JASMIN'S ALTERNATIVE

URKEY

This recipe is for anyone like me who cannot bear the usual Christmas turkey roast. This will convert you, I promise! Making 10 generous portions, you can impress the whole family. METHOD

INGREDIENTS 1 large turkey breast (butterflied) Good quality sausagemeat Dried sage & onion stuffing (I love Paxo for nostalgia) Boiling water A tablespoon of salted butter Dried cranberries (about 150g) Sliced red onions (pre roasted in olive oil) Fresh sage (chopped) Fresh chives (chopped) Spring onion (green ends finely chopped) Maldon salt Cracked black pepper Pancetta slices

1 Preheat your oven to 180°c (fan oven 170°c) Make the dried stuffing mix in a bowl with boiling water and the butter, add the water gradually until you get a spreadable consistency. Add the sausage meat, chopped herbs, cranberries, red onions and season. 2 Cover a chopping board with a large piece of cooking foil, big enough to wrap up the whole turkey. Lay out lengths of string half a metre long onto this foil one inch apart, and then lay the strips of pancetta closely next to each other. Put the flattened turkey on top of the pancetta then place the stuffing in the centre down the length of the flattened turkey breast. 3 Once the stuffing is in place, tie the centre string tightly, making sure the pancetta stays on the other side of the Turkey, and the strings at each end, then tie the remaining strings and cut off loose string ends. Then ensure the turkey is tightly wrapped in foil and carefully place on an oven tray, and cook for 2/2.5 hours depending on the weight. 4 Half an hour before the meat is ready, undo the foil to let the pancetta crisp up. Use a meat temperature probe to check it is 75°c. 5 Serve your delicious turkey in slices, with all of the trimmings, save some for later to make cracking festive sandwiches too!

URKEY

For an alternative take on using your leftover roast turkey, try this delicious authentic Biryani recipe from Rahul Khurana, Executive Head Chef at tamatanga in the Cornerhouse. INGREDIENTS 500g roasted turkey meat (diced) 20g basmati rice 4 medium-sized onions (thinly sliced) 3 medium size tomatoes 100g yogurt 3 tablespoons vegetable oil 1 tablespoon each of minced garlic, minced ginger, aromatic garam masala 1 teaspoon each of turmeric powder, coriander powder and cumin seeds

METHOD 1 Boil the rice and leave it aside. Heat the oil in a pan add the cloves, bay leaves, cinnamon stick and cumin seeds. 2 As the spices crackle in the heat, add the sliced onion and a pinch of salt, sauté until golden brown in colour. Stir-in the ginger, garlic and chilli, sauté for 2 minutes or until cooked. 3 Add the turmeric, coriander, black pepper and garam masala powders and sauté for 1 minute. Blend the tomatoes into a thick paste, and add to the mixture. While stirring, bring to simmer and cook for another 4 2-3 minutes. Add the yogurt and mint, and simmer for further 2-3 minutes. Check for seasoning. When ready to serve, stir the turkey into the 5 sauce and heat for a minute and add rice then mix lightly with a rice fork. Garnish with fresh coriander and mint.

Mince Pie Recipe A British staple – served with a glass of mulled wine or left out for Father Christmas. Jasmin at Homemade shows us how to bake the perfect batch of crumbly, fruity mince pies. Ingredients 350g/12oz high quality mincemeat, preferably homemade (if buying shop bought, I'd always recommend Sainsbury's own brand!) 200g/7oz plain flour, sifted 40g/1½oz golden caster sugar 125g/4½oz unsalted butter, diced 1 large free-range egg, beaten A generous handful of dried cranberries A generous handful of dried mixed fruit Milk, to glaze

Preparation method Lightly butter a 12-hole pie or patty tin. Tip the mincemeat into a bowl and stir so that the liquid is evenly distributed. Rub the butter into the flour and sugar by hand and then stir in the beaten egg. Good pastry should always be mixed by hand, using your fingertips. It's very important to keep the fat cold. Bring the mixture together, wrap in cling film and chill for an hour or so. Thinly roll out the pastry onto a floured surface. Cut out 12 circles with a fluted pastry cutter, large enough to fill the base of the prepared tin. Press gently into each hole. Add the dried cranberries, dried orange and a dash of water to the mincemeat and mix together. Then fill the pastry circles with mincemeat. Cut out another 12 slightly smaller discs and use to cover the mincemeat. Press the edges together to seal. Make a small slit in the top of each, then brush lightly with milk. Chill for about 30 minutes. Meanwhile, preheat the oven to 200C/400F/ Gas 6. Bake the pies for 20 minutes until golden brown. Remove to a wire rack and serve warm.
