Why we Love What We do When both my mom and brother were diagnosed with Celiac Disease, I realized that my adored grandpa probably had the same undiagnosed condition. It had a big impact on me so I started out on a mission to help them embrace life’s simple pleasures, like that same bakery goodness everyone else gets to enjoy. U

rban agriculture has increasingly morphed from balcony boxes, backyard and allotment gardens and spurred multi-generational interest in community gardens. With an increased desire for locally driven, sustainable food production and concern over safe (GMOs and pesticide-free) food systems, people are exercising their green thumb in overlooked, sometimes unlikely spaces around Metro Vancouver.

Steadfast in its community focus and volunteer model, one such initiative in North Vancouver focuses on a handson learning outdoor classroom for all ages. North Shore Neighbourhood House’s Edible Garden Project (EGP) has developed a one-third-acre Schoolyard Market Garden at Sutherland Secondary in partnership with North Vancouver School District 44. The stepping-stone was North Shore Neighbourhood House’s Loutet Farm. The EGR built the half-acre Loutet Farm on public parkland in 2011, the first of its kind on the North Shore. The farm is a sustainable social enterprise and thriving community hub generating farm gate sales twice-weekly selling fresh garden produce. “In 2014, Loutet Farm generated 7,500 pounds of produce and $42,000 in revenue, so we’re expecting $52,000 from Loutet this year and between $10,000 and $20,000 from Sutherland,” says Emily Jubenvill, EGP program manager. EGP has a five-year business plan that includes Sutherland and a future schoolyard market garden site within the next five years to be self-sustaining. Their goal is essentially to break even with proceeds allotted to cover wages, overhead, seeds, tools and administration costs. According to Jubenvill, revenue generated would go into enhancing programing, perhaps introducing more school/ summer groups to learn at the farm or more community engagement or food workshops; ultimately, it would go back into facilitating supplementary work on the farm. With just over 620 volunteers, there’s no shortage of community interest and business partnerships, too. “We’ve developed a great relationship with a number of local businesses and The Great Canadian Landscape Company (gclc.ca) is one of them,” says Jubenvill.

“Our hard working team of nine is very proud to have volunteered the equipment and expertise required to help build the Schoolyard Market Garden at Sutherland Secondary,” says Jason Black, vice president, operations & community development with The Great Canadian Landscaping Company. “We set over 60-plus posts in concrete, ensuring they were all plumb and ready for the fence rails; in addition, our team helped fill the planter boxes with soil and spread mulch around the garden plots.” “Bringing awareness to the community at large about basic urban farming ideologies are very important to our team that spends 100% of our year outdoors in the community and people’s backyards,” adds Black. Jubenvill believes there is a broadening and increasing awareness of local food system issues, pesticides, organics and GMOs. “What people articulate most to us is that the work we’re doing and when they are involved with it — it just feels good. There’s a sense of belonging and community that is fostered; it’s a really hopeful and inspired learning atmosphere and it gets people stoked.” Not only does growing your own food reduce your ecological footprint but it also ensures that what you eat has the best possible flavour and highest nutritional value. “The exciting component is getting the produce into the school cafeteria and there’s definitely an appetite for that kind of change,” reveals Jubenvill. “Being introduced to it and being provided the opportunities is the key: you can choose between a kale and blueberry smoothie or Mars Bar; better to have the choice.” “We are proud to help champion EGP’s initiatives and to help get the message out to the masses that community can start in one’s own backyard — or in this case in Sutherland School’s backyard,” says Black. Nourishing Your Pets with Real, Local Foods By Sarah Griffiths, DCH, CPN

D

octors tell us that our diet is important, that eating as much fresh food as possible is essential to keep us healthy. In many ways, nutrition is our foundation for health. This is true for our pets too! Our dogs’ and cats’ well-being is protected by being fed whole, natural-sourced foods. Cats and dogs are carnivores so they need meat. The higher quality the meat sources are, the better. Depending on your pet’s breed, age, weight, energy level and health status, you can choose from a variety of healthy ways to feed. Raw diet offers the most natural and nutrientrich food sources but there are other options for those who aren’t into feeding raw. A home-cooked diet is the next best thing followed by locally-sourced dehydrated packaged diets. Dogs that are fed a raw diet need a variety of meats, a high quality calcium/phosphorus source (eg. raw bones

or steamed bone meal), vegetables, and organs to balance the nutrient intake. A home-cooked diet is similar except that the bone/calcium must be provided in a powdered form since raw bones should never be cooked. Cats are obligate carnivores so they require a fully meat-based diet including meat, bones (if raw), organs and, sometimes, supplementation. Essential fatty acids are best added as fresh as possible and enhance your pet’s skin, digestive, eye and joint health. Animal-based oils are best for cats but dogs can do a rotation of both animal and plant-based oils.You can also add super-green foods to the diet such as spirulina, kelp and moringa leaf to increase the vitamin, mineral and antioxidant levels in the diet. Buy local, seasonal ingredients as often as possible. This helps to ensure that you’re offering a wide variety while giving your pet foods you can feel good about. Sourceout local meats and bones with your butcher or at your natural pet food store. Find local veggies at the farmer’s

To Market, To Market Hawkers Invigorates Local Food Culture By Tracey Rayson

ancouver’s street food renaissance has broadened its once limited scope. In part, because people seek not only authenticity but provenance, too — they want to know the story behind their food. For most, it’s a quest for sustainability and farm to fork.

“The cool thing is that the events are so fun to attend,” affirms Jerome. “You can enjoy drinks, live entertainment and socialize, which is great, but also have the unique experience of meeting the people who make your food in front of you; that’s pretty special.”

With a pop-up restaurant approach, Vancouver’s Hawkers Market allows people face-to-face dialogue with local food entrepreneurs who want to test new and culturally diverse concepts, network and develop. It’s what drives the Market’s aggressive growth and is the essence behind the portable social food marketplace.

2015 Summer Events

Quality Local Food, Social Vibe Founder and director Chris Jerome launched the first Vancouver event in 2012, with Calgary and Edmonton following in 2014 and Montreal fixed on his radar. When choosing vendor applicants for an event, he’s impressed mainly by the integrity behind their food. “If they’re passionate in what they’re doing and there’s a holistic approach to the food, that’s what catches my eye,” says Jerome. “Also, if it’s sourced locally, sustainably and ethically.” A revolving roster of local vendors with ever-changing venues and event dates add to the anticipation. Most recently, Hawker Fest at Rocky Mountaineer on May 30 drew enthusiastic crowds with street food, healthy beverages, craft beef, music and cinema (outdoor movie screening). Over 40 vendors participated; think entrepreneurs 33 Acres Brewing Co., The Capilano Herbal Apothecary (locally foraged tea), Hoochy ‘Booch (kumbucha, i.e. fermented tea), Whiskey Six BBQ (house-smoked and slow braised BBQ) and chefs Bayan Ghadrshenas (Dinner by Byan) and Juno Kim who curate unique pop-up dining experiences around town with multi-course tasting menus and presentation the likes of performance art. “People want to support local food businesses and see food literacy as a valued thing in Vancouver and the community,” reveals Jerome. “I think people want to know more about food and where it’s coming from and who is making it.” McArthurGlen Designer Outlet Vancouver Airport (three minutes from YVR) is the European style open-air village and home to Hawkers Mercato this summer, a market


hall pop-up with up to 15 vendors, rotating over July and August from Friday to Sunday.

Vancouver Foodie Erin Ireland By Tracey Rayson

ood reporter and owner of itstodiefor.ca, Erin Ireland is currently focused on a variety of food styling projects, developing a new line of vegan cookies and improving itstodiefor.ca’s functionality as a Vancouver dining guide. And yes, she still makes her signature (butter-free) macadamia nut and chocolate banana bread for To Die For Fine Foods. Here, Erin serves up her knowledge like a blue plate special, covering a little bit of everything to satisfy everyone’s taste. It’s an insider’s guide for the local foodie in us all; 10 questions that piqued my curiosity about Vancouver’s food scene and Erin’s healthy, local insights.

When it comes to multiculturalism, what are a few Vancouver eateries that define the city’s culinary landscape? We really are so incredibly lucky to have such a diverse food scene here in Vancouver. Looking for Burmese cuisine? Head to Amay’s House. Vietnamese? Mr. Red Cafe is your spot. Japanese? It’s been said that Vancouver’s best sushi is comparable to the ‘good stuff’ served in Japan. Some of our city’s most notable Asian bites are found at Miku or Minami, two Japanese-owned restaurants who fly their chefs in from Japan. Try their charcoal flame seared Aburi Salmon Oshi, which has earned legendary status among foodfocused Vancouverites. More diners seek menus that adhere to allergies, food sensitivities and specific diets, for example the Paleo diet; are Vancouver chefs amping up menus to broaden options for organic, vegan, gluten- and peanut-free to meet a diverse set of needs? What go-to spots top your list? Chefs have absolutely responded to the demand for dishes that cater to specific diets, specifically vegetarian, vegan and gluten-free. When gluten intolerant friends ask me for restaurant recommendations, I suggest the same spots I refer to ‘regular’ diners, because 99% of restaurants have options these days. Even well-respected Italian restaurant CinCin offers gluten-free pizza dough, pasta and bread rolls. As for vegetarian and vegan dining, The Acorn is easily a top spot in town (try their Kale Salad with tempeh and smoked paprika croutons), along with Heirloom (the avocado fries are delectable) and Graze (where smoky eggplant perogies are a must-try).

2015 marks the 10th anniversary for Vancouver Aquarium’s Ocean Wise program and Vancouver chefs plus local fishmonger shops have come a long way to make sure the seafood on their menu is coming from sustainable sources. What are your thoughts on the program and where should Vancouverites check out for the best sustainable seafood? Sustainable sushi? Chef Ned Bell cycled across Canada to raise awareness for the future of sustainable seafood this year. Naturally, his restaurant,Yew at the Four Seasons Hotel, offers a 100% Ocean Wise menu. They, along with Boulevard Kitchen and Oyster Bar (whose menu is also riddled with Ocean Wise logos), are serving some of the very best seafood in the city. The RawBar at Fairmont Pacific Rim was Vancouver’s first 100% Ocean Wise sushi bar and it’s worth the splurge. Chef Taka Omi is also passionate about sourcing locally. He’s one of the few Japanese chefs who sources miso and wasabi from BC. The Vancouver Aquarium is doing a great job with their Ocean Wise program. I think another huge way to help our oceans is to consume seafood in even greater moderation.

What’s your take on the surge of olive oil tasting bars, do you have a favourite, and what’s your advice on incorporating it into our daily diet? Olive oil tasting bars remain a joy for me to discover. I’m somewhat of a purist and generally stick to my pure and simple favourite evoos: Domenica Fiore and Partanna. However, this healthy oil is easily in my top three kitchen essentials. I use it daily as a drizzle over finished dishes. My one olive oil tip is to avoid heating it. For frying, stick to oils with high smoke points, like grapeseed. Olive oil is the true magic touch when added to a dish once it’s been cooked. With farm to table continuing to penetrate the local-food movement, increasingly, chefs want to tell their food’s story to diners. Who’s doing it best and making a real impact? Chef Dave Gunawan of Farmer’s Apprentice.You never know what you’ll find on his menu because it changes so frequently. He cooks what the farmers bring him and it’s always exciting and different. Chef Karen McCathy of Graze not only supports small hyper-local suppliers, like Inner City Farms (who grow crops in backyard residential gardens continued on page 30

Considering urban agriculture, what is your healthy food advice that parents should be introducing to their kids? Plant-forward eating is increasingly important in this day and age — not just for our own well-being, but also for the health of our planet. 2014 was Earth’s hottest year to date, and several years in the past decade were also record-breakers. Animal agriculture is one of the greatest causes of greenhouse gases. Reducing our meat intake — and filling our diets with more plants — is one of the most impactful ways we can reduce our carbon footprints and one of the most important lessons parents can teach their children. Do you have a beloved Farmers’ Market and what are some of the best market venues around town for farm-fresh local goods and seasonal best? The Trout Lake Vancouver Farmers’ Market is a big favourite. It runs from late spring to mid-fall and here, you really feel a strong sense of community. Located next to the lake, it’s a beautiful spot to bring your dog, shop and then enjoy a snack by the shore. Klippers Organics (from Cawston, BC) is the first produce stall I beeline to. Their offerings are jaw-droppingly beautiful, especially their rainbow of heirloom tomatoes and impressive stalks of rhubarb. Another main source for local farm-fresh goods is SPUD organic home grocery delivery. I’m constantly blown away by their local offerings. Along with the staples, they sell unique items like burdock, microgreens and lobster mushrooms, which are so fresh they’re often delivered with fresh dirt on their stems. For foodies looking to explore Vancouver and BC this summer, what events should be on their mustsee list; do you have a particular favourite that you return to annually? Food Cart Fest under Cambie Bridge, which features over twenty trucks and vendors on any given Sunday is always fun and such a great opportunity to sample a little bit of everything. Go with a group and an appetite. Wine festivals in the Okanagan (there are several) are also huge musts every summer. The rolling hills of the valley really do transport you to Italy and our vines are producing better tasting wine every year. Who are the up-and-coming chefs to watch for around town and what are they doing that puts them on your radar?

Chef Brian Skinner, who recently moved on from his first restaurant, The Acorn. He’s up to something new and exciting and there’s no doubt in my mind it will be incredible. No one in the city cooks food quite like Brian. Vegetables are his focus and he cooks them because he loves them — this is evident in the end result. I love that he doesn’t rely on bacon or pork fat to make his food delicious, like so many chefs around the world do. His cooking will help you fall in love with plants at a deeper level. Chef Juno Kim is another one to watch for. This young up-and-comer is gaining a huge following thanks in part to his Monday night pop-up dinners at 33 Acres Brewing Co. He also hosts food styling courses where participants can learn the secrets behind his incredible plating techniques. To what do you attribute the success of street food and who are some of your favourite food trucks? Who’s making a unique impression on the scene? Street food is fun and accessible.You can bring your dog and enjoy some fresh air while you eat. Many of the chefs behind these mobile operations are driven by the simple desire to cook and share their food. They’re not in it for the money; they do it because they love it. Food truck meals are generally less expensive than what you’d find at brick and mortar eateries, and certain trucks (like Vij’s Railway) serve highend restaurant caliber dishes at street food prices. With over 55 food trucks serving everything from vegan salads to breakfast sandwiches on our Vancouver streets, there’s a little something for everyone. Three of my favourite food trucks are Yolk’s, Culvercity Salads and Tacofino.
