INTRODUCTION

Notre Histoire Tout a commencé avec un voyage… et un carnet. Il y a dix ans nous sommes partis pour une aventure qui allait changer nos vies, voyageant à travers le monde et rencontrant de talentueux artisans ainsi que leurs magnifiques ouvrages en chemin. Cela nous a donné envie de faire quelque chose de différent, et nous avons donc déménagé dans le Devon et avons commencé à travailler avec des artisans du monde entier, en soutenant et célébrant leur savoirfaire par la présentation de leurs produits à une audience plus large. Nous avons emprunté notre nom à une hutte en Zambie, nous avons noté notre business plan sur un carnet de note et nous avons passé notre première commande pour de superbes carnets en cuir que nous vendons toujours aujourd’hui. L’effectif de notre équipe ainsi que le nombre de nos produits ont peut-être grandi, mais nous avons toujours la même approche de terrain – rencontrant et travaillant avec chacun de nos artisans personnellement. C’est comme cela que nous savons que chacun de nos produits ont une histoire à raconter…

Café

Cela fait un peu plus de deux ans que nous sommes tombés pour la première fois sur cette magnifique cour avec des granges en pierre, située juste à l’extérieur de Totnes. Les bâtiments étaient initialement dédiés à l’agriculture et le bétail, puis ils ont été abandonnés pendant de nombreuses années. Malgré l’exposition aux éléments et au manque d’entretien il y avait une certaine magie dans l’endroit. Notre premier aperçu du site a été suffisant pour nous donner de l’inspiration, et comme nous nous tenions, debout, entourés de poutres en ruines, de gravats ainsi que de bouses de vache nous avons vu notre premier magasin prendre vie.

UN CADRE DETENDU POUR UN DÉLICIEUX CAFE ET DE TRÈS BONS PLATS Notre café est situé à l’intérieur du magasin dans un espace calme et atmosphérique, décoré avec des produits Nkuku ainsi que des matériaux de récupération. Le café sert un café artisanal de premier choix torréfié au bois; servi par des serveurs expérimentés, chaque mélange a été personnellement sélectionné assurant ainsi une délicieuse saveur. Nous avons pris soin de sélectionner des fournisseurs locaux de produits frais, et notre menu propose un délicieux choix allant de plateaux de charcuterie et de fromage à des pizzas cuites au feu de bois.

Les bâtiments en pierre sont disposés en forme de fer à cheval avec une cour intérieure. Cet espace est orienté sud et même les jours de froid si le soleil brille c’est un endroit abrité très agréable. Nous avions envie de garder les caractéristiques d’origine ainsi que de rester fidèle au bâtiment. Conformément à nos principes Nkuku nous souhaitions restaurer plutôt que reconstruire. Cela a signifié un certain nombre de projets de recherche, en cherchant des matériaux de récupération ainsi que d’autres ressources appropriées.

Notre très belle poterie Mali est faite à la main dans le sud de l’Inde en participant à un projet de développement durable qui offre une formation et assure un emploi aux artisans venant de milieux défavorisés. Le programme se concentre tout particulièrement sur la valorisation des femmes sur le lieu de travail.

Nous avons été captivés par le savoir-faire traditionnel utilisé pour créer cette superbe collection. Le procédé de fabrication de la poterie Mali est long et il se compose de différentes étapes. Le four à céramique est ce qui nous a fait nous arrêter et nous interroger, il est fabriqué à la main à partir de briques et il est chauffé par un feu avec du bois provenant de fermiers locaux. Une fois que vous avez entendu l’histoire derrière ces pièces, cela rend la tasse de café ou de thé dans un mug Mali encore plus spéciale.

Food for Thought A DELICIOUS COLLABORATION

Fundamental Sourdough - The most sustainable bread in the world To celebrate fair trade fortnight this year we curated our perfect fair trade breakfast. We combined our own fair trade products with the skill and knowledge of chef and food writer Vanessa Kimbell. Vanessa is a frequent contributor to BBC 4’s Food Programme and leading expert on the Sourdough section of the World Bread Awards. Her recent cookery book ‘Food for Thought’ blends her own delicious recipes with a real passion for fair trade and sustainable ingredients.

Equipment Recommended 1.5kg banneton baking dome Grignette, for slashing the dough

For the Sourdough 650 g water at exactly 28 centigrade 200g levain *, refreshed using equal parts flour to water and mixed 8 hours before you are ready to bake. 1kg stoneground organic white flour, plus extra for dusting 20g fine sea salt Organic polenta flour, for dusting Makes 1 x 1.85 kg loaf *Levain is made by taking 20g starter and adding 90ml cold water and 90g strong white organic flour. Leave covered with a sample cloth on the counter for 6 â&#x20AC;&#x201C; 8 hours, you will see that it is bubbly and ready to use.

Mix (at about 6pm) In a large bowl, whisk the water and levain together. Add the flour, salt (combined well) and mix until all the flour has made contact with the water and there is no more dry flour. Do not knead

1st Ferment Cover the bowl with a clean damp cloth and leave the dough to rest in a cool environment for 30 minutes. This is called autolyse.

Fold (6.30pm) Lift and fold the dough over on itself. Do a quarter turn of your bowl and repeat three more times. Over the next hour lift and fold your dough again twice.

Shape (7.30pm) Shape the dough lightly and place into a dusted banneton. Dust with white flour and cover with a damp tea towel. Leave to prove in the fridge for 8 hours.

Bake (8am) The following morning preheat the oven to 220 centigrade/ 200 centigrade fan/ gas 7 for at least 30 minutes before you are ready to bake with your baking dome in the oven. The baking dome must be very hot. Take the dome out of the oven and sprinkle a little polenta flour over the bottom. Put the dough into the dome and slash the top of the brad using a grignette (or lame), then place the lid back on top and return to the oven as quickly as possible. Bake for 45 minutes then reduce the oven heat to 190 degrees centigrade 170 fan / gas 5 and bake for a further minutes. Finally remove the lid and bake for another 10 minutes. For a really authentic loaf bake until you have a dark brown crust. Once the bread is completely cool store wrapped in a piece of cotton or linen bread bag or tea towel. If you donâ&#x20AC;&#x2122;t like crunchy crust then wrap the bread in a tea towel while it is still warm. To accompany your delicious bread â&#x20AC;&#x201C; we recommend a generous helping of homemade blackcurrant jam.

Le Manguier L’A P E R Ç U D ’ U N T R È S B E A U C O N C E P T D U R A B L E

Nous utilisons le manguier pour créer des pièces qui non seulement résistent à l’épreuve du temps, mais aussi tirent profit d’un très beau matériau ayant cessé de porter du fruit. Les manguiers sont initialement cultivés pour leurs fruits et dès qu’ils arrêtent de produire du fruit ils peuvent être abattus et utilisés pour fabriquer des produits en bois, cela permet ainsi aux cultivateurs de planter plus d’arbres et d’avoir également un complément de revenu.

M AROQUINIER DU RA JASTHAN

Ram a un diplôme en mathématiques, il est marié et a trois enfants. Ram vit à Jaipur mais il est originaire d’un village situé juste à l’extérieur de la ville. En plus de la poterie Ram est intéressé par les designs de l’art Moghol ainsi que les peintures traditionnelles sur toile de la culture rajasthanie.

Poonkubi est originaire du sud de l’Inde et elle a deux enfants d’âge scolaire. Poonkubi aime cuisiner, ce qu’elle a appris de sa mère. Elle prend plaisir à expérimenter avec les plats et inventer de nouvelles créations. Poonkubi apprécie aussi beaucoup faire du saut à la corde et écouter des chansons de l’Inde du sud

Harlal est un artisan du cuir. Il fait partie d’une coopérative au Rajasthan et il travaille avec sa femme. Harlal a soixante ans et après trente-huit ans d’expérience, il est certain qu’il maîtrise son travail.

Mohamed est originaire de l’état de Bihar, il est marié et a trois enfants. Son endroit préféré en Inde est le ‘‘Dargah Sharif’’. Qaund Mohamed rentre chez lui après le travail, il aime jouer aux jeux de société ‘Carrom’ avec sa famille.

Tasha est mariée et elle a un petit garçon de quatre ans. Elle vie a Jodhpur avec sa famille dans une maison de location qui se situe près du lieu de travail de Tasha et son mari, leur permettant de marcher ensemble tous les jours pour y aller. Son endroit préféré au monde est le village où elle a grandi.

FORGERON DU RA JASTHAN

Gyarsi est mariée et elle a cinq enfants, son ainé a maintenant vingt-sept ans. Elle travaille la céramique et son rôle est de finir chaque produit, en s’assurant que chaque pièce soit parfaite. Gyarsi aime écouter des chansons religieuses Bhajan traditionnelles en hindi.

Sunil est célibataire et vit à Billan. Il est très proche de sa famille et a beaucoup de proches avec lesquels il essaye de partager le plus possible son argent parce que, pour lui, la famille c’est très important. Sunil a travaillé avec le bois depuis presque trois ans et il aime le procédé qui fait évoluer le produit.

Jagdish est originaire de Jodhpur et il y vit avec sa famille. Il s’est récemment fiancé et il a l’intention de se marier bientôt. Jagdish va au travail à vélo tous les jours. Il est un très grand fan des films romantiques de Bollywood et son acteur préféré est Akshay Kumar.

Anil est marié et a quatre enfants. Il aime lire pendant son temps libre et il est intéressé par les travaux du professeur Ved Prakash sur la science des plantes et des animaux. Anil est aussi amateur de cricket – il aime jouer au cricket et il est un très grand supporter de l’équipe indienne.

Our metals come in various forms: industrial zinc, warm copper and golden brass. The marriage of metal and glass adds to the clean lines and contours of these collections. The metal is skillfully welded around the glass by hand; this handmade process means that there are weld marks on the joins of each piece, a feature that we love as it tells the story of how the product is made.

Nos métaux arrivent sous différentes formes : zinc industriel, cuivre chaud et laiton doré. Le mélange de métal et de verre embellit les lignes épurées et les contours de ces collections. The range includes beautiful leather journals with wrap around leather ties. Our rustic journals are handmade from leather by a cooperative of 40 families using traditional methods. Shagihad aime regarder et jouer au cricket. Son joueur préféré est Sachin Tendulkar. Il aime les vieilles chansons en hindou et sa chanteuse préférée est Lata Mangeshkar. Il prend plaisir également à regarder la télévision, tout particulièrement les chaînes proposant des films. Cela fait quatre ans que Shagihad est un tisseur. Nos collections en cuir Savannah sont soigneusement fabriquées de manière artisanale avec du cuir non-traité, teinté avec des extraits végétaux ainsi que de l’écorce d’arbre. En utilisant des techniques anciennes, chaque pièce est un ouvrage manuel confectionné par un seul artisan du début à la fin. C’est un ouvrage effectué au sein d’une coopérative d’artisans procurant un travail juste avec une égalité d’opportunités.

Faites la Connaissance de L’artisan – Harlal, maroquinier Harlal est un maroquinier expérimenté. Il travaille avec sa femme au sein d’une coopérative au Rajasthan. Halal a soixante ans et après trente-huit ans d’expérience, il est certain qu’il maîtrise son art. Harlal aime écouter des chansons religieuses du Rajasthan et son film préféré est ‘Bai Chalisa Sasriya’. Halal soutien l’équipe de cricket indienne mais il affirme qu’il est trop vieux pour ce sport. Il apprécie regarder le Kabaddi ainsi que la lutte indienne. Cependant son plaisir est de passer du temps avec ses proches et ses amis à la maison. Son endroit préféré est la ville de Nasik en Inde, sur les bords de la rivière sainte Godavari, du fait « qu’il y a de nombreux temples » nous confie Harlal. Il aimerait énormément visiter le Canada. "J’aime travailler parce que je peux fabriquer des produits de très bonne qualité. J’ai appris mon savoir-faire à l’institut indien de Management. Cela me plaît énormément de gagner de l’argent en faisant quelque chose que j’aime. Mon produit préféré est le sac en cuir Savannah. J’aimerais designer et fabriquer un sac avec ma femme."

Meet the Artisan – Harlal, a Leather Craftsman Harlal is an expert leather craftsman. He works as part of a co-operative in Rajasthan. He and his wife work side by side. Harlal is sixty years old and after thirty eight years, he is confident that he is a master of his trade. Harlal loves to listen to Rajasthani religious songs and his favourite film is ‘Bai Chalisa Sasriya’. Harlal supports to the Indian cricket team but says he is too old for sport himself. He also enjoys watching ‘Kabaddi’, traditional Indian wrestling. Nevertheless, his main hobby is spending time with relatives and friends at home. Harlal’s favourite place in India is Nasik, located on the banks of the holy Godavari River. He likes it there because ‘there are so many temples’. He would also very much like to visit Canada. “I enjoy working here because I can make very good quality goods. I learnt my skills at the Indian Institute of Management. I like to earn money making something that I find enjoyable. My favourite product is the Savannah leather bag. I would like to design and make a new bag with my wife”

Faites la Connaissance de L’artisan - Angus, menuisier Angus est marié et a quatre garçons. Cela va faire bientôt quatre ans qu’il travaille à Nkuku. Son rôle est de fabriquer nos collections de meubles faits surmesure. Angus a suivi un parcours dans les beaux-arts ainsi que la sculpture, et il a commencé à fabriquer des meubles à sa sortie de l’école. Angus a travaillé avec de nombreux autres menuisiers et a assimilé de solides connaissances avant de commencer à travailler sur ses propres modèles. Angus a commencé à fabriquer des pièces en bois pour répondre à un besoin pratique de fabriquer des meubles pour sa propre maison et il a pris tellement de plaisir à les créer qu’il en a fait son métier.

Les Guirlandes de Noël UNE CÉLÉBRATION TOUT EN NATURE POUR LES FÊTES DE NOËL

Une magnifique couronne de Noël ou une guirlande décorant la porte d’entrée est un véritable symbole de cette période de fêtes. Les couronnes de Noël ont été placées sur le devant des portes depuis des siècles, symboles d’amour et de prospérité pour ceux qui passent le seuil. Nous avons crée un guide proposant de réaliser étape par étape votre propre couronne avec également quelques idées pour confectionner des décorations de Noël pas moins superbes.

Pour réaliser votre couronne vous aurez besoin:

Pour commencer recouvrez votre couronne de cuivre avec de la mousse, enroulez le fil de fleuriste autour de la mousse pour bien sécuriser la base. Puis ajoutez progressivement des branches de bouleau. Ensuite ajoutez de la fougère en la positionnant comme vous le préférez. Nous avons délibérément choisi un modèle asymétrique afin qu’il aille avec l’aspect sauvage des matériaux fourragers.

Une idée supplémentaire de décoration festive...

Notre couronne est faite d’une combinaison de ravissants feuillages, tous fourragers, provenant de haies. Nous avons utilisé une variété de conifères, de bouleaux, de mélèzes couverts de lichen ainsi que de très belles usnées barbues texturées. Un peu de blanc est ajouté avec des petites pièces de cuir blanc.

Nos étoiles en zinc sont de très jolies décorations telles quelles, cependant pour ajouter une beauté naturelle simple et festive il suffit d’insérer quelques brins d’usnée barbue et de les fixer avec du fil de fleuriste tout autour de l’étoile. (Nous recommandons d’utiliser une bougie artificielle près des feuillages). Accrochez-les à la porte d’entrée ou au-dessus d’une fenêtre.

Après avoir superposé des couches de feuillages branche par branche, votre couronne devrait commencer à prendre forme. Comme touche finale, nous avons attaché des Itari Vintage baubles. Leurs chaudes couleurs mettent en avant les couleurs rouges du feuillage.
