On Maid Marian Way, The Bear and Lace has recently opened for business as a high-end restaurant and bar specialising in champagne, cocktails, craft ales and fine wines. Just across the road is Oaks, the new place to go for excellent locally-sourced produce. Coming soon to Market Street is Copper, the upmarket café, deli and bar that already has highly successful branches in West Bridgford and Mapperley. Trinity Square will soon become home to an intriguing new establishment: Curious Manor. It’s the latest business venture of the owners behind The Parlour and Cured in West Bridgford and promises to be bursting with character, with the unit currently being transformed into a mock manor house.

ready steady cook What do you get when you ask two local chefs what they could rustle up with some common leftover ingredients and a limited time to cook? That’s right, a frenzy of expert deliciousness! We asked our chefs to try their hand at a task that is often encountered in the summer months and asked them to revamp salad leftovers into a new delicious dish. The ingredients we gave were courgette, red pepper, tomato and goats cheese, and these are the recipes that our city foodies suggested.
John Viola – Chef at John Lewis COURGETTE AND GOATS CHEESE FRITTATA (serves 2)
Ingredients
2 medium courgettes 1 tomato 1 red onion 60g goats cheese Handful of fresh, shredded basil leaves 6 eggs Olive oil Salt and cracked blacked pepper
Method
1. Slice the courgettes and red onion and add to a small non-stick frying pan with some olive oil. Fry over a medium heat for 10 min to brown and soften the courgettes and onions. 2. Whisk the eggs, roughly chop the fresh basil and goats cheese, dice the tomato and add all to the whisked eggs, and season with salt and pepper. 3. Add the mixture to the non-stick frying pan, along with the courgettes and onions. 4. Using a wooden spoon, move the mixture around until set on the bottom, top with slices of the remaining goats cheese and place under a hot grill. 5. Grill until puffed and golden. Matthew Howes - Chef at Le Bistrot Pierre MOROCCAN GOATS CHEESE TART (serves 2)
Ingredients
375g ready rolled puff pastry 1 egg, lightly beaten 1 tbsp harissa paste Small aubergine, chopped and diced into batons 1 courgette, chopped and diced into batons Small red onion, finely chopped Red pepper, chopped and sliced into small batons 1½ tbsp extra virgin olive oil A drizzle of harissa infused olive oil 1 tbsp vegetable oil 1 tbsp Moroccan seasoning 2 tomatoes, chopped and diced 2 tbsp finely chopped fresh flat-leaf parsley leaves 1 tbsp pine kernels, toasted 2 tbsp mint and yogurt dressing 100g wild rocket Tin of drained chickpeas 100g goats cheese
Method
1. Cut the ready rolled puff pastry into two 15cm roundels. 2. To build the tart: brush the edges of the puff pastry with egg wash (at least 3cm all round). Brush the rest of the pastry middle with harissa paste. 3. Chop the aubergine, courgette, onion and red pepper into small batons. Marinade them in salt, Moroccan spice rub and vegetable oil. Roast in the oven (except the courgettes) at 190°C for 10–12 minutes until the aubergine is soft. Roast the courgettes separately for 3-5 minutes. 4. When the vegetables are cool, mix in the chopped flat parsley and olive oil. 5. Chop the tomatoes into 1cm dices. 6. Toast the pine nuts in the oven until golden brown. 7. Spread the Moroccan spiced vegetable mix flat on the pastry, leaving around 1.5cm from the edge. 8. Bake the tart in the oven at 190°C for 14–16 minutes. Once cooked, gently place the tart on a plate. 9. Dress the rocket with mint and yogurt dressing, crushed pine nuts and chopped tomatoes. Place in the centre of the tart. 10. Scatter the crumbled goats cheese and some chickpeas around the tart and finish with a drizzle of harissa oil.

Our Taste of Nottingham week comes to a fitting climax when we take part in The Great Notts Show in Old Market Square from Thursday 24 to Sunday 27 September. A whole host of food and drink businesses from around the city will be taking part in our special Taste of Nottingham Market, located near the Brian Clough statue and adjacent to the Square. The Great Notts Show celebrates all that is great in Nottinghamshire, from food and drink through to live entertainment, arts, crafts and everything in between. Last year’s event attracted over 100,000 visitors and this year it is anticipated to be even more popular, with a Thursday night comedy stage as part of the Nottingham Comedy Festival being an appealing addition to the schedule, and an extended bar and stage area to accommodate the crowds.

Meat Free Masterpiece Whether you’re a vegetarian or would just like to try something different, The food and drink scene in Nottingham offers a great range of delicious and nutritious meat free dishes to suit all tastes. We asked Maziah, chef at the Broad Street Malaysian restaurant Nada Budaya, to share with us a recipe for Tempe Goreng Chilli – a fragrant dish of fried soya cakes cooked with chilli and vegetables.
Ingredients
250 g tempe (fermented soya, available in oriental supermarkets) 50g green beans, thinly sliced 50g carrots, thinly sliced 50g potatoes diced, parboiled and drained 50g red & green peppers, thinly sliced 15g dried red chilli (deseeded, boiled, drained and blended smoothly) 10g shallots 5g lemongrass 5g garlic 2 tbsp dark soya sauce 3 tbsp vegetable oil 10g onions, thinly sliced Salt & sugar to taste
For Garnishing
10g spring onions, thinly sliced 5g fried onion (shallots, thinly sliced and fried in oil until crispy) 5g fresh red chilli, thinly sliced Lettuce leaves

Cooking Method
1. Cut the tempe into small cubes and fry in oil until golden brown, then put to one side to cool. 2. Blend the dried chilli, shallots, lemongrass and garlic together until smooth then fry them in oil for a few minutes until the chilli separates. 3. A dd in the fried tempe, dark soya sauce, green beans, potatoes and carrots. 4. Lastly add the sliced onion, salt and sugar to taste. 5. Place the tempe on a bed of lettuce and garnish with fried onions, spring onions and a slice of chilli. Best served hot with jasmine rice.

THERE IS A HUGE VARIETY TO CHOOSE FROM WHEN OUT AND ABOUT IN THE CITY’S PUBS, BARS AND BOTTLE SHOPS, AND SOME EXCELLENT CRAFT AND REAL ALES THAT ARE EXCLUSIVE TO NOTTINGHAM. At the Hand and Heart on Derby Road you can get your hands on a lovely pint of a copper-coloured bitter called Round Heart. It’s brewed by the Dancing Duck brewery in Derby, and is well-balanced with a malty aroma and a note of chocolate in the flavour. Over at one of the country’s oldest pubs, The Bell Inn on Angel Row, you can sample the Bell Inn Bitter which is a real treat for the taste buds. Brewed by Greene King, this is such a hit with its drinkers that it’s now even used to create the delicious Bell Inn bitter chutney. Another city special created by the Nottingham Brewery can be found at the Broadway Cinema on Broad Street. The wittily named ‘Reel Ale’ is smooth, creamy and golden with an off-white top. Nottingham held its inaugural Craft Beer Week in June – the first city outside London to do so – to promote and develop Nottingham’s love of craft beer. This appealed to the uninitiated, the beer drinker and the beer geek and there are plans to run it again next year so if craft ales are your passion, look out for the date. If real ale is more your tipple, be sure to visit the Robin Hood Beer Festival at Nottingham Castle from 8th –11th October.

Introducing
baresca One of the city’s newest restaurants brings the spirit of Barcelona’s renowned La Boquiera market to Nottingham. Situated on Byard Lane, baresca market cafe and cellar bar has taken the city’s tapas scene by storm since opening in June, thanks to exciting breakfasts, excellent value lunches and a quality dinner/drinks offering. Traditional and contemporary tapas are prepared and cooked using the freshest produce (often in baresca’s grand charcoal oven), making for a highly enjoyable dining experience. Cold meats, an impressive selection of Spanish cheeses, a mouth-watering choice of flatbreads and frituras – plates of delicious fried treats – make up the bar menu and then from the kitchen there are exquisite meat, fish and vegetable offerings. Amongst the diverse Catalan selection are baresca’s chicken wings, served in a sweet chilli and sesame jam with a fragrant cut of fresh coriander. This stickysweet dish tops the taste scale, with a light, crisp exterior giving way to tender meat. Buttermilk fried squid with lime and aioli is another one not to miss from the frituras selection. From the meat menu, diners can treat themselves to Iberian pork cheek, slow braised and served on a bed of creamed potato with cuts of morcilla sausage, smoked bacon cabbage and a rich jus to accompany. So how best to enjoy baresca? Their team recommends around three dishes per person for a complete tapas experience, but for something lighter on the stomach and the pocket there’s Menu Del Dia, which, at £9.95 per person, makes for an ideal lunch option. It includes flatbread and dips, any two tapas plus a side, coffee and sweet treat. If you like what you

find at baresca, there’s a market area where you can buy over 100 authentic Spanish products. With live music twice a week in their stylish cellar bar, open until 1am on Saturdays, baresca is a fine addition to Nottingham’s food and drink scene.

Dry-rubbed and slow-cooked hunks of pork, melt-in the-mouth brisket and truly epic burgers: these meaty menu items have well and truly made themselves at home in Nottingham with an influx of American influenced restaurants, as well as some fantastic all-British eateries open for business. ’ Red s True Barbecue Red’s is one of the city’s American-inspired venues that has made a big splash in the city. Part of a growing national chain, the industrial chic Nottingham branch is located on Queen Street amidst a growing number of eateries. Their menu sticks to the barbecue staples of ribs, brisket, pulled pork, s’wiches and burgers, as well as featuring a dauntingly-named page: ‘Feasting’. The heaps of fine pork strips that make up Red’s Pulled Pork ‘n’ Slaw is the stuff of every carnivore’s dreams, having been authentically smoked over a low heat and smoke for some fourteen hours before being pulled and married with a Kansas City-style sauce. Add the crunch of a bourbon pickleback salt crust, sweetness of a homemade apple sauce and a scattering of crispy crackling and you’ve got yourself a real winner. The holy grail of the Red’s menu is The Donut Burger – two juicy flame-grilled steak burgers, graced with silky melted cheese, peppered bacon, dirty sauce and a scattering of deep-fried crispy onions, sandwiched in between two sweet glazed donuts. Served with a spicy bacon-wrapped jalapeño and skin-on fries, this dish is so good it even has its own hashtag. Red’s is great for all the family with a brilliant kids menu and, for those that fancy a night in, they even run a take-out service.

The place to go for locally sourced and lovingly prepared food is The Malt Cross on St James’s Street. Here you’ll be eating in the splendid surroundings of one of England’s few remaining Victorian music halls, where you’ll be forgiven for forgetting about the hustle and bustle of the 21st Century in favour of a taste of the 1800s.
Patisserie Valerie in The Exchange Arcade has a brilliant continental breakfast offering. Besides the usuals, there are some really appetizing extras on the menu such as grilled croissant filled with melted gruyère cheese, creamy béchamel sauce and mushrooms. Eggs Now, eggs have always been great – a reliable source of protein and able to be cooked in so many different ways – but this staple has seen something of a rebirth as of late, and is increasingly taking centre-stage in breakfast dishes rather being a mere side-act. If you’re a fan of eggs, you’d be hard-pressed to think of something more tempting than New-York’s genius invention: eggs Benedict. A soft, toasted English muffin, topped with ham, perfectly poached eggs and a smooth yet sharp hollandaise sauce. For a great variation, swap the ham for spinach or smoked salmon to create the classic eggs Florentine or eggs Royale.
Head to Cafe Sobar on Friar Lane for a scrumptiously laidback fry-up in the bright, modern space. Something else they do really well here is an all time guilty-pleasure of ours: cheesy beans on toast!

The blissful breakfast experience that usually goes hand in hand with a holiday on the continent can be recreated right here in Nottingham: think fresh fruit salad, warm croissants, Danish pastries, Pain au Chocolat, Pain aux Raisin and granola with yogurt and honey.
Sinatra’s Bar & Restaurant on Chapel Bar do these three dishes exceptionally well and add their own streak of imagination with the choice of Poxon’s black pudding as a topping.

At the top-end of Pelham Street you’ll find the cool, urban home of top notch coffee and food, Wired Cafe Bar. Try their ‘Posh Breakfast’ and start the day with a delicious poached egg on a toasted English muffin, layered with oven roasted vine tomatoes, fresh rocket and a drizzle of extra virgin olive oil. Bacon and smoked salmon are there to top it with, if that takes your fancy.

£40Million REMODEL INTU VICTORIA CENTRE NOTTINGHAM’S intu Victoria Centre is in the final stages of a £40million makeover that is due to complete later this year when customers will not only be able to enjoy a new-look shopping centre, but also a host of new restaurants.

The showpiece of the remodelling project will be a brand new, two-storey dining area focused around a stunning feature entrance that is the Grade II listed Clock Tower – part of the old train station that once stood where the shopping centre is now.
Also situated on the top level will be Joe’s Kitchen, a relaxed and inviting dining experience renowned for fuss free and delicious fare from breakfast to dinner.
Set to open in time for Christmas, there are already five restaurants already signed up and all are newcomers to the city – something which will undoubtedly create a buzz among city shoppers and foodies alike. Set to open on intu Victoria Centre’s lower level is handmade burger Co. – a restaurant with an impressive selection of hand pressed burgers which are all made in house from fresh ingredients. Also situated on the lower level near the centre’s European-style piazza will be Coast to Coast, an American restaurant and bar with an extensive menu incorporating premium burgers, sea food and traditional deep dish pizzas. Joining these restaurants will be Tortilla, a haven of real California burritos and tacos with a customisable menu

Visitors to the top level will be able to relax in a booth at Ed’s Easy Diner and enjoy 50’s classics from the juke box alongside all-American dishes such as hamburgers, hot dogs, fried chicken and ice cream floats.

Nottingham coffee roasters, 200 Degrees, have already come a long way from their first roast in 2012. Soon to open a second Coffee Shop near Nottingham Station to complement the acclaimed venue in Flying Horse Walk, they also supply dozens of local venues. Coffee man, as his card describes him, Tim Moss, explains the journey of the little green beans. The green beans are sourced ethically with many from Rainforest Alliance farms to ensure not only ethical treatment of the growers but also a greater emphasis on sustainability, the quality of the coffee cherries is all important and our suppliers select by hand. These are delivered to our Roast House on Meadow Lane where the coffee is roasted either as a single origin bean or a premium blend to create more complex flavours. The key to a great blend is selecting beans that complement each other to create the overall taste. Roasters spend a lot of time experimenting in ‘cupping’ sessions. Next, we roast the beans at around two hundred degrees centigrade. A lighter roast yields more subtle flavours but a darker roast boasts a bolder, more intense quality and it’s controlling the roast to the point at which the beans are removed from the roast where the art lies. Small batch roasters monitor the beans by temperature and colour and use just the naked eye to stop the process at precisely the right moment to ensure the correct flavour.
Our signature blend ‘Brazilian Love Affair’ consists of Brazilian, Colombian and Vietnamese beans roasted medium/dark. The roasted beans are delivered weekly to maintain freshness and taste, and once the beans are at the coffee shop, the training at the 200 Degrees Barista School ensures every cup of coffee is as good as the last one. The journey finishes as one of millions of cups of coffee drunk every day, but you may now stop to think about the thousands of miles and numerous processes that make the humble bean so important to so many people.

The dedicated gluten-free menu at Bill’s is varied and feels unrestricted. Pan-fried sea bass served with a crispy spring onion potato rosti and chunky tomato, avocado and caper salsa is just one of the delights to look out for.
Aubrey’s Traditional CrÊperie
West End Arcade
This is a true Nottingham gem and all of Aubrey’s scrumptious crêpes and galettes can be made with gluten free batters. Menu highlights include the Frazzled Chrorizo galette – chorizo served with cracked egg, caramelized onions, baby spinach, parmesan and aioli, and the Zesty Orange crêpe – caramelised banana in a zesty orange and cardamom sauce, topped with creamy mascarpone.
Gourmet Burger Kitchen Trinity Square
GBK serve up a variety of crafted burgers, combining 100% prime beef, with the freshest ingredients and sauces. The gluten-free menu offers favourites like The Don and Blazing Sombrero, as well as chicken, veggie and even buffalo burgers, ensuring taste buds are satisfied. A stand-out from the specialty list is the Persian lamb burger – grilled halloumi, harissa mayo, rocket, pickled onions and a sweet relish.
Jamie’s Italian Low Pavement
There are lots of exciting gluten-free options available at Jamie’s Italian. Take the mouth-watering Baked Crespelle: spinach, Westcombe ricotta and basil baked in gluten-free buckwheat pancakes with smoked mozzarella, buttery leeks, Sicilian tomato sauce & parmesan. Just remember that because the menus are seasonal, the dishes and ingredients can change so check with your server before ordering.

The Treat Kitchen on Wheeler Gate was crowned overall winner and, with 36 flavours of jelly beans, 88 varieties of gourmet chocolate and a range of homemade fudge to choose from, it’s clear to see why this confectionery emporium is so popular! When being presented with her award Jess Barnett, who runs the shop with her husband Martin, said:

Two businesses were also Highly Commended by the judges. The first of these is White Rabbit Teahouse, a cake lover’s paradise found nestled away on Bridlesmith Walk, with another location close by on Hounds Gate. With a great range of scrumptious cakes, light lunches, refreshing drinks all served in a cosy, quirky setting, this really is the perfect pit stop during a day of shopping or a destination for a relaxing catch up with friends. The other was the Cheese Shop in Flying Horse Walk. The range of products and knowledge of their ‘cheese butchers’ are second to none and their ability to put together the perfect pairings and flavour combinations borders on the uncanny, making this a must-visit for anyone who knows their Cheshire from their Cheddar! And let’s not forget their other culinary delights from their olives and oils to their pasta and pickles or their café.
