The western United States is renowned for its more popular destinations, like Yosemite and Yellowstone, but there are also numerous lesser-known places that offer unique and intriguing experiences.

Antelope Canyon, Arizona

Located on Navajo land near Page, Arizona, Antelope Canyon is a breathtaking slot canyon famous for its captivating light beams and swirling sandstone walls. Visitors can take guided tours to explore and capture stunning photographs of the canyon's narrow passages. Our family ventured through this canyon in 2017, and we still talk about how memorable our trip was.

Sand Wash Basin, Colorado

Located in northwest Colorado, Sand Wash Basin is known for its wild horse population. They roam freely with designated visitor viewing areas where you can observe them in their natural habitat.

Custer State Park, South Dakota

This stunning natural reserve is located in the Black Hills and known for its freeroaming bison herds, which you can see up close while driving along the park's famous Wildlife Loop Road. Spanning 71,000 acres, Cluster State Park is one of the largest state parks in the country and offers a diverse range of landscapes, including rolling prairies, granite peaks, and lush forests. In addition to bison, it is also home to elk, deer, pronghorn antelope, bighorn sheep, mountain goats, and various bird species.

Santa Fe, New Mexico

Santa Fe is a captivating destination that offers a blend of history, culture, and natural beauty. It is steeped in rich Native American and Spanish heritage, reflected by the city's architecture, museums, and traditions.

Santa Fe has long been a magnet for artists, drawn to its inspiring landscapes and vibrant art scene. The city boasts numerous art galleries and world-class museums, such as the Georgia O'Keeffe Museum. Earlier this year, we visited Santa Fe and had the opportunity to take watercolor painting lessons together as a family.

A RECIPE INSPIRED BY THE AMERICAN SOUTHWEST

In parts of New Mexico, Texas, Arizona, and Colorado, the traditional bowl of chili gets an extra kick of flavor with the addition of chili peppers, chunks of meat, and a mix of Southwestern spices. Chili is the epitome of comfort food, perfect for cold days or when you crave a hearty and filling meal.

New Mexico Turkey Chili

This recipe combines the flavors of the American Southwest into a delicious and hearty dish. With tender ground turkey and a medley of spices, it's perfect for Fall. Spice it up by customizing the toppings based upon your preferences. Be sure to share this tasty dish with your loved ones.

What you need

– 1 lb ground turkey

– 1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color you prefer)

1 can (15 ounces) kidney beans, drained and rinsed

1 can (15 ounces) black beans, drained and rinsed

– 1 can (15 ounces) diced tomatoes

– 1 can (6 ounces) tomato paste

– 2 cups chicken or vegetable broth

2 tablespoons chili powder

1 teaspoon ground cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, adjust to your desired spice level)

Salt and pepper to taste

– Shredded cheddar cheese

– Fresh chives, chopped

– Radishes, thinly sliced

Directions

In a large pot or Dutch oven, pour the olive oil and bring heat to medium. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the ground turkey to the pot and cook, breaking it up with a spoon, until it is fully cooked through.

Stir in the diced bell pepper, kidney beans, black beans, diced tomatoes, and tomato paste.

– Pour in the chicken or vegetable broth and give everything a good stir.

– Add the chili powder, ground cumin, paprika, cayenne pepper (if using), salt, and pepper. Adjust the seasoning to your taste preferences.

Bring the chili to a boil, then reduce the heat to low, cover the pot with a lid, and let it simmer for at least 30 minutes to allow the flavors to meld together.

While the chili is simmering, prepare the toppings. Shred the cheddar cheese, chop the fresh chives, and thinly slice the radishes.

– Once the chili is ready, ladle it into bowls and top each serving with shredded cheddar cheese, chopped chives, and sliced radishes.

Serve the turkey chili with some cornbread or tortilla chips on the side.
