical ones do (zinc oxide offers more complete coverage than titanium dioxide does). On the upside, physical sunscreens are more stable, work immediately upon application, are FDA approved and generally recognized as safe—not all chemical sunscreens are. It is also important to look for non-nanoparticle minerals in your sunscreens. Nanoparticles are so small that they can be absorbed through the skin and into the bloodstream, and the potential side effects of this absorption are yet unknown. Other things sunscreens may offer include water resistance, added bug repellants, and some products are certified organic. If you are interested in lengthier water resistance, most chemical sunscreens will withstand water contact more effectively than the physical ones. Individual products will
mention their water resistance and should mention when the product should be reapplied; products labelled as “sport” sunscreens may also be identified as sweat-resistant. Some products conveniently combine bug repellants and sunscreens in one. A great example of this is W.S. Badger’s Anti-Bug Sunscreen: it is certified organic, water resistant for 40 minutes, and uses zinc oxide to provide SPF 34 protection while protecting against insects with essential oils such as citronella, lemongrass and cedar oils. Many of Badger’s sunscreens are also USDA certified organic for people who are looking for the most natural sunscreen available. If you have sensitive skin, especially on your face, a physical sunscreen or a sunscreen with fewer chemical ingredients may be a better option than a less expensive chemical product. In addition to W.S. Badger, Aubrey Organics also offers a similar level of clean, all-natural ingredients for those with sensitive skin. If you are looking for the highest SPF possible, a chemical sunscreen will have more to offer, especially an SPF of over 40. Brands such as Nature’s Gate (up to SPF 50), Kiss My Face (up to SPF 50), Alba (up to SPF 45) and Jason (up to SPF 45) offer competitively priced blends of chemical and physical sunscreens that are a higher SPF for both face and body while being a bit more natural than what you may see in drug stores. If you are looking for a facial sunscreen only, all of these companies offer sunscreens specifically formulated for the face. Separate facial sunscreens offer more complete protection than moisturizers with sunscreens added and can be used in conjunction with most facial moisturizers. The best option for protecting your skin from the sun is to keep it covered, but most who love the outdoors do not cover all exposed areas of their skin. In choosing the best sunscreen for you, it is important to weigh all the advantages and disadvantages outlined above along with what your budget may allow. There is no one perfect answer for all people due to different skin types, protection needs and desired price range. Keeping in mind what is available and how products differ will help you as the consumer make a more informed decision.

What differentiates New Leaf's meat department/offerings from our competitors? The biggest difference between our competitors and us is, in most cases we don’t have to adjust our prices to reflect what we pay. We can offer the same product but at a lower base margin. Therefore you don’t end up paying for the name or just the simple fact that it's grassfed or organic. We offer clean products that fit the high standards of clean meat at a very affordable price. In some cases we are even lower than most stores on certain meat items. We also offer a variety of grab and go and meals-ready-to-eat items that will blow you away. This makes us a place to fulfill all your cooking needs whether it’s to plan a nice meal or to grab something quick to eat. Grass-fed, organic, local — what label buzzwords should people look for when purchasing meat? Some are: natural, non-GMO, no artificial preservatives, heart healthy, USDA certified organic and grassfed.

USDA Certified Organic means it was raised and fed organically without using most conventional pesticides, fertilizer made with synthetic ingredients or sewage sludge, bioengineering or ionizing radiation. Before a product can be labeled USDA Certified Organic a government approved certifier inspects the farm and makes sure the farmer is following all the rules necessary to meet USDA organic standards. Is grassfed beef always the better option? Would a grassfed, local product be a better choice than an organic product that is not local and that does not claim to be grassfed? Grassfed means that the animal was allowed to forage and graze for their own food with an emphasis on providing the closest thing to a natural diet as possible. Grassfed meat is higher in Omega-3s and B vitamins as a result meat is leaner, healthier and much more flavorful.

Did you know? Grassfed cows produce healthier micronutrient-rich meat, milk, cheese, yogurt and butter. So in my opinion grassfed is the healthier option.
Meats like steak and ground beef can quickly change color from bright red to brown, and that isn't necessarily a bad thing...
What's a good, easy marinade that someone can whip up in a pinch? A marinade that’s easy to whip up consists of; 3/4 cup extra virgin olive oil, 1/4 cup balsamic vinegar, salt and fresh ground pepper you can also add a spoonful of mustard, minced shallots, minced garlic, minced fresh herbs, teaspoon of dried herbs, spoonful of honey or brown sugar. This will keep at room temperature for several weeks but if you added any of the fresh ingredients then you should refrigerate.
This happens when Myoglobin (a protein found in muscle tissue, similar to hemoglobin) is cut off from oxygen. In it's absence, Myoglobin will bind with iron instead, causing the color shift. As these proteins break down, the meat naturally begins tenderizing. The U.S. Department of Agriculture points out, "color changes are normal for fresh product. With spoilage there can be a change in color—often a fading or darkening. In addition to the color change, the meat or poultry will have an off odor, be sticky or tacky to the touch, or it may be slimy. If meat has developed these characteristics, it should not be used."

Marinades for fish and seafood

Summertime means enjoying the outdoors, when temperatures rise and we have heady choices about whether to swim, garden, or simply soak up some rays. For many of us, it also means grilling. The grill is a social hub, where families and friends gather to sip cool drinks and enjoy backyard favorites in the open air. Firing up that grill can keep the house cooler, too, since you don’t have to turn on the oven or stove.
What to marinate and for how long If you haven’t explored the world of marinades, they're easy to make, can amp up the flavor on your grill and don't require much advance prep time. Most often an hour is plenty of time for a chicken breast to sit in a marinade. In fact, food scientists have proven that most cuts of meat are barely penetrated by marinades, no matter how long they soak. The meat fibers are already full of liquids, and do not take up more. Brining, or soaking meat in a salty water bath, does cause the meat to expel some moisture and soak up the salt and other flavors of the brine, so if you want a two-day project, try brining your poultry for the grill.
There is a big, wide world of marinades out there, since just about every culinary tradition has some favorite ways to season food to cook over fire.
Fish and seafood are in their own category for marinades, and their delicate flesh should not be soaked for more than an hour to avoid pickling them. Cedar planks are a great way to cook fish and avoid the tragedy of it sticking to the grill, just smear a tasty topping on fish and close the lid. (Note: be sure to select untreated cedar; soak plank in water for at least one hour before using; have a spray bottle with water available to mist the plank if it starts to burn.)
The basic elements of a marinade A good marinade consists of oil, a sour element, and salt and seasoning. The sour element, or acids, like vinegar, citrus and buttermilk or yogurt tenderize the exterior and help create a tasty crust. While most marinades are simple to make, if you're in a rush, bottled vinaigrettes can be used as quick and easy marinades. There is a big, wide world of marinades out there, since just about every culinary tradition has some favorite ways to season food to cook over fire. The closer you go to the equator, the more there are, from the spicy, citrusy soy sauce marinades of Asia to the tropical jerk spices of the Islands. Try mixing one part canola oil, one part soy sauce, one part lime and adding a pinch of sugar and some chilies for a Thai style marinade, or a soak of two parts coconut milk, one part white vinegar, salt, chilies and thyme for a simple Island flavor. A Mediterranean theme would be olive oil, balsamic vinegar and rosemary, or olive oil, lemon and oregano.
Beyond meat: veggies, tofu and tempeh are great for grilling Of course, tofu and tempeh, or even halloumi cheese can be marinated and grilled, as kebabs or in slabs. Chunks of onion, sweet peppers, zucchini and fat scallions are great grilled on skewers. If you have not tried a grill wok yet, they can be handy addition for keeping veggies from falling into the fire. There are all sorts of grill trays, mats and cages for containing everything from veggies to whole fish that can make grilling easier, especially if you're a frequent griller.
Methods for infusing extra flavor Methods that will get more flavor into a cut of meat like a chicken breast or pork tenderloin include slashing across the grain to open up more surface area, and cutting slits to insert garlic, herbs or chilies. Slashes also make meat cook faster, and make a dramatic presentation. Tandoori chicken is a great example of this, in which a spiced yogurt marinade tenderizes and flavors deeply slashed chicken. Kebabs, where ingredients are cubed and speared for grilling, are a perfect way to get lots of marinated surface area.
With a repertoire of easy marinades, you can grill an amazing variety of delicious, healthy meals all summer long.
