Food is so important to us; it brings families and friends together. We use it to celebrate momentous occasions. The food we make and eat says something about who we are. I love experimenting with baking to create unique and interesting cakes, biscuits and decorations, which are both a feast to the eye and the appetite. Nottingham has a great food scene, and having studied at Nottingham Trent University myself, I know the city’s food scene well. The selection of bustling restaurants, independent cafes, quirky bars and fantastic local produce offer the people of Nottingham a varied and vibrant choice of dining. The Food & Drink Fortnight is a great way to celebrate this and I’m really excited to be part of it! Since winning the Great British Bake Off last year, I have been busy creating bespoke and edible designs with cakes, pastry and dough. I’ll be joining up with intu Victoria Centre to demonstrate some of my favourite techniques on 13th September. I hope you can join us in the city for this great celebration of all things food!

REAL ALES
in the city
HAND & HEART
LANGT RYS
Derby Road
South Sherwood St
At the Hand & Heart, they serve fine local ales from local brewers. A great number of micro-breweries continue to thrive around Nottingham and they aim to source the very best offerings. With such a variety of beers brewed locally they feel there’s something to be found for everyone and are proud to help these small and independent businesses reach customers. The team at Hand & Heart believe having pubs support local breweries is a great way to ensure great beer with real local character and heritage is always available.
Langtry’s have always been well known for their selection of real ales but they are also incredibly passionate about real ciders - traditionally crafted using hand pressed apples & little else! They always have a selection of at least 20 corking ciders, on draught & in bottles and especially love expertly crafted ciders & perrys from the East Midlands. Some absolute classics from this region which you will see regularly are Thirsty Farmer, Disco Cox, Scrambler, Poachers English, and Pure Charnwood.

NAV IGAT ION BREWERY Nedd Ludd - Friar Lane 0115 948 4221 Cross Keys - Byard Lane 0115 941 7898 The Approach - Friar Lane 0115 950 6149 The Nedd Ludd is run by Navigation Brewery who use only the finest quality ingredients and traditional brewery methods to produce an acclaimed range of cask ales, craft beers and seasonal one-offs. Located near Trent Bridge behind the historic Trent Navigation Inn, the brewery combines iconic Victorian premises with state of the art brewing technology and has been a major success story for Nottingham. The most popular is the Pale Ale 3.9%. Pale is a lighter cask ale that’s straw in colour with a distinctive fruity nose. It’s well hopped which lends itself to a refreshing and sharp finish especially welcome for those with a thirst on.
WET HERSPOONS Joseph Else - South Parade 0115 947 5034 The Roebuck Inn - St James St 0115 979 3400 Lloyds No.1 - Carlton St 0115 988 1660
Wetherspoons have a rotation system for their real ales so that there’s always something new for the customers to try. Favourites include Abbot Ale and Ruddles Ales, and with a local slant, Ten Fifty and Gold which are both brewed by Grainstore brewery in Rutland. With the rotation system, it means all the branches can react quickly to customer feedback; if an ale doesn’t go down well with the customers, the teams can look for another ale to suit their tastes. As a company they are also very supportive of real ales with a bespoke website to guide visitors into the world of ale tasting.
Sunday Roast Crafting the Perfect
Prepare to wow your family by following the expert’s top tips to create the most sumptuous Sunday Roast. Orange Tree
“We source our Sunday roast meat from our butcher, Owen Taylor & Sons. They have been trading since 1922 and are based in Leabrooks in Derbyshire. The beef and lamb we use for our Sunday roast is sourced from farms in our local counties of Derbyshire, Leicestershire and right here in Nottingham.” Del Frith, Manager
Three Crowns
“For the perfect crunchy outside and fluffy middle for our roast potatoes I would highly recommend using a light sprinkling of garlic salt before you pop them in the oven. This adds a subtle flavour as well as ensuring the outside is perfectly crisp. For added flavour, add a couple of sprigs of rosemary too, before cooking.” Debbie Garnham, Kitchen Manager
John Lewis
“A craftsman relies on the perfect tools for the job so investing in your cookware is always a good idea. For perfect crispy Yorkshire puddings, always heat the fat in the tray in the oven until it is spitting hot before you add the batter. This, combined with a good quality non-stick tray, will mean that the Yorkshires come out perfectly. For an extra kick of flavour add half a teaspoon of English Mustard powder to your batter before pouring the mix into the tray.” Simon Harper, Chef at John Lewis Nottingham
Hand and Heart
“Veg is often an overlooked aspect of the Sunday lunch, but we like to show ours the same care and attention as everything else! Our broccoli is boiled for two minutes, before adding butter.
TIPS We cook carrots al-dente in stock and add fennel seeds and squeezed oranges. The red cabbage is braised with red wine, vinegar, sugar, spices and redcurrants. We use Maldon sea salt, as the large crystals are best for seasoning. It’s the little things that make a big difference.” Ruth Woolston, Manager
...a good quality non-stick tray, will mean that the Yorkshires come out perfectly
Cross Keys
“Cross Key’s home made roast gravy uses the juices left after roasting; this ensures the full flavour of the meat flows through the whole dish. For a perfect gravy, brown some fat from the meat with flour for a few minutes before adding red wine with the stock juices from the meat. Cook gently until you have a thick gravy and pour over the roast and vegetables for a truly splendid Sunday lunch.” Richard Gash, Head Chef of Great Northern Inns
