The broth is very critical ingredients to form the taste of a meal. Let’s learn the amazing power of Japanese style umami dashi – flavorful broth. Yuka Honda will show you how to make four kinds of dashi (broth) – basic broth with Kombu seaweed and bonito flakes; vegan broth with Kombu seaweed and dried Shiitake mushroom; chicken broth; and vegetable stock. The recipes you will learn and taste are ginger rice cooked with vegan broth; hot pot oden style simmered root vegetables and tofu cooked with basic broth; Asian style chicken noodle soup with nappa cabbage cooked with chicken broth. Urban Walking Poles for Balance and Mobility A pair of poles may be the best way for you to prevent a fall. When used correctly, walking poles can strengthen muscles in your core and improve cardio vascular health, muscle strength, and balance. Poles can unweight sore hips, knees ankles and feet easing pain in the moment and even pain long term. For a mini-introduction on urban walking with poles attend Fall Prevention Day on April 1st. PICKLEBALL CLASS
Pickleball is a popular activity which doesn’t require previous experience. It is a reduced version of tennis with a smaller court, a little larger racquet than a ping pong paddle and a whiffle ball. Play is like tennis, but the ball does not travel as fast as a tennis ball. It’s played with partners so it’s less strenuous than singles. The class will be five weeks on Thursdays from 9:30 am to 10:30 am. At the end of the classes, you will be free to join the main players on Tuesdays and Thursdays. Free to attend with your 2016-2017 Annual membership until August 31, 2017. Always consult your doctor before participating in any physical activity.

IMPORTANT INFORMATION REGISTRATION: Fall quarter starts the week of January 9, 2017, with the exception of some tours and classes. PAYMENT: Payment by check, credit card, or cash is accepted. We accept Visa, MasterCard, Discover Card, and American Express. MEMBERSHIP FEE: $30 annual membership fee (non-refundable) is valid from September 2016 through August 2017. PARKING: For classes at the Seattle Buddhist Church (SBC), students may use the church parking lot on the corner of 16th Ave. S. and S. Main St. For classes at Nikkei Manor, parking is limited. For classes at Bellevue Children’s Academy, parking is available on site. Please carpool or use public transportation whenever possible. Nikkei Concerns is not responsible for any loss or damage for parked vehicles and/or contents at any location. TOURS: Most tours depart from the SBC parking lot (SBC/PL) on the corner of 16th Ave. S. & S. Main St. Return time is always approximate. Only those with confirmed reservations will receive a reminder telephone call from Nikkei Horizons staff prior to the tour date. CLASSES: Classes are scheduled for 8 to 10 weeks, unless otherwise specified. CANCELLATION: Nikkei Horizons reserves the right to cancel a class, workshop, or tour if it does not meet minimum participation requirements. In general, for a class or workshop, the minimum number of participants is four to five students. For tours, the minimum varies.
REFUNDS & CREDITS: In the event of a cancellation, a refund or a credit will be provided. Full tuition credit will be granted for classes, if you withdraw before the start of the second class. For workshops and local tours, you must withdraw 10 days before the date of the workshop, in order to receive full tuition credit. A credit will not be granted after the second class, except in the case of a medical emergency. In such cases, a copy of a doctor’s order is required. Credits are valid until they are used up to take other classes. Refund checks take 2~3 weeks to process. Annual memberships are not refundable. WAIVER: All participants must sign a Nikkei Concerns Waiver on the registration form each quarter before attending any class, workshop, or tour. IMPORTANT NOTES: Registrations are processed on a first-come, first-served basis. Registration is complete when full payment is received. • Only those registered for a class or tour may participate. • Students will NOT be contacted prior to the start of a class or workshop unless it is cancelled or they are placed on the waiting list. • Those on a class, workshop, or tour waiting list must be paid in full and will be notified as openings occur.
