BIB wines are trending at all price points with the 3l format leading the charge locally at an annual growth rate of 18%. By far the most effective for reducing a wine’s carbon footprint, the lighter and more compact 3l BIBs offer a more sustainable packaging solution. Another major consumer benefit is the ability to preserve the wine by avoiding exposure to oxygen long after it has been opened. COLOUR YOUR BREAK Mondelēz, one of the world’s largest confectionary companies, has partnered with HP Indigo and the HP Brands Innovation platform to launch a new campaign with iconic chocolate brand Milka. Launched across Belgium, the Milka ‘Color Your Break’ campaign sees boxes of Milka LEO decorated in animated designs, printed with HP’s digital print technology, giving consumers the opportunity to disconnect from reality and add some colour to their breaks. In November 2021, Mondelēz first partnered Milka chocolate with HP Indigo for its ‘Say it with Milka’ campaign, in which 120 gestures of kindness were printed on gift boxes of Milka pralines, promoting the view that small and sincere gestures deserve to be acknowledged. Following the success of this campaign, Mondelēz wanted to expand the power of HP’s digital printing technology to Milka’s number 1-selling brand in Belgium, Milka LEO.

INDUSTRY TALK – PLANT-BASED ALTERNATIVES
Defining and certifying vegan wine A long time has passed since the first bottle of wine was produced back in 1659 in what was to become Cape Town, South Africa. Now, one of the countries with the most sought-after wine regions in the world, our wines are truly a mix of Old World techniques and New World technology. Director of Proveg South Africa, Donovan Will explains how the South African wine industry is keeping up with the modern consumer and ethical demands influenced by the plant-based movement.

Taking advantage of optical sorting machines for spices and dried chilli With consumer’s expecting food products to be perfect, finding the right solutions to help food manufacturers achieve this is crucial. great quantities can no longer guarantee international sales success. Great quality is also necessary, now more than ever before. One reason for this is that increasing numbers of consumers around the world now expect food products to be perfect every time. If shoppers find serious fault with the food they buy and complain about it on social media platforms, their criticisms can reach enough people to damage brand reputations. Another reason is the food regulations defining maximum permissible levels of

FUNCTIONAL INGREDIENTS
Golden opportunities for food and beverage manufacturers With growing awareness of the importance of maintaining health, people across a range of age groups and lifestyles are looking for products with ingredients that support their specific wellness concerns. To help manufacturers make products that stand out and inspire repeat purchases, we identified three key challenges to delivering consistent, trusted and appealing functional products explains Niamh Hunt in the KerryDigest blog.
CHALLENGE 2: Developing innovative products in formats consumers want At the start of 2021, FMCG Gurus reported that consumers were “making day-to-day changes to their diets and lifestyles with long-term goals in mind.” Kerry’s own consumer research indicates consumers are most interested in maintaining immune, digestive and joint health when purchasing healthy lifestyle products.

A personalised nutrition revolution
While innovation in the F&B industry continues to make headway, new ways of delivering more personalised solutions to individuals are on the horizon as consumers demand food and beverages to be tailored to their specific health needs. comes to formulating products containing functional ingredients in an increasingly personalised world, there are a few fundamentals to consider: • Form A form that allows for the addition of macronutrients is important for a product to be functional and integrated into the daily diet.
"Nutritional supplements are also taking centre stage as disease prevention trumps disease treatment."
• A dequate protein with balanced levels of amino acids such as lysine, glutamine and cysteine, especially for plant-based products • H ealthy carbs, higher in fibre with minimal blood glucose impact • Fat content needs to be well balanced and of high quality, with more omega 3’s and fewer omega 6’s. • Efficacy and Quality The old trick of adding a sprinkling of turmeric onto a doughnut and calling it an anti-inflammatory food doesn’t work anymore! Dosages need to be efficacious as consumers begin to understand what is important. Functional ingredients added should have research-backed evidence proving their effects. • D iversity Instead of focusing on one nutrient and one interaction, ingredient combinations that synergise or simulate what is found in nature appears to provide more enhanced health benefits. Formulate products with the whole body in mind. • M arketing The message to the consumer needs to be specific and informative as the average general knowledge level around health is quickly rising – no more false claims or fairy dusting. • P ersonalisation With all the health tests, comes long reports with nutrient recommendations and prescriptions. A single, personalised product or supplement that meets the exact nutrient requirements and taste preferences for the individual, prompting a healthy habit change, will triumph. Propelled by science and technological breakthroughs, there are exciting opportunities in the nutrition industry for innovation in product development whether it’s snacks, beverages, supplements or meals. •

Matcon specialises in supplying powder handling systems to companies who handle and process powders, granules and tablets in the food, nutrition, pharmaceutical and chemical sectors. Their system designs use Intermediate Bulk Containers to both move materials between manufacturing steps and for effective powder blending. At the heart of it all is the Matcon Cone Valve - invented to overcome issues of powder mix segregation, containment and bridging that are inherent in traditional powder handling systems.
BEVERAGE INNOVATIONS
Full enjoyment of beverages with no added sugar Reducing the sugar content of beverages has become essential to keep up with growing need for healthier beverages. Roné Luttig from Savannah discusses some solutions to reducing sugar content in beverages with Tennille Aron.
B
everages without the use of added sugar have become increasingly popular due to their delicious and fruity flavours. Sugar-sweetened soft drinks, especially those
that are fruit-based, are, however, still criticised for their sugar content and the associated various health risks. The sugar content not only provides sweetness, but also plays a role in the texture of the beverage. The texture of the beverage and the mouthfeel are important factors for consumer satisfaction. Reduced sugar content inevitably results in a change in the multi-sensory perception and, above all, in the mouthfeel. The viscosity of the beverage decreases, and the product is perceived as thin and more watery. How can we reduce the sugar content without sacrificing texture? The loss of mouthfeel can be offset by the use of natural texturising ingredients e.g., pectin. Pectin causes the mouthfeel, fruitiness, the duration of flavour release and the ripeness to appear stronger than in the sugar-containing drink of the same viscosity. The smoothness of the beverage is similar to a sugar-containing drink. The freshness and the acidity peak are somewhat mitigated by the addition of pectin. With the same viscosity, the pleasant impression of the ripe fruit is intensified. Pectin has the unique property of providing long-term stability at a low pH. From fruit to fruit Pectin is a soluble fibre found naturally in fruits, especially apples and citrus fruits. It is the perfect ingredient for creating consumer-friendly products with natural appeal. With functional pectins from APECX, Savannah helps you to solve your challenges and create the optimal mouthfeel in a beverage. •

Developing natural colour solutions for the dairy industry Imagining a cheese without colour isn’t easy, but before Oterra (previously a part of Chr. Hansen) brought the first natural colour for the dairy industry to the market in Philadelphia, USA in 1876 that was the reality. They led the way for the dairy industry around the world by bringing colour from Annatto seeds to the market. A pigment that is still widely used in the dairy industry today.

"For 146 years, supplying the dairy industry with natural colours has been a core part of Oterra’s DNA."
“While African consumers have traditionally embraced artificial colours, like many other regions in the world they are looking to natural solutions that are perceived to be better for them. At Oterra, we believe nature got it right the first time,” said Vera Carvalho, head of sales for Africa at Oterra. This sentiment is echoed by Mark Ferrao, managing director at SK Chemtrade Services, who was quoted in 2021 saying, “The use of natural colours over artificial colours is gaining momentum in Southern Africa, where food and beverage manufactures are being encouraged by a savvier consumer to include these safe, natural ingredients in their product ranges.” With more than 145 years of history, Oterra are the industry specialist in helping brands make the move to natural colours. Oterra offers the industry’s widest range of natural colours for dairy. Colours that they proactively test for stability for every dairy and fruit preparation application. This allows manufacturers to move fast with their product development and colour selection. As creators of the world’s first natural colour for dairy, Oterra knows their stuff. Take dairy drinks to the next level Made from fruit, vegetables and plants, Exberry Coloring Foods are the ideal clean-label colouring solution for healthy dairy drinks, writes Alison Donaldson, GNT’s technical sales manager. provide a nutritious and adventurous choice to take kefir and other probiotic dairy drinks to new heights. Nonetheless, while health benefits are highly important to consumers, appearance is vital to making a positive first impression and even influences product enjoyment. Studies have found that changing drinks’ hue can influence taste and flavour intensity ratings as well as flavour identification responses. The choice of colouring ingredient is every bit as important as the choice of shade with today’s health-conscious consumers expecting their products to come with clean and clear labels. The majority (54%) of South African consumers say they check ingredient lists on food and drink most or all of the time, and 70% say they consider it important that colours are natural. Exberry Coloring Foods can deliver the perfect solution, providing a vast array of shades while helping to boost dairy products’ healthy positioning. They are made from edible fruit, vegetables and plants, and processed using traditional physical methods such as chopping and boiling. n the past, thermal paper was frequently the subject of debate in view of the problematic substances on which it
relies to produce a printed image. Now, Herma offers an adhesive material for thermal printer labels that is fully approved for food contact and thought to be the first of its kind worldwide. HERMAtherm nature (grade 900) is guaranteed to be completely free from chemical developers – the substances generally used to create an imprint. Labels made from this material are simple to use in all conventional thermal printers. A further benefit lies in the multilayer adhesive 62 DPS used by HERMA, which is especially migration-safe and likewise approved for direct contact with dry, moist and fatty foodstuffs. Thanks to the multi-layer technology, even with its low-migration properties 62 DPS is characterised by exceptional adhesive performance, including in cool environments. The new label stock HERMAtherm nature (900) was made in partnership with Koehler Paper. “Based on our experience in coating and die-cutting operations, HERMAtherm nature (900) is just as easy to process as conventional thermal
