CREATION CHARDONNAY AND RAINBOW TROUT - A MATCH MADE IN HEAVEN
This month we celebrate Chardonnay. Talented local chef Lizette Crabtree from Lizette’s Kitchen in Hermanus shares her ideal pairing. Following eight years in Southeast Asia, chef Lizette Crabtree brought back with her a generous helping of eastern culinary skills. “My cooking is highly influenced by my history and experience; at the same time, I prefer to use as much local ingredients as possible, thus matching eastern techniques and flavours with gorgeous local produce,” says Lizette. Lizette regards Creation’s cool climate Chardonnay as a delectable example, showcasing the best from the Hemel-en-Aarde terroir. “Being lightly oaked, the fruit is pronounced and unmasked, not hiding behind complex oak.” To match it, she’s chosen Rainbow Trout. “Locally and sustainably grown and farmed, this fish is a perfect match for the intensity of the 2013 Creation Chardonnay. Wine and food should never be in competition with one another. It should be a marriage where each comes into its own and together form a match. At the same token, food and wine can live together ‘in sin’, and make an unusual pairing which hits the target,” she says with a smile. “However, I believe this is a wonderful match: it showcases my cooking as well as does justice to the beautifully created wine,” Lizette concludes. Lizette kindly agreed to share the recipe for her Fresh Rainbow Trout steamed with Ginger, Sesame Oil, Rice Vinegar, Cloud Ear Mushroom and Spring Onion with us. Fresh Rainbow Trout steamed with Ginger, Sesame Oil, Rice Vinegar, Cloud Ear Mushroom & Spring Onion 1 rainbow trout, gutted and filleted 20 ml good quality soya sauce (such as Kikkoman) 20 ml sesame oil 15 ml rice vinegar or rice wine 15 ml fish sauce (preferred brand Ca Linh, Vietnamese) 20 ml black and white sesame seeds 2 cloud ear (or black fungus) mushrooms, reconstituted and sliced finely 1 spring onion, chopped in thin rings 1 head of pak choi, sliced into separate leaves coriander leaves for garnishing - Ensure fish filet is cleaned properly of all scales, then pack into a steam basket on top of a bed of pak choi. - Drizzle soya, sesame oil, rice vinegar or wine and fish sauce over, then sprinkle with sesame seeds. - Add spring onions and mushrooms. - Steam over boiling water for 3 – 4 minutes until just tender. - Garnish with coriander leaves. - Serve with steamed rice and Asian veggies wok-fried with coconut.

Hermanus FynArts 2014 6 – 16 June From Soweto to Manchester Among the highlights at Hermanus FynArts 2014 will be the performance of the very talented cellist Abel Selaocoe (22). Debuting in 2013, Hermanus FynArts this year offers a bigger, and an even better, programme over ten days, starting on 6 June. Selaocoe was born in Sebokeng, a township near Vanderbijlpark, south of Johannesburg, and now studies at the Royal Northern College of Music in Manchester, England, under Professor Hannah Roberts, the principal cellist of Manchester Camerata. Mary Faure, founder of Hermanus FynArts and also chairperson of Hermanus Tourism, considers the performance of Selaocoe, accompanied by the well-known pianist Jose Dias as a scoop for Hermanus FynArts. Selaocoe will also perform as soloist for the closing matinee concert in celebration of Youth Day (16 June) with the Cape Philharmonic Youth Orchestra, ¨We are indebted to the owners of Sumaridge wine farm for making these concerts possible by funding his travelling expenses. We are thrilled to showcase this young, talented South African cellist who has made the journey from Sebokeng to the UK. The Youth Orchestra is looking forward to play the final concert on Youth Day with him΅ she says. When he was 11 years old, Selaocoe started taking cello lessons in Soweto with Kutlwano Masote as his first teacher. Over the following 11 years his achievements include several scholarships, prizes and awards and solo performances in a number of countries. Selaocoe is also a keen improviser playing in a folk band named Project Jam Sandwich around the UK at various folk festivals. Other scoops on the FynArts 2014 programme include Classical Marimba and Voice with Magdalena (De Vries) and Magdalene (Minnaar); Bovim Ballet; Kyle Shepherd, The 2014 Standard Bank Young Artist for Jazz; the Western Cape Field Band; Richard Cock with Lloyd Webber and Friends, a selected and curated exhibition open to all Cape Whale Coast Artists; and the Tollman Bouchard Finlayson Art Competition with a first prize of R30 000. “Including events around The Art of Fine Dining, this is only a small taste of more than 100 items on the FynArts 2014 eclectic programme that caters for a wide array of interests. We are looking forward to staging an event that is moving onward and upward; bigger and better”, Mary concluded. This year's unique art experience in Hermanus spotlights South African visual arts, music, literature, award-winning wines and fine food. Exhibitions of ceramics, paintings, sculpture, glassware and jewelry will be seen in galleries, hotels and special venues in the town centre as well as in tasting rooms and wine farms along the wine route. There will be readings and talks; concerts and recitals; workshops and demonstrations and a wine route shuttle for visitors between the exhibitions and wine tastings at participating wine farms. Hermanus FynArts runs until 16 June and tickets will be on sale from early April. As technology wows some and makes the rest of us feel left behind, constantly grappling to South Africa’s Best Kept Secrets & Offers keep up with the previous fad, I am more appreciative than ever to have a face to face conversation about something as basic as the smell of rain. Reference to April fool's day can be found from as early as the 1500s, although Shakespeare's writings of the late 1600s never mentioned it. Odd if one takes into account that he delighted in the revealing of fools and folly. There are those who insist that the first of April used to be New Year's day in ancient cultures such as the Romans and Hindus. Some claim Chaucer's tale of a vain cock in Nun's Priest's Tale, written around 1392, inspired centuries of hoaxes while others suggest the reference within the 1508 French poem Eloy D'Amerval to an "April Fish" is the truer source of the 1 April prank-day. Everything is a repetition or re-rendering. But then there are those who posses the magic of re-rendering the repetitions with so much more grandeur, depth, truth and inspiring effect. The must see film The Great Beauty (La Grande Bellezza) is a good example. I am sure that one can be taken out and shot for the following sublimely ridiculous comparison. Depending on your apatite and grasp, there are three films which should inspire you to re-think, re-calculate, re-appreciate and thus truly inhabit your take on every moment. Our Paleo lifestyle journey has been filled with the most amazing food from various sources. The ease at which I have been able to maintain the lifestyle and achieve the success I have so far is all to do with the food. I as a diabetic have tried unsuccessfully to get my daily sugar readings under control following traditional Diabetic diets, some of which were recommended by professionals both medical and nutritionists. They just did not work and I was pumping more and more insulin every 6 months after each check up. I year later on Paleo I am insulin free, still on oral meds but that will change. My health has never been better and to crown it all I am down 28 kilos. Read my full story on our website Click paleoliving.co.za Food recipes from 4 fantastic bloggers follow on the next pages. Keep the heat low and slowly brown the chicken on all sides! Take your time with this, making sure that there is a lot of caramelization happening on the bottom of the pan! When the chicken is done, add the mushrooms and saute in the pan juices for about 2-3 minutes. Lastly add the cream and allow the cream to reduce to about 2/3 of the original amount. Taste and adjust the seasoning one last time if it is necessary. Whats Nina Timm and my easy cooking preparing. Paleo Chicken recipe..
