Natural Douglas Fir 3-11 ft.
Grand Fir 7-9 ft.
$-$$ Most affordable and a popular choice, with very fragrant needles. Broadly tapered, with space between the branches, each tree has its own unique character. Grown in the East Kootenay region of British Columbia, these trees are produced using a sustainable method known as “stump culture,” where a tree is cut, leaving the bottom two or three branches near the ground, generating a new tree top for harvest in seven to 10 years. Once brought indoors, it will hold most of its needles for a maximum of two to three weeks.
$$$ Grown on tree farms, and tend to grow at a rate similar to a Doug fir, but a bit more finicky, requiring more attention. Cultured Grand fir (Abies grandis) has a dense canopy of glossy dark green needles, and a lovely citrus fragrance. Needle retention is on par with cultured Douglas fir.
Noble Fir 3-9 ft.
$$$-$$$$ The gold standard of fresh-cut Christmas trees. Broadly tapered from bottom to top, with deep green to blue-green needles and a moderate fragrance. Planted as seedlings on tree farms, Abies procera is fertilized and pruned annually for seven years or more before harvest. Space between branches for decorations to hang naturally, strong branches to hold heavy ornaments without sagging, and a full, layered appearance. Needles hold for more than four weeks.
Cultured Douglas Fir 4-9 ft.
$$-$$$ Features a full, dense canopy of rich green to blue-green, fragrant needles and a symmetrical tapered shape. Cultured Douglas fir are planted on tree farms as seedlings and then fertilized and pruned annually for about five to seven years before being harvested. Needles hold well for up to three weeks.
Fraser Fir 5-9 ft.
$$$$ A narrow form makes Abies fraseri a good choice where space is limited. Grown primarily in the East, but tree farms in B.C., Washington and Oregon plant some each year. Needles are medium green, often with silvery undersides and with some fragrance. Needle retention is almost as good as a noble fir. Strong branches hold heavy decorations without sagging.

$$$$ A “true fir” (Abies nordmanniana) native to the Republic of Georgia and northern Turkey. Features beautiful, soft shiny needles with a deep green colour and evenly spaced strong branches perfect for heavy ornaments. Holds its branches for more than four weeks.
Blue SPRUCE 5-8 ft.
$$$$ The most traditional of Christmas trees. Grown in colder climates and in the past more readily available than the varieties that are popular today. Sharp needles make them hard to handle, and they are less likely to hold needles for more than 10 to 14 days. These days, blue spruce still has a following, valued for its steel blue colour. Look to choose these as freshly cut as possible, and be sure to wear gloves!

Apply a hydrating styling cream on dampened hair for a smooth soft hold, then blow-dry straight. Next, part hair in the middle and pull into a low ponytail at the nape of the neck. Tease hair to add fullness, especially if hair is fine, and spray with hairspray. Loop the teased length of the ponytail onto an elastic, shape into a triangle, and wrap a section of hair around the elastic to finish. t this time of year, we all tend to do a little more hibernating, perhaps a little more cooking (and eating) and a little more organizing. With the amount of daylight declining every day, it’s a great opportunity to step inside your closet with a cup of tea and do some serious purging. Those ratty old sweaters that you have been holding onto for three years, and now are not even wearable to the grocery store, need to be tossed. Those outdated wool coats that you think can pass as somewhat current, won’t. The black basic layering tees that have had holes in them for the past year that you hope no one will spot, need to be replaced. The faded tights that are too tight around your waist need to be burned! The black winter riding boots that are stained from the salt of years-goneby need to be relegated to the garden only. I think you get the point. If it looks old, worn or ratty, you won’t feel your best wearing it. By lightening your closet of all of the misfits and “I may wear them someday”
pieces you can concentrate on simplifying your daily struggle of what to wear on a cold, rainy winter’s morning. This fall is all about a comfortable elegance. It’s about the sweater coats, the stretch denim jeans, the oversize infinity scarf, the cozy tights and the fitted sweater dress. It’s about the amazing blazer (and I don’t mean a blazer that has a matching skirt) paired with those spectacular riding boots that make you feel like a million bucks every time you wear them. It’s also about layering those long comfy cotton tanks under everything, especially with a cute chunky cropped sweater.

A classic risotto is as comforting as a sturdy umbrella in Vancouver.

Once you feel confident making a basic risotto, you can expand your ideas to create and pair new flavours. At Beachside Forno, executive chef Jason Harris pairs a classic risotto with warm fall flavours. To cut through the richness of the risotto, the Ambleside bistro finishes the dish with a few slivers of pickled shallots. Try to make the risotto as close to service time as possible. The longer the rice sits cooked, the longer it will absorb all the liquid and become overcooked. Remember a good rule of thumb: if you won’t drink the wine, don’t cook with it.
INGREDIENTS 1 cup Arborio rice ½ White onion 2 cloves Garlic 2 Tbsp Vegetable oil 2 Tbsp Butter 4 sprigs Thyme 50 mL Dry white wine 3 cups Vegetable stock 2 Tbsp Parmesan cheese 4 sprigs Chive 2 Tbsp Mushroom liquid

Finely dice onion and garlic. Heat a heavy-bottom pot on medium for 5 minutes. Add oil and half the butter. Add onion and garlic along with thyme sprigs. Cook until onions are translucent. While cooking, bring vegetable stock to a boil, and turn heat down to a simmer. Once onions and garlic are translucent, add rice and cook for 2 minutes, ensuring that all rice is coated by oil and butter. Add wine and cook for an additional 5 minutes. The rice should start to stick to the bottom of the pot. While stirring, add ½ cup of vegetable stock. Continue to stir until all liquid has been absorbed into rice. Add another ½ cup of stock and continue the process until all rice is cooked. Place aside until ready to serve. Before serving, finish with the mushroom liquid, butter, chives, and cheese. Adjust seasoning.

Roasted baby onions, wild mushrooms INGREDIENTS 30 Pearl onions 5 Crimini mushrooms 10 Wild mushrooms, dried 1 Tbsp Vegetable oil 2 Tbsp Butter 5 sprigs Thyme ¼ cup Vegetable stock Place pearl onion in hot water for 10 minutes. Place dried mushrooms in a separate container and cover with warm water. Let mushrooms sit submerged for 30 minutes. Strain onions, and peel the skin off. Place on a towel and pat dry. Remove mushrooms and tear into small pieces. Heat a heavy-bottom frying pan over medium heat for 5 minutes. Cut crimini mushrooms into quarters.
Add oil, onions and criminis. Fry over medium heat until onions take on a golden brown colour. Add thyme and butter and cook out until the butter turns brown. Add stock and mushrooms, and cook until butter and stock reduces and coats the onions.
Pickled shallots INGREDIENTS 2 Shallots ½ cup White wine vinegar ¼ cup White sugar 1 Bay leaf 5 Black peppercorns 10 Fennel seeds Slice shallots paper thin. Bring all remaining ingredients to a boil, and strain and pour over the shallots. Let shallots cool in the pickling liquid.

Thank you Spain for making inexpensive sparklers without sacrificing character or quality. Cristalino is crisp and citrusy and its classic packaging will make people think you spent more.

Unique wines that charm the crowd go a long way to making a holiday gathering successful. When your social calendar is packed with parties, how can you afford to splurge every time? Set a maximum (ours is $15) and stick to it. There are plenty of well priced wines that over deliver for the money. Instead of being seen as cheap, you’ll be congratulated for being savvy. Our picks are crowd-pleasing and food friendly but just as easy to drink on their own. Christmas supper and fancier dinner parties are suitable occasions to stray from your everyday drinking budget. Treat yourself and guests by splurging on that special bottle. Out of town visitors will appreciate something from B.C. and any discerning local should be thrilled to try the latest from our own vineyards. Wherever the wine is from, aromatic and fruity whites as well as lighter bodied reds with soft tannin, bright fruit and good acidity are the most successful choices with the turkey feast. Not everyone is sticking to tradition these days though, so have a fuller bodied red on hand for less conventional but winter weather fare.

Toast to merriment with a cool cocktail for the festive season. The newest addition to the Sips List at Earls Kitchen & Bar is a slimmed down version of the classic lemon drop martini. At just 150 calories, The Skinny martini, pleases those watching their waistlines, with its appealing blend of house-made sugar-free vanilla syrup, raspberry vodka, fresh-squeezed lemon juice and white cranberry. Syrup cuts the bite of vodka while a dash of lemon cuts the sugar, for the perfect balance of sweet and sour.
Ingredients 3/4 fl. oz. Splenda vanilla syrup 3/4 fl. oz. fresh lemon juice 1 fl. oz. white cranberry juice 2 fl. oz. Smirnoff raspberry vodka
only 150 calories!
In a mixing glass, measure Splenda vanilla syrup, fresh lemon juice, white cranberry juice and Smirnoff raspberry vodka. Pack mixing glass full with ice. Top with a stainless steel shaking tin. Shake vigorously 12 times to mix ingredients. Strain into a chilled martini glass. Garnish with a wide lemon zest, squeeze to release oils.
