This edition we chat to Masterchef’s George Calombaris, and get some tips about how to host the perfect dinner party. ocelyn and Vince LoPresti were running their own café in Brisbane when, mid-way through last year, they decided they were ready for a change of pace. With two young children and a busy lifestyle to contend with in Brisbane, they were keen to find a less stressful enterprise that promised the stability of a regular paycheck, combined with the flexibility and control that comes with running their own business. Jamaica Blue’s franchise model provided the perfect solution. At the time Jamaica Blue were mid-way through setting up a new premises in the Caneland Central shopping centre in Mackay. The centre had been

Returning to their roots

refurbished and renovated as part of a multi-million dollar upgrade, and a new Jamaica Blue café was established in the new precinct. Having secured their prime location and with construction on the new café underway, Jamaica Blue head office was on the lookout for the perfect franchisee partner to take over the reigns. Joceyln, a former Mackay local, was the perfect candidate. She and Vince had weathered the storm (both literally and emotionally) of the devastating Brisbane floods, and they were interested in moving closer to her family. They also had years of hospitality experience, giving them a valuable mix of relevant skills and local

know-how. Within the space of a couple of months, the pair had sold their café in Brisbane and moved to Mackay to take on this new venture. The hands-on operators opened the doors to the new Jamaica Blue café at Mackay Canelands Central in mid-October 2011, and they haven’t looked back! hen Ankush Malhorta and Meghna Baswal were working together in the hospitality industry in Dubai, they never imagined that they would one day combine their skills and experience to open their own café together in Australia. But the pair has done just that, using their international experience to ensure that their Jamaica Blue Café at Bondi Junction Westfield serves up customer service that is as exceptional as the food. Jamaica Blue café previously had a presence at Bondi Junction Westfield, where for several years it was situated in a corner location on level 4. When the store’s owners decided to pursue other options and handed the franchise back to head office, it became clear that there was an opportunity to leverage the brand into a bigger location. The Jamaica Blue café on level 4 shut up shop and a few months later, it opened in a bigger, better location on level 5, in a prime spot that bridges the gap between the two sides of the premium shopping complex. Masterchef’s George Calombaris has the Midas touch when it comes to food and TV, but there is a special new ingredient in his life calling the shots. By John Burfitt

When it comes to food, George Calombaris knows a thing – or 200. Over the past three years, the acclaimed Melbourne chef has been one of the frontmen of the TV phenomenon Masterchef and has been at the helm of educating and entertaining the nation on all things ‘food’.

G

eorge is positively passionate on the topic of food. “What I really love is I keep discovering new things about food – and that is always a thrill,” he says. But as he heads into another year, with another season of Masterchef looming and also the opening of another new restaurant, Mama Baba in Melbourne, George admits he has had a change of focus in life. And it is a change he could not be more happy about. In July last year, George became a dad when his partner Natalie Tricarico gave birth to their first child, a son named James. George says for all the excitement of his career

in dining and TV, the arrival of James has changed his life. “Beyond all that, James is my new precious little jewel in my life and he is the priority,” Calombaris admits. “He will be with me wherever I go, and of course so will Natalie. “Being a dad has slowed me down and made me a little more conscientious. Yesterday, which was a very busy day, I went home to bath James, spent an hour and a half with him and then put him to sleep. I want to be there to do those things, as well as when he wakes up and on Saturdays too. “Before, I wanted to tie myself to the stovetop, but now I have taken a much bigger

step back and my perspective on life has changed.” These are certain to be interesting new days in George’s life as he changes gears and adapts to a change in pace. He is a driven man, his business empire seeming to strike all the right chords with both his professional reputation as well as his genial manner. At 33, George has created a winning domain of restaurants including The Press Club, Maha Bar and Grill, P M 24, and the Hellenic Republic, all in Melbourne, and the Belvedere Club in Mykonos, Greece. The new Mama Baba will be the eighth eatery in his stable. He has also been a regular face on TV for

has travelled through time to what we are eating now is everything that inspires me,” he says. “It is all about culture, religion and nationalities. “Even in my own personal culture and with my parent’s Greek background, I am inspired. I get back to Greece twice a year and I take old traditions and techniques and try to turn them on their head and include them in what I am doing in my own cooking. “If people learn one thing from me, I hope it is that food is pretty uncomplicated. But don’t get me wrong - if you come in to The Press Club, you will get food that is pretty complicated.

“But it is about making people realise that when they are at home with some broccoli, olive oil, sea salt and fresh pasta, that can be a delicious dish. It is about showing people that food can be simple and not as hard as they think.” It is the women of his family who have had the greatest influence on George’s love of and exploration of food. Growing up in Melbourne with Greek migrant parents, it was watching his mother Mary in the kitchen that taught him the greatest lessons. But his home presented a rich mixture of cultures, as his grandmother on his father’s side, Nicoletta, had Italian parents, and she

years, firstly through daytime’s Ready Steady Cook and since 2009 on Masterchef. He is now preparing for the next season of the ratings blockbuster, due on air in the coming months. George is also the author of four cookbooks, including Your Place or Mine? and Greek Cookery From the Hellenic Heart. He also has another one in the works. This is obviously a man loving where his career is taking him, and he is on something of a mission to spread the word about his passion for food. “Food is so cultural and is so diverse and its effect on society and culture and how it

inspired George’s love of Italian cooking. In fact, his new restaurant Mama Baba will have two side to the menu – Greek and Italian. George has regularly spoken on Masterchef about the impact Mary had on his cooking, and they also worked together on the book, Greek Cooking from the Hellenic Heart. Mary is also actively involved with his Hellenic Republic restaurant. “My mother is still a huge inspiration for me,” he says. “I think that is one of the reasons I opened the Hellenic Republic as I wanted to be true to Greek cooking, and I have her involved there a lot. “But I am also inspired by the people on Masterchef, these amateur cooks who want to change their lives and approach to food. I am so inspired by the time and the passion they put into this. I am also inspired by many other chefs around the world and love seeing what they are doing, taking ideas from their philosophies.” It was as a young chef starting out that George made one of his most important connections. As a young apprentice at the Sofitel Melbourne hotel, he met another chef, Gary Mehigan, and within a matter of years, the pair had embarked on their first joint venture, Fenix restaurant. The friends have been co-hosts of Masterchef for three years and have collaborated on two books. They have had their heads together again in recent months as they plan the next season of Masterchef. “On Masterchef, we have something to prove,” Calombaris admits. “Last year was a massive one for the show and we did well, but for this new year, we have been working very hard over the past months on what we are going to do, what we want to see out of it and what we want to do

with food to take it to the next level.” With such a full schedule ahead, not to mention a new son at home, George knows he has a juggling act on his hands, but just like any good chef, he believes he has the right ingredients at hand to make it work. “I am lucky as I have an amazing group of people around me who understand my dream, and I think I am able to inspire them to get behind me,” he says. “Listen, don’t get me wrong – I am not saying we always get it right and make it perfect. But I do think we have it under control, and know it has to be about the content and the food. As long as we keep that in focus, we should be okay.”

george’s FAVOURITE TRAVEL ADVENTURE “While I get to go to Greece every year and see some of the most spectacular beaches in the world, Smiths Beach in WA is the best beach in Australia. Easily! While we were filming Masterchef in WA, we went there, and Gary, Matt (Preston) and I had a swim and then went to a little restaurant and drank cider all afternoon. It was lovely.”

Plan while you can

Start planning your delectable menu well in advance. Save time by securing the guest list and confirm any dietary requirements upfront. Create a checklist of what needs to be done and map out your deadlines with set completion times so there are no last minute surprises.

Get a head start

Rather than whizzing around the kitchen like a manic chook on the day of your event, save your sanity by selecting dishes that can be prepared well in advance. Among my favourites are ocean trout gravlax, which makes a delicious summer entrée and for dessert, a panna cotta or a trifle that can be made the night before.

Stick with what’s in season Time is of the essence With the checklist, make the most of your pre-party time and complete as many tasks as possible during the days before your party. Setting the table the day before can save you much needed time and unnecessary stress.

Good quality produce is key when whipping up tasty treats, and it costs less to buy what’s in season. Opting for ingredients that are in season will contribute to high quality dishes that will delight the pallet and your wallet.

The Masterchef maestro has two important rules to follow when it comes to inviting people over to dine: “Dinner parties should be about two things – making it a party and not having to do any cooking. It all comes down to organisation and preparation. When I have people coming over, I want the prawns already peeled, the crusty bread ready, some olives, dips, salads and pickles all set to pull out of the fridge. Then just add some olive oil and it is all done. You do not want to be standing there over the stovetop bubbling and boiling. “If you do want to make something really fresh, like a chocolate dessert, get the guests involved. So while one is whipping the cream, one is melting the chocolate and another mixing it. So that is fun and everyone feels they’re involved. I don’t want to be standing there cooking it – I’d rather be clinking glasses instead!”

Market shopping To avoid the supermarket queues, take a trip to the local farmer’s markets. You’ll find an abundance of fresh fruit, vegetables, fish and flowers at bargain prices, and you won’t have to deal with long lines of other shoppers.

Colours set a theme on a table and you can dress up a space by adding flowers and candles. Save some cash and opt for inexpensive garnishes to dress up your platters, by tying fresh sprigs of rosemary and thyme to the handle of your chopping board to be used as a serving platter for bread rolls.

Go easy on the grog For guests wanting to avoid a boozy afternoon and the weight gain that goes with it, provide fresh fruit punch with mint and pineapple as a refreshing and healthy non-alcoholic alternative.

Share the load Keep stress to a minimum by taking on a few happy helpers to share the workload. Get people involved and they will not mind rolling up their sleeves to create a delicious fruit punch or side salad while you whip up a top-notch feast.

Opera star Teddy Tahu Rhodes takes a change of direction into musical theatre with the starring role in this acclaimed new production of the Rogers and Hammerstein musical favourite. Based on the recent New York Lincoln Center version, which presents a new take on the classic story of love set against a world of war and racial bigotry and won seven Tony Awards, South Pacific includes such classics as “Some Enchanted Evening” and “There Is Nothing Like A Dame.” It remains as potent a tale today as it was when it first premiered in 1949.

“Head back by train to Ville Parle, then jump into a rickshaw and head to Juhu Beach which, at sunset, is amazing,” Emily promises. “There is such little public space in Mumbai, so thousands of people flock to the beach. It is like a festival atmosphere, and a great place for cooling down.”

The Mahesh Lunch Home in Juhu is one of the city’s most acclaimed seafood restaurants. “It is a ‘locals’ place and you can’t make a booking, but it is very smart and always a really lovely dining experience,” Emily says. “My favourite is the range of different crabs in masalas from Mangalor.”

Jump in another taxi for a trip through the Kamathipura, the red light district, and then to South Mumbai past some of the city’s grandest architecture like the Gothicstyle Victoria Station, Flora Fountain and the university area. “This is where the old British colonial buildings are, and the architecture is so different to the rest of the city and needs to be seen,” Emily says.

Close by is Colaba Causeway. “This is the main shopping area and a fabulous place to pick up treasures and Indian handicrafts from all over the country,” Emily says. “It is bustling and very colourful.”

Grab a taxi and head to Dhobi Ghat to see the world’s largest open-air laundry. “The washers, all of who are men, work in the open to wash the clothes from Mumbai’s hotels in huge concrete wash pens, each with a giant stone,” Emily says. “It is an incredible sight, and the only thing you can see on the skyline is the clothes drying in the sun. It makes a great photo opportunity.”

he biggest problem with having too big a selection is knowing what choice to make. This is particularly true when confronting the range of classes at the local fitness club, but having no idea which will suit your specific goal. “People can get overwhelmed by too much information,” Sharyn Cahill, the Group Exercise Coordinator at the University of Wollongong’s Recreation and Aquatic Centre, says. We asked Sharyn for some expert guidance for what classes suit three common fitness goals – starting out, losing weight and toning up.

approach, so that each person works on each station at their own level. “What I really like about Body Circuit is that people do not need to keep up with the person next to them or lift the exact same weights as anyone else in the room. “It has a clear focus but it is completely at your own pace. Also, the instructor can give some people a bit more one to one help as they go through, rather than being in a huge class with one instructor at one end looking out over the heads of everyone. “And one of the best things about Body Circuit for a newcomer? There is no crazy choreography to worry about!”

THE QUEST: “I WANT TO GET INTO FITNESS” THE SOLUTION: BODY CIRCUIT CLASS

A Body Circuit class consists of a wide range of stations (exercises), like step-ups, dips, sit-ups, push-ups and light weights, all located around the one room. Each participant works on a station for about 90 seconds before taking a 10 second break and then moving onto the next. The class usually runs for about an hour. “You are working all different muscle groups as well as doing some cardiovascular exercises, so this is perfect for people without a lot of co-ordination or who are nervous about things that require too much knowledge about everything going on,” Sharyn adds. Body Circuit takes a step-by-step

“The thing about interval training is the pattern of going hard - backing off - going hard again. This is what will increase your heart rate, increase your oxygen intake and increase calorie burning,” Sharyn says. “That is why the cycling in a RPM class is ideal.” Climb aboard a bike in the class to work up a sweat. It’s a team effort, with an instructor guiding the way through a series of sprints and routines. It is as high or low intensity as you chose to work, and is also a low-impact workout. RPM is also ideal for people of all levels – you decide on the pace through the twist of the bike’s resistance dial. “If you are looking to burn fat, this is

perfect,” Sharyn says. “And anyone can do this. This can be a fun class, and if you keep with it, the kilos will drop off.”

CARDIO BOXING If you’ve ever liked the great bodies on professional boxers, doing this class will have your body headed in the same direction, and the kilos dropping away. Techniques like the jab, uppercut and hook are combined into a series of exercises using pads, focus mitts, speedballs and floor-to-ceiling balls to make for a complete workout, which is safe, but are guaranteed to make you sweat. “If you want to lose weight, what you need to do is elevate your heart rate,” Sharyn says. “A boxing class is usually pretty social as you partner up with someone, so this might be great for people who wants to work out with a friend. It also offers the interval training you need to get that heart rate up, and weight burning away.”

QUEST: “I WANT TO TONE AND SHAPE UP” SOLUTION: BODY PUMP Combine the best of the weights room with the fun of a fitness class and the result is Body Pump, a workout which will build strength, increase bone density and add muscle tone by using weights through a low-impact, choreographed set of routines. A series of exercises works muscle groups from top to bottom. “Everyone has their own individual

weights bar, and then the work begins,” Sharyn says. “It offers a full body workout, through a variety of different exercises and muscle groups which work on each section of the body. “You will be engaging so many areas of the body through the class that you are toning and shaping all the time. Some of it is with the weights, and some of it is by using the body’s own weight through pushups or sit-ups. “Basically, if you want to get into better shape, this is the class. And a minimum amount of co-ordination is required, so once again, you work at your own level.”

Add some stretching and flexibility exercises into your routine at least once or twice a week . “This will prevent injury and help with mobility,” Sharyn says. “Classes like Body Balance are exceptional for this, or maybe try yoga. It also lets the body have an easier day and a chance to recover from all your other exercise while keeping you on track to achieve your fitness goals.”

You can also track your exercise, measurements, weight and water intake and it will provide you with daily summaries. You can also add in the details for your own favourite foods and recipes, helping you to personalise your results and increase the accuracy of the analysis.

My Fitness Pal This is one of the most popular calorie counting and exercise tracking apps around as it is also available on the internet, so you can log in on your desktop, laptop or phone. It has a database of over 1.1 million foods with many Australian products included. It also has a built in barcode scanner, provides a daily analysis and includes a water tracker.

Drink More Water If one of your healthy lifestyle goals is to drink more water then this is the app for you! You can set yourself a target volume of water to drink as well as setting the volumes of regularly consumed fluids, for example, sports drinks. You can also set yourself reminders to help you remember to drink, therefore increasing the likelihood you’ll achieve your target fluid intake.

The Coeliac Society of Australia Ingredient List This app is highly recommended for people with Coeliac Disease as it allows you to identify ingredients in foods that contain gluten and those that are safe to include in a gluten free diet. It is regularly updated and therefore a very useful app to have on hand when shopping for a gluten free diet.

Tastes of Autumn Chocolate Hazelnut Cupcakes 

     

Icing 150 gm white self raising  40 gm reduced salt flour polyunsaturated margarine 100 gm wholemeal self  80 gm icing sugar raising flour  10gm cocoa powder 200 gm white sugar 200 gm reduced fat ricotta 40 gm cocoa powder 40gm roasted hazelnuts 200ml hot water 50gm reduced salt polyunsaturated margarine – melted and cooled 3 strawberries cut into ¼’s

Method 1. Preheat oven to 180C. Combine ricotta, cocoa and sugar. Add melted margarine. 2. Combine sifted flours and add to the mix. 3. Finely chop hazelnuts and add to the cake mix with hot water, stir through well. 4. Line small a 12 cup capacity muffin pan with cupcake papers and evenly distribute mix. Use the back of a spoon to smooth the tops. Bake for 18 minutes. 5. Combine all ingredients for icing in a bowl. Use a spatula to mix the icing together, it will seem very dry at the start however it will become softer with continued mixing. 6. Once cupcakes have cooled completely spread with icing and top each with a srtawberry ¼.

2 large bananas 8 frozen crepes 1 cup blueberries 1 cup ricotta 4 tbs honey

Method 1. Slice banana thickly on an angle. 2. Heat crepes two at a time in the microwave for 1-2 minutes or until warm. 3. Spread each crepe with 1 tbs of ricotta. Fold crepes in 4 to create triangles. Place on serving plate. 4. Spoon remaining ricotta on top of the crepe, add berries and remaining banana. Drizzle with honey and serve immediately. Thai Chicken Burger          

500 gm chicken mince 2 tbs green curry paste 1 egg 3/4 cup dried breadcrumbs 1 tbs fish sauce 1 tbs soy sauce 1/2 bunch fresh mint 1/2 bunch fresh coriander 2 tbs fresh lime juice 1 cup whole egg mayonnaise

To Serve  2 cups mixed lettuce  5 sourdough rolls  3 tomatoes sliced  1 large cucumber sliced  5 tbs sweet chili sauce  Snowpea sprouts

Method 1. Combine lime juice and mayonnaise in a bowl and whisk well. Store in fridge. 2. Finely chop mint and coriander and add to mince, curry paste, egg, breadcrumbs, fish and soy sauce. Using clean hands mix well and shape into 5 equal patties. 3. Heat a large frypan or grill on medium heat and spray with oil. Cook chicken patties for 3-4 minutes each side or until cooked through. 4. Cut rolls in half and toast under grill. Spread with lime mayonnaise. Top with salad. 5. Place a patty on top of salad and garnish with snowpea sprouts and sweet chili sauce. SERVES 5

Pork and Pineapple Crunchy Salad 400gm pork fillet 300gm fresh pineapple  200gm red capsicum  200gm cucumber  100gm m ixed lettuce  40ml sweet soy sauce  40ml honey  1tsp chinese five spice  1tsp cinnamon  2tbs mint  2tbs coriander  2tbs canola oil  1/4 cup fried noodles  

Dressing  100ml fresh lime juice  100ml water  50gm sugar  10gm mint finely chopped  10gm coriander finely chopped  40ml canola oil

Method 1. Combine all dressing ingredients and whisk to combine. Refrigerate until needed. 2. Trim pork of all visible fat and slice thinly. 3. Combine pork with sweet soy, honey and chinese five spice and toss to coat. 4. Remove all skin from pineapple and cut into 3cm pieces. Place in a small bowl and coat with cinnamon. 5. Thinly slice capsicum and cucumber. In a bowl combine mixed lettuce, mint, coriander, capsicum and cucumber. 6. Heat oil in a large pan over high heat, add pork and pineapple. Cook for 1 minute before turning and continuing to cook for a further minute. 7. Add pork and pineapple to the salad, toss with dressing and fried noodles.
