In addition, customers in sub-Saharan Africa can, therefore, rely on local service, which – as the managing director underlines – is often a key factor in the purchase decision. “We are pleased that with Somic we can now also offer machines that cover the end-of-line, meaning the final packaging step before palletising. Safe and gentle packaging is becoming increasingly important among our customers. Automatic packaging of products in transport and display cartons will also continue to increase. For this, Somic with its broad machine portfolio, is an ideal partner – for newcomers to automatic packaging and for companies that require higher performance,” explains Andrew Johnson, managing director of Guth South Africa. The company, which has around 90 employees at all four locations in South Africa, already sells various other machine solutions for the food industry and is well-acquainted with the requirements of and general conditions in the sector.

INDUSTRY TALK

The benefits of Big Data The knowledge gained from Big Data is giving food and beverage manufacturers the information they need to make their processes more efficient. Tennille Aron spoke to Ron Baruchi, CEO of Agmatix to find out what is the true value of Big Data.

Q: HOW IS BIG DATA USED IN THE FOOD AND BEVERAGE MANUFACTURING INDUSTRY?

Due to the unique insights that can be gained by leveraging Big Data, it is increasingly being used in industries across the board, including food and beverage manufacturing, where it can be utilised at several stages to improve the production process. There are certain companies that focus specifically on the first stage: growing the raw ingredients and developing new varieties. They want to ensure this is done in the most efficient, sustainable and profitable way possible, and so gather and process Big Data to provide actionable insights that can be implemented at field level. This might be anything from providing intelligence on the optimal amount of fertiliser to produce a quality crop, to ways of minimising the spread of certain crop diseases that negatively impact yield or field trial management for planning, orchestrating and analysing results from breeding trials or other research and development efforts. Ultimately, these insights result in actionable information that help drive better decisions, sustainable farming practices and drive new product innovations that have positive effects on the rest of the production chain.

In any manufacturing industry, efficiency of the production process is incredibly important to keep costs low, protect profit margins and allow manufacturers to compete in globalised markets. In food and beverage manufacturing specifically, Big Data can be used to create dynamic crop models, which are used by farmers working with food companies to optimise yields, and improve crop quality and sustainability. Big Data can be used to ensure food manufacturers either grow or source high-quality crops, with the yield needed to meet production requirements of the end products. With greater efficiency, farmers can maximise crop production and reduce the price of the raw ingredients – helping to lower the carbon footprint across the value chain. Ultimately, by educating food manufacturers as to the power of Big Data in digital field trials and live on farms as used by agronomists and farmers, companies that provide Big Data can maximise productivity and boost the bottom line for manufacturers – while also meeting the quality and sustainability goals across the wider food production landscape.

Q: WHY IS BIG DATA SO IMPORTANT IN THE FOOD AND BEVERAGE MANUFACTURING INDUSTRY?

INDUSTRY TALK

Q: WHAT DO YOU THINK THE FUTURE OF BIG DATA TECHNOLOGY IS?

Just as we see the embrace of technology elsewhere and the inevitable shift towards Industry 4.0, I see Big Data being used more and more in the coming years. Nowadays, technology has made it easy to connect with others with a similar research focus, providing countless opportunities for collaboration. This means that Big Data is increasingly available industry-wide. By connecting research and development with supply chains via a single platform, this streamlines the process, enabling faster innovation. Utilised in the right way, this information offers manufacturers the possibility to boost efficiency, sustainability and profitability – and with few barriers to entry – which all adds up to a compelling case for embracing Big Data technology in food manufacturing.

The importance and true potential of Big Data lays in how it is analysed and relies on the data being processed in such a way that it can be universally understood and utilised. We collect data globally, analysing a wealth of legacy data as well as the results of ongoing field trials and experiments being conducted by farms and researchers. By utilising artificial intelligence and agronomy data science, you can convert all this data into a common unified language, that can provide individuals with meaningful, actionable insights. Essentially, Big Data can help to unlock the true potential of agronomic data.

Q: TAKE US THROUGH A PRACTICAL EXAMPLE OF HOW BIG DATA TECHNOLOGY CAN HELP A COMPANY.

Q: HOW CAN COMPANIES IN THE SOUTH AFRICAN FOOD AND BEVERAGE INDUSTRY ACCESS BIG DATA?

We can look at manufacturing a product containing soy. Soy is used in a vast number of food and beverages produced today and is a huge product for the agricultural industry, however, it is severely affected by soybean Sudden Death Syndrome (SDS). SDS has become a leading cause of the decline in soybean crop yield, currently detected in most soybean-growing areas. Agmatix partnered with a coalition of extension pathologists from five Midwest universities (Iowa State University, Michigan State University, Purdue University, University of Illinois, and University of Wisconsin-Madison) and Ontario Ministry of Agriculture, using Big Data models to determine how to best predict the spread of SDS with the goal of reducing or even preventing it on future farmlands. Preliminary findings have already pinpointed key areas for further investigation, and as the data builds, this collaboration has the potential to provide an SDS-predictive modelling tool for farmers, allowing them to make informed, evidence-based decisions to prevent SDS and reduce crop wastage. For food and beverage manufacturers using soy in their products, this will ultimately mean that soybeans are cheaper to purchase and will result in fewer supply chain issues related to crop shortages.

INDUSTRY TALK – PLANT-BASED ALTERNATIVES

Are companies barking up the wrong tree? The rising interest in plant-based or vegan diets has some pet owners pondering whether their pets should also make the significant lifestyle shift and whether it will truly be better for man’s best friend. The difference between cleaning and disinfecting Cleaning refers to the removal of dirt and impurities from surfaces, but cleaning alone does not kill germs. It decreases their number and therefore, the risk of spreading infection. Disinfecting works by using chemicals (disinfectants) to kill germs on surfaces. This process doesn’t necessarily clean dirty surfaces, but further reduces any risk of spreading infection.

SNACKS & CONFECTIONERY

Steel belts, conveyors and chocolate forming systems IPCO is a major supplier of conveying and processing equipment to the confectionery and bakery industries, offering solutions ranging from steel belts for cooling and conveying applications to complete forming and moulding systems for the chocolate industry.

I

PCO produces belts in a range of steel grades to suit different applications in solid or perforated form. Carbon

steel belts are widely used in bake ovens, while IPCO stainless steel belts are used across every area of confectionery and chocolate processing. The simplest application is conveying, where qualities such as chemical and bacterial neutrality, inherent inertness, and ease of sanitising make stainless steel the ideal choice for transporting many bulk ingredients. Wear-resistance is also important, particularly in relation to abrasive products like sugar. Other properties that make stainless steel the material of choice across the food industry – hygiene, durability and in many cases thermal conductivity – are relevant to continuous processing. IPCO belts can

"IPCO produces belts in a range of steel grades to suit different applications in solid or perforated form."

be found in everything from freezers and coolers to dryers, casting equipment and finishing lines. The most common application for IPCO’s steel belts in confectionery processing is cooling. The product is applied to the belt as a melt, either through casting or drop depositing, and is solidified as it passes through a cooling tunnel. Heat is transferred to cooling air blown onto the product and to the belt itself. In some cases, cooling water can be sprayed against the underside of the belt. The excellent thermal qualities of steel enable efficient heat transfer, resulting in consistent and controlled cooling. Applications include the solidification of caramel, nougat, nut brittle, gelatine jelly and gummy candy products, while fruit-flavoured jellies can be formed into pastilles. The same process can be used for the pastillation of ingredient products such as chewing gum base, chocolate, fats, emulsifiers and additives, converting them into a convenient form for bagging, dosing, mixing and re-melting.

ADVERTORIAL

The Russia - Ukraine conflict and how it may impact the baking business in Africa

During the French revolution it’s alleged that the Queen Marie Antoinette, having been informed of the restlessness of the people due to the scarcity of bread in the country, said “If they have no bead, let them eat cake.” . Currently, the world is again facing scarcity of bread, and unlike Marie Antoinette, we need to actively address and try to solve the issue.

With huge dependency on grain imports, African nations have cause for concern.

Global supply shain disruptions and it’s effects on the cost of wheat While the Ukraine-Russia conflict has definitely made the stuation worse, the issues of volatile wheat supply, quality and prices have been there even before and are bound to still be there once the conflict is resolved. Supply chain disruptions exacerbated by the pandemic and harsh droughts, such as those in North America that resulted in a 30% reduction in their production, have also been adding to the surging prices Supply decreased by 5.4% in the 2021 season which in turn initiated a new downtrend. The 2022 season forecast predicts a further 10.0% decrease. If realized, the continued downtrend will induce an upward price pressure (Mintec, 2022). This key global comodity’s quality and supply is also affected by numerous other factors . For example, in Australia, the quality profile of the crop was impacted by a wet harvest. This resulted in a high proportion of the crop being downgraded to low protein and feed grade wheats (ABARESDepartment of Agriculture, Water and the Environment, Australia Government, 2022).

Effects of the Russia-Ukraine Conflict on Wheat Supply Russia and Ukraine are major exporting countries for wheat and together represent 25 % of globally traded wheat. While farmers in Ukraine are currently unable to sow seeds and tractors are used in the war, not only a humanitarian but also an economic catastrophe is looming for Africa. Russia and Ukraine primarily export wheat to Africa, Middle East, and Asian countries. While many scenarios are possible, current estimates indicate that only 50-70% of the wheat will be harvested in 2022. After accounting for domestic consumption, this points to a shortfall of 1-2% of global wheat production or roughly 8-15 MMT. We expect this shortfall to be met by wheat from, among others, India, Australia, Europe, the US, and Canada.

The cost drivers for wheat are currently up-trending which provides an upward price pressure. The shortage in wheat sources aggravated with varying wheat qualities and lower baking performance affects baked products quality, results in difficulties of manufacturing a large range of flour types and managing production costs. This will not the specific application requirements. Beyond the specific baking ingredients, we face an overall high-cost world environment for the coming year. With bread as a staple commodity, this price pressure has economic, social, and political implications. As a key player in the baking community, we see it as both our duty and our privilege to work together with our partners, to help build more across the globe.

Africa produced around 25.7 million metric tons of wheat in 2020/2021. The production is forecasted to increase to 30.5 million metric tons in 2021/2022. The REMY-dy to your confectionery coating problem

We all eat with our eyes first. Thus, it’s no surprise that food manufacturers utilise both natural and artificial food colours to market and sell their products. The technological function of a food colour is to enhance the visual appeal, provide colour to food that would otherwise be colourless as well as to restore the original appearance of food. Carien Schoeman and Roné Luttig from Savannah discuss rice starch as a clean label alternative to Titanium dioxide (TiO2).

Innovative coating technology For a long time, it was considered an unwritten rule that certain properties of an adhesive material could be optimised only by sacrificing other desirable attributes. It was thought, for example, that the risk of migration could not be reduced without impairing adhesion, and high adhesion was deemed obtainable only at the expense of good processing properties. Now, the best of both worlds can be accomplished by means of a multi-layer adhesive structure.
