Grab two poles and get on path to fitness North Shore enthusiast to lead Nordic walking Sun Run clinic Joanna Habdank jhabdank@nsnews.com

RUNNING or walking a 10-kilometre route may seem daunting, but it doesn’t have to be. Every year, hundreds of people sign up to do Vancouver Sun Run clinics that gently ease them onto an exercise regime that’s comfortable for them until they can do the stretch. This year North Vancouver resident Cheryl Zipper is organizing one such clinic specifically for walkers at William Griffin recreation centre. But there’s a twist to it. It’s a Nordic walking class where participants use poles to walk, thereby giving the entire body a work out and offering additional stability. “It’s aimed for anybody, really. The main objective, of course is fitness, and getting out there and moving,” says Zipper, who is also a team

leader this year. It’s a practice that originated in Finland as a summer crosstraining activity for skiers, providing walkers with all of the benefits of cross-country skiing without the snow, according to SportsMedBC, the nonprofit society organizing Sun Run InTraining clinics. The technique engages upper body and back as well as the lower portion of the body. Zipper joined the Nordic walking clinic last year and was hooked. There were 45 participants, she says, some who have been exercising regularly, others had been more sedentary. “With any Sun Run training it’s a graduated training program getting in shape,” notes Zipper. “We start off doing so many minutes of faster walking and then so many minutes of slower walking and gradually throughout the 13 weeks we will pick up that pace so that people’s fitness can build up gradually to the point where people can do the 10 kilometres, and actually do the Sun Run.” The group was split

between three different fitness levels, with two leaders per group for safety and support, Zipper explains. This way, no one is left behind or feels overwhelmed. “We have really good leaders set up with people who haven’t exercised in the last however many years, they don’t have to be afraid, they can come out and go as slow as they want at the beginning.” Throughout the 13 weeks, there are speakers who come in and give presentations before the walk, offering tips on nutrition, proper walking gear, injury prevention and other topics. As with any new activity, it can be demanding, and tests endurance and commitment. “I don’t think it’s challenging unless you haven’t been active and this is new to you. For other people who have been more active, this is a way to pick up your speed,” says Zipper. And in the end, crossing the finish line of North America’s second largest 10-km event is good for health and ultimately self-esteem. “The best reason (to do it) is to just to start getting fit,” Zipper notes. “Another is the feeling of See Group page 27

Emma is a five-year-old purebred black Labrador. She is also certified therapy dog with St. John Ambulance Therapy Dog program. have a calming affect, lower blood pressure, reduce stress, and I think all of those things are happening when the child is reading with the dog.” Reading Tails, which stands for therapy animals involved in literacy success, began as a pilot project at the library last November and was so successful the library decided to continue holding it, says Hedley. Hedley found out about the program a while ago but it was Brown who approached her about hosting it. She gave Hedley a DVD showing a program in operation in the U.S., and after watching it she

agreed to try it. “I love dogs, and read about the program and could imagine that in many cases it would be a totally different fun, relaxing situation for kids. And it’s turned out to be just that,” she says. “Mary is a really lovely, calm, person, and kids really respond to her and the dog, and when we do the program, we get the kids who are signed up for the program we always have a little audience standing around watching.” But that doesn’t phase the kids, she says, explaining that usually the library is pretty busy around that time, with parents sitting with their children reading with them.

CHEF and sommelier Andrea Jefferson of Vancouver’s Quince will teach three classes in West Vancouver on food and wine pairing, slicing and dicing knife technique and olive oil and vinegar tastings.

Spice up season with three cooking classes Deana Lancaster dlancaster@nsnews.com

IF one of your aims for the new year is to educate your palate or to improve your kitchen techniques, West Vancouver School District’s Community Learning has just the thing. The Quince Essential Palate Series — taught by chef and sommelier Andrea Jefferson of Vancouver’s Quince — comprises three classes: Food and Wine Pairing; Slicing, Dicing and Knife Techniques; and Olive Oil and Vinegar Tastings. The classes are designed to appeal to everyone, says Jefferson, who has plenty of experience sharing her skills teaching classes at Quince and during a previous stint as a culinary instructor at Dubrulle. “It’s always a wide range of people,” she says of participants in her courses. “They are usually very interested in food, but some have limited experience in the kitchen and others have lots.” For the Wine and Food Pairing course on Feb. 24, Jefferson will pour five different wines and pair them with tapas from her Quince menu. Wines will be chosen from a list of easily accessible, good value labels around the $20 range. The emphasis will be on the wine and learning about successful food pairings. The class runs 6:30 to 8:30 p.m. at West Vancouver secondary. In the Slicing, Dicing Knife Techniques Course on March 31, Jefferson will guide a discussion of the various kinds of knives and their uses; sharpening techniques; and

the all-important way to hold a knife like a professional in order to chop endlessly with greater precision. “I’ve taught this class numerous times,” says Jefferson. “It’s amazing, with just a couple of hours of coaching people have so much more confidence.” After practising, students will put their new skills to use making a tomato bruschetta followed by a salad course, paired with a perfect wine for the finish. The class runs from 6:30 to 9:30 p.m. at West Vancouver secondary. Participants should bring their own knives. The third and final class in the series is the Olive Oil and Vinegars Tasting on May 5. From peppery, grassy and spicy olive oils, to smooth, acidic or sweet balsamic vinegars, Jefferson will share with participants the varying flavors and intensities that olive oils and balsamic have to offer. The class will even feature a vertical tasting of balsamic vinegars to see the difference that age makes. The class takes place on Tuesday, May 5 from 6:30 to 9:30 p.m. at West Vancouver secondary. Finding her way to West Vancouver will be a snap for Jefferson since she was raised there and even attended high school in the district. These days, she’s got a fan following at the boutique food shop, catering company and café. Located at Third Avenue and Burrard, Quince puts an emphasis respect for the ingredients, process and customer. The shop specializes in its “Quince Essentials,” a line of restaurant-quality vacuum-packed foods that can complete dishes or a menu. For more information, visit www.quince. ca.

WANT to take in your learning abroad? Five years after launching A Flavour of Spain Cultural and Culinary Learning Vacations, North Vancouverites Hilary and Mike Powell have announced their 2009 programs. According to a recent press release, the couple has added new programs to their popular art and culinary vacations. The duo launched Flavour of Spain after several years of running a restaurant on Spain’s Costa del Sol. They wanted to share their passion for Spain, its culture, food and history with travelers who had similar passions for art and food. The trips veer from typical tourist excursions, offering pre-arranged itineraries that allow guests to relax and enjoy the art, food, wine, and culture, with like-minded company. Accommodation is in a renovated old mill situated between olive groves and whitewashed villages. This year, Flavour of Spain expands with Singing in the Spanish Sunshine. Renowned Vancouver choir director Shivon Robinsong will guide the program, which is open to both experienced singers and those who have never sung a note. Cultural exchanges with local Spanish singers, and singing in ancient ruins and villages, Shivon will form a spirited choir on this inspirational vacation which takes place Oct. 13-20.
