Beverley Town Council is delighted to once again welcome you to the Beverley Food Festival.
As Mayor of Beverley, I am proud that the Town Council continues to run this event, as it has become not just incredibly popular with stallholders and shoppers alike, but it also receives much acclaim. Winning local, regional and national awards, our Food Festival is now recognised as one of the best of its kind in the north and possibly the whole of England. It is a tribute to all those food producers who sell their delicious wares, the chefs who give their time to take part in the cookery theatre, the volunteers, funders, supporters and past town councillors that the festival is better than ever before as it celebrates its 13th year. However, it would not happen at all if it wasn’t for our Town Council staff, in particular town clerk Helen Watson, who has spearheaded the festival from the start and continues to be its main driving force.
When I was a lad, Beverley town centre was full of independent traders, many of them family-run and all of them unique in their own ways. Over the years I, like many other Beverlonians, have seen things change, with now only a handful of longstanding local shops remaining, whilst national high street names dominate the town. Despite this, it’s always great to see new independent shops open up, as they add something special to the town and I wish all of them good fortune. One thing that continues to go from strength to strength is our hospitality trade, with many independent cafes and restaurants rightfully receiving much regional and national acclaim… and we mustn’t forget the pubs! For centuries, Beverley has served the wider rural community as a central point for trade and commerce, alongside being a tourist destination. Over the years, whilst going about their business or enjoying their leisure time, thirsty visitors and locals have supped a lot of good ale in some fine establishments. Although some wonderful old Beverley pubs have now been lost to history, I am pleased that so many of our historic hostelries are still thriving and will hopefully continue to do so for many years to come. Beverley Food Festival harks back to that bygone era of small, family-run enterprises, which Beverley was once known for. All the stallholders in attendance are plying their own culinary trades, often in the way food producers have done so for decades, if not centuries. Our award-winning event also reflects Beverley’s tradition of holding markets and fairs, which were originally permitted by ancient royal decree and have been a focus of the town for centuries.
Finally, thank you to all of you – the members of the public – who come along to experience the tastes, aromas and atmosphere that fill our historic market place on this festival day. If you are a visitor, use the festival as a taster and come back another day to experience more of our history and hospitality. LOCAL FOOD AWARDS 2018 This year, Beverley Food Festival has revised the way it is judging the fabulous local winning produce.
The judging panel will consist of experience judges such as HEYHA Chair Paul Vinsen, Food and Drink writer and Radio Presenter Roy Woodcock , Food Festival Chefs David Nowell and John Robinson, and Town Clerk and Food Festival organiser Helen Watson.
As there are now so many stalls selling such a wide variety of produce, to include categories covering all possibilities would make the competition less inclusive. This year the awards will go back to basics, with no specific categories. Every local producer at the festival has been invited to submit an item of food to be assessed on its own merit.
The Awards will be presented in the Food Theatre Marquee at the Food Festival on Sunday 7th October. Good luck both to those who entered the competition and to the judges, who will have a no doubt delicious, but difficult task of deciding who will be the winners!
There will also be one overall “Best in Show” that will be crowned the best example of locally produced food that the Beverley Food Festival has to offer. There will also be Gold, Silver and

Cook Off Challengers put on a live Westenders show! One of our highlights is the annual Cook Off between presenters from BBC Radio Humberside, supported by local chefs.
Let’s see who hits the best notes in the Food Theatre. Our duo will be working under the supervision of celebrated local chefs, John Robinson from Beverley’s own Whites and Matthew Barker from The Westwood.
We are delighted to be joined once again by ‘Westenders’ presenter Jonathan Parker, who will be competing against his erstwhile co-host Marcus Heald. The pair will be going head-tohead and causing culinary chaos in the Cookery Theatre Marquee, to see who will be crowned king of the kitchen! With their infectious personalities and love of musical theatre, it promises to be quite a show.
This event always draws a crowd, so make sure you get into the Food Theatre marquee early to be guaranteed a place. An event not to be missed!
HEYHA Copper Saucepan Award for the Apprentice Chef of the Year 2018 Once again, Beverley Food Festival is proud to be hosting the final of the HEYHA Copper Saucepan Award, which takes place in the Food Theatre Marquee at 2:00pm.
Adam and Helen faced some stiff competition from four other excellent young chefs who took part in the HEYHA Copper Saucepan Cook Off at East Riding College on Monday 20th August. The other apprentice chefs were:
Congratulations to Adam Rothery (Willerby Manor) and Helen Mayoh (AAK UK Ltd), which have made it through to the final competition for the coveted title and trophy of the HEYHA Copper Saucepan Award for the Apprentice Chef of the Year 2018.
Their final challenge will be produce a two course meal in 40 minutes featuring local ingredients in front of a live audience - a main course featuring fish or seafood and a dessert.

Professor Fiddlesticks is a unique and colourful children and family entertainer, for parties, play-schemes, schools, fun-days and festivals. His show is a fast moving and fun range of circus tricks. Audience members are encouraged to try out various circus arts including devil sticks, balancing, diabolo, yo-yo balls, juggling and unicycling.

Beverley Brass Band was founded in 1969, for the purpose of fostering and facilitating the musical aspirations of members and to advance their musical knowledge and ability. The end result is the confidence to play in public; this is achieved by providing musical entertainment in Beverley and the neighbouring area at special events promoted by local organisations.
Beverley FM Radio will be treating Beverley Food Festival to a show on the Beverley FM stage broadcasting live from the Festival – why not pop over to their stage on the Market Place cobbles to find out more about this community station that is much loved in Beverley and in the hinterland surrounding the town.
Beverley Garland Dancers is a ladies’ team based in Beverley who dance North West Morris style with flowery garlands or fancy beribboned sticks and are affiliated to the Morris Dancers’ Federation. The ladies dance out at events and festivals to bring a spark of joyous, jingly, floral fun for spectators and themselves! The Beverley Garland Dancers are always looking to expand the team with new dancers and musicians so feel free to come and see how to enjoy yourself. All For One Choir is a network of choirs from all around Yorkshire and Lincolnshire who get together and perform uplifting songs that enrich the people who participate and watch. The choir who will be forming are based in Beverley and we cannot wait to hear what they have to sing!
Mambo Jambo Acoustic Roots duo, Mambo Jambo, (pictured right) a fantastic acoustic duo, with their own rhythm and joyful sound. They will take you on an exciting and joyous musical journey bringing together sounds from roots, world music, jazz and their own compositions. A Recipe for Success
Beverley is a place that is both rich in heritage and culture, yet also provides the 21st century services that people have come to expect. Since medieval times, when pilgrims and sanctuary seekers came from far and wide to pay homage to Saint John of Beverley, or seek sanctuary it has been a destination for travellers and tourists. The culture of the town has not significantly changed over the years as festivals, music and food are still a major attraction. In recent years the town has received many accolades, regularly featuring in “top 10 places to live”. It has also come to the awareness of television viewers across the county and indeed the world, thanks to locations being used to film such popular dramas as ITV’s “Victoria” and sporting events such as horse racing and the Tour de Yorkshire. Not a weekend goes by in summer without coach loads of visitors travelling to Beverley for either a visit to our markets and shops or a flutter at the races. At different points throughout the year the town holds festivals, including literature, food and drink, Puppet, Christmas and music-based events that cover a wide range of genre. There are pubs, cafes and restaurants galore, quirky independent shops and major high street names. With so much hospitality and retail, alongside cultural events and historic buildings, it is little surprise that tourism is a major economic factor that helps the town to thrive.

Described by the late Poet Laureate Sir John Betjeman as “...one of the most beautiful towns in England�, it has to be remembered that the parish of Beverley is not just a place for people to visit, but it is also home for upwards of 18,000 people. Whether your family has been here for generations, or you are a newcomer, we hope you find that Beverley has a strong sense of community spirit and friendliness. This was illustrated in 2018, when the town was selected to enter the national RHS Britain in Bloom campaign, after years of winning accolades with RHS Yorkshire in Bloom. There are many groups, organisations and individuals who give their time freely to help make Beverley a better and brighter place in which to live. This could be planting flowers as part of Beverley in Bloom, helping to preserve and promote our heritage through the Beverley and District Civic Society, assisting one of the town’s many sports groups or being part of a residents association there are hundreds of volunteers all working hard to make Beverley not just a place people want to visit, but to also help sustain a strong and caring community in which to live. Just like these groups and individuals, Beverley Town Council also serves the area. With boundaries that cover the main part of the town, its neighbours are Molescroft Parish and Woodmansey Parish Councils. Often mistaken for East Riding of Yorkshire Council, Beverley Town Council does not manage larger infrastructure elements such as highways, housing or street scene, nor does it deliver social services, adult care, etc. Instead, Beverley Town Council deals with very local things, such as allotment management, Beverley in Bloom, Christmas Lights, managing events (such as the Food Festivals, NGS Open Day, Great Get Together and civic and ceremonial duties), supporting community groups, consulting on planning issues (but not being the final decision maker), etc. It brings a very specific localness to the community it serves, whilst also acting as a conduit to the East Riding of Yorkshire Council, to endeavour to promote positive changes that benefit the town and its residents. Beverley: A Recipe for Success continued Being a member of Beverley Town Council can be a very rewarding experience that you need local passion for. There is the misconception that all councillors are paid –as is the case at East Riding of Yorkshire Council, but other than £250 optional annual expenses, Beverley Town Councillors give their time for free because they want to serve the community they love.
Beverley Town Council organises many events, develops community initiatives and tackles local issues, which as a councillor you can play a key role in delivering, including: l National Garden Schemes Allotments Open Day and Scarecrow Competition, which sees hundreds of residents visit the town’s allotments.
The Town Council is supported by a small group of staff members, who work to help bring a local uniqueness to the town to keep it alive both socially and economically for residents and visitors to enjoy. Town Councillors frequently work with other community groups, local projects, and local business , as it often takes people with different skills, experiences and interests to help community projects reach fruition.
l Local Acts of Remembrance each November and other civic events throughout the year. l The Beverley Food Festival in October and Christmas Food & Drink Festival in the Minster. l Representing the town at regional and national council conferences, to help develop the direction of local governance. l Joining the Beverley in Bloom or Brighter Beverley team to help brighten up the town. l Expressing the voice of local people as part of grass-roots government. l Working with East Riding of Yorkshire councillors and officers to help address the concerns of residents. l Conferring the appointment of Honorary Freemen of the town of Beverley. l Being part of the other events that bring the community of Beverley together. The above list in not exhaustive and more information about the roles and responsibilities of the Town Council can be found on page 27 and 29 The next local elections will take place in May 2019, at which point all 14 seats on the Town Council will be up for balloting. Although political parties do field candidates, independents are also important to ensure a wide spread of local representation. So, if you live in Beverley, love the town and have the time to carry out some voluntary work, why not consider standing for election to the Town Council? By doing so you won’t change the world, but you could end up being part of a community spirited group that engages with and support others in the town, to continue helping to make Beverley the special place we all know it to be.

A ‘Masterclass with Peter Sidwell’ We Welcome Back Peter Sidwell – 25th Anniversary Alumni Peter Sidwell is not only a chef, TV presenter and author of 5 cook books. He is an entrepreneur of multiple businesses across various sectors.

He has been a chef for 20 years, graduating from Beverley College in Yorkshire, before going on to work in several of the very best hotels in York and travelling through Europe, cooking his way around the continent. The bright lights of the big city were tempting for a while, but having furthered his training on the London restaurant scene, he decided that he’d like to get back to his roots to work on a passion of his; baking.
Peter has written 4 cook books with Simon and Schuster and 1 cook book for Lakeland. In January 2012 Peter opened his restaurant under brand licence with the Westmorland Group, serving local Cumbrian produce, and in 2014 opened his cookery school, now located in the countryside Keswick. www.keswickcookeryschool.com
Peter has continued through his career to do it his own way, having self-published his first cook book himself in 2008. He has built his career through investing in himself, his vision and his culinary abilities. Peter joined a local bakery near York, refining his skills and learning how to make great bread and pastry. Finally, having spent more time in a business suit than in his chef ’s whites, he decided to go it alone; a lifechanging decision and the beginning of Good Taste!

THE JORVIK VIKINGS BRING US FEASTS AND STORYTELLING TO ADD TO THE COOKING POT! Beverley stands at the edge of the Yorkshire Wolds, one of the most important archaeological landscapes in Britain for its quality and richness. People have farmed the area for thousands of years. They have left behind many prehistoric monuments, settlements, chariot burials, Roman villas, deserted medieval villages and Anglian cemeteries. The quality of these sites can compete with any in the country. Yet few people outside of the area know of their significance and fewer still visit them. York Archaeological Trust is working with Historic England and partners to learn where to focus activity and resources to develop the archaeological heritage of this unique farming landscape. The Food For Thought project is a conversation about the past and future investigation of the outstanding archaeology of the Wolds. It is an opportunity for us all to learn more about archaeological discoveries made so far and to inspire the curiosity needed to find out more. This is a chance for all to shape the resulting Historic England policies and plans that will help us to protect and preserve the archaeological heritage of the Wolds.

In this dish, Potato Gnocchi with Tomato Basil Sauce, the humble p a melt-in-your mouth delicacy sure to dazzle family and friends..

INGREDIENTS For the gnocchi • 4 large russet potatoes (about 2 pounds) • 1 teaspoon salt • 1 tablespoon beaten egg • 1½ to 2 cups all purpose flour Simple Tomato Sauce • 1 tablespoon olive oil • 2 cloves of garlic, minced • pinch of crushed chili pepper • 24 ounce jar Passata ( Italian strained tomatoes) • 2 sprigs of basil • salt and pepper to taste • ½ cup diced mozzarella • Parmesan cheese METHOD For the gnocchi 2. Preheat the oven to 375 degrees F. 3. Wash the potatoes under cold running water and pat dry. 4. Use a large knife and make a deep incision length-wise into each potato. 5. Place the potatoes on a cookie sheet and bake until they are tender, for about 1 hour. 6. Let potatoes cool a little but do peel them while they are still a bit warm.

Basil Sauce

Put them through a potato ricer. Alternately you can use a potato masher or a fork. Place the mashed potatoes in a large bowl. Add in the salt, 1 tablespoon of beaten egg and 1 and ½ cups of flour. Using your hands, mix well just until the flour and potatoes stick together forming a rough looking dough. Transfer the dough to a wooden board or work surface. Knead the dough lightly, gradually adding a little bit of the remaining flour if the dough is sticking too heavily on your work surface. (I didn’t need all of the remaining ½ cup of flour) Knead for 2 to 3 minutes. The dough should be smooth, pliable and just a little bit sticky. Cut off a section of dough at a time. Roll the dough in a back and forth motion until you get the thickness of your index finger. Cut the roll into 1 inch pieces. Repeat with the remaining dough. To shape the gnocchi, I used my little wooden gnocchi board with ridges. Alternately, you can use the back of a fork . Hold the fork at 45 degree angle, with the tines down on the work surface with its’ inside curve towards you. Take a gnocchi role, press it with your index finger against the tip end of the fork while quickly sliding it up along the length of the tines. Or simply use your index and middle
fingers by pressing both fingers down into the gnocchi and rolling quickly towards you. The gnocchi will flip over and have a pretty indentation. 24. Repeat with the remaining pieces of dough. 25. Transfer the gnocchi on a lightly floured cookie sheet and cover with a clean dish towel. 26. Set aside while you prepare the sauce. Tomato Basil Sauce 1. Heat the oil in a medium sauce pot over medium low heat and saute the garlic with the crushed chili pepper just until fragrant, taking care not to burn the garlic. (should take less then a minute). 2. Add in the passata, basil, salt and pepper and stir well. 3. Fill the bottle of passata three quarters full with water. Give it a good swirl and add to the sauce. 4. Bring the sauce to a boil then lower the heat, cover and simmer for about 45 minutes or until the sauce thickens and the sweet concentrated flavors of the tomatoes come through. 5. While the sauce simmers, fill a large sauce pot with water and bring to a rapid boil. 6. Add salt to the boiling water and then the gnocchi. 7. Once the gnocchi come to surface they are pretty much ready. Leave them floating for about 10 seconds. (If they stay in the water too long, they will become mushy). 8. Remove the gnocchi with a slotted spoon and place them on a serving platter. 9. Pour a little of the sauce over the gnocchi, stir to combine then mix in the diced mozzarella. 10. The heat of the tomato sauce will slowly melt the mozzarella. 11. Divide the gnocchi onto four plates. Top with more sauce and Parmesan cheese. 12. Serve while still hot. Serves: 4

Our resources are not enormous but we endeavour to provide the best service we can through our staff and the volunteers who work with us. We are all justifiably proud of our town and as a Town Council will continue to do our very best for all who live and work here. 14 newly elected Town Councillors have been in place since May 2015 and they will serve a 4 year term in office with election taking place in May 2019.

Festival, Christmas Lights and the Switch on event, Beverley in Bloom, NGS Open Allotment Day, Civic and Community events, Beverley Youth Coalition, financially supporting street lighting and litter bins, grit bins, distribution of money to local community groups via a grants fund and providing practical support to a number of other events and initiatives. It also has representation on a number of local strategic organisations and committees. Responsibilities, such as council tax, council housing, parking, street cleaning, schools, roads, pathways, leisure services, libraries, social services, education, etc. are managed by East Riding of Yorkshire Council. Beverley Town Council is there to help give the town a special identity and organise and support many activities that, whilst not statutory, add to the local economy, culture and social wellbeing. The parish of Beverley itself is split into the four wards of Minster North, Minster South, St Mary’s East and St Mary’s West. In total, 14 Councillors cover these wards.
Beverley in Bloom and Brighter Beverley Both are groups of wonderful volunteers who work together, with council support, to brighten, clean and tidy up the town. The groups are made up of volunteers, councillors and council staff. They are responsible for many of the floral displays around the town, and keeping the town clean which add to the RHS Yorkshire in Bloom and RHS Britain in Bloom, which takes place in summer.
The organisation is headed by The Mayor of Beverley, who is one of the councillors elected by their fellow councillors and acts as chairman of the council on an annual basis. This is an historic role with local significance, as the Mayor acts as an ambassador and figurehead for the town. The roles of both the Mayor and Town Councillors are unpaid, although a £250 annual allowance is offered to each member to support them in their duties.
The combined efforts of the Town Council and both groups hard work has, resulted in Beverley currently holding a Gold award, overall category winner from Yorkshire in Bloom, the Yorkshire Rose Award, along with the massive accolade of being a finalist in the large town RHS Britain in Bloom 2018.

These groups are always looking for willing volunteers to help raise funds, plant, and supports administration, litter pick, clean, weed and marketing skills to help with future strategy. Come and join the happy band and add some colour to the town!

Beverley Food Festivals Beverley Food Festivals are one of many events organised and held by Beverley Town Council for the benefit of the whole community, residents, businesses and visitors to the town. The Food Festival has won local, regional and national awards over the years. It won the REYTA Best Large Event in 2016 and a Countryside Alliance Rural Oscar for Tourism for the North of England, and was nationally commended for tourism. Beverley Town Council is proud to present these award winning events in conjunction with the community, Beverley Minster and sponsor groups who work together to improve the local economy and essentially help keep this beautiful market town alive!

The Christmas Lights Committee The Christmas Lights committee meets throughout the year supported by the Town Council to arrange the Christmas lights switch-on, throughout the town, in late November. The committee is made up of volunteers, councillors and council staff. In addition, the Beverley Christmas Lights Appeal Group arranges fundraising events, such as fashion shows, concerts, quizzes, bingo nights, beetle drives and flower demonstrations during the year to raise funds to pay for the lights. Why not get involved? The more people who volunteer, the more funds we can raise and brighter the lights will be.
