They don’t call Florida “The Sunshine State” for no reason. Soaking up the sun is part of our lives, and it’s important to take care of yourself while enjoying it. There is nothing better than hitting the beach with friends, golfing, gardening and everything in between on bright, sunny days to keep you happy and healthy. Did you know that when sunlight hits your skin it triggers the body’s production of Vitamin D? This “happy” vitamin is the key for great health since it helps lower high blood pressure, improves brain function, increases your quality of sleep and it can help promote weight loss. Experts even recommend “happy lamps” for those suffering from seasonal affective disorder (SAD). These lamps that mimic natural light help boost mental health. Then again, when it comes to soaking up the sun, moderation is best. Humans only need a recommended 15-20 minutes of sunlight each day. Too much sun and Ultra-Violet Rays (UV Rays, also referred to as UVA and UVB) can lead to premature aging, skin darkening as well as cancer-causing cells to form and multiply. LEARN WAYS TO PROTECT YOURSELF FROM THOSE HARMFUL UV RAYS: SUNSCREEN: Even though you may want to work on your tan, the higher the SPF, the more defense against those cancer-causing UVA and UVB rays. Don’t forget to apply 30 minutes before sun exposure and follow up with more layers of sunscreen every 2 hours or so. Note this: SPF 30 blocks out 97% of the harmful rays. COSMETIC PROTECTION: Don’t feel pressured to choose between makeup or sunscreen. Find

a great base with SPF and a setting spray with SPF as well that you can use throughout the day. Simple ways to enjoy the sun and protect yourself can make a world of difference in your overall health. AVOID PEAK HOURS: Seek shade from 10am4pm, and then you can really embrace happy hour with fun in the sun. Revamp your wardrobe with clothing and accessories that help block out harmful UVA and UVB rays...Here’s how: WIDE-BRIMMED HATS (3 INCHES): Soak up the sun in style, by finding a wide-brimmed hat to cover your face, neck and ears. Especially great if you don’t like sunglasses but still want to protect your eyes. UPGRADE YOUR SUNGLASSES: Sure, there are plenty of fun, inexpensive sunnies, but they aren’t actually protecting your eyes. Invest in a better pair that blocks 100% UVA and UVB rays to avoid eye wrinkles and future eye health problems. CLOTHING SWAP: Why stop with hats and glasses? Did you know that certain clothing fabrics also help catch and deflect UV rays? There are clothes made with fabrics containing an Ultraviolet Protection Factor (UPF). Find them. Wear them. There are plenty of great ways to enjoy the sun without degrading your health. Yield: 10 popsicles Ingredients 19 oz cubed seedless watermelon(about 3 1/2 cups) 5 1/2 Tbsp granulated sugar , divided 1 Tbsp fresh lemon juice 1/2 cup canned coconut milk , well shaken 13 oz kiwi (about 6 medium) 1 Tbsp mini chocolate chips

POPSICLES RECIPE SOURCE: COOKING CLASSY

Add watermelon, 2 Tbsp granulated sugar and lemon juice to a blender and blend until well pureed. Skim off foam then carefully pour into 10 popsicles molds filling each about 2/3 full (try not to splash on sides, I found it worked best to let it run down the outside edge then just wipe off that part later with a damp paper towel or q-tip). Sprinkle the chocolate chips over tops then using a popsicles stick gently push down to immerse chips (push towards sides so you can see them once the freeze). Wipe sides clean as needed. Cover with the lid and insert popsicles sticks. Freeze 3 1/2 hours. During last 30 minutes of popsicles freezing, whisk together coconut milk with 1 1/2 Tbsp sugar until sugar has dissolved, chill 30 minutes (you want it to be a nice pourable consistency after chilling, not too thick. If you find that it is stir in 1 - 2 Tbsp cold water to thin. I recommend chilling it because you just don’t want it warm or it will melt the watermelon layer when pouring in). Remove popsicles from freezer, remove lid and carefully pour a scant tablespoon coconut milk into an even layer over watermelon layer (again, it works best to pour it down the outside edge then wipe clean). Clean sides as necessary. Return to freezer, uncovered, and chill 45 minutes. Meanwhile, cut tops from kiwi and use a spoon to scoop flesh from kiwi while leaving skins. Transfer kiwi to blender along with 2 Tbsp granulated sugar. Pulse until well pureed. Force mixture through a fine mesh strainer into a bowl using a rubber spatula to remove seeds (at this point I mixed int just a tiny bit of blue gel coloring because mine weren’t the best shade of green, so that’s optional). Chill kiwi mixture 30 minutes. Remove popsicles from freezer and carefully pour about 1 Tbsp kiwi mixture over coconut layer. Return to freezer and chill until popsicles are solid about 2 - 3 hours. To remove popsicles from molds, turn tray to the side and run plastic molds under warm water several seconds (don’t let the water touch the kiwi portion at the top) then slowly pull from molds.

And you’d better believe that sweet advertising has worked on me…every time. LOVE me some good strawberries when they’re in season! In the past, I’ve tossed them in everything from salsas to salads, shortcakes to cheesecakes, smoothies to sangrias, and everything in between. But every year, my inaugural recipe for strawberry season is always the same — this classic Strawberry Spinach Salad with Poppyseed Dressing.

This recipe makes four individual salads.

SALAD INGREDIENTS: 6 cups fresh baby spinach 1 pint strawberries, hulled and sliced 4 ounces crumbled gorgonzola, feta or blue cheese 1/4 cup sliced nuts half a small red onion, thinly sliced 1 batch poppyseed dressing (recipe below)

POPPYSEED DRESSING INGREDIENTS 1/3 cup avocado oil (or any oil, such as olive oil) 3 Tablespoons apple cider vinegar 2 tablespoons honey 1 tablespoon poppy seeds pinch of ground dry mustard (optional) salt and pepper Whisk together and pour over your salads.

Influenced by our environment, we are frequently, without our knowledge, being exposed to elements, such as cadmium, mercury, arsenic and lead so called “heavy metals” that can create long term toxic effects on our bodies and health. With heavy metals, contamination is so extensive nowadays that it is no longer a question of whether exposure took place but are the resulting levels in our bodies potentially hazardous now and/or in the future. Exposure to even mild levels of contamination are implicated in cognitive and neurological deficits associated with poorer mental health quality, that can symptomatically be difficult to decipher. Adverse health effects from even low levels of exposure can lead to a wide array of neurological disturbances and can be much more insidious in presentation than acute toxicity, which is, in contrast, rather obvious in its presentation. While the effects of heavy metal exposure may seem innocuous at first, chronic accumulation over time can create significant problems. One protein at a time, heavy metals can modify the function of our brain proteins, displacing the elements that we really need for proper neuronal function, and replacing them with ones that permanently alter their functions and removing their ability to function properly. This can create a variety of subtle and not easily recognized disease states. Living with chronic accumulation of heavy metals such as arsenic, bromine, cadmium, and mercury or lead from industrial pollution can have significant health consequences masked by seemingly unrelated symptoms of depression, anxiety, insomnia, headaches, memory problems and aggression. In other words, exposure to moderate contamination levels is implicated in cognitive and neurological deficits associated with poorer mental health quality, that can symptomatically be difficult to decipher. And unfortunately, these are only some of the

adverse health effects. Heavy metal exposure has also been implicated in creating and or accelerating heart disease. In fact, Chelation therapy, which constitutes the primary treatment for heavy metal exposure, was recently found to markedly reduce the number of cardiovascular events in patients with coronary heart disease (the disease that causes heart attacks) in those patients with associated diabetes. This study was a national, double blind, placebo controlled trial (TACT-2) conducted by the National Heart, Lung, and Blood Institute along with other prestigious institutions. With all this known information about heavy metal toxicity and the benefits of chelation, why aren’t most physicians offering this therapy? There is no easy answer, but many things have changed to allow this to become a much more standard practice especially for institutions like Essentials that have such a broad spectrum of medical expertise and easy access to the most recent blood spot testing technology that allows for simple screening for heavy medical toxicity.
