Home sweet home, safe and sound Simple changes can help keep you and your family safer at home. Home safety is important at every age, and both the young and young-at-heart will benefit from your efforts. Try some of these tips, use your common sense, and invest in your family and personal safety.

• Replace shag and high-pile carpet (especially if worn out) with non-slip rugs, low-pile carpets, or solid flooring • Use non-skid strips on stair steps and wear sturdy shoes, not slippers or just socks • Use good lighting throughout your home and include automatic timers to light your way when your hands are full • Improve your strength, balance, and flexibility with gentle exercise, including resistance training

Avoid burns • Wear fitted clothing while cooking • Avoid distractions when you cook and do not leave cooking food unattended • Use oven mitts instead of potholders when you remove hot items from the oven • Reduce your hot water heater temperature to 120˚ F or install anti-scald equipment

Dear Friends, With images of safety in mind, I began to count all the ways we concern ourselves with keeping our minds and bodies safe so that we may live long and prosper! The hot summer heat waves we’re experiencing brings to mind keeping cool and hydrated. It also is important to practice safety during water activity and outdoor recreation. That could mean preventing: a fall from playground equipment for children; an injury when playing sports, or a misstep in the garden for elders. Sometimes it could just require applying common sense, e.g., don’t leave your bbq grill unattended, other times we could decide to take a safety course, such as the senior drivers’ classes through Nikkei Horizons. Technology safety measures include important online precautions, whether financial- or social media-related. At times there may be tools and equipment to help us gain security – whether a car seat or a walker, or increased lighting. Personal effects such as hearing aids or contact lenses can sharpen our senses so that we feel safer wherever we are, at work, at home, at play. No matter one’s concerns for safety, we can always increase our awareness of the hazards to avoid. Hopefully, you’ll find something in this issue that will trigger an “Aha” and move you to act with safety in mind. In the words of my late father: “Safety First!”

Dear Friends, Safety is the first, middle, and last priority in everything we do and also a state of mind… I relate it to a Japanese word, Anshin… defined as “peace of mind.” Nikkei Concerns (NC) and our programs are in many respects a “safety net,” for we are truly unique in our ability to provide high-quality care/services combined with much-needed cultural sensitivity/language capabilities… for you! Below are interesting tidbits on how YOUR Nikkei Concerns (NC) puts safety “front and center!” • The Nikkei Concerns Way protects and promotes NC’s founding purpose and values throughout the organization and informs us daily on how to “think and act!” • Care & Service – We immediately address/rectify any situation that may/will cause harm. Since 2011, Seattle Keiro has been a “5 Star” skilled nursing facility based on annual inspections that include clinical, environmental and dietary safety by the State & Federal governments and the Fire Marshall. Nikkei Manor recently received an outstanding inspection report… again! We are pursuing capital improvements, increasing use of technology and planning services that will support living more safely at home! • Employee Empowerment – We continue to enhance staff trainings and promote leadership. Staff Safety Committees at Seattle Keiro/Nikkei Manor consistently inspect our facilities, report on unsafe conditions and ensure resolution. In 2011, NC was rated #1 in our state association for lowest L&I claims loss ratio and came in second in 2013… we missed being #1 by .04%! Job security is the most important criteria for employee satisfaction… since 2011, NC’s “staff turnover” rate is 10% versus the industry average of 30%! • Events & Education – Nikkei Horizons offers safety education, and the 3rd Annual Living Well Health Fair (on 10/18/14) shares a variety of safe and healthy living practices! • Planning for the Future – The Board is currently developing a strategic plan that will safely and effectively guide us as we transform and successfully grow our service. And to protect and enhance the care, services and viability of NC, we are pleased to have Janice Deguchi join the NC Family as our Chief Operating Officer! Introducing our new COO, Janice Deguchi Janice Deguchi joins Nikkei Concerns (NC) as Chief Operating Officer (COO), beginning this September. Janice shared, “I am thrilled to join the NC team and look forward to helping the organization achieve its vision. It is an honor to continue the legacy of NC’s visionary founders, and I am grateful for the opportunity to have an impact on our community.” “NC is extremely fortunate to have Janice join our family. She has a long-standing commitment to community as a leader, advocate and servant and has successfully led many organizations including Denise Louie Education Center to greater heights. Janice’s core values are truly aligned with NC’s and combined with her diversity of skills, experiences and relationships will only elevate our ability to successfully integrate with health care reform and grow our organization and service. The importance of Family ”My mom is 87 years old, and spends her time gardening, crafting, going to church or the casino, line dancing and doing things with her friends and family. She is always there for me, for encouragement, recipes, and plant starts. Over the years, she’s helped me pay for school, babysat my children at night or when they were sick so I could go to work and evening meetings, and so much more. She has sacrificed much to help me and my family. Family is why NC needs to remain strong, for her and so many moms and dads like her living at or participating in NC activities.”

Connecting with community “I attended church at the Seattle Betsuin about the time the time my new position

was announced and after the service, Hiro Nishimura asked if he could talk to me. I’ve admired Hiro over the years as a war veteran and a caring, genuine and spiritual person. It touched me when he said that he was glad I was joining Nikkei Concerns. He shared with me that unbeknownst to him, his daughters put him on the waiting list for Nikkei Manor two years ago, and he is now happy to be a resident there. I feel so honored to have an opportunity to impact the community and make it a better place for people like Hiro Nishimura.”

What the future holds “I am looking forward to meeting the residents and participants in NC programs and services. I am excited to meet the staff and learn all I can about the services NC provides, the impacts of the Affordable Care Act and working with the NC team to strengthen and grow the organization.” As NC’s new COO, Janice will help grow current programs (including Seattle Keiro Rehabilitation and Care Center, Nikkei Manor Assisted Living Community, Nikkei Horizons Continuing Education Program, Kokoro Kai Senior Activity Program and NC Transportation Services), create new programs (NC Home & Community Based Services) and form partnerships with key health care organizations to create a continuum of care that will enhance the quality of life and health and wellness of the Asian Pacific Islander elder community. Her extensive experience in strategic planning, program development/ management, advocacy, fundraising, and capital projects will support NC as it launches into a new era of senior health care services.

Be Genki! Summer Food Safety / 夏の食品衛生 The hot weather that we’ve all been waiting for is finally here, and it has been perfect to picnic and cook outdoors. But the warm weather also creates the perfect environment to support the growth of harmful food bugs. The important point is to have safe and healthy food with an emphasis on preparing and storing food properly. Use a thermometer

Keep it cool

A thermometer is the number one tool to make sure your grilled goodies are cooked to the perfect temperature to destroy pesky pathogens. Studies show that checking the color of the food isn’t an accurate way to tell if your food is cooked through. The key is to never let your picnic food remain in the “Danger Zone” between 40° F and 140° F.

Have enough coolers with ice or frozen gel packs in which to store the perishable foods like meat, poultry, fish, eggs and salads. You want to keep the food at 40 degrees F. Pack foods right from the refrigerator into the coolers. Don’t put the cooler in the car trunk; carry it inside an airconditioned car. At picnics, keep the cooler in the shade and keep the lid closed. Replenish the ice if it melts.

Monitor leftovers

Everybody dance! Residents, family members, community guests, volunteers, and staff celebrated summer at the annual Seattle Keiro Summer Festival! Everyone enjoyed music, dancing, games, and food. We brought bon odori, Seattle Keiro-style, to the residents. Thanks to the Seattle Betsuin Dancers, Northwest Taiko, Matsuri Taiko, and Okinawa Kenjin Kai. シアトル敬老で恒例の夏の盆踊りが 開催され、伝統的な踊り、 モダンダン ス、 ゲーム、料理を楽しみました。

The 5th Annual Ayame Kai Steak Dinner Fundraiser brought the community together for one big family feast. Around 600 hungry cowpokes chowed down on great grub. Guests enjoyed the bake sale, silent auction, free prize drawings, and Brown Bear Car Wash ticket sales. (They’re a super deal – $6 for one, $5 each if you purchase two or more. A few are still available at the front desks of Seattle Keiro and Nikkei Manor.) A huge domo arigato to the tireless members of the Ayame Kai Guild! あやめ会は、第5回ステーキディナーでコミュニティから資金を集めました。

The 13th Annual Founders’ Golf Benefit and the Fashion Fête occurred after the Tayori printing deadline, but we’ll include them in the Winter issue later this year.

The NC Values Committee (a diverse team of NC employees from both Nikkei Manor and Seattle Keiro, dedicated to improving employee spirit and service at Nikkei Concerns) hosted the party, showcasing the many talents of the Nikkei Concerns staff. Our musical employees danced, sang, and played their hearts out and had everyone joining in!

Don’t let the scammers get your $$$ By Phil Jordan, AARP Scammers target us through e-mail, over the telephone, by mail, and over the internet. Last year the Federal Trade Commission (FTC) received more than two million complaints about fraud, with more than $1.6 billion paid to scammers. Identity theft continues to be the most common fraud reported to the FTC. Nearly half of the consumers who filed complaints were 50 years of age or older. Despite these alarming statistics, consumers are learning to fight back. AARP is helping in the fight against fraud, partnering with Washington State Attorney General Bob Ferguson and reaching out to consumers through the Fraud Watch Network. The Fraud Watch Network brings information to consumers in several very important ways: • The AARP Fraud Fighter Call Center speaks directly with consumers over the telephone to prevent fraud from happening. They also help consumers repair the damage when they have been scammed. The toll-free number is 1.800.646.2283. • People who subscribe to the Fraud Watch Network receive timely e-mail messages detailing the most current scams that are targeting seniors and other consumers. To sign up for these “Watchdog Alerts,” go to the AARP website (www.aarp.org). • AARP members are periodically invited to join Washington State Attorney General Bob Ferguson in Telephone-Town Halls. These are opportunities for consumers to call in and hear about the latest scams and ask the Attorney General and other experts about fraud.

Phil Jordan has worked on issues facing seniors and people with disabilities for nearly 15 years. While working for the King County Prosecutor’s Office, he coordinated a large grant seeking community engagement around issues of elder abuse, neglect and financial exploitation. As a part of this effort, he spearheaded trainings that reached out to a wide variety of community organizations working with seniors. Previously, while working for the Washington State Coalition Against Domestic Violence, he coordinated a collaborative project to create better access to sexual assault and domestic violence services for people with disabilities. He also worked for Disability Rights Washington working on numerous projects including mental health insurance parity, reasonable accommodations in courtrooms and access to voting for people with disabilities.

Daikon Steak Daikon radish is very low in calories and rich in vitamin C. It also contains active enzymes that aid digestion, particularly of starchy foods. Black pepper Method Rinse daikon well and cut in ½” round slices. No need to peel the daikon . Rub both sides with a sma ll amount of sea salt and steam until semitranslucent. Place cooking oil and slic ed garlic in a frying pan , then warm up the pan low heat. on When garlic aroma rise s from the pan, add stea med daikon. Increase the heat to medium. Cook both sides. Add soy sauce, turn off the burner, and cook wit h the remaining heat to create a glazed effect wit hout burning the daikon . Place on a plate and spr inkle with black pepper , as desired.
