We tapped gastrointestinal expert, author of Get Off Your Sugar, and founder of Alkamind, Dr. Daryl Gioffre, to answer all your burning gut health questions.

WHY IS IT IMPORTANT THAT GUT HEALTH IS TRENDING NOW?
Hippocrates, the father of modern medicine, said it best – look to the gut, for it is the cause of all disease. Notably, 80% of your nervous and immune systems live in your gut. Plus, if you are dealing with anxiety or depression, one of the places you need to look closer at is your gut microbiome, as 95% of serotonin, your happy, feel-good hormone, is made in the gut.
“People now realize that taking care of your gut is critical not only to feel good and have better energy, but also to live longer and prevent chronic degenerative diseases such as heart disease, cancer, and even Alzheimer’s,” said Gioffre.
WHY ARE HOT GIRLS (AKA THOSE SEEMINGLY EATING SUPER HEALTHY) STILL HAVING STOMACH ISSUES?
“What you eat and drink is critical to your overall health, but the amount of stress and our ability to manage that stress outweighs what we eat a million times to one regarding how it affects your gut health,” said Gioffre. “We are more stressed than we have ever been, and when stressed, our body doesn’t care about digestion and growth and repair. All it cares about is getting you out of fight or flight and danger.”
According to Gioffre, you are not what you eat; you are what you digest, absorb, and assimilate. This is one of the primary reasons why so many people are doing all of the “right things” for their health (i.e., eating organic, plant-based, exercising, etc.) are still suffering from gut symptoms such as heartburn (reflux), indigestion, bloating, constipation, and leaky gut. And when you have a leaky gut and inflammation, you are more likely to suffer from downstream problems such as
thyroid issues, skin problems, brain fog, low energy, liver and gallbladder stress, and cardiovascular inflammation.
WHAT IS THE BIGGEST MISCONCEPTION WHEN IT COMES TO GUT HEALTH?
Most doctors tell us that heartburn and indigestion, which are also accompanied by bloating, gas, and constipation, are caused by too much acid, and this is one of the biggest mistruths we have been led to believe, according to Gioffre. The cause of these problems, on the contrary, is caused by too little stomach acid, a condition known as hypochlorhydria.
SO WHY HAVEN’T MOST OF US HEARD THIS BEFORE?
“Because antacids such as PPIs (Proton Pump Inhibitors) are a $17 billion annual market, and Americans are taking the lead, as 1 in 3 suffers from GERD (Gastroesophageal Reflux Disease), and astoundingly, 60 million will experience reflux (heartburn) at least once over a month.”
In addition, the acid in our stomach is the first line of defense against dangerous pathogens such as parasites, bacteria, viruses, and candida. Without sufficient levels of acid, we develop higher levels of chronic inflammation and leaky gut from these stealth pathogens that the acid should have wiped out in our stomach as they transit down with the digestive tract.
What are three ways to start improving your gut health?
TAKE A PROBIOTIC
“We are massively deficient in probiotics compared to what our ancestors used to get. This is the most important supplement for your gut because it helps replenish good bacteria while
simultaneously crowding out the bad bacteria,” said Gioffre. “I recommend getting probiotics in both supplement and food, such as fermented foods like sauerkraut and kimchi.”

The research shows only 5% of the population is getting the recommended 25-35 grams of fiber our gut needs daily for optimal health. This is one of the primary reasons why 42 million Americans struggle with constipation, and many are turning to laxatives for immediate relief, not understanding the dangerous consequences.
An easy solution? Try Dr. Daryl’s Internal Shower Shot. Add two tablespoons of chia, juice from a lemon slice, and a pinch of Himalayan pink salt to 6 ounces of water. Equal parts entrepreneurial queen and ageless stunner, we chatted with her about following your instincts, being open to opportunity, and how to maintain the beauty that IS skin deep.
NEW YOU: When did you first become deeply interested in skincare?
JILL ZARIN: I’ve always been into skincare and beauty products because I’ve been on television a very long time and I want to look my best. Everybody wants to look their best, but I really want to keep it easy and simple. I use water to splash my face, and then I take a very gentle cleanser and I put it on my face and wash it again because your skin is the largest organ in your body and you need to feed it water. It needs more water than any other part of your body. And then I put on a very gentle moisturizer. It has sunscreen in it. It’s the number one product that you need. If you want any anti anything, anti-aging, anything at any age, whether you’re 18 or whether you’re 80, you need to wear sunscreen every single day. That doesn’t mean you have to wear a heavy SPF product. You don’t have to wear a zinc and a white, cakey kind of thing. You just need a sunscreen. If nothing else, it’s the only thing that’s going to protect you from all the sun damage the sun gives you.
NY: What inspired you to create your own line of beauty products?
JZ: The reason I started Jill Zarin Beauty is because I thought that the field was just so crowded. I know it sounds like an oxymoron that I’m bringing two more products into the world, but I want people to know you don’t need a lot. I go to a store and I see a shelf of a brand with 50 different products. You don’t need 50 different products. Honestly, you need a sunscreen and you need a cleanser, you know? So I wanted to make it easy and not confusing for people, so I put together a two pack and it has a cleanser and it has a moisturizer and it’s as simple as that.

NY: I’m sure you’ve heard some crazy myths about skin care over the years. What do you think is the biggest misconception out there?
JZ: I think the biggest skincare myth is that you need to have all these different products. There’s just too many out there, in my opinion. I think it’s very confusing, and women don’t know which one to choose. They just keep adding more and more and more, and I think that women just need to know to wash your face, give it a sunscreen, give it a kiss, give it some water, and that’s it. Then, you will have beautiful, beautiful, healthy skin.
NY: It’s no secret that your skin is amazing! What‘s your best advice for those who want the same?
JZ: Please wear sunscreen, wear it every single day. Never forget it, and you will not have the lines and the wrinkles that you would have if you didn’t wear it. You really need to protect your skin from skin cancer, from moles, from skin damage, from lines. I’ve been wearing sunscreen my entire life, and that’s why people think that I have good skin. Beyond that, I wash my face and I use a very gentle wash – and that’s what we created for Jill Zarin Beauty. You put it on and it really exfoliates your skin. It feels so good because you’re taking off all the dead skin cells. We all shed millions and millions of skin cells every single day and you need to take them off your skin, otherwise you have clogged pores. The reason. The reason why women get so many blackheads is they don’t exfoliate their skin. You want to have something a little bit grainy to wash away all the dead skin, because if it doesn’t have a little bit of grain, what are you using to wipe away those micro cells? You need to cleanse your skin at least once, If not twice, a day. And you must wear sunscreen every single day. And I made it so easy. NY: Do you have any tips for aspiring entrepreneurs?
JZ: I get asked all the time about how I became successful. I have a lot of tips, but the number one tip that I have is trust your gut. I can’t tell you how many times I didn’t trust my gut and I lived to regret it. Also, yes to everything because you never know what’s going to be behind that door. Saying yes to everything is really just being open minded. And the last tip? I have a mantra, I have a ritual, I manifest things. I close my eyes every day and I think
about where do I want to be in a month? Where do I want to be in a year? What stores do I want to be selling in? What products do I want to be doing? Where do I want to be in my life with my family? Where do I want to travel? All those things come into my head, and I think if you do that in business, it really helps you focus on being successful.And success has many different answers. I mean, for me, there’s financial success, but there’s social success, there’s family success. And of course, we all want to excel in all three places. But I think if you close your eyes every day and you manifest things, all your wishes and dreams will come true.
NY: In your younger days, you had to figure this stuff out on the fly. If you could chat with your younger self, what advice would you give yourself?
JZ: If I could speak to myself at 19 years old, I’d tell myself to trust my gut because I regret the times in business that I did not trust my gut and listened to someone else instead. it might have been because they were experts in the field and they thought that they knew something better than I did.

I think if you close your eyes every day and you manifest things, all your wishes and dreams will come true.
I trusted them, but my gut told me it wasn’t right for me. I was right, and that’s a lesson I learned. So if I could go back 20 years, I probably wouldn’t have made as many mistakes as I made. But, you know, they’re not always mistakes. They’re learning experiences. I don’t think I’d be as successful in some areas without having gone through the pitfalls and the mistakes that I made, so I guess there’s no bad mistakes.
NY: What are some hot trends in the beauty space that excite you?
JZ: One of my favorite is the clean and sustainability trend. And for me, that means using Goji Berry and crystals in my skincare. I think it’s futuristic in a way, and crystals have been in the earth for millions and millions of years. To be able to recycle them, grind them up and even use them to exfoliate is amazing. .I love the excitement of those kinds of products because they’re eco-friendly, green and sustainable. I think that’s what young people want today, and so do I. Another trend that excites me is that beauty and skin care products are being used by a wider age range than ever before. Our products are going to be introduced for women from 18 to 80 because there isn’t anybody here that doesn’t need a cleanser and a very gentle skin protector. The other thing is that our products are very affordable. I wanted to make sure that I could fit the price point, so it’s something that isn’t going to break the bank. People are spending $600 or $800 on sunscreen and some protectors, and it’s outrageous. It’s almost criminal in my mind. I just can’t see myself spending that much money on something that I know shouldn’t be more than $40 at most. So I wanted to make something that’s affordable for everybody and that anybody aged 18 to 80 can really use.

lisa odenweller was always ahead of the fitness curve, maintaining regular exercise and a diet she considered highly nutritious. When she developed hormonal issues in her late thirties, however, she took a closer look at the foods she consumed. Rather than medicating, Odenweller incorporated more vegetables into her diet and removed processed and non-organic foods.
“Immediately, I felt and saw the difference in my energy levels, mental clarity, and mood stability,” she recalls.
The concept of “food as medicine” inspired Odenweller to create Beaming, known for its “Not Just Juice” cleanse.
According to Odenweller, Americans who are hooked on caffeine and sugar to get through the day are operating on a flawed premise. “Caffeine is an addiction,” she warns, “and not necessarily something we need to sustain energy.”

and ginger. It’s simple, healthy, and delicious.

“I love having friends and family over for dinner and one of my favorite dishes to make is my carbonara with Brussels sprouts, pears, and chard. I love taking classic dishes and increasing the nutritional value while enhancing flavor; I’ve also learned how to cut calories by substituting ingredients, such as Greek yogurt for sour cream or mayo.”
SNACKS
“I like to make homemade cheesy kale chips or parmesan zucchini chips that I can take with me and snack on during the day. If I’m craving something sweet, I make my gluten-free chocolate chip and peanut butter cookies. I also enjoy tea or a warm glass of apple cider.
Kale Egg Cups*
1 medium yellow onion
1 red bell pepper
4 fully cooked breakfast sausage patties
8 large kale leaves
METHOD
1. Preheat the oven to 375 degrees F. Grease an 8-cup muffin pan and set aside. Place a medium saucepan of water over high heat and bring to a boil.
2. Chop the onion and bell pepper and cut the sausage patties into ¼-inch pieces.
3. One at a time, hold each kale leaf by its stem and dip it into the boiling water until it turns bright green, about 5 seconds, then lay it on some paper towels or a clean kitchen towel to drain.
4. Heat the oil in a medium skillet over medium heat. Stir in the onion, bell pepper, and salt and sauté until tender, about 5 minutes. Stir in the sausage and sauté just until it turns brown, 2 to 3 minutes more. Remove the skillet from the heat.
5. Pat each kale leaf dry with a paper towel. Cut away its stem and then cut the leaf cross-wise into 3 pieces.
1 tablespoon olive oil
½ teaspoon kosher salt
½ cup shredded mozzarella
8 large eggs
8 teaspoons grated Parmesan cheese
Line the bottom and sides of a prepared muffin cup with the 3 pieces, overlapping and making sure to cover the sides, all the way to the top. Repeat for each cup.
6. Put 1 tablespoon of the mozzarella in each cup; top that with a spoonful of the vegetable and sausage mixture, making sure there is still room in the cup for an egg. Crack and egg into each cup and then sprinkle one teaspoon of the Parmesan over the egg. When all 8 cups are filled, place the muffin pan in the oven and bake until the eggs are set, 15 to 17 minutes.
7. Transfer the muffin pan to a wire rack and let the egg cups cool for 2 to 3 minutes. Run a table knife around the inside edge of each cup to release anything that might be sticking. Gently lift out the kale egg cups and place 2 on each serving plate. Enjoy them hot!

NY: From a young age, did you always know you would get into the fashion industry?
Nicole Miller: I was always obsessed with fashion. My mother was from Paris, and we always had fashion magazines come to the house from France. I lived for those magazines!
NY: Your name is synonymous with New York City. Why do you think that is, and how do you find inspiration in the city?
NM: I’m known for being a New York designer because I’m based in New York, and my entire career has been in New York City. Often when I haven’t had a chance to travel or go someplace and get inspiration elsewhere, I’ve used New York City as my inspiration. Many iconic things are here, from the Empire State Building to the Chrysler Building. There’s beautiful architecture, gardens, and parks, and it’s a great place to live.

NY: What about NICOLE MILLER has allowed it to remain one of the world’s pre-eminent fashion brands?
NM: We’ve always maintained a youthful attitude where I attract the younger customer, and we didn’t age with our customers. I would go to a store, and the mother and daughter would buy a dress to share sometimes, or the mother would buy the daughter the dress because she approved of it. They could both agree on my dress, but they didn’t agree on many other things. I’ve always listened to my younger assistants and tried to stay current with the music and what’s going on culturally and not be closed-minded.
NY: What is one of the biggest lessons you’ve learned as a leader along your journey?
NM: The true learning lessons of life are always getting stuck with inventory. So I became a master fabric manipulator in that process because we were often stuck with a print that we thought would sell and didn’t. That’s one of the big learning lessons I had over the years, and that’s one thing I always tell young designers that’s important for them to learn. It’s always better to have a more conservative approach early on until you gauge what happens. However, sometimes you can’t avoid disaster!
Once, we sold several thousand units to Saks [Fifth Avenue] of this skirt and matching top, and all the beads popped off the top. We had to take them all back because a production person hadn’t checked the production. The learning lesson is that things always go wrong in the clothing business.
NY: Do you have three tips that you share with interns or someone just starting in your office?
NM: I always tell them never to say never, don’t be stubborn, and be open-minded. You may want to do one thing, but you should be open to other opportunities. Whenever there’s an opportunity, take it. Go for it all the time.

NY: Have you mastered the art of creating a work-life balance?
NM: I never created the right balance because when we used to have runway shows all the time, we worked 30 days straight before the show and would work every weekend. My son was little, and I should have taken the weekends off. As time passed, I thought, ‘We’re not going to work weekends anymore or only work one day, or we’d alternate weekends so everybody would have a weekend off.’ You have to make time for the most important things, and there’s always a way that you can work it out.
NY: What’s next for you? What can we look forward to seeing from you this year?
NM: We’re branching out with our licensing. We have many new things going on, like an entire lifestyle brand. We have everything from shoes and handbags to rugs, furniture, bedding, and towels. We’re trying to expand that whole area. I’m also a great cook! I love to cook, and that’s one of my fun hobbies. We have a cookware license and all these great knives and dishes. I’m looking forward to expanding in that area of the business.
NY: What legacy do you want people to remember most about the impact of NICOLE MILLER as both a person and a brand?
NM: I hope everybody knows how I like to make women look beautiful and give them confidence. Dresses were my mainstay, but many people will remember me for all the iconic prints I did over the years, and they’re coming back. They’re all very popular again, so I hope they have a second wind.
NY: After all these years, what is one of the most flattering things you’ve ever heard, and how does it make you feel?
NM: One of the most flattering things I’ve heard after all these years is that every great woman has a NICOLE MILLER dress in her wardrobe. I sure hope that’s true! That means so much to me because I love my job and career. I’m still designing, and I still love doing it all. I hope those young women keep those clothes in their wardrobes. I’ve also had a big wedding business, and it’s important that I’m a part of someone’s special day. I’ve dressed many bridesmaids and people for their engagement parties, rehearsal dinners, and special events. It’s such an honor to be a part of everybody’s lives that they’ve chosen me for their special occasion.

t ’ s a buzz - making phrase that has swept our nation, yet many consumers are wondering if “gluten-free” is simply the latest food fad. Step inside any corner store or supermarket and you’ll find a plethora of gluten-free products, while gluten-free menus are all the rage in restaurants around the globe. Is this a necessary function or simply today’s fashion?
Since the dawn of agriculture some 10,000 years ago, we as a society have always associated “bread” with “life.” Now we’re collectively asking whether the agricultural revolution created more problems than it solved. The undisputable truth of the matter is this: An alarming number of people are not able to eat bread due to gluten intolerance, and what was previously perceived as the gift of life may be acting as a slow-working toxin to a portion of our population. Chances are, you know someone who suffers from gluten sensitivity or full-blown celiac disease. And quite possibly, you yourself are unknowingly falling victim with every delicious bite.
Ingredients:
2 cups quinoa flour
½ cup sorghum flour
¾ cup almond meal
1 teaspoon baking soda
2 teaspoon ground cinnamon
1 cup coconut palm sugar
3 organic eggs
Directions:
½ cup olive oil
2 teaspoons vanilla extract
¼ cup orange juice
1 cup grated carrots
1 cup unsweetened coconut flakes
½ cup seedless dates
In a mixing bowl, mix together flours and dry ingredients. Add eggs, oil, vanilla, and orange juice. Beat to combine. Stir in carrots, coconut, and dates by hand.
Preheat the oven to 350 degrees. Pour the batter into the baking pan, and bake for about 25 to 35 minutes.

BLUE CORN PANCAKES
Ingredients:
1 ½ cups of blue corn meal
1 cup gluten free all-purpose flour
¾ cup almond flour
2 teaspoon baking powder
1 tablespoon baking soda
2 cups sugar
1 cup buttermilk
3 cups egg whites, whipped
Directions:
In a large bowl, mix together blue corn meal, flours, baking powder, baking soda, and sugar. Add buttermilk and egg whites. Mix together until smooth. Heat a large skillet over medium heat, and grease with a dab of oil or butter. Use about 2 tablespoons of batter for each pancake. Cook until golden. Serve immediately with maple syrup or your favorite syrup or jam.

Gluten is a plant protein complex that exists in “grass” grains such as wheat, barley, and rye. The gluten complex is composed of two peptides, or large proteins: glutenin and prolamins. Prolamins are the toxic substances that trigger immune reactions in those who are gluten intolerant. Toxic substances include gliadin (found in wheat), secalin (rye), and hordein (barley). Gluten provides the structure and elasticity, which helps bread rise and gives our baked goods their chewy, fluffy texture. Gluten is found in bread, cookies, cakes, rolls, crackers, beer, cereal, and pasta. But gluten is also lurking in many processed foods such as frozen dinners, canned soup, ice cream, sauces, gravies, and many salad dressings.

Why does gluten create a problem for some people and not for others? Humans were not actually designed to digest gluten. We lack many of the enzymes found in the stomachs, intestines, and pancreases of our livestock counterparts to fully digest gluten proteins. Gluten does not break down into small enough particles for successful digestion and absorption, leading to problems in the body.
Gluten acts like a toxin in the body of those who are sensitive by stimulating the release of the naturally occurring chemical known as Zonulin (pre-haptoglobin-2). Zonulin regulates the tight junctions in our intestinal wall, which normally prevent toxins from leaking into our bloodstream and lymphatics. Those sensitive to gluten have a high level of Zonulin which can cause the intestinal walls to open wide for five hours or longer causing intestinal issues.
“I liken this to a screen door in the height of mosquito season,” says Dr. Guy DaSilva, founder of the DaSilva Institute of AntiAging, Regenerative, and Functional Medicine in Sarasota, Florida. “Just as the screen allows air to pass through freely, but keeps out bugs and mosquitoes, the gut allows for nutrient absorption while blocking undigested food particles, toxins, and waste from entering the bloodstream. Unfortunately, it doesn’t stop there. Leaky gut then causes a war within your body as the immune system attacks these rogue toxins.
According to an article entitled, “Surprises
From Celiac Disease” from the August 2009 issue of Scientific American, leaky gut is found to be a major contributing cause of autoimmune disease. “Zonulin is a precursor to a protein marker, and is associated with the chromosome responsible for inflammatory or autoimmune diseases, such as lupus, rheumatoid arthritis, type 1 diabetes, and cancers—lymphoma, myeloid leukemia, breast, and prostate,” remarks DaSilva. Humans are the only mammals that possess this marker. Primates, who do not eat grain and who do not possess this marker, do not suffer from autoimmune disease.

Gluten intolerance manifests itself in three ways—celiac disease, wheat allergy, and non-celiac gluten sensitivity. Celiac disease occurs when undigested gluten enters the body, triggering a cascade of immunological reactions. This release of antibodies damages the villi (finger-like projections) of the intestines that absorb nutrients from food. As the villi become damaged, the body is unable to digest food. An estimated one in 133 Americans suffer from celiac disease, and incidence of the disease is on the rise.
A wheat allergy is a histamine response. Unlike gluten sensitivity or celiac disease, a wheat allergy elicits a rather immediate reaction such as hives, stomach pain, nasal con-

gestion, or even anaphylaxis—a very serious allergic reaction in which the throat closes. If left untreated, anaphylaxis can be fatal. Wheat allergies are seen as a type 1 hypersensitivity, and affects less than 1 percent of the US population.
Gluten intolerance or sensitivity may affect as many as one in 20 Americans, though the number is hard to pinpoint compared to celiac disease or wheat allergies. More than 100 symptoms have been linked to gluten sensitivity. (See our sidebar, “10 Signs of Gluten Sensitivity,” for the most common ailments associated with this condition.)
Unlike celiac disease, gluten sensitivity does not affect the lining of the intestine. Rather, the autoimmune reaction manifests in other parts of the body. A study published in the BMC Medicine comparing blood samples and intestinal biopsies of those with celiac disease and gluten sensitivity revealed that those with the latter had undamaged intestinal lining. Megan Roosevelt, RD, LD, the founder and CEO of Healthy Grocery Girl, LLC, explains that gluten intolerance differs from celiac disease in that “the body views gluten as an invader and elicits
Celiac Disease and Leaky Gut
Those with celiac disease may be prone to leaky gut syndrome because their gluten sensitivity has led antibodies to attack the lining of their small intestine. This often causes breaches in that wall, which allows food particles and bacteria in the gut to migrate into the bloodstream. The best way to fight leaky gut is to work on your gluten-free diet with a nutritionist who can guide you in choosing foods that won’t lead to bacterial overgrowth in the intestines. That overgrowth can easily be avoided by steering clear of processed foods.

Why the rise in gluten sensitivity? “Celiac disease, a gastrointestinal manifestation of gluten sensitivity, has increased 400 percent over the last 50 years, according to The New England Journal of Medicine,” says Dr. DaSilva. According to The Journal of Agricultural and Food Chemistry , the amount of gluten in wheat products today is about 13 percent. Years ago, this gluten content in bread products was approximately 8 to 15 percent.
The answer to this question lies in the introduction of genetically modified wheat. In the 1950s, in an attempt to end world hunger, American agronomist Norman Ernest Borlaug began developing new varieties of wheat in Mexico that were resistant to diseases that plagued the crops. By 1962, he had cross-pollinated the wheat 8,156 times in just 15 years, a feat that would have taken nature thousands of years to accomplish. The end product consisted of six semi-dwarf, high-yield, disease-resistant wheat varieties. The media declared that it was going to save the world from starvation.
In 1970, this grain abundance, dubbed the “Green Revolution,” landed him the Nobel Peace Prize. Today, Borlaug’s wheat varieties dominate the entire US supply.
While ending world hunger is a noble endeavor, messing with the genetics of the food supply comes with its own set of problems. “Borlaug designed his wheat to have heavy heads of enlarged grains supported by thick, dwarfed stalks. This ‘dwarf’ wheat, was by definition, a mutation,” says Dr. DaSilva. “The wheat genes were drastically changed in a short amount of time, and our bodies simply haven’t had time to adapt.”

If you think you have gluten sensitivity, a physician specializing in functional medicine can recognize the symptoms. One of the easiest ways to test yourself is to eliminate gluten for a two- to three-week period, then reintroduce foods containing gluten to see if you notice a difference.
There are also some blood tests available to determine celiac or gluten sensitivity. Clinical evidence shows that more than 90 percent of those diagnosed with celiac disease are positive for either the HLA-DQ2 or HLA-DQ8 genetic mutation. Blood tests for certain antibodies such as anti-gliadin (AGA), immunoglobulin A (IgA), or AGA-IgG are indicators of gluten sensi -

3 tsp canola oil
2 cups yellow squash
4 cloves of fresh garlic, coarsely chopped
1 pound whiting, tilapia, or crab
1 cup red pepper, diced
Directions:
1 cup onion, diced
3 cups pre-prepared, gluten-free white or brown rice
Salt and pepper, to taste
½ cup gluten-free soy sauce
Handful of parsley, freshly chopped
Add oil to skillet, and sautée squash and garlic for 3 minutes. Add all vegetables and fish, and sautée until cooked through. Add rice and seasoning. Top with soy and parsley.

ROASTED SPAGHETTI SQUASH
Ingredients:
1 spaghetti squash
1 tablespoon olive oil
1 teaspoon garlic, cloves or powder
1 small onion, finely chopped
2-3 chopped tomatoes
¾ cup feta or goat cheese
¼ cup basil leaves
Directions:
Cut spaghetti squash in half. Place cut sides down on a baking sheet. Bake at 350 degrees for 30 minutes. In the meantime, sautée olive oil, garlic, onion, and tomatoes on medium heat. Stir until warm. Let simmer on low heat while you carve out the spaghetti-like fibers in the squash. (Remove seeds and discard, or save for later use.)
Toss all ingredients together in a bowl or serve in the carved out squash for an extra festive look.

Food sensitivity for gluten can also be determined using a blood test that detects certain food allergies. A combination gut health profile test, which encompasses all these parameters, is available from Cell Science Systems (located in South Florida) and can be ordered by your physician.
Another option is stool testing. Dallas-based EnteroLab offers a self-test for anti-gliadin antibodies. EnteroLab’s founder, Dr. Kenneth Fine, is a gastroenterologist who developed the test. He believes that measuring the antibodies coming directly from the intestinal tract is a more accurate measurement for gluten sensitivity than monitoring the bloodstream.

Unfortunately, there is no magic pill or treatment to cure celiac disease or gluten sensitivity. The best treatment strategy is strict avoidance of any and all products containing gluten. This is best achieved by avoiding all bread or baked goods, pasta, and many processed foods. As with any lifestyle change, our experts agree that savvy supplementation is important whenever a person goes gluten-free. Some nutrients that may become depleted when an individual eliminates gluten from his or her diet include B vitamins, fiber, and iron.
“Eating a diet rich in whole, plant-based foods is an optimal choice for those who eat gluten-free,” says Roosevelt. “There are many whole, plant-based foods that are naturally gluten-free like brown rice and quinoa, beans, nuts, seeds, fruits, and vegetables.”
The smart avoidance of gluten seems to be much more than a trend. Research shows that the modern American diet—rich in wheatbased glutinous foods—is increasingly wreaking havoc on our health. Not everyone suffers from gluten sensitivity, but if you are experiencing persistent health concerns that don’t go away with conventional medical treatment, “going against the grain” and giving up gluten can potentially heal the things that ail you. l

we’ve all done it—those marathon sun-worship sessions during which we expose our naked, vulnerable epidermis to the warm rays of the sun to attain the ultimate bronzed glow. You know, the shade that screams sexy, sun-kissed health? It’s a national pastime, slathered in ceremony, and so many of us feel it’s our birthright to bake ourselves to a delicious golden-brown. But what if we told you that tanning isn’t your skin’s way of purporting inner and outer wellbeing: It’s an out and out cry for help. “What a tan really represents is a sign of DNA damage,” insists Dr. Elizabeth Hale, clinical associate professor of dermatology at the New York University Langone Medical Center. “Our body mounts a tanning response as a sort of stress response; it’s a defense mechanism. In the eighties, you often heard the words ‘healthy tan.’ There’s no such thing!” Enlightened advocates are waging a national campaign to help everyone—including those of us who feel stale in our natural state of pale—to learn to love our natural complexion, be it light, dark, or in between.

In 2008, the Skin Cancer Foundation launched a groundbreaking public service message, smartly entitled “Go With Your Own Glow,” to encourage women (and men, for that matter) to celebrate and protect their natural skin tone. The foundation wants sun lovers of all ages to realize the following: Tanning is neither fashionable nor flattering, and is more or less obsolete as a lifestyle. Could this be the understatement of the summer?
Sun damage isn’t something that happens overnight from one bad burn. It’s cumulative. So, all those long afternoons at the height of the sun’s heat, slathering your skin in baby oil by the pool, or carelessly eschewing sunscreen on the beach in your twenties add up—or just forgetting to re-apply; each of these acts is one of health and beauty self-sabotage. “It’s that first, early overexposure until now that’s the problem,” says Dr. Doris Day, a New York City dermatologist and author of Forget the Facelift . “When I treat a woman in her sixties with wrinkles and brown spots who says, ‘I’m never in the sun,’ I say, ‘Well, maybe you’re not anymore—this damage is from 20 or 30 years ago.’”
But that’s not all. Every time you go out in the sun without applying an SPF product of at least 15 in winter and 30 in summer (and not just to your face, but all exposed skin, be it hands, arms, neck, shoulders, or shins) and taking other proper precautions, like wearing a hat or walking on the shady side of the street, you’re adding to that damage.
“Most sun exposure is incidental, so contrary to what people think it doesn’t just happen during the summertime and on the beach,” says Hale. “Most is from the act of daily living.” That’s right—be it an outdoor break from the office on your lunch hour, a jog around the park, a walk with the family on a weekend afternoon, or simply driving in your car during the daytime, not applying products with UV protection is speeding up the aging process and piling on to the wrinkles, sun spots, dullness, and sagging that sun damage can cause. “The number one antiaging secret is sunscreen. Before you spend money on peptides and stem-cell treatments, think about it,” Hale continues. “I won’t even perform these procedures until a patient commits to using daily sunscreen because if you keep baking in the sun, it’s like stopping a moving train.”
Some of Dr. Hale’s patients argue that they need the sun exposure to adjust a deficiency in vitamin D. However, she says, this is simply untrue. If you’re worried about not getting enough vitamin D in your day-to-day activities, exposing your skin to that burning orb in the sky isn’t going to make much of a difference. “That’s just plain old false,” says Farah Ahmed, chair of the Personal Care Products Council sunscreen committee in Washington, D.C. “To the extent that someone is deficient, you should
get vitamin D through your diet. The American Academy of Dermatologists all agree: UV rays are cancer causing. It’s irrefutable science.”
“The only way to ensure 100 percent blockage is to be in a dark room. When it’s cloudy or it’s the middle of winter, UV rays still come through, and penetrate windows as well, and that can cause damage to the skin over the years,” says Ahmed. “There’s a compelling photo of a truck driver in his sixties who’s been on the road for 30-plus years. The left side of his face looks 20 years older than the right because of sun exposure when driving.”
And that’s merely the vanity factor of unprotected sun exposure. The real danger is in the DNA damage.
Skin cancer occurs when dangerous ultra-violet radiation from the sun or a tanning bed (not that you should be using such archaic instruments of skin torture!) causes DNA cellular damage that can’t quite repair itself, and also kicks off a maelstrom of mutations, in which the damaged skin cells multiply rapidly, forming malignant tumors. “We know that up to 90 percent of skin cancer is due to UV exposure, and I’d say at this point it’s the number one diagnosed cancer in the U.S. now—more than lung, prostate, breast, and colon combined,” Hale continues. “Fortunately, many of these cases are curable when detected early.”
With such an arsenal of scientific proof, it seems high time for that notion of a healthy tan to become a historical flash-in-the-pan footnote. And not a UV ray too soon. “We want protecting your skin to be as instinctive as wearing a seatbelt,” says Ahmed. “Burns we recognize and associate with damage, but tanning is in fact damage to your skin. Regardless of your skin color.”
Ahmed brings up an important point: It’s not just the extremely fair who are susceptible to damage from the sun; all skin colors need protection and care. “Sun damage is an equal-opportunity offender. Skin damage occurs in skin of all colors,” she continues. “The American Academy of Dermatologists and the Skin Cancer Foundation have each been vocal about the fact that sun protection is important for all ethnicities, regardless of skin tone. When it comes to beauty and age perception, it’s not the color of your skin, it’s the evenness and luminosity of your skin tone. And that’s shown to be true around the globe.”
Once you learn to be comfortable with your natural tone, be it the palest of them all or ebony as evening, you’ll find that inner glow will shine on the outside, too. Part of the Skin Cancer Foundation’s campaign has been to loop in well-known, visible celebrities to help get the message out, like style tastemaker Simon Doonan, who wisely

points out cross-cultural examples of high-profile women with enviable skin in an interview on their website: “Tilda Swinton is pale and interesting. Michelle Obama is luscious and well-moisturized. Lucy Liu is a flawless porcelain doll.” Each perfect examples of stunning, successful women who are obviously comfortable in their own skin.
“Your skin is a powerful and accurate reflector of your inner health, both mentally and physically,” says Dr. Day. “As a dermatologist, I consider myself a medical detective and a doctor of self-esteem. When you feel your best, you look your best, and that has a powerful impact on your whole being.”
The good news is that it’s not too late to coax that glow from your body’s largest organ, and reduce your risk of skin cancer to boot. In Australia, the skin-cancer capital of the world, a decade-long study was conducted on 1,600 adults ages 25 to 65, with half told to go about their usual daily habits, using or not using sunscreen; the other half was to follow a strict and careful regimen of appropriate daily sunscreen application. The latter group was found to have an overwhelming 73 percent reduction in invasive melanomas, not to mention a reduction in brown spots and other signs of aging.
“People think, ‘It’s too late! The damage is done!’ But it’s not too late. It’s an ongoing process,” says Hale. And it’s become easier and easier to adapt SPF application into an otherwise healthy daily skin regimen. Of course, if you plan to hit the beach or the pool, applying and re-applying sunscreen often and from head to toe is absolutely vital, as is wearing a hat, seeking shade, covering up when you can, and avoiding the sun during the hottest points of the late morning and early to mid-afternoon—all easy enough regimens to adapt. Even easier, though, is finding great products to boost your UV beauty shield all the time. It’s actually a lot harder to find stores and cosmetic counters that don’t offer a bevy of beauty products with a decent level of SPF these days, from lipstick to powder to foundation. And if you somehow had the notion that those products weren’t as strong as, say, the sunscreen in your beach tote, take joy—they are.
“That SPF 15 in your foundation is the same as what’s in a beach product,” says Ahmed. “It’s no different. Beauty products are required to go through the same rigors of testing and labeling. They provide serious health benefits.”
Which products are the best? According to Ahmed, whichever one you put on every day. “I think it’s important to have confidence in your own skin color and take an interest in skin health and what it means to protect yourself from any damage. In the end, prevention is the best medicine.” l

It’s been over two decades since founder Maureen Kelly began her entrepreneurial journey from her one-bedroom New York City apartment. Without a formal business background or beauty industry expertise, building a multimillion dollar cosmetics company from the ground up was initially based on hopes and dreams with a six-figure debt to match.
Determined to make her mark, after several failed attempts, one yes changed the course of her destiny as those hopes and dreams quickly turned into reality, and there was no turning back! Tarte cosmetics went from being virtually unknown to appearing in top magazines and exclusively debuting at Henri Bendel in 2000—a full-circle moment and a dream come true. As an innovative force in the cosmetics industry, Kelly is still involved in the day-today operations alongside her all-women-led C-Suite team, ideating ideas and creative concepts. With the brand’s continued success, paying it forward is nonnegotiable. The mom of two has her sights set on helping others achieve their entrepreneurial endeavors providing mentorship, opportunities, and funding, all while continuing to grow her beauty empire. NEW YOU spoke with the founder and CEO about building confidence in the face of adversity, advice for aspiring businesswomen, and what’s next on her career bucket list. Read on for more.
NEW YOU: What made you become an entrepreneur and enter the cosmetics industry?
Maureen Kelly: I wanted to start a makeup company because I am one of seven children, and my mom is from Ireland. Because of this, she always created natural antidotes for us. If my sisters and I had a pimple or a blemish, she would mix aloe with turmeric. We never bought our products from the store like other teenage girls. Fast forward to when I got older, and I could buy my products or go to the makeup counter and get my makeup done; I would flip over the box, unable to pronounce one ingredient, and I realized they were full of very unhealthy ingredients. My mom also grew up on a farm in Ireland, so we had a lot of animals when I was growing up. It made me sad that back then, mostly all cosmetic companies were tested on animals. So I wanted to create a cruelty-free makeup brand formulated with healthy ingredients.
NY: Experiencing rejection as an entrepreneur is inevitable. What advice do you have for building confidence in the face of adversity?
MK: It’s imperative not to let imposter syndrome hold you back nowadays. That is common, and even I am guilty of it. You want to ensure you keep yourself from falling into it. Believing in yourself is so important. A big ego doesn’t have to be a bad thing. I am humble, but I feel very confident in who I am and what I’m doing, and you should too.
NY: You’ve already accomplished so much. What are some of your other aspirations on your career bucket list?
MK: I feel fortunate to have accomplished what I have to this day. My Northstar is definitely lifting up other women. That is what drives me. I started a non-profit six years ago called Heart to Tarte, and a big part of what I do is giving back. It’s been a big part of my DNA since day one. In the early days, when we weren’t making enough money, we couldn’t afford to give back. Back then, instead of giving money, we used to provide products to homeless women’s shelters. Fast forward, we can donate money, and now we do some incredible initiatives! We give back to teachers by clearing their lists, and we’ve cleared over a thousand teachers’ lists. We also help many female entrepreneurs in assisting them in starting companies.

A BIG EGO DOESN’T HAVE TO BE A BAD THING. I AM HUMBLE, BUT I FEEL VERY CONFIDENT IN WHO I AM AND WHAT I’M DOING, AND YOU SHOULD TOO.
NY: Has this been the most rewarding part of your career so far?
MK: The most rewarding part of my career so far is definitely creating the non-profit Heart to Tarte because we’ve been able to do so many things within it, such as giving back to the teachers. We have our Ship Your Future Small Business Awards, where we have been able to give back and help amazing female founders and entrepreneurs start their businesses.
I also have an all-female C-suite, which is very unusual in the cosmetics industry. They help mentor young women in college, helping teach them how to craft their LinkedIn pages, resumes, and things like that. Lifting up women makes me so happy and is something I am most proud of.
NY: What would you say to another woman looking to start her own company in 2023?
MK: I would say to a woman who is starting or wants to start her own company in 2023 to go for it and do it inch by inch, day by day. When I look back and think about what I did, I had no experience and no money. I started on credit cards and a vision board. I didn’t even know how to do an Excel spreadsheet at the time! I was actually cutting things out of magazines and putting them on my vision board. For me, that was my Excel spreadsheet because I didn’t have a business background, and I didn’t have experience in this industry. So if I can do it, you can do it.
NY: You speak to a lot of your successes. However, was there ever a moment in your career where you wanted to give up, but you had to push through and garner that resilience spirit?
MK: Yes, early on, when I had all of the cosmetics created, I was calling Henri Bendel, Barneys, and Bergdorf Goodman to try to get someone to launch the makeup. No one was calling me back, and I left at least four or five messages. Then I started to have some real panic set in that I was going out of business before I even began.
I left a final message, and it was a seventh message for Henri Bendel saying I’m about to launch at Bergdorf Goodman. It was a little white lie, and I do feel bad about that to this day. But lo and behold, she called me back and allowed me to come in and show my products. I knew if I could show her the products, she would love them. And she did!

As a beauty editor at several top magazines, the concepts of “youth” and “glamour” have been more than my job. They are my religion, complete with their own daily demonstrations of devotion. I love feeling pretty— and I always have—so it has never been much of a chore to practice what I preach—a.k.a. staying current with skin innovations and makeup offerings.
That said, would I ever leave home with undone hair and zero makeup? I don’t think so. Even when headed to the gym or out for a quick errand, I’ll rely on tinted lip balm, under eye concealer, and smoothing cream to tame my hair. One day, however, I was running late and absolutely, utterly unable to complete my laborious regimen. I proceeded to completely unravel. It was out of my hands; I had to face the world without doing my face. And I had a total meltdown.
It was then that the realization hit me: I was that woman so dependent on makeup and product that an errant blemish or split-end would tap a profound source of insecurity. What’s so wrong about the face I was born with, and the hair my ancestors passed down to me? As a little girl—and well into my teens—I felt good enough. I knew that I was pretty enough. At some point that all changed, without my realizing. Suddenly I was mad, really mad.
The time was nigh to see how long I could go without my beloved beauty products. I set out—in January, no less—to see how the world would receive the strippeddown “me.” That first night, I simply brushed my teeth and rinsed my face. This was the face I’d present to my world for the next 14 days—see-through eyelashes, super-pale skin, and unruly hair (that would never have been blonde in the middle of winter without a colorist).
The next day proved challenging to my anti-product revolution. New York Fashion Week was roiling the city, sending hordes of style-obsessed fashionistas to every neighborhood I cared about. They were coiffed and painted; they were everywhere. I wasn’t wearing moisturizer. Dismayed yet determined, I proceeded with my day.
That night, I opted not to wash my face. The next morning I woke to dry, raw-feeling skin. I took a quick shower, dried myself off, and found myself staring

longingly at my La Prairie body cream. Normally I’d apply it liberally from stem to stern, but today I simply pulled on my jeans and ignored the scraping of fabric against my legs. For a few days, I would find myself mindlessly reaching for the lip gloss at the bottom of my bag. It was difficult to forego the boost of tinted shine, but I persevered. Painted lips were always easy, but this untouched face—now exposed to the world for 48 hours—started to feel like freedom.
One evening at a party, I made no mention of this experiment , and no one seemed to notice. Wait, I thought. Do they think I’ve always looked like this? Later, in line for the restroom, a handsome and age-appropriate man stepped next to me and smiled. “How’s your night tonight?” he asked. We proceeded to engage in some world-class small talk and—unless I’m crazy—he was flirting with me. Minutes later, as I stared into the restroom mirror, it hit me: There are those guys who go in for painted perfection. And then there are other guys— great guys, at that—who prefer a more natural look. By loosening the reins on my outside appearance, I was sending a more easygoing, approachable vibe to those around me. My experiment was somehow becoming a win-win situation.
By the end of the week, however, I was really missing my old “look.” A publicist friend and I were dining at our favorite West Village spot, and I couldn’t stop focusing on her Bordeaux lips and long black lashes. These attributes are primal components of feminine allure— hence, the application of mascara and lipstick. In the
battle of the sexes, women like my friend rule victorious, and man, that can be fun. But wait, has validation from the opposite sex played a larger role in this than I realized?
I turned to some guys at a nearby table—bankers types giving off a real “love ’em and leave ’em” vibe—and asked for their perspective on my little experiment. “You must have some amazing genes,” responded one of them, sounding downright genuine. “You’re gorgeous.” Now, he could’ve been lying We’ve all been fibbed to, at one time or another, by a slick guy like this. But it felt real. More important than his opinion was mine: Yes, I do have great genes. And dammit, I am gorgeous—without a stitch of makeup.
Two weeks later, my makeup hiatus had concluded. It was cold and snowy, and I had a dinner to attend. This was it—I’d gone au naturale for what felt like eons, and the time had come to introduce La Prairie back into my life.
I smothered my skin with the rich, moisturizing cream and reveled in its TLC. I swept on a small bit of mascara and applied some sheer pink lip balm. Why, hello there. It was a blissful moment, yes, but all the more blissful thanks to my newfound knowledge: “Made-up me” is just one of my shades. As the years go by, my imperfections tell me who I am and remind me of the life I’ve lived. It’s all part of the big, beautiful picture.
I thought about curling my hair, but stopped myself. I was fine as is—better than fine—and would be from here on out. l
