Over time, the island has become a melting pot of flavors, shaped by the movement of people and cultures. What boldly enshrines the island’s moniker as the culinary capital is the availability of a wide range of well-known global cuisines with regional twists. Imagine Italy with Mediterranean influences or French cuisine with Caribbean flavors.

The island also boasts a distinctive local culinary essence. Too often, when people ask about the local dish, the answer is “chicken leg and johnnycake.” While this is a popular, easy to-go option alongside Caribbean barbecue, there’s so much more to explore.

This is an island, after all, surrounded by water. The fruits of the sea are fundamental here. A savory bowl of whelk soup or rich and creamy conch and dumplings can be found at many waterfront eateries. Dip into either for a hearty start to the morning or a filling lunch.

A classic local dish is salt fish stuffed into a fluffy johnnycake. The salted fish hearkens back to the time of salt-picking on the island. Salt from St. Maarten/St. Martin was shipped to Upper Canada, where cod was preserved and sent back to the island as food. Johnnycake, another island staple, is either baked or fried, and its name derives from “journey cake,” prized for its durability on long trips.

In addition to these traditional offerings, St. Maarten/St. Martin’s cuisine reflects the influences of over 100 nationalities that call the island home. This diversity is evident in the numerous food trucks scattered along the roadsides, serving dishes from across the globe. Here, you can savor the spicy “doubles” reminiscent of Trinidad or enjoy a rich curry chicken infused with Indian flavors.

No exploration of the island’s flavors would be complete without experiencing its traditional beverages. A shot or a healthy pour of guavaberry liquor is a must-try. Once reserved for the Christmas season, this liquor is now available yearround. INSTA-WORTHY Moments

Ihad the pleasure of experiencing the island of St. Maarten/St. Martin in September 2024. I stayed at the JW Marriott St. Maarten Beach Resort & Spa and had plenty of memorable bites during my stay. A few of my favorites were the lobster escargot from Jax Steakhouse, the sea bass from Carambola right on the JW Marriott property, and the espresso martinis at Amore Lounge. Aside from the cuisine, the activities on my itinerary were full of excitement. The Topper’s Rhum Distillery Tour was fun and gave great insight into the history of the distillery. The horseback riding tour with Seaside Nature Park allowed me to see certain parts of the island from higher grounds and connect with nature. I also took an ATV tour with Bubble Watersports, and they took us on both the Dutch and French sides of the island, giving historical background information. All in all, St. Maarten/ St. Martin was a fantastic time, and I’d recommend coming to this island for anyone looking for a great overall vacation experience. I had the pleasure of partnering with the SHTA and providing my audience with my POV of this beautiful island and what it has to offer.”

EVERYBODY COMES TO THE BOON!

The Boon Beach Bar & Restaurant in Simpson Bay. The Boon was built as part of Mary’s Boon Hotel, a quaint 36-room hotel that has been a fixture of Simpson Bay since the 1970’s. The bar and restaurant boast oceanfront views and inside dining as well as beach seating. Umbrellas and chaise lounges are free of charge!...

Whether you are there for a beach lunch, an elegant dinner or an afternoon of sunbathing, water sports, or cocktails and music, “The Boon” will not disappoint. And for early birds, breakfast is served starting at 7:00 a.m. Ask any of the

bartenders for a refreshing twist to the usual cocktails and their signature Bloody Mary is hand mixed and topped with bacon. The lunch menu features the usual burgers, but the chefs also create a tuna tartare with wasabi ice cream on the side! Where the dinner menu is more seafood and steaks.

“Sunday Funday” is the highlight of the week, drawing locals and visitors. The beachfront bar is open and a deejay provides afternoon and evening music on the sand.

One of the best places to spot top chefs on the island is among the aisles at Carrefour Market, the largest supermarket chain in St. Maarten. Carrefour Market is synonymous with comfort and offers its customers an ultimate shopping experience. They stock a huge range of fresh, thoughtfully sourced groceries from around the world.

The produce is fresh and replenished throughout the week and includes organic fruits and vegetables. The dairy section is arguably the best on the island. They carry a huge range of wines, spirits, aperitifs, and mixers to choose from and have the finest snacks.

You can also purchase duty-free liquors in singles or bulk.

Carrefour Market has two major outlets with 40,000 square feet each — one located on Bush Road and the other in Cole Bay. With Carrefour Express, the chain has expanded further with two more locations in Porto Cupecoy and Jordan Village, reaching customers in those areas.

Culinary exploration is an essential part of any trip to St. Maarten/ St. Martin. In the past year, there has been a steadily growing movement of local farmers taking on the challenge of limited land space and complex climate conditions to bring island-grown produce to home and restaurant tables.

While it may seem that a tropical island would naturally be a haven for food production, challenges with soil and terrain have limited its potential. In recent years, however, innovation and the islanders’ can-do attitude have led to more food being produced — whether from the ground, vertical gardens, or even reconfigured shipping containers.

Among those tackling these challenges is Denicio Wyatte of Spaceless Gardens. Wyatte, who holds a bachelor’s degree in multimedia technology, took to agriculture more than a decade ago after being inspired by his stepfather’s homegrown sweet peppers.

“Since then, I have been on a selfnurturing journey into researching and experimenting with the best possibilities and approaches to implement agricultural and ecotourism development here on St. Maarten,” Wyatte shares.

Stephane Ferron of Rooted in SXM, like Wyatte, is passionate about growing food. “I cannot express enough how much I love mushrooms. They are so versatile to prepare, and there are so many varieties that it feels like a whole food group in itself.”

The goal for Rooted in SXM is to use up to 30 percent of waste from other local businesses to grow its produce. This waste includes coffee grounds from organic coffee users and byproducts from the local beer brewery. As for the mushrooms, Rooted in SXM has close to zero waste, as they create additional products from anything that cannot be sold fresh, such as dried mushroom goods.

“It’s interesting — I’ve met quite a few locals who don’t like mushrooms, or at

least didn’t. They just never had good quality, fresh mushrooms until now,” says Ferron.

Many farmers and those involved in animal husbandry bring their produce to farmers markets that pop up in various locations around the island. The St. Maarten Farmers Cooperative, dedicated to enhancing the production and distribution of agricultural products, hosts a farmers market on L.B. Scot Road in St. Peters at least twice a month.

The SXM Fresh Harvest Foundation also holds a farmers market, usually on the first Saturday of the month, at the Yacht Club Port de Plaisance.

The Simpson Bay Market and the Market at the Marigot Waterfront are also excellent places to find a mix of locally grown and near-island-grown produce.

Next time you dine on the island, ask your server which ingredients on your plate are sourced from local farmers.

The story begins with pirate enthusiast Raphael Dorra, the creative mind behind the new attraction. Dorra describes The Rusty Parrot as an “immersive experience” designed to show what life was like for infamous Caribbean pirates like Jack Rackham, known to history as Calico Jack. Visitors enter the bowels of the “ship” to learn more about Rackham through special effects and many surprises.

Dorra, who grew up in Tahiti, says there are many stories surrounding pirates; but most are distorted, based on legends, not facts. When the opportunity presented itself for a unique adventure, Dorra was ready to hoist the Jolly Roger, the internationally known symbol of pirates created by Rackham.

The Rusty Parrot takes visitors through the life of Rackham based on researched materials, artifacts, some plotline twists, and a few turns.

“The idea is to present history in a fun way,” says Dorra. “This is a total experience for family, friends, groups, anyone who wants to experience something exciting and different.”

Tours are offered in five languages — English, Dutch, French, German, and Spanish — and the “crew” dresses in full pirate garb to lend authenticity to the experience.

With a passion for preserving cultural heritage by uncovering the past, Dr. Jay Haviser has spent four decades digging into the rich layers of Dutch Caribbean history, from indigenous settlements to more modern discoveries. His passion for archaeology stems from his belief that history is central to our cultural identity. “Heritage and archaeological research is about revealing who we are now in the perspective of who we were in the past,” says Haviser.

Haviser is the founder of the St. Maarten Archaeological Center (SIMARC), a foundation that preserves the island’s cultural heritage and promotes scientific education. For him, archaeology isn’t just about uncovering artifacts — it’s about making history relevant and comprehensible

for the local community so that the people of St. Maarten/St. Martin understand and appreciate their rich history as part of their identity today.

That is why community engagement is at the core of Haviser’s mission. For the past 20 years, he has emphasized the importance of integrating scientific research with local participation in the Dutch Caribbean islands. “I’m trying to find a greater balance between the needs of scientific investigation to understand what happened in history and the values and interests of the community, because it is, after all, their heritage,” he says. Haviser believes that archaeology is not just about gathering scientific evidence — it must also be relevant to the people whose history is being uncovered.

A prime example is a recent discovery in Simpson Bay. While restoring the old cistern after Hurricane Irma, Haviser and his team discovered a pull scraper, a machine used to build the island’s first airport in the 1940s. He explains that this find highlights the Simpson Bay community’s role in that historic project, fostering pride and a sense of identity.

St. Martin, Saba, and Bonaire focus on educating local children about the importance of archaeology and history, aiming to cultivate a deeper awareness and appreciation for their heritage. Through hands-on fieldwork, young people can become active participants in the process of uncovering their own history. “Even if they don’t become archaeologists, the goal is to foster an appreciation for the value of science and the importance of their cultural heritage,” Haviser explains.

The SIMARC headquarters houses a collection of archaeological artifacts and serves as a platform for Haviser’s youth programs and science outreach, helping to cultivate the next generation of local scientists. However, Hurricane Irma’s destruction of the original center in 2017 still poses a significant challenge. “Irma destroyed the entire archaeological center,” Haviser says. “We saved about 85% of the collections, but as an emergency measure, we moved into this office space.”

Though grateful for the new space, Haviser acknowledges that it’s insufficient for hosting larger groups, limiting the scope of his youth programs. “I can’t host a whole class here anymore,” he says, though he still organizes smaller sessions on request and brings his programs to schools. But despite these setbacks, Haviser remains optimistic. “Even with all the discouraging things that sometimes happen, I still have faith that we can do more good. For me, it’s really about giving the community a voice in their heritage.”

Looking ahead, Haviser envisions a centralized Cultural Heritage Center on St. Maarten/St. Martin that will combine a museum, archives, and an archaeological center. It would be a place for locals and

visitors alike, where students can learn, the community can celebrate its heritage, and tourists can explore the island’s history. “We need everything in one place,” Haviser says, believing this integration is key to making heritage more accessible and impactful.

former plantation. On the same estate, the Emilio Wilson Museum, located in a restored plantation house at Rainforest Adventures St. Maarten, offers insight into the conditions of plantation life as well as the customs and traditions of St. Maarten/ St. Martin.

Another must-see historical site is Fort Amsterdam, built in 1631 by the Dutch and located on a scenic peninsula above Divi Little Bay Resort. A short hike to the fort offers stunning views, and signage explains its important role in the island’s history. Fort Louis, overlooking Marigot, also provides an incredible view after a steep but brief climb. Originally built in 1789 to protect French interests, it now offers historical panels in English and French detailing its past defenses against pirates.

For a connection to the island’s salt trade and a significant part of its identity as “Soualiga,” the Land of Salt, visit the Great Salt Pond in Philipsburg. Here, you can discover former salt pans and salt factory ruins. While driving down Pondfill, you’ll also pass the Salt Pickers roundabout, where statues honor the enslaved workers who harvested salt.

The island’s authentic architecture is rich with distinctive gingerbread fretwork, which is another aspect of its local heritage. Walking down Front Street, you’ll spot examples of the intricate carvings on Caribbean architecture, such as the old Guavaberry Emporium, built in the 1830s, and the Vineyard building, originally imported from Baltimore and reassembled in Philipsburg in the late 1800s. Don’t miss the Court House, built in 1793 in Philipsburg, with its iconic wooden pineapple atop, symbolizing a warm welcome.

While driving around, keep an eye out for the island’s famous dry-pile stone walls, which are often labeled “slave walls,” as most were built by enslaved Africans or their descendants. But taller and more narrow walls were later constructed by the Chacha Ballahoo, a group of poor European descendants from St. Barths. Examples of both styles can be found throughout the island, with a notable example of the Chacha Ballahoo near the Cupecoy French-Dutch border and historic African walls in front of the Vineyard.

Who is the dynamic duo behind Pyratz?

Alisson: We’re Alisson and Max, both from France, with a touch of Caribbean influence from Max’s upbringing in Guadeloupe. Max came to Sint Maarten initially to assist in the salvaging & repairing of boats after Hurricane Irma.

Max: Right, and while I was working here, we stumbled upon the opportunity to breathe new life into two hurricane-damaged boats. That’s when the idea for Pyratz started taking shape. After a few months, Alisson, who was working as a French wine & liquor brand manager in the US, joined me on the island, and that’s how Pyratz was born.

What exactly is Pyratz Gourmet Sailing?

Max: 3,5 years ago, Pyratz introduced a fresh concept to SXM where we provide luxurious and intimate day trips that blend discovery, gastronomy, and sustainability. We offer a unique culinary experience whilst exploring the best parts of St Maarten and/or its neighbouring islands.

The 2 crew onboard - which can be either Alisson & I, or one of our other crew - are professional yet very easy going and are there to make you feel at home.

Furthermore, The boats are fully equipped with everything you need to make your day special – from a comfortable dining area to snorkeling gear, paddleboards, kayaks, as well as a large floating mat and bean bags for sunbathing.

What sets Pyratz apart from other sailing experiences?

Alisson: What makes us unique I’d say is our 4-course gourmet menu, which offers a fusion of French and Caribbean cuisine, using fresh and local ingredients. We pair this with good French wine and craft mock & cocktails from our open bar. Apart from that, the fact that we keep our charters to a maximum of 12 guests, allows for intimate and personalised trips. We do both private trips (up to 12) as well as a weekly mixed/shared charter with a up to 10 guests.

Max: We also try to find new ways of offering that authentic experience, which we do through add-ons that guests

can book to customize their trip. This coming season for instance, we have the option to add an exclusive live harpist onboard during the sunset cruise. Additionally, we‘re now also offering multi-day trips around St Martin/St Maarten, Anguilla & St Barth.

Alisson: Lastly, sustainability is a core principle for us. We source many of our produce from local fishermen, farmers, and brewers, promoting responsible tourism. It is also how our story began, with the restoration of the damaged boats, and we try to incorporate the same ‘reduce-reuse-recycle’ concept as much as we can. We do this with our cruises being plastic-free, and we provide reef-friendly sunscreen on board.

St. Maarten/St. Martin is celebrated for its verdant hills and pristine beaches, but the island holds hidden wonders that are often overlooked by the casual visitor. To truly experience its breathtaking beauty, you’ll need to venture beyond the shoreline and dive into the crystal-clear waters, where stunning sights and marine life await.

The waters surrounding the island boast an underwater ecosystem encompassing various sea life — from tropical fish to beautiful corals, stingrays, and several

different shark species, including nurse and reef sharks. Some days, you could be lucky enough to spot sea turtles floating through the water, while other days, you may share your swim with barracudas or spotted rays. While there is never a guarantee of what you will see, one thing is certain: Your dive won’t disappoint.

“The wonderful thing about scuba diving in St. Maarten/St. Martin is that there

is something for any age and experience level,” says owner Willem Dekker of Dive Sint Maarten, located at Bobby’s Marina in Philipsburg. “The island features almost 30 dive sites, which include 11 wrecks and a few deep dives. Just off Great Bay, we have several options, including Carib Cargo, Teigland, Fish Bowl, and Mike’s Maze. It takes just minutes to get to a great dive site here in St. Maarten/St. Martin.”

Scuba diving in the waters surrounding St. Maarten/St. Martin is a unique experience. There is a wide variety of dive options for experienced and novice divers alike. Starting from age 10 and up, Dive Sint Maarten offers a Discover Scuba Diving course that will get you acquainted with the world of scuba. Once you’ve learned the basics, you can head to one of the many wrecks and experience the other side of St. Maarten/St. Martin.

Carib Cargo, a popular dive site, is an old interisland trader that sits upright in about 70 feet of water. It’s home to snapper, lobsters, turtles, sharks, stingrays, crabs, and, if you’re lucky, a bottlenose dolphin who visits during winter months. This dive site is situated on the edge of the Man of War Shoal Marine Park, which encompasses almost 8,000 acres of protected reefs, historical wrecks, seagrass meadows, and open sand.

Another popular dive site is HMS Proselyte, a stunning wreck that was once a 32-gun Royal Navy frigate. Built in 1770 in

Rotterdam, her crew mutinied and turned her over to the British in 1796, where she served in the Royal Navy until she wrecked in 1801. While making her way to St. Maarten/ St. Martin from St. Kitts, the ship struck the Man of War Shoal. Boats from Philipsburg hurried out and rescued her crew, and this stunning vessel came to rest on her starboard side about 50 feet down. Ballast bars, cannons, anchors, and more lay scattered throughout the water surrounding this wreck. This site has become heavily encrusted with coral over the last 200-plus years and is a toprated dive site among both visitors and locals.

Some dive sites are reserved for the more experienced divers and, due to their location, are only accessible when weather permits. One Step Beyond, Molly Beday, and Hen and Chicks dive sites are on the east coast between St. Maarten/St. Martin and St. Barths and feature healthy reefs with large sponges and corals.

Dolphins and whales are frequently seen in the waters surrounding St. Maarten/

St. Martin, from December through April, shares Dive Sint Maarten’s owner and captain, Willem Dekker. “I have been lucky enough to see many dolphins over the years,” he says. “They enjoy accompanying our divers near the wrecks, and when we head out in the mornings, they often play in the waves off the bow. I know it will be a great dive when we see them.”
