One Bellevue Chef Kevin Thiele, Rhode Island’s Chef of the Year, has created a One Bellevue menu inspired by traditional New England regional cuisine. Sustainable and locally sourced whenever possible, it takes advantage of the Farm to Table program and Trace and Trust, a program where you can follow your fish from the cold Atlantic waters to your dinner table. Chef Thiele developed the menu based on local and regional influences. North Atlantic calamari, Prince Edward Island mussels, Newport little neck clams are all offered as tantalizing appetizers. Soups include the lobster, scallop and shrimp clam chowder and the award-wining chili, a mouth-watering blend of pancetta, Italian sausage, beans and fresh crushed tomatoes.
Top of Newport Top of Newport, Hotel Viking’s rooftop lounge, has opened for the summer season. Open Tuesday through Sunday throughout the summer, Top of Newport features a full bar, a complete menu with culinary delights off the grill and live entertainment on the weekends. On Wednesdays, Top of Newport hosts ‘Spirits & Stogies’, a special event pairing spirits and cigars. On Friday, Saturday and Sunday evenings Top of Newport features live music with a focus on local bands.
