I’ve been interested in baking since I was a little girl. I used to read cookbooks for fun, and my mom would let me create things in my Easy Bake oven. Baking and decorating cookies came about organically in my adult life. The recipe that I use primarily is my grandmother’s recipe that I’ve standardized, so that they come out the same each time.

Starting a Business Workshop Are you in the beginning stages of starting a business, in need of capital, or simply considering self-employment? This fast-paced workshop format helps you assess your ability to lead and manage a company and evaluate market and sales potential for your product/service. Explore the fundamentals of writing a business plan. Other topics covered include determining concept feasibility, startup costs, financing options, and the basics of business planning, along with other necessary steps to launch your business. The $59 cost of this class is underwritten by Small Business Development Center (SBDC). Completion of this workshop provides access to meeting with an SBDC consultant one-on-one. Become a Certified Personal Trainer—ACE
Become a Commercial Drone Operator with NMC’s online Test Preparation course. See details below. FAA Remote Pilot (Drone) Test Preparation (Online) Could the use of drones assist you in your business endeavors? This self-paced online course will prepare you to take the FAA Part 107 Remote Pilot written exam which upon successful completion will certify you as a Commercial Drone Operator! This license is required (by the FAA) for conducting operations such as aerial photography, industrial inspections, emergency response, agriculture monitoring, movie making and more. The course covers a variety of critical content including drone regulations, airspace, weather, aeronautical charts and safety practices. Course is approximately 25 hours online; work at your own pace; but complete by December 7, 2018. And you won’t be completely alone; your instructor is available via email, phone or office visit to help you through the process. Gain essential knowledge and practical skills to become an entry-level fitness trainer. Through classroom and fitness center time, learn guidelines for instructing safe, effective, and purposeful exercise, essentials of the client-trainer relationship, conducting fitness assessments, and designing and implementing appropriate exercise programming. Course materials are from the American Council on Exercise (ACE). Upon successful completion, you will receive an NMC Certificate of Completion, 3.6 Continuing Education Units (CEUs), CPR certification, and be prepared to take the ACE national exam. Come Sail Away with the MHA Join experienced captain and crew members of the Maritime Heritage Alliance (MHA) and sail West Grand Traverse Bay! This unique small class will set sail on the 39-foot Champion, a custom-built cutter. Learn about sailing from the experts: Jay Ruzak, MHA captain and owner of the Grey Hare Inn, or Doug Roberts, sailor of the Mediterranean and other seas with great stories to tell! Tie knots, take the helm and hoist the sails while exploring Grand Traverse Bay. Learn maritime history and traditions; in the 1800s Michigan used sailing to drive its economy. Navigating the Wild Mushroom Industry Join outdoor enthusiasts, Jill and Aaron Grenchik, as they share the fundamental requirements to become certified as an expert wild-foraged mushroom identifier. Ghost Towns of Sleeping Bear Dunes
Would you like to learn how to perform magic and entertain with nothing more than a deck of cards? Dr. Larry Phillips will help you learn this new skill. Through demonstration, guided practice, and discussion you will learn to put together and perform a basic close-up magic routine. The material taught in this course is all audience tested, professional magic from Dr. Phillips performing repertory, including several well-guarded personally developed routines and effects. No Pick-A-Card, Any Card stuff here! The routines taught are impressive and visual magic using a standard deck of playing cards. This course is a great way to either investigate a new hobby or revive an old interest.
Ghost towns captivate our imaginations. Sleeping Bear Dunes National Lakeshore is home to several ghost towns. Glen Haven is an example of what these logging villages were like in their heyday. Discover what happened to the towns and the people who lived there. We will travel to several ghost towns exploring areas of the park very few people know how to find. The park adventure begins at the National Lakeshore Visitor Center. Van transportation is provided from the University Center to Empire and throughout the park then back to the University Center at 5 p.m. Includes lunch and transportation. There are some incredible insects and other invertebrates that spend much of their life in water before emerging to the land or air. Learn the natural history of these insects and how the quantity and quality of aquatic life equates to the health of a stream or body of water. In this hands-on course, join the staff of the Grass River Natural Area as you work with the tools and techniques used to measure water quality in our region by looking at our local fauna. Run chemical and physical field tests and evaluate your results to determine the levels of oxygen, turbidity, pH, temperature and nutrients. The first class meets in the classroom, the next two meet at Grass River Natural Area near Alden/Bellaire (directions provided at the first class). Lake Michigan Shoreline Habitats—A One Day On-the-Road Adventure Experience up-close some of the habitats along the Lake Michigan shoreline. With Sleeping Bear Dunes National Lakeshore (SBDNL) as your classroom, learn how the habitats were formed, who lives there, their unique geology, and environmental threats that affect all of the Lake Michigan shoreline -- invasive species, development, and climate change. Into the Wilderness What is wilderness? Over one-third of Sleeping Bear Dunes National Lakeshore’s 71,000 acres have been set aside as wilderness by the US Congress. Join park expert, Kerry Kelly, to explore first-hand what the wilderness designation means for this national treasure. The first day is a 2-hour classroom discussion; the second class is a 9 a.m. to 4 p.m. guided tour of two areas within the designated wilderness, including morning and afternoon walks with different habitats and natural features. History of the Anishinabek The history of our region gets its roots from the Odawa Anishinabek who settled here many, many years before Traverse City, Suttons Bay, Northport or other towns were established. But what do we know of these people and their influences on the region? Join JoAnne Cook, former Grand Traverse Band of Ottawa and Chippewa Tribal Council member, as she shares the history of the Anishinabek people from the Grand Traverse Region. The tribe is one of the three recognized tribes of Odawa peoples in Michigan. Let’s Talk Elections
What an opportune time to actually look at the constitution! Join lawyer and historian, Allen Horstman, to examine the country’s founding document. What are the issues? What does the Constitution say -- or not say? Look at recent high court decisions and some of the issues that lie ahead. If available, bring a copy of the constitution.
It is just two weeks until the midterm elections. With that in mind, this course will do two things: look at the matter of elections in America -- from who votes to shifting patterns of partisanship to considering some proposals to increase voting. It will also consider the 2018 midterms and statewide races. What do the polls and other techniques say about the likely outcomes, and how reliable can they be?

Our Broken Politics
Jack Segal’s Diplomacy Series: American Foreign Policy Part II Explore linkages between the history of our policies since 1945 and presentday issues with Jack Segal, retired US diplomat. He traces the events and decisions that have driven US policy since the end of WWII and the effects on recent presidential administrations. This is the much-anticipated sequel to the Diplomacy Series that Jack taught this past winter. Due to its popularity, registration is available only for the 4-class series (not individual classes).

The George W. Bush Years
Jack Segal will lead a lively discussion of how the elder President Bush successfully managed the collapse of the Soviet empire, without a shot being fired, but refused to back separatist movements in Ukraine, Soviet Georgia and the south Caucasus. Those legacies are still haunting USRussian relations. The deficits caused by his defense spending famously led him to renege on his Read my lips, no new taxes promise. In the Middle East, Bush forced Saddam out of Kuwait, but then failed to follow through.
By the time “W” had won the election, Jack Segal was a senior political advisor to the NATO operational Commander. When 9/11 struck, everything changed. Jack became a frequent participant in war planning against the Taliban and in the raging debates about what to do next in Afghanistan. He provides an insider’s perspective on events that still continue to plague our policy-makers.

The Bill Clinton Years As a member of Bill Clinton’s National Security Council, Jack Segal provides a first-hand view of how economic cooperation took center stage at the White House, how Clinton guided Yeltsin toward freeing Russia’s economy (at least for a while) and how Clinton’s commitment to free trade influenced a range of decisions. In the Balkans, ethnic cleansing left a bitter legacy that Clinton still defines as his biggest regret. Elsewhere in Europe, Jack was at the table for debates about expanding NATO and responding to the sudden economic collapse of Russia -- this is a rare chance to discuss with an insider how policy was made.

You have seen the trendy, highly textured, woven tapestries popular on internet idea boards. Wish you could make one? Now’s your chance to create your personalized wall hanging! Begin by building a custom-size frame loom, which you get to keep! Explore designing with thick and thin yarns as you learn basic tapestry techniques to handcraft a unique piece of art ready to hang on your wall. We will survey Western European classical music from the medieval period to the present. Examine the important composers and musical compositions from each period of music while listening to these great works and discussing the elements that made them come alive and move people’s hearts through the ages. Experience the soothing Gregorian Chant of the Medieval period, the lively music of Renaissance, the motion and ornamentation of the Baroque style, the refinement and maturity of the Classical era, the stirring emotion of the Romantic period, and the many harmonic and rhythmic surprises of 20 th century music. This large, mixed (SATB) choral ensemble is open to all community members and college students with past choral experience. Disc Golf Discover one more great excuse to be outside and have a blast -- Disc Golf. Played with Frisbee type Golf Discs, the game uses many principles of “regular” golf except that most courses are free to play. Electronic Navigation An ABC Course. Electronic Navigation introduces GPS technology from the most basic receiver to chart plotter systems for navigation on board. The process of navigating by establishing waypoints and routes, and then running the planned courses, is demonstrated. Examine electronic charting software for the desktop computer and creation of waypoints and routes on the desktop and subsequent download to the on-board unit. Despite differences among the various manufacturers’ offerings, a thorough discussion of the features being made available is included. Yoga—Beginning and Beyond
Learn the basics of robot building using VEX IQ Robotics Kits. Divide into teams and build a “bot” (short for robot). You will then run it through fun challenges -- some tests will even require you to figure out how to build your robot better. Learn about the robot’s brain and how it can be programmed to operate controls to run an obstacle course without a controller. Challenge yourself to build a working bot to carry objects and obey your commands. Finish with the Ultimate Team Challenge where teams compete face-to-face.

Writing Class in Partnership with Dynamic Fiction: Writing the Short Story (Grades 6-8) Offered through a partnership with the National Writers Series. Are you, or do you know, a middle school student with a passion for reading and writing? If you are drawn to the written word, this class is for YOU! Join Claire Alexander, acclaimed teacher and writer to examine characterization, the interplay between setting, plot, and character, dramatic plotting, and the craft of writing. All writers will benefit from the “workshop” process; not only will you learn various exercises to help you discover and cultivate your own unique writing style, but you will also engage in sharing and editing each other’s work in a non-judgmental environment. Providing the inspiration, structure and critical advice needed to write a dynamic piece of fiction, this course naturally lends itself to group support and camaraderie. Children’s Choir NMC Children’s Choir (Grades K-9)
The NMC Children’s Choir (NMCCC) is a program of exemplary choral music ensembles that develops high levels of artistic, expressive singing for students in Kindergarten through grade nine in the greater Grand Traverse Area. The Children’s Choir exists to artistically enrich the lives of the children, their families, and the community. Participation in the choir is open to all and is a full-school-year commitment, with choral performances presented throughout the academic year. The Choir organization consists of seven ensembles. Ragazzo
(dohl’-chay - Italian for ”sweet”) Primarily 2-3 graders - no audition required. This introductory choir is for young children with little or no prior musical experience. Singers rehearse Tuesday evenings plus a few Saturday afternoons. Singers build foundational music skills in a fun, interactive environment, learning recognizable folk-based repertoire for beginning singers. Dolce performs in NMCCC’s Winter and Spring Concerts.

Ragazzo is comprised of children who audition directly into the ensemble with more advanced musical abilities, along with singers who have been promoted from the Lyric Choir. Singers rehearse Tuesday evenings as well as monthly Saturday afternoon rehearsals. Ragazzo performs in NMCCC’s Holiday, Winter and Spring Concerts, and, as opportunities present, at community events.

For a full refund contact the EES office at least three business days prior to your class start date. 3. If you are unable to attend and have missed the refund deadline, you may request up to a 50% credit toward a future class by calling the office (995-1700) before the start of the course. 4.
